Creating nutritiouslunches that kids will eatis notoriously a challenge.Whether a packed lunchor a school-providedlunch, both parents andschools want to do thebest they can for their

    kids.Schools have a lot of

changes to carry out withthe unveiling in Januaryof the new USDA require-ments for school meals, part of the Healthy,Hunger-Free Kids Actadvocated by First LadyMichelle Obama.

    Rene Yamashiro, food

service director for theRoseville City School Dis-

trict, said there are manydifferences that go intoeffect with the 2012-13school year.

Previously, a child couldrefuse the daily vegetableor fruit offering, so that aschool with 300 studentsmight actually use muchless than 300 servings.Under new requirements, all 300 students will begiven the portion, even

though some children donot want it and will noteat it. Additional salad barwill continue to be pro-vided as it has been in thepast.

Cost will be a difficulty,Yamashiro said, as well aswaste.

reimbursement 6 centsfor each of those lunch-es, Yamashiro said. Eventhough when they wrotethese regulations, theydid estimate that it was

probably going to bemaybe a 30 centincrease.

Maximums amountsare set for some foods: 2ounces of meat or meatalternate per day, twograin servings per day,and calories are limitedbased on age.

Fewer choices will bethe result, Yamashiro said. For example, an entrecontaining ciabatta breador steak roll now cant beoffered because it willexceed the dailyallowance for grains.

While childhood obesi-ty is a problem, not everychild is obese.

What theyve done istaken this and tried toapply it to 100 percent ofthe kids when really it

needs to be addressed toabout 30 percent of thekids, Yamashiro said.

Yamashiro, whosedepartment is responsiblefor kindergarten througheighth-grade food pro-grams in 28 schools, saidthat school food service isequal to the task.

School lunch is a greatdeal, she said. My mis-sion is to get more kids

eating school lunch. Weknow its healthy, we offera variety of fruits and veg-etables every day, we evenget some from our local

    farmers for our saladbars.

Parents who pack alunch also have difficul-ties.

Margaret Scheller, clini-cal dietitian at SutterRoseville Medical Center, said that when her chil-dren were younger shewould sometimes do yardduty at their school. Shenoticed how a lot ofpacked lunches gotthrown away.

A lot of kids open uptheir lunchbox and itsalways a surprise, every

day, Scheller said. Or itsnot its the same oldthing.

    Parents can educatetheir children, involve

them in choosing lunchitems, and teach by exam-ple.

If they expect their kidsto eat a certain way, they

need to eat a certain way,Scheller said.

She suggests parentsbring their kids to the gro-cery store and let thempick some foods.

My daughter neverreally liked sandwiches,so we had to think outsidethe box, Scheller said.

Among their choiceswere small whole wheattortillas wrapped around

lean meats with shreddedveggies, leftovers, salads, nuts, dried fruit and stringcheese.

Dr. Anita M. Larrow, ND, of Revolu-tions Natural Medicine, has a practicaltake on school lunches that she shares

on the groups website.Eating healthy does not mean you

have to give up desserts, Larrow said.Ok, maybe some desserts, but there

are options for healthy desserts. Organ-ic graham crackers, fruit strips, granolabars (just watch the sugar content), or apiece of dark chocolate are someoptions. Fresh fruit with yogurt on top,and applesauce with cinnamon aresome more great options.

For drinks, she said, water is the best

option.Try adding lemons or limes or even a

small amount of 100 percent fruitjuice, Larrow said.

These options will give water a flavorwhich makes it easier to drink largerquantities.

    Preschools prepare

children for successBY PENNE USHERGOLD COUNTRY NEWS SERVICE

There are several optionswhen it comes to preschool orday care choices for your chil-dren.

Cost, environment, curricu-lum and staffing all play a rolein the placement decision.

Some things parents shouldlook for when selecting a pre-school include the education

and training of the teachers, thecurriculum the program uses toguide learning and the waysin which the program welcomesand involves families, saidPlacer County Superintendentof Schools Gayle GarbolinoMojica.

High quality preschools helpprepare children for school suc-cess by focusing on pre-acade-

mic skills like reading, math andscience, as well as developing

social skills such as cooperating, making friends and working asa team.

The First 5 California websitestresses the importance of pre-school and the need to ensurethere is time for play, not justschool work.

Its important to choose apreschool that encourages chil-dren to learn, explore and inter-act both with teachers and eachother, the site states. When

choosing a preschool, look forone that will help your childlearn at his or her own pace.

The Placer County Office ofEducation also has resources forthose looking for preschools inthe area.

Some elementary schoolsoffer a pre-K program and sev-eral churches in the area also

rates start at $14.Lynch likes to have her

children not only focus oncurriculum, but play aswell.

We are in a rural envi-ronment its like ahome. We have a coupleof acres where the kidscan explore and learnthrough play, she said. Itis totally different than

    some of the publicpreschools.

Its a safe and funplace, she said. We

    considering child care place-ment.

I personally believe theschools should have an opendoor policy and be able look inon their child anytime, Rhoot

said. Having good communi-cation with the care provider isessential.

Her preschool, with a staff ofthree, keeps things simple andstrives to build close bondswith the children.

This is an extension of thefamily, Rhoot said. We areable to communicate with theparents and provide the sametype of care they provide. Werun a structured program with

individualized care and keepthe needs of the kids in mind.

Rhoots rates start at $30 aday for children ages 2 and up,$40 for an infant.

After school care starts at $15a day.

The best advice from Rhootand Lynch is to shop aroundand to find the best fit for yourchild and your budget.

To someone notacquainted with the worldof professional sports,Gorin Tennis Academymay seem a little intense.

Founder Vitaly Gorin isan intensely dedicatedcoach. He grew up withtennis and studied under

Harry Hopman in Floridaas a junior.

Gorin started his busi-ness in 1995, when hesponsored then 12-year-old Dmitry Tursunov whocame over from Russia.Tursunov has made it intothe top 20 in the world, and played in the Beijingand London Olympics.

    As a group, the academy

    began in the Bay Area,

moved to the Napa ValleyCountry Club, and cameto Granite Bay in 2000.

I would say in the lastyear to two years, wevegotten quite well known,Gorin said. Up to thatpoint, in the first 10 years,I would say we were thebest kept secret Herewe had all these topnational and internationaljuniors, we had some phe-

nomenal pros go throughour club, even Americantop pros, and nobody everknew about us.

The campus takesboarding and non-board-ing students, has seventennis courts, a heatedpool, spa and sauna, and astudent/coach ratio of 4-to-1 maximum.

    Compared with other

academies, it has a small-er, very close, family-likeatmosphere, according to

Head Pro ArtemPetushkov, who hascoached at the academyfor around nine years.

The academy takesplayers at all levels andages, from beginneronward.

whole program for littleguys, said Gorins wifeStacey Joslin, who han-

dles the business end ofthe academy. Two of the upcoming

stars in the program areKeenan Mayo, 12, and hisbrother Aidan Mayo, 9,who live in Roseville.

The training is no-nonsense and its reallyfocused on true develop-ment of a player, techni-cally and mentally andphysically, said Brigitte

Mayo, their mother. Iwas unable to find thatprior to going (to GorinTennis Academy).

In the less than twoyears that the boys havebeen with the academy,Keenan has attained No.1 in Northern Californiaboys 12s (12 and under)and has remained there.

In addition to that, hes No. 7 in the nation inboys 12s, Mayo said.

    Aidan started playing

in the 12s when he was 8,and has won the LittleMo tournament, namedafter Maureen ConnollyBrinker, a famous Ameri-can professional tennisplayer.

Aidan made it all theway through to win thenationals.

They work very, veryhard, Mayo said of hersons. But without the

training that theyre get-ting, its my opinion theyprobably would neverhave made it to wherethey are today.

Gorin has coached onthe ATP World Tour forthe past 14 years and hasguided four tennis play-ers onto the ATP WorldTour. He is one of the

coaches for the Russiannational tennis team.

I think Ive never seena man that precise on the

technical aspects of thegame itself, Petushkovsaid of Gorin. (Hes) themost precise that Iveever seen.

The school has thesame drills for beginnersas for top-ranked players;just the intensity leveland hours on the courtwill be different.

The most importantthing is we try to teach

people as close as we canto the professional level, but keeping it fun for anyage or any level, saidCoach and Director ofTennis Vahe Assadourian.

The object, though, isstill to improve.

Its always more funwhen you get better atsomething, Assadourian

    said.A basic rundown of

    afterschool kids classes,outlined by Petushkov,

runs from Beginner toIntermediate to Tourna-ment Training.

Beginners classes, approximately ages 5 to8, run for one hour, between two and fourdays a week. Next isIntermediate, 6 to 10years, also for an hour.

Then we have theTournament Training, which is after school and

runs for two hours,Petushkov said. Thatvaries from the youngest, about 8, and they go upto 16, 17, 18.

The overriding philos-ophy of the academy isthat everything is donewith one voice.

Youre not coming forone particular teacher,

youre coming for themethodology of theschool and you really getthat methodology nomatter what tier youreon and no matter whatteacher youre with,

Gorin said. I think thatsour biggest philosophyand our biggest strength, and how we differentiateourselves from almostany other teaching facili-ty or academy.

No matter what yourreligious beliefs, most of ushave heard The SerenityPrayer at one point in life. This prayer offers 24 wordsto wellness and never werethere more true words inwhich to live by, because itsums up the healthiestmindset.

Grant me the serenity toaccept the things I cannotchange.

Serenity, being the firstkey word here, can behard to achieve when weare in pain and distress.

We must find a way toquiet our minds and to becalm if we want to think

clearly. Prayer and medi-tation are two ways thatcan help with thisprocess.

Acceptance, the nextkey word, truly is the firstand foremost importantitem we can achieve inlife, especially, when wewant to heal from grief.

We cannot change others;we can only change our-selves.

Courage to change thethings I can.

We can only changeourselves. We can changeour basic beliefs, atti-tudes, actions, reactions, habits, situation and evenour emotions. Our emo-tions are based uponmany aspects, including

our life experiences andbeliefs. Our beliefs come from

everything we see, hear, learn and experiencefrom the time we wereborn. Many beliefs arebased on family culture, experiences and tradi-tions. However, as adults,we have the ability to

question those traditions, explore new ways, choosenew traditions andchange the way we viewmatters.

    The wisdom to knowthe difference.

This is the ability to betruthful enough with our-selves to see the differ-ence. When we believeone way all of our lives, changing everything weever thought and believedis not easy but it is notimpossible. We tend to

not change until itbecomes too painful toremain the same.

Therefore, pain is anexcellent motivator andcatalyst for change.Whenwe begin to look at our-selves and our belief sys-tems, the task to beginchange may seem over-whelming but it is nevermore than you can han-dle.

    You can achieve any-

thing with serenity, courage and wisdom. If you are going through

a challenging time in yourlife, call the Lighthouse at(916) 645-3300.
