Pasta: A History and How To

Ever wondered how to get that perfect al dente pasta? Ever

wondered what al dente even means? Join us for a basic

pasta class on November 15 at 10:00 a.m. at the Fayette

County Extension Office. This class will explore the history of

pasta, teach the basics of making fresh pasta, and provide

recipes for both fresh and dried pasta. Participants will enjoy a

live demonstration and get to taste test some of the

provided recipes. Hope to see you there!

Joy of Giving

Monday, December 10, 2018, is the date to save for the

2018 Joy of Giving community outreach program

sponsored by the Fayette Extension Homemakers

Association. Joy of Giving is a community outreach

program that targets seniors in local nursing care centers.

Each holiday season nursing home residents are invited to

join homemaker club members to share holiday food and

fellowship. Gifts are provided for residents to select and

share with loved ones and friends as well as for personal

use. This historic program is unique in its goal to provide

community volunteer service to seniors with minimum

family support, especially during the holiday season. The

following list of items have been approved for donation.

The need is great and associate members as well as the

general public are encouraged to bring donations to the

Fayette County Extension Office on or before

December 6. All donations will be distributed by a Fayette

Extension Homemaker Club at a participating nursing care

center. Thank you in advance for your contribution.

Shopping list: Wall calendars with pictures, clocks with large numerals that run on batteries, small stuffed animals that can be held on their lap, small plastic pictures frames and small photo albums, coloring books and crayons, picture books, large print crossword puzzle books, large print word find books, small jigsaw puzzles with large pieces for the elderly fingers to grab. Music CD’s or movie DVD’s (consider the age and population for selection), Combs and hair brushes for men and women, soft nail files (no metal), hair bands, hair bows, hair barrettes, liquid bath soap, body and hand lotion, lap throws, small lap blanket or shoulder wraps/shawls, small blankets, quilts, throws, slipper socks with non skid bottoms, diabetic socks and socks with Holiday themes-Christmas, Easter, etc., sweaters, cardigans, sweat shirts and pants, flannel shirts, warm nightgowns or pajamas, billfolds, purses, men’s belts, winter hats/gloves/ warm scarves as residents go out on outings or to doctor appointments, jewelry, watches, necklaces/clip earrings, T-shirts (UK is a favorite), UK or NFL items (clothing or fan items). Clothing any adult size – but especially larger and plus sizes for MEN and WOMEN, sugar free candy, tins of sugar free cookies Items not to be given as gifts: glass or power items due to safety issues if spilled and or broken, magnets due to medical issues, hand sanitizer, cologne or after shave due to the alcohol content and candles that have a flame. Candles that are battery operated are acceptable.

We need help from all our Homemaker Clubs

and/or any individual whether or not a

homemaker members to make this day special

for the nursing home residents. We need gifts

for about 1000 residents for the nursing

homes we serve. Please call Marilyn Caudell at

(859) 224-0727, if you would like to volunteer, have gifts or

wrapping supplies that you cannot bring to us...we will pick

up.

2018 Kentucky Proud Evening

The University Press of Kentucky is celebrating its 75th anniversary with company. The Fayette County Cooperative Extension of the University of Kentucky College of Agriculture, Food and Environment has partnered with The University Press of Kentucky on Kentucky Proud Evenings, a series of monthly author talks. These events will occur at 6:00pm at the Fayette County Extension Office, 1140 Harry Sykes Way, Lexington. Plate it Up! Kentucky Proud food samples will be available for those attending. Toby, Taking Shergar: Thoroughbred Racing’s Most Famous Cold Case Award-winning author Milton Toby tells the infamous story of the theft of the renowned Irish Thoroughbred stallion, Shergar, through conspiracy theories, possible suspects, and other details from the unsolved case.

Thursday, December 6: Terri Blom Crocker, The Christmas Truce: Myth, Memory, and the First World War Crocker’s work analyzes and contextualizes the historiography and memory of the 1914 Christmas Truce, which consisted of a series of unofficial ceasefires on Christmas Eve during World War I between British and German troops.

New Fitness Class Coming in 2019! Strength and Stability

Bring a friend or come alone to a new fitness class, Strength and Stability, that is sure to meet your 2019 physical activity goal. Beth Leistensnider, CYT, 200, will provide a free preview of the class on January 9 at 6:30p.m. at the Fayette County Extension Center. This is a beginner level class, accessible to most, that is yoga based with added strength and stability training techniques. Please register at 859-257-5582.

Calling All Knitters and Crocheters

Help is needed to make hats for the homeless. Any pattern,

any adult size, using any washable yarn. Completed hats can

be dropped off at the Extension Office in November. For

in the Fayette County area. Our Challenge to you is to find

Turkey Tips

For many of us, Thanksgiving dinner is the largest meal we prepare all year. So much time and effort

goes into planning the meal. There’s the decorations, the place settings, the side dishes, the guest list

and oh yeah, the turkey! Follow these food safety tips to ensure a safe and delicious turkey at your

Thanksgiving dinner.

If you’re planning on cooking a fresh turkey, purchase it no more than two days before Thanksgiving. I would

recommend calling ahead to make sure your grocer will have fresh birds at that time.

Frozen turkeys can be purchased several weeks before. Just make sure you allow enough time for thawing. Thawing

should never be done at room temperature on the counter. Thawing should be done in the refrigerator, in the sink using

cold water that is changed every 30 minutes or in the microwave if followed by immediate cooking. Contact your local

Extension office for detailed information on thawing your turkey.

Before you start the cooking preparations, wash your hands with soap and warm water for 20 seconds.

Don’t wash the turkey. This can spread bacteria onto kitchen surfaces. All raw meat contains bacteria. Washing the meat

will not remove the bacteria. The only way to remove the bacteria is to properly cook the turkey.

Keep the turkey away from all other foods before cooking in order to avoid cross contamination. Don’t prepare any

other foods until you have the turkey in the oven and have properly cleaned and sanitized the area.

If possible use a different cutting board and knife when preparing the turkey. Wash and sanitize everything that touched

the raw meat, even countertops.

Cook the turkey until it reaches 165 degrees F, measured with a metal stem thermometer. The temperature should be

checked in three places; the thickest part of the breast, the innermost part of the wing, and the innermost part of the

thigh.

It is always safer to cook the stuffing separately. However, if you choose to stuff your bird, use a metal stem

thermometer to check the temperature of the stuffing too. The center of the stuffing should reach at least 165 degrees F.

Refrigerate leftovers within two hours.

Do not store stuffing inside the turkey. Remove the stuffing from the bird and refrigerate it in a separate container.

Remove the meat from the turkey before storing in the refrigerator. Legs and wings can be left whole. Remember to eat

those leftovers within 3-4 days. If the meat will not be eaten within 4 days, freeze the meat for up to 4 months for best

quality.

QUICK BREAD BAKING CONTEST 2018 WINNERS

First Place - Adult

PUMPKIN CRUMBLE MUFFINS WITH MAPLE GLAZE Baker: Lauren Gelbart

Yield: 15 muffins; Prep Time: 10 minutes; Total Time: 35 minutes Bread 1 and ¾ cups all-purpose flour 1 teaspoon baking soda 2 teaspoons ground cinnamon 1 teaspoon pumpkin pie spice ½ teaspoon salt ½ cup canola or vegetable oil ½ cup granulated sugar ½ cup packed light or dark brown sugar 1 and ½ cups pumpkin puree 2 large eggs, at room temperature ¼ cup milk, at room temperature Crumb Topping ¾ cup all-purpose flour ¼ cup packed light or dark brown sugar ¼ cup granulated sugar 1 teaspoon pumpkin pie spice 6 tablespoons unsalted butter, melted Maple Icing (optional) 1 and ½ cups confectioners’ sugar 2 tablespoons pure maple syrup 2 tablespoons milk Preheat oven to 425°F. Spray a 12-count muffin pan with nonstick spray or line with cupcake liners. This recipe makes 15 muffins, so prepare a second muffin pan in the same manner. Set aside. Make the muffins: In a large bowl, whisk the flour, baking soda, cinnamon, pumpkin pie spice, and salt together until combined. Set aside. In a medium bowl, whisk the oil, granulated sugar, brown sugar, pumpkin puree, eggs and milk together until combined. Pour the wet ingredients into the dry ingredients, then fold everything together gently just until combined and no flour pockets remain. Spoon the batter into liners, filling them almost full. Make the crumb topping: Whisk the flour, granulated sugar, brown sugar, and pumpkin pie spice together until combined. Stir in the melted butter until crumbs form. Spoon crumbs evenly on top of the batter and gently press them down into the batter so they’re snug. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F. Bake for an additional 16-17 minutes or until a toothpick inserted in the center comes out clean. The total time these muffin take in the oven is about 21-22 minutes, give or take. Allow the muffins to cool for 10 minutes in the muffin pan as you make the icing. *For mini muffins, bake for 11-13 minutes at 350°F or until a toothpick inserted in the center comes out clean. Make the icing: Whisk all the icing ingredients together until combined and smooth. Drizzle over muffins and serve warm. Cover tightly and store at room temperature for 1-2 days or in the refrigerator for up to 1 week.

Baker: Brilee Sanders

Mix: 1 stick butter 1 ½ cups sugar 2 eggs

Sift: 2 cups King Arthur Flour ½ teaspoon baking powder ¾ teaspoon baking soda ½ teaspoon salt Combine dry ingridents to butter mixture, mix well.

Alternate batter with the following combined three ingredients: ¼ cup buttermilk 1 teaspoon vanilla 1 cup mashed bananas Turbinado Cane Sugar

Pour into a parchment paper lined greased loaf pan. Sprinkle the Turbinado Cane Sugar. Bake at 350 degrees for 1 hour 15 minutes or until center is set.
