Dress for mild exercise. Instructor: David Haines has been a teacher of Qigong and Tai Chi for over thirty years. Food For Healthy Living

Food PreservationAre you concerned about the ingredients in the food you eat? Do you have a CSA share or vegetable garden and don’t know what to do with all those veggies? This course will teach you how to preserve vegetables and fruits by canning, freezing, and drying and will introduce you to the necessary equipment. Recipes will include salsa, jam, and butternut squash pancakes. Everyone will have a chance to try new techniques, sample what is cooked, and go home with the recipes. Students do not need advanced cooking skills to take this course. Join like-minded folks for a three-hour, how-to session that will cover everything you need to know to get started. This session is intended for the beginner backyard chicken enthusiast interested in raising hens for eggs. Topics will include: sources for chicks, best breeds for egg production, housing your hens, fencing them in (or out!), feed needs throughout a hen’s life cycle, predator prevention tips, flock management do’s and don’ts, helpful online and printed resources, and more. SAT Prep (NEW)Have you ever gotten frustrated over the SAT? It’s no wonder! The SAT is very different from the classroom tests most students have experienced. This class covers everything from general test taking strategies such as knowing the order of difficulty and how that helps you score better to guessing strategies and more. Moving beyond the basics, students learn how to write a superb essay in 25 minutes, defeat tough vocabulary questions, whether to read or skip the long passages, and how to zip through challenging math problems. Come learn the strategies to do your personal best on the test! Instructor: Kerri Martin is a NYS certified 7-12 teacher and has been teaching SAT and ACT for over ten years. She has worked with struggling students who have raised their scores over 400 points as well as with advanced students who needed that extra edge to get into their top schools. The Arts

Writing Effective Nonfiction (NEW)Clarity is the key to making any work of nonfiction achieve its author’s goal. Whether you are keeping a personal journal, writing a travel essay, or submitting an opinion piece to a newspaper, you must express your thoughts simply and directly. In this workshop, participants will share their writing with the group. Discussion will focus on what works well, and also on techniques to bring each writer’s ideas more clearly and readily into focus. Instructor: Tim Sullivan has written professionally for newspapers, magazines and television. Introduction to Digital Photography: This course introduces basic photographic techniques and gives students a better understanding of how to use their digital cameras. Topics covered include photography fundamentals, digital camera functionality, and techniques in the art of photographic composition. Advanced Digital Photography and WorkflowThis course covers the basics of organizing your digital photographs in preparation for editing. It is for anyone who wants to learn techniques for organizing, storing, and editing their “growing” collection of digital images. The class will cover editing terminology, suggested workflows, and demonstrate some basic editing techniques using Adobe Photoshop, Adobe LightRoom, and ACDsee Photo Manager. Beginning Watercolor The first two classes will take you through the basics of watercolor and will focus on watercolor techniques, color mixing, and light and form. The latter two classes will introduce you to botanical and landscape painting. Classes will be held at the beautiful Betsy Jacaruso Studio & Gallery, 43 E. Market Street, Rhinebeck (in the courtyard behind Bread Alone). Supplies list available on the Continuing Ed website or at the Rhinebeck Artist’s Shop. There is no special dancewear required although a hip scarf (with or without coins!) is fun to have.
