Angela Dowsett of New Eltham, defied her fear of heights when she jumped out of an areoplane at 13000 feet last month to raise some serious cash for Breast Awreness Campain. A former breast cancer patient herself, Angela has been in remission for two years and has steadily raised money for breast cancer causes since. She elatedly told Scene, The sky-dive was absolutely amazing, I’m still on a high, its a bit surreal but I raised over a £1000 so its all worth it! Angela is now considering what stunt to try next!

The winter of 2010/2011 saw the deployment of 16 Air Assault Brigade to Afghanistan on operation Herrick 13.The fighting skill of the Paras is well documented.  What is less well know is their ability to adapt to new

techniques and to use the rebuilding of the communities of Afghanistan as a tool to defeat the Taliban.  Defeating the enemy in combat is one thing, but to bring lasting peace you have to do more, you have to create stability and safety.  To achieve that you have to stop being enemies and work together to build that stability.  Easier said than done.  It requires a delicate mixture of defeating those who are intent on destruction and working with those who want to lead their communities into a better future.  The Pashtun people of Helmand Province want peace, education and a future for their children.  The soldiers of the

Parachute Regiment recognized that and set about helping them rebuild the schools and villages the Taliban had destroyed.Starting on November 6, in the lead up to Remembrance Sunday, Studio 61 pays tribute to the soldiers of 16 Air Assault Brigade with an exhibition of photographs that tell the story of Herrick 13, ‘People, Pashtun and Paras’.  Using photography to tell the story of life in Afghanistan for soldiers and Afghans alike, it is hoped that the exhibition will also raise funds for those soldiers of the Parachute Regiment and their families who have been affected by this conflict.

At the tender age of sixteen, was when Heston first realised he wanted to be a chef. While holidaying

in Province with his family, he fell in love with the place. He recalls in his biography, that it wasn’t just the elegance of the food but the whole multi-sensory experience: it was like an explosion of senses on the mind and body. The fragrance from the lavender growing, the cicadas tweeting, the chefs cooking nearby and the meretricious way in which waiters would decorate the food at the table. It’s this vital nugget of information about his past that rings true in all that he does. Watching back an episode of Heston’s Feasts, it’s clear he has a nostalgic energy coursing through him. Articulate, passionate and enthusiastic, he preoccupies his time experimenting with food and chemistry. He decodes and unriddles the intricacies of food, showing how it can be manipulated to reveal new elements of flavour, texture and smell. He explains, “I want to create food which is delicious...it’s not just about what’s going on in the mouth. Its about context, history, nostalgia, emotion, and the interplay of sight and smell, sound and taste...they all play an important part in appreciation of food”.

At forty five, the self-taught chef and father of three teenagers has achieved a series of amazing accolades. In 1995, he launched The Fat Duck in Berkshire, a restaurant which provides a theatrical dining experience for its habitué. After scraping cash together to buy the 450-year old building, the business was like a ‘sixteen year overnight success’. Indeed, the restaurant was never out of the press at the time with its rule-breaking, astonishing and chemistry lesson-like menu. Since then the internationally acclaimed restaurant has gone on to receive impressive awards, essentially AA Rosette’s, the 2005 award for Best Restaurant in the World and,

impressively, three Michelin Stars. He even tried his hand at re-working the menus at Little Chef and British Airways, to critical acclaim. But Heston’s greatest achievement was perhaps his OBE. Awarded to him in 2006, Heston said at the time, “When I was given news of my OBE I was speechless. I believe we are producing some of the best cuisine and gastronomy in the world at the moment, in the UK, and I’m very proud to be British”.

One of three restaurants, (The other two being The Hinds Hotel in Berkshire and ‘Dinner’ at the Mandarin Oriental in Hyde Park) The Fat Duck has the kind of decadence that the movie The Cook, The Thief, His Wife and Her Lover brandished. The black comedy sees theatrical characters sat round a table ultimately dining under duress on a human being complete with apple in its mouth on a platter! I’m not saying that Heston would be up for cannibalism (of course not!) but its the decadence and outrageousness that reminds one of the drama. To dine at The Fat Duck, you’re advised to have four hours to plough through the courses, which include every sensory experience that you could imagine - you’d better make the most of it at £180 per person! But this is a once in a life-time experience for any lucky diner, if you can get in. The phones ring red hot on a daily basis and while there are three receptionists to answer the calls of the lucky forty two twice a day, the sophisticated telephone system is able to log the amount of failed calls trying to get through. That number is a staggering 28,000 to 31,000.

Imagine if you will, the menu...Over the course of those four delicious hours, your ears will be awash with sounds from the sea while eating oysters, to further transport the senses, while dry ice cream will leave you snorting out icy air through your nostrils, giving you the ultimate in food sensory. The techniques for the preparation of food read like a chemistry lesson. A technique called

micro filtration enables the chef to extract the very finest aromas and tastes from a certain food. It can take days but the taste is superior. Its another world. A playful utopia where you are invited to let your senses go wild and express your desires and achieve taste realisations.

In Heston’s Feast; The Charlie and the Chocolate Factory episode had Tim Lovejoy and Ben Shepherd, two of the golden ticket guests at the table, licking wallpaper which housed all the flavours of the entrées. While clear chocolate water was served in Martini glasses, (clear being the operative word), the chocolate had gone through a time consuming filtration process to extract pure water from the cocoa. For dinner was magic mushroom soup whereby Heston had previously gone to Tuscany to locate the now illegal delicacy the magic mushroom. However he found an ancestor of the fungus called the Caesar Mushroom, a non toxic, but incredibly tasty mushroom. After bartering with the locals for a basket of the stuff, he took them back to his laboratory to produce something amazing in keeping with his Wonka style dinner party. It’s all very mad scientist but a total must-watch. It’s hard to imagine that his restaurant was under intense scrutiny two years ago when over 500 diners were taken ill due to a contaminated batch of oysters. Speaking in the Guardian at the time, Heston said, “It (the Fat Duck) was just going up and up. Calls were coming in from Australia with people wanting to get a booking at the restaurant, so it was awful time when that happened, but when we re-opened the response was fantastic”.

Blumenthal might have been in the papers recently for the wrong reasons (he recently split from his wife Zanna and entered into a relationship with the notorious American actress come food writer Suzanne Pirret). But his undeniable coltish way with food is inspirational and highly entertaining. I know which cookery book will be on my Christmas wish list this year and I hope that every mouthful of food I try will be an adventure!

SPOTLIGHT ONFashionThe people traffic at the Glades

was brought to a fashionable standstill last month as the Central Atrium hosted a series

of A/W fashion shows to highlight the latest in-store trends. Kicking off the first day of shows were local doctors, nurses and patients who took to the runway to spotlight Breast Awareness Month and to raise massive cash for the cause. Shoppers dug deep into their pockets to help reach the total needed to purchase a life changing piece of equipment for the Chartwell Unit at the PRUH. The Lymph Node Analyser, allows cancer patients and their families to learn the result on the day a biopsy is taken as opposed to waiting two weeks to hear which, can be agonising for all involved. The Lymph Node Analyser Appeal is a charity that The Glades have nominated to support for the next 18 months. The Glades are relying on the generosity of the shoppers to help raise £30,000 needed to secure this vital piece of equipment.

After that wonderful display of courage and inspiration, Bromley shoppers were further wowed by some highly stylised catwalk shows

over the next few days. Set to a pumping soundtrack, the catwalk shows had the audience whooping in their seats as they were treated to an awesome display of ‘popping’ and ‘locking’ from the Trinity Warriors, the Got to Dance Finalists of 2011. The dance crew introduced the fashion shows by exhibiting some classic break dancing moves while throwing some accident-defying air born shapes.

The eye candy for the boys and girls, aka the models, then took to the runway to showcase a hungry audience the latest offering from the Glades brands including Debenhams, New Look, Jack & Jones and Select to name but a few. Featuring high on the fashion radar in Bromley were varying lengths of hobnail boots in stylish slate grey. The guys teamed these with drop-crotch camel-coloured trousers and apres-ski sweaters with the classic snowflake design, all neatly finished with dustcoats and scarves - very retro and very stylish. Key trends for the girls were the bold and vibrant colour pops of purple, midnight blue and red, all blocked together to create stunning looks. Phase Eight debuted a glorious range of sophisticated

evening wear as did CC while River Island, Levis and Dune Boros brought us all the key trends. For the girls, coats were cinched, boots were trimmed with fur, opaque tights ruled and snugly accessories were key. The look said polished and pristine, especially Bijou Brigette’s offering of bold and beautiful gems.

Pumpkin Patch provided top-notch garments for the kids, which were expertly fashioned by the younger models. The children’s wear brand emulated the same style and sophistication as their elder compadres and had the younger members of the audience silenced in their seats! Seeing the models strut their thing and looking so good in their knitted aaron sweaters or their ribbon trimmed knee high socks was enough inspiration for many in the audience to do some spending. Juliet of Downe in Orpington told Scene, ‘I came to the Glades to get ideas for Christmas presents, but that show was brilliant, it’s got me in the mood to spend money on me now!’ Our wardrobes for the colder days have never looked better!

A brand spanking new Mini Countryman sits brazenly opposite, begging us to buy, while we slowly file into a world of expectancy. After a very glamorous photo opportunity set against a background detailing all the many plush sponsors (Moet Chandon, don’t you know!), most head to the bar while a set sung by a Mick Hucknall look-a-like rings out.

The décor is like the hanging gardens of Babylon, with bold and beautiful trees adorning the walkways. Eyes are everywhere at this point while many admire each other’s attire. Ladies opt for floor length or cocktail for as long as it’s bright and bling, it’s in! The gentlemen opt for black tie, regimental or kilt fodder and

all makes for good viewing.

Jagermeister hunnies work the room to make sure all the guests are well looked after and enjoying their time, while yet more sets play out from the likes of a beautiful Amy Winehouse look-a-like.

After a while, party people take their seats to enjoy a meal of lamb shank, or thai curry if you’d prefer. But pretty soon, this joint starts to pick up the pace and after a salubrious meal and sophisticated chat, people want to party so its outside to the dodgems for some much need post-dinner racing. “Eveningwear and dodgems?” I hear you say! But you know what? Somehow it just works.

After the games and fun, it’s time to hit the dance floor. Revellers party into the wee hours on podiums and tables, making this one of the happiest, funniest and liveliest dates on the social calendar.

What’s unique about the Foxbury Ball is that it attracts a diverse crowd and people travel miles to come to the event. Well orchestrated and managed, this classy party pulls in a huge crowd and delivers the very best in entertainment to unrival any other local event.

Foxbury 2011 plays its last record of the night, ensuring the hundreds of guests are delivered safely to their black taxis and ultimately puts the fairytale to bed for another year. See you in 2012.

The designers have elevated the modified bonnet and given it sharply defined contours. It has a contoured edge and appears distinctly arrow-shaped. A restyled, horizontally structured bumper trim gives the Maybach saloons an even broader look. Daytime driving lights featuring LED technology and bordered with a chrome insert have been integrated into the outer air intakes.

The new exterior mirrors with optimised aerodynamics for less driving noise harmonise with the striking front, whilst their large surface means improved vision. All the current Maybach saloons have a confident, superior appearance and are strikingly radiant. The exceptional status enjoyed by the high-end luxury saloons finds its main emphasis in the new dominant chrome radiator grille, which is meticulously produced in two different variants. In the Maybach 57 and 62 models it has 20 fine longitudinal bars, and in the Maybach 57 S and 62 S twelve solid double louvres and a “shadow strut” flag up the vehicle’s tremendous power. Both arrow-shaped radiator grilles are also higher and boast significantly greater dimensions than before, and they have been assigned a more upright position.

The designers have elevated the modified bonnet and given it sharply defined contours. It has a contoured edge and appears distinctly arrow-shaped. A restyled, horizontally structured bumper trim gives the Maybach saloons an even broader look. Daytime driving lights featuring LED technology and bordered with a chrome insert have been integrated into the outer air intakes.

The new exterior mirrors with optimised aerodynamics for less driving noise harmonise with the striking front, whilst their large surface means improved vision. Maybe it’s because it’s one of those restaurants that truly mirror that of a traditional Mediterranean bistro, or, maybe it’s because families feel comfortable bringing their young

and mushroom, it’s the kick of spices, lemongrass, lime leaves and galangal that make it a hit of taste sensations. Absolutely exquisite.

Mains are deliciously served in charming and errorless detail and again, there are no holds barred on flavour. The Thai Yellow Curry cooked with chicken, potatoes and coconut milk takes one back to long-haul travels in the sun and the Sam Rot which arrived in its own pineapple half was nectarous beyond belief. There is something special about the food here...it’s so fresh and because there is such a great plethora of fine food on offer, you want to come back to try everything. A feast, which features high on the menu is the locally sourced fish. Seafood lovers will be in mariners’ heaven. Sea bass gets a good deal of notoriety and with its versatile cooking ability, it will be a favourite for those who want their calorie intake to be low while getting their omega fix. One customer was treated to a whole sea bass, which sizzled on its plate with spring onions and the fragrant smell of ginger. After you have tried the fish, you will want to come back for the steak, curiously named the Weeping Tiger, although the customer who received this sizzling beauty at his table certainly wasn’t weeping!

Don’t leave Thai Moom without sampling the elegant desserts. The ice cream alone is so creamy and the fruits sliced, preened and served to perfection. We tried a warm sweet potato dessert.

It sounds strange, but trust me it was amazing! There are also classic cocktails, like the very popular Mai Thai and the Moom Thai, with strawberry liqueur and cranberries, which are all served with seasonal fruits to swoon over. Mr Ashiq of Thai Moom is very passionate about the food on offer and no more does that come across than when he’s explaining about the Sunday buffet. “This is a big favourite with families. All of the food is from the a la carte menu so whatever the customer orders, its cooked fresh with no waste. It’s very popular!” That’s impressive. No big cauldrons of warmed food here then.

With December sprightly approaching, Thai Moom are currently taking bookings for their a la carte Christmas menu. A welcome change from the old turkey, customers can choose from a delightful menu with vegetarian options and the knowledge that they will be fed well and heartily - a major prerequisite at Christmas. The restaurant also boasts ample parking space just across the road, which is free after 18.30, so larger parties fear not the traffic warden!

With a new menu to arrive in January, Thai Moom is definitely one to watch. But for now, I hear that the little ones go mad for Thai Moom’s Honey Crispy Duck. I know where my brood will be this weekend then!

There is something truly lovely about doing a class in someone’s home. Less (scary) Masterchef, more cuddly and

wholesome like River Cottage. Every inch of this cosy house is quaint and cute with odes to Cath Kidston in every nook, a big lolloping sofa to get lost in and some old-fashioned fittings and fixtures to warm the cockles of your heart. At the back of the house sits Louise’s conservatory, which is also her cake making studio. Its a big, light, airy space offset by the beautiful apple tree garden. But inside, eyes are immediately drawn to a selection of Louise’s stunning creations, which lay on the side to give us a glimpse of what we can learn in her classes. There are cupcakes with babies on top, some that look like beautiful handbags and wedding pintuck cushions, plus an array of cakes with pretty flowers and animals nestled in vibrant colour. A big rustic table occupies the middle of the room adorned with all the equipment needed to decorate our cakes. Our teacher has left no stone unturned and

in this perfect setting, she is a lovely hostess offering us beverages and pastries before we begin.

Louise has been baking cakes for over twenty years (that’s about 2000 cakes!). Her training was with accomplished cake maker (actress and Sixties ‘it’ girl), Jane Asher. Louise learnt her trade on the job; working in the frenetic environment of the famous Jane Asher Party Cakes Shop in a back street off Kings Road, Chelsea, under the watchful eyes of her mentors. There, she created masterpieces for both royalty (she made both Beatrice and Eugenie’s Christening cakes before they went on to wear the most talked about millinery at William and Kate’s wedding!) and a whole line up of celebrities including Elton John when Louise was asked to make his birthday cake. Many of Louise’s creations continue to be spotlighted in the glossies.

We start by watching Louise demonstrate the weighing, mixing and folding of the ingredients as this is the key to making a great cup cake and ‘it is a science’, says Louise! She is funny, witty and laid back but her professionalism is obvious and we learn loads from her anecdotes throughout the day. We are shown all the superior ingredients to use which are not necessarily expensive, but the best to achieve taste excellence. For instance, the quality of an egg, the best butter, the use of digital scales, an oven temperature gauge and a simple little timer, all of which help bake the perfect cake. Watching Louise at work, she has a place for everything and everything is in its place. Each ingredient is housed in a little recycled jar of sorts adding to the make do and mend way she has about her. Her friendly, deadpan deposition also helps massively in a situation you are not used to.

We are given six cooled cakes and then shown step by step how to create very different, stunning little masterpieces. We all love the experience as we wile away the time chatting, munching on lovely lunch and tuning into our calm and rewarding pass time. In the space of a day we learn how to do things properly and maybe even cheat a little bit if we make a mistake. We are taught how to knead and manipulate different sugar pastes, perfect the art of molding a sugar lump shape into a beautiful lilac rose and squeal with delight as our orange piece of flatness hones itself into a beautiful glittering butterfly. We excel in the art of piping and use enough of the sparkly stuff to rival the make-up department on the set of Strictly. We shape and dot the backs of ladybirds, prettily pipe grass for them to loll in and tie and glaze ribbons like we’ve been doing it for donkey’s years.

We are, at the end of this class, cupcake-decorating afficionados. My desire to bake and decorate has been re-ignited and I decide that I will be making little treasured cakes for my own little treasures.

Have you always been in the restaurant game Sufian?My family has. I got my psychology degree and then went on to work for a company called Connexions, which is a youth service. I worked with young people. I was the Director of Business Development. I used to work in the restaurant at the weekend so I picked up the knowledge very quickly. When Shampan took off, I came on board. Wow! That’s a big change, how does it compare?I have never looked back! I love working with people, interacting with people, I’m very hands on! We have become one of the top restaurants in the Indian hospitality trade, if not the best, so I’m very happy and proud of what we have achieved. What was the inspiration behind Shampan at The Spinning Wheel?I wanted to create something that hasn’t been done before. I wanted a challenge - to take the restaurant to another level - create something with the Wow! factor. It’s incomparable to anything that’s out there. I chose the location

and building carefully and that’s where the success lies. I wanted our customers to experience high quality, fine Indian cuisine but locally. A lot of passion and heart went into making this restaurant feel like you’re dining in a top class establishment in Dubai. What makes Shampan so successful?I have to say that I am blessed with the strongest team of individuals working on all the Shampan projects; we have a great management team and fantastic staff who are highly trained and know how to manage and meet our customers’ expectations. Where does the inspiration for the menus come from?We were very lucky to have inherited the menus for Shampan 2 and 3 but we have a top executive chef working here. With Shampan at The Spinning Wheel, we have entered a new and different era. The environment and the dishes are unique. Our chef is very courageous and ambitious. We are extremely fortunate to have such a talent here who can fuse all the flavours of the Indian sub continent together while catering for the Western taste. What is a typical week like for you?One word: Hectic! Shampan at The Spinning Wheel is our flagship restaurant. We’ve been open for only eleven weeks and while it’s still young, I need to be there. So it’s 24 hours around the clock. I am so lucky to have such lovely staff that are reliable and good so I know that when it settles down a little, I can concentrate on developing the Shampan brand even further. How do you unwind?I am a devoted family-orientated man; my wife and children are everything to me. I have three amazing children; Sara11, Zidan10 and Zara 3 and they seem to be going on 21 but I like that, I’m immensely proud. They like a challenge and they are committed and ambitious. You’ll have to watch this space with my 10year old son; he is going to be an amazing footballer!

Where do you hope to go with the Shampan brand?Right now, I am very fortunate to have been successful but you never stop working and you never relax. I have some very creative people around to help me and good management is key. Shamapan 5 is definitely a future vision and it will be in Kent, we will always stay in Kent. This is our market and the one which we know and respect. If the brand and the area are good, you’ll succeed. One step at a time! We have some great plans on the horizon, we want to do in-house cooking lessons, live-cooking workshops, we’re also moving into outside catering on a big scale. Are there any more awards on the horizon for Shampan?Shampan 2 and 3 have enjoyed success for five years running now. Shampan 3 is more successful now than we all expected. At the British Curry Awards, which is like the Oscars of the Indian Restaurant industry, we came third out of 7000 restaurants in our region, which is epic. We are very proud that Shampan at The Spinning Wheel has been nominated already as Best Newcomer, which is a national award. What advice would you have for anyone looking to be successful?Don’t take no for an answer, its true in the saying ‘attitude defines altitude’. People say the sky is the limit but I say beyond the sky is the limit. When will you know that you’ve really made it?Ahh, I’m a humble man, I like cars and nice houses and luxury holidays but, at the end of the day, it’s all about my family. When my son gets me an executive box at Old Trafford or at the Nou Camp, then I’ll know I’ve really made it!
