This Lunar New Year, “huat” with the Rhapsody of Pineapple Yu Sheng (旺来招财鱼生) created by the talented culinary team behind award-winning buffet restaurant, Carousel. The Rhapsody of Pineapple Yu Sheng is made up of fresh natural ingredients such as hydroponic salad, pickled purple cabbage and shredded green papaya and mango. To give it an extra bite, the chef incorporated fresh young coconut, passion mango jelly, potato strips and yam strips into the dish. Together with the juiciness of the sweet pomelo, relish the burst of flavours with each mouthful. Wait till you get a bite of the crisp pineapple rings, dehydrated into healthy perfection. Who said eating healthy during the festive season was tough? No Yu Sheng is complete without the quintessential sashimi. Drawing inspiration from the Hawaiian Poké (raw fish salad), the chef presents a delectable taste in the form of freshly-marinated mentaiko salmon cubes, giving the traditional Lunar New Year lo hei a modern twist that is bound to satiate taste buds. To top it off, drizzle over with fragrant garlic oil and a zesty blend of tropical pineapple sauce infused with ginger lily which adds a touch of spice.
