Aren’t we fortunate that golf, tennis, and swimming have been a healthy escape for everyone! It’s been gratifying to see participation. As I drive to work on Monday mornings, from Hebron Road I look down the 10th and 11th hole and see golfers in action, then I pass packed tennis courts, a pickleball match in progress, the parking lot is full of golfers getting ready for tee times, and the pool parking lot is full with water aerobics class. That’s 150-200 people using the Club before 9:00am. It’s more than ever.

It’s been a while since we welcomed our newest Members in the newsletter. We’ve had a fantastic season of new people joining us at Hendersonville Country Club. Welcome to you all. Thank you to our Members for sponsoring.

We’ve reached the time of year when our pool staff starts returning to school. We know how important the pool has been, and will continue to be, with all the limits on exercise and social activities. So we are looking for ways to extend the pool season several weeks into September. It will all depend on our ability to staff lifeguards. Watch you email inbox for pool schedule information. We will extend the season at least a few weeks and as long as possible.

This is worth taking an afternoon off to ride bikes with your kids! Or leave the kids with their homework and join us on the trails.

Without a doubt, the most famous mountain bike trail in western North Carolina is Ridgeline at Dupont State Forest. Ridgeline is nationally known, not because of its difficulty, but because it’s a great example of a “flow trail”. A flow trail has modest hills going up and down and the momentum from going down will carry you most the way up the next. Ridgeline is two miles of downhill flow. It is rated moderate difficulty (blue).

Maybe the hardest thing about riding Ridgeline is getting to the trailhead on top. Typically, if you want to ride down a mountain trail, you have to ride up first. But on this day we’re helping out. We will operate a constant pickup truck shuttle from Lake Imaging parking area to Guion Farms parking area. The Ridgeline trailhead is about a mile easy trail ride from Guion Farms. Ride Ridgeline as many loops as you can in two hours before you load your bike back on your car at Lake Imaging. Two hours of mountain biking

without having to climb a mountain!

You need all of your own gear (including helmet). You need to know how to get from Guion Farms parking lot to the Ridgeline trailhead. We are providing a shuttle and nothing else. No guide. No supervision. No maps. No advice. No first aid kit.

You don’t want to be on this trail if you can’t control your bike on a trail. And be sure your bike is in good working order. Unless you are an expert, you’ll be using your brakes a lot. Generally it is smooth, but there are bumps. There are rocks. There are roots. There are trees. There are bears.

Guests are welcome but parties with guests must wait for the shuttle until all Members have been shuttled. The shut-tle will be a pickup truck and you and need to cover your face while in the truck. Let’s have some fun. Let us know you are coming. 692-2261

MEN’S GOLF WEEKENDForty eight teams in six flights participated in our Men’s Golf Weekend July 16th – 18th, 2020. The tournament turned out to be a huge success despite the lightning delays. Everyone had a spectacular

three days of golf with wonderful lunches following play each day. Participants received their tee gifts prior to our practice round on Thursday. Thirty nine teams participated in our practice round point’s game. Friday we had nice weather and played golf with no delays. Saturday play was going as scheduled until our lightning warnings discontinued play several times. Will Hendricks and Michael Jolly won the alternate shot putt-off tie breaker. They overcame Blake Bickford and Todd Anders to claim the Overall Gross and qualify for the shootout. Both teams had a gross score of 135 after 36 holes. Charlie Cranford and Michael Eaton qualified as the Overall Net team with a two day net score of 119. The two teams (Overall Gross and Overall Net) qualified to play in our four hole shootout to determine our Men’s Golf Weekend Champions. After the four hole playoff Charlie Cranford and Michael Eaton were victorious! Congratulations to both teams for their outstanding golf.

FALL PGA JUNIOR LEAGUEOpen to Hendersonville Country Club boys and girls ages 13 and under. Juniors get ready to get back on the course with PGA Junior League! Online registration for our fall series is open now. We look to have our practices and team matches on Thursdays (4:45pm – 6:15pm) September and October. We may use some Tuesdays for make up days due to weather or club events on Thursdays. This is a great way for juniors to play team golf in a fun and friendly captain’s choice format. The price for this program is $100 and each junior will receive two golf jerseys and additional gift items. There is an access code (password) to complete online registration.

We have had a lot of people using the tennis facility this summer and we are so excited about the increase in play. Junior clinic participation hasn’t been this high in many years (with only members and grandchildren enrolled). Casual

play is up also. It has been great to see people out playing the wonderful sport of tennis. Pickleball play has increased this summer as well. Hendersonville Country Club has a racquet sport for everyone!

Junior Clinic Schedules will change in mid August as kids get back into a school routine. Clinics will move to afternoons. We are still working on clinic times. Be on the look out for an email from the club with Jr Clinic times soon

The goal for July was to punch back at the Pandemic Blues and find a way to keep our traditions alive. With your help, we were able to do just that and the fireworks seemed brighter, the bourbon &

cigars tasted sweeter and the golf course continues to be the escape we all need.

August should be much of the same. The Ballroom Grillwill continue to be the perfect space to host our upcoming member golf tournaments. Bourbon & Cigar is back by popular demand on the 18th. Pasta Night is scheduled for the 29th and Chef Steve will be serving Oysters Rockefeller every Thursday.

Whatever the occasion, we always look forward to seeing you at the club. If there is ever anything special we can do for you or your family, just let us know.

AUGUST THURSDAY NIGHT DINNER FEATURE: OYSTERS ROCKEFELLER OYSTERS ROCKEFELLER HISTORY 1850 – Antoine Alciatore, the original owner of Antoine’s Restaurant in New Orleans, Louisiana, made a specialty dish of snails called Snails Bourgignon which was very popular. The restaurant, located on Rue St. Louis in the New Orleans French Quarter, was opened in 1840, and Antoine’s is the country’s oldest family-run restaurant.

In 1874, Antoine being in ill-heath, took leave of his family, with the management of the restaurant in his wife’s hands. He felt he had not much longer to live and wished to die and be buried in his birthplace in France. He told his wife he did not want her to watch him deteriorate and said as he left; “As I take boat for Marseilles, we will not meet again on earth.” He died within the year. 1899 – When Jules Alciatore took over the business, the taste for snails had subsided, and also there was a shortage of French snails. He wanted to use a local product in order to avoid any difficulty in procuring it. He choose oysters and adapted the snail recipe in 1899 to use the gulf oysters.

Jules Alciatore is known as a pioneer in the art of cooking oysters (as they were rarely cooked before this time). According to legend, it is said that a customer exclaimed with delight after eating this dish, “Why, this is as rich as Rockefeller!”

The dish was given the name Rockefeller because the green was the color of greenbacks and the whole dish was so rich that he wanted a name that would signify the “richest in the world.” The first name to come to his mind was John D. Rockefeller (1839-1937), a name once connoted the absolute pinnacle of wealth and position. No other American dish has received so much praise and attention as Oysters Rockefeller.

1980 – Roy F. Guste, Jr., the great-great grandson of Jules Antoine, writes in his book Antoine’s Restaurant Cookbook that “the sauce is basically a puree of a number of green vegetables other than spinach.”

INGREDIENTS

36 fresh live oysters on the half shell*6 tablespoons butter6 tablespoons fresh spinach leaves, finely minced3 tablespoons onion, finely minced3 tablespoons parsley, finely minced5 tablespoons bread crumbs, homemadeHCC Hot Sauce sauce to taste1/2 teaspoon Herbsaint or Pernod**1/2 teaspoon saltRock salt

INSTRUCTIONS

Using an oyster knife, pry open the oyster shells, then remove the oysters. Discard the top shells; scrub and dry the bottom shells. Drain the oysters, reserving the oyster liquor.

In a large saucepan, melt the butter; add spinach, onion, parsley, bread crumbs, Tabasco Sauce, Herbsaint, and salt. Cook, stirring constantly, for 15 min-utes.

Remove from heat. Press the spinach mixture through a sieve or food mill; let cool. Mixture may be made ahead of time and refrigerated until ready to use.

Preheat oven broiler. Line an ovenproof plate or platter with a layer of rock salt about 1-inch deep (moisten the salt very slightly). Set oysters in the rock salt, making sure they are level.

Place a little of the reserved oyster liquor on each oyster. Spoon an equal amount of the prepared spinach mixture over each oyster and spread to the rim of the shell.

Broil approximately 5 minutes or until the edges of the oysters have curled and the topping is bubbling. Watch carefully.

Garnish the plates or platter with the parsley sprigs and the lemon wedges. Serve immediately.Makes 6 servings or 36 appetizers.

We have so much going on this month!

MEMBER-GUEST Our annual Member-Guest Event, “A Golfing Safari” will begin on Wednesday, August 5, with a

9-hole alternate shot tournament followed by cocktails and appetizers. Thursday, August 6, we will have our 18- hole tournament followed by prizes, lunch and merriment. We have 56 ladies signed up and this promises to be one of our best, in spite of COVID restrictions. We have been working furiously to get this event together on very short timelines. Our committee consists of Sue Robbins, Deneen Porter, Sharon Goell, Laura Arch and myself.

WOMEN HELPING WOMENAugust 11th is the annual Women Helping Women event, chaired by Elaine Harris and Kiki Matthews. There will be an 18-hole step aside scramble event combining our 18 and 9 holers. Great prizes will be awarded to the winning foursomes. There will also be a lunch under the tent for anyone who chooses. Please support this great cause with a $25 donation.

QUEEN BEE TOURNAMENT Our Queen Bee Tournament was postponed due to rain in July and has been rescheduled for August 18 and 20. This is only the 2nd year we have included this in our schedule. It’s a great event for all to participate in. We count your best 18-holes over the 2 day period.

MEMBER-MEMBER August 25th is our second Member-Member event of the season. Everyone loves creating their own foursomes and dressing in team colors. Bette Carter and Barbara Clay are the team to beat!

WOMEN’S CLUB CHAMPIONSHIPSeptember 1st and 3rd are the dates to save for our Women’s Club Championship. Look for sign up sheets in ladies locker room. This event is one of the highlights of the season. It is flighted and everyone is encouraged to sign up to play.

WOMEN HELPING WOMEN EVENTYour Help is Needed this Year

Early August is the traditional time at Hendersonville County Club for the fundraising event Women Helping Women. This event in the past has made a major contribution to the program of the Pardee Hospital Foundation that supports women in WNC by offering both financial and emotional support to those who need it. Many groups - golf (men and women), tennis, pickleball, Bridge, Mah Jongg, fitness and supportive members - have been part of this successful event, raising $6,423.00 last year.

This year with concerns among our membership about the spread of COVID-19, the WHW planning committee has decided in the interest of health and safety, there will not be a Club wide event.

The only WHW fundraiser will be the Women’s Golf Association 18 Hole Scramble on August 11th. Any money raised will go toward a Mobil Mammography Van.

SMGA-Don Moses

Gentlemen, with the worst of the COVID-19 aftermath behind us, the Senior Men’s Golf Association is expanding with the influx of many new members! Many new formats of play are being introduced to provide for more variety. Also, we are attempting to re-connect with our fellow clubs to promote our inter-club play, the first of which was at Cummings Cove.

Sign-ups for events can be done in the Locker Room, on the posted sign-up sheets, or with Oliver in the Golf Shop.

RESULTSOn June 29th, SMGA had a 3-man teams, aggregate net team total, with the winners being, Richard Kauffold, Dick Durose and Jim Morton.

On July 6th, SMGA had a 4-man teams, 2 BB’s net, with the winners being, Ed Arnold, Frank Greco, Michael Gilbert and Don Moses.

On July 13th, SMGA had a 4-man teams, low and high net ball per hole, TM to re-flight, with the winners being, Rich Robbins, Bob Hunter and David Bass.
