The Insular Region is considered by some as a geopolitical region of Colombia which comprises the areas outside the continental territories of Colombia and includes the San Andrés y Providencia Department in the Caribbean sea and the Malpelo and Gorgona Islands in the Pacific Ocean. The island is under the influence of an arid climate. The low rainfall due to the permanence of high pressures on the coast area during most of the year. The most famous dish is the traditional and Rondon, is a species of fish and conch stew slowly cooked in coconut milk, cassava, yams, fish and dumping, a cake made from wheat flour, as basic seasoning uses basil.
