You Guatta Love It’ – SINGLE ORIGIN BLENDING CHALLENGEUtilizing no fewer than 2 coffees from the many distinct growing regions and flavor profiles of Guatemala, your team will be randomly assigned 2 roasting machines to roast your coffees to perfection and create a winning blend. ANACAFE, our origin country partner will be donating coffees from several of the most distinct coffee growing regions and farms in the country. [You and your team will have the ability to cup the coffees available to choose from on Thursday night after the Opening Ceremonies. You will be required to submit an essay with your blend stating the reason you selected the coffees for the blend and your approach to roasting them.]

GE154 - SENSORY SKILLS TEST, PARTS 1,2, and 3 | 10:00am - 11:30amCQI Sensory skills objectively measures the cupper’s ability to detect and identify three (3) of four (4) basic taste modalities. LUNCH | 1:00-2:00pm (not included) GE151 - BASICS OF GREEN GRADING | 2:00 – 5:00pmThis will be a self-study (SCAA green grading book) combined with hands-on time featuring the identification and explanation of green coffee and roasted coffee defects. The class will focus specifically on the cause and effect of defects from each of the supply control points: harvest, process, storage, roasting, packaging, and brewing. There will also be a review of sampling procedures and basic lab QC including screen size and moisture evaluation based on SCAA standards. GE217 - COFFEE LAB EQUIPMENT: USE, CALIBRATION, AND TESTING Quality control for roasting operations needs to be accurate and efficient. This class focuses on commonly used equipment and quality control procedures in a fully functional coffee testing laboratory. QA methods, interpretation of results, and action steps based on test results will be discussed. Hands on use of equipment, evaluation of samples, along with calibration and maintenance will be covered. Equipment and processes will include a selection of colorimeters, moisture analyzers, water activity meters, sample screens, tile kits, and packaging freshness and integrity evaluation.
GE201 - THE SCAA CUPPING FORM AND PEER CALIBRATION Curious as to how your cupping scores compare to your coffee industry peers’? This class will bring coffee professionals together to calibrate scores on a selection of six specialty coffees. Open discussion and active participation will be the driving force for this calibration. Attendees will come to alignment on the methods and concepts used to evaluate coffee. A full tutorial of the SCAA Cupping Form will precede the cupping, exploring subjects such as sweetness, body, acidity, and taints.

The variations of each grinder and advantages of each type will be presented, as well as the issues and disadvantages of each and the impact that particle size has on brewing results.
ROUND TABLE DISCUSSION: 10TH ROASTERS GUILD RETREATThis round table discussion with industry leaders and mentors is an opportunity to gain some insight on how the Roasters Guild has grown in the last 10 years and where it is going.
OPEN ROASTING CHALLENGEOne of the greatest benefits of the roasting labs offered at retreat each year is the opportunity to work with equipment that you might be previously unfamiliar with. For this session we have taken that idea and applied it to a second roaster challenge exercise. You and your team will be assigned to three different roaster models. Using the same coffee for each roast, the teams will test their skills and experience on each model and then cup their roasts to evaluate themselves. This exercise is designed as an opportunity to expand the roasters’ understanding of their craft and is not a competition.
