1 PRESIDENTS’ MESSAGE FEBRUARY 2016 After digging out of one of the biggest winter snowstorms we have had in NY and having to close the Center that Sunday, we were finally back to business as usual. I want to thank everyone that helped out at the Center preparing for and cleaning up after the snowstorm. We have a busy couple of months ahead for our Lion troupe. Our troupe have18 performances from now to till the end of March. If you have not been at any of the performances, please stop by and watch them perform as it is truly incredible what our kids and alumni can do with the help of our lion master, Randy Yung and the support of Patty Chow, Stephanie Tang-Bartoldus and Kathy Louie. The Banquet Journal is being published and finalized in the next couple of weeks. The annual Journal is our major fundraiser and we thank all the families and businesses who have supported us with an advertisement in our Journal. Another note related to the Journal is our yearly Chinese New Year Banquet celebration which will be on Saturday, March 5, 2016. Seats are very limited. Randy and I are so excited to see that the Center is kept busy with all the language school, dance classes, fundraiser event and the upcoming New Year celebration. All this cannot be done without your help and active participation into the Center to make it happen. Our Center is truly blessed as we all live the “Culture, Community and Family” in our everyday lives. JANUARY 13TH _ MONTHLY MEETING PROGRAM “TAKE CONTROL OF YOUR HEALTH CARE” BY HOWARD CHUNG, MD Dr. Howard Chung, who retired from a 35 year career in Internal Medicine with the Queens Long Island Medical Group, gave an informative presentation covering how each of us need to take control of our own health care. The presentation was held during the day at our senior meeting so many of our seniors were able to attend this all important presentation. Some tips provided by Dr. Chung include keeping a record of your medical history in your wallet/phone and on your computer, how to prepare for your doctor appointment, and what to do in an emergency. At the end of the presentation, there was an extensive question and answer session where many of our seniors were able to get some answers regarding their own personal situation. Our seniors truly appreciated Dr. Chung’s time and patience in spending the afternoon with them. *Philadelphia Style Apple Cake* (Note: No butter or milk) Submitted by Sham Gee

Ingredients: 6 cups of peeled & thinly sliced Granny Smith Apples (about 3 large)

1 ½ cups of granulated sugar 5 tablespoons of granulated sugar 4 teaspoons of cinnamon 3 cups of all-purpose flour 1 tablespoon of baking powder ½ teaspoon salt

4 eggs ½ cup of light brown sugar 1 cup vegetable oil ½ cup orange juice (no pulp)

2 ½ teaspoons vanilla extract

1. Preheat oven to 350F. Spray generously the bundt pan with Baker’s Joy Baking spray or PAM baking spray

2. Peel & core the apples & slice thin. Combine the apple slices with 5 tablespoons of sugar & 4 teaspoons of cinnamon. Set aside

3. Combine flour, baking powder & salt in a separate bowl. Set aside 4. Beat eggs with the 1 ½ cups of sugar & brown sugar. Add vegetable oil, orange juice and vanilla. Beat

well. Add the flour mixture gradually and mix well. 5. Pour 1/3 of mixture into the pan. Top with apples slices, draining off any of the liquid. Pour in half of the

remaining mixture to cover the apple slices. Top with the remaining apple slices, draining off any of the liquid. Top with the remaining batter, making sure all the apples are covered.

6. Bake 55 – 60 minutes or until top is golden brown. I usually check after 55 minutes & check then set another 5 minutes.

7. Let cake cool for 10 minutes in pan and then invert onto plate.

THE METROPOLITAN MUSEUM OF ART GALA _ FEBRUARY 1ST On Monday, February 1st, CCLI Board of Directors was invited to attend the annual Lunar New Year evening celebration at The Metropolitan Museum of Art. The event served as a kick-off to all of the museum's Lunar New Year festivities with guests enjoying a traditional dragon dance. NYC Comptroller Scott Stringer was in attendance and proudly announced this year's recognition of Chinese New Year with a school holiday for NYC public schools. Our very own CCLI Lion Troupe will be performing at the Lunar New Year family event on Saturday, February 6th at 12:00 noon, 3:30 and 5:00 pm. Stephanie Bartoldus

BALLROOM DANCE LESSONS AND SOCIAL DANCING

Date: February 6 and 27, 2016. (The Spring semester begins on the 6th) March 12 and 26, 2016 Time: Class I – 7:30 PM to 8:30PM – Viennese Waltz (Quick Waltz) Class II - 8:30PM to 9:30 PM – International Waltz (Slow Waltz) Social Dancing & refreshment – 9:30PM to 11:30 PM Fees: If you have not yet paid for the Spring semester, please pay at the next dance lesson, for the Spring Semester (February 2016 to June 2016), inclusive of refreshment and social dancing, $150.00 per couple (please note that all dance students must be center members); $6.00 per member couple joining social dancing only, and $8.00 per non-member couple. FYI_ BE CAREFUL OF PHONE SCAMMERS POSING AS IRS COLLECTORS The State Attorney General’s office is warning the public of many incidents of scam artists posing as officials from the Internal Revenue Service targeting seniors, students and first-generation Americans. These scammers frequently call unsuspecting people requesting payment from them for back taxes with the threat of arrest. The IRS always sends a “legitimate notice in writing that identifies the agency and the reason” the money is owed. Anyone receiving these unsolicited phone calls should hang up without providing any information. Complaints can be filed at www.ag.ny.gov or by calling (800) 771-7755. (Newsday, Jan. 28, 2016)
