bananenmilchshake als Dessert klingt zunächst banal. Aber wenn Thomas Bühner, Küchenchef im
Osnabrücker 3-Sterne-Restaurant La Vie, es als i-Tüpfelchen eines Menüs ser-viert, muss es etwas Besonderes sein. Denn die Erwartungen der Gäste zur Jahrestagung der noblen Hotelvereini-gung Relais & Châteaux sind besonders hoch. Ein kritischeres Publikum als die von eigenen Spitzenköchen verwöhnten rund 600 Hoteldirektoren und Patrons, die aus aller Welt nach Berlin zu der Ver-anstaltung im Deutschen Museum an-gereist waren, ist kaum vorstellbar. Viele von ihnen sind selbst mit bis zu drei Mi-chelin-Sternen dekoriert. Tatsächlich hat das Kunstwerk auf dem Teller mit einem herkömmlichen Bananenmilchshake nichts als den Namen gemein. Korian-der, Kaffir-Limette und karamellisierte
Schokolade sind nur einige der Kompo-nenten, die daraus eine unvergessliche Gaumenfreude machen.
„Gutes Essen bei einer Veranstaltung wird oft unterschätzt, es bleibt bei den Gästen länger im Gedächtnis haften, als die meisten vermuten“, sagt Bühner. Er weiß genau, was bei jedem größeren Ca-tering auf dem Spiel steht – positiv wie auch negativ. „Die große Herausforde-rung für einen Sternekoch besteht darin, den hohen Erwartungen der Gäste ge-recht zu werden und das Menü trotz-dem beherrschbar zu machen“, sagt Bühner. Dabei werde es mit jeden zehn Gästen immer ein bisschen schwieriger. Hinzu kommt ein weiterer Faktor: Die Mannschaft kocht meist nicht in ihrer gewohnten Küche, wo jeder Handgriff sitzt und jedes Gewürz und Utensil an seinem festen Platz steht. „Eigener Herd ist Goldes wert“, weiß die gesamte Kü-chenelite zu schätzen.
Am Anfang gilt es natürlich einige Grundregeln zu beachten – etwa bei der Auswahl der Gerichte auf Mehrheiten Rücksicht zu nehmen, trotzdem seinen Stil zu bewahren und „im Kleinen wie im Großen mit Verarbeitungsqualität zu punkten“. In seinem Osnabrücker Gourmet-Restaurant wird etwa die ge-grillte Miéral-Taubenbrust von professi-onellen Küchenkritikern hoch gelobt, aber er würde keine Taubenbrust auf ei-
ner Veranstaltung servieren. Sein absolu-ter Liebling ist derzeit der Bison: „Der macht neugierig und den haben noch nicht so viele probiert. Dabei ist es im Geschmack ein wunderbares Rinderfi-let“, sagt Bühner. Oder frischer Fisch: „Rotbarsch für 600 Personen ist für mei-ne Qualitätsansprüche nicht verfügbar“, so Bühner, „aber Seeteufel oder Kabel-jau sind einfach zu verarbeiten und trotzdem vorzügliche Fische.“
Für den Patron der Dresdner Fein-schmecker-Adresse Bean & Beluga, Ste-fan Hermann, ist es letztlich „der „ge-wisse Pfiff“ eines Menüs, der auch bei großen Veranstaltungen wie etwa dem Semper Opernball mit 2.500 Gästen zu
