OPERATIONS MANUAL

UNCRATING AND INSTALLATION
a. Check the outside and the inside of the box for possible damage or
marks.
b. If visible or concealed damaged is noticed, contact delivery carrier
and Somerset for freight claim and inspection. (Keep all crating
materials).
c. Cut off the fasteners that hold the machine to the base.
d. Remove the unit from the base and secure it on top of a solid surface
(table or Somerset stand).
CAUTION: Verify table stability and make sure the machine is secure.
e. DO NOT PLUG THE MACHINE TO POWER AT THIS TIME.
f. Clean the machine as specified at “DAILY CLEANING” section.
g. Plug the machine to the appropriate power as indicated by the
nameplate.
SET UP
a. Place the Auger Cover on top (Fig. 1) and secure with the 2 securing knobs. b. The SDR-400 can process dough, from 2 oz (56 grams) to 2 lbs
(910 grams), automatically without any adjustments.

THE SERVICE DOOR IS CLOSED AND THE SAFETY COVER IS IN PLACE AND SECURED
DOUGH PREPERATION The final dough ball size is determined by the weight of the dough.
a. The dough should be at room temperature covered with a plastic
sheet to avoid dryness. b. Prolonged exposure to air-dries the dough surface and that affect the
air tightness and the dough ball shape. c. For best results we recommend to cut, scale and process each
dough piece before the dough surface dries. d. Ideally, the dough should be processed as soon as it comes out of
the mixer.

For tight and perfect round shaped dough balls, spray a small amount of food oil on the inside surface of the drum. As each piece is dropped into funnel, it is processed through the machine and exits at the top.
The dough processing through the rounder is continues.
a. Feed up to 1lb dough balls every second. b. Feed over 1 lb dough balls every 2 seconds. c. Feeding speed is relative to the dough size and dough conditions
(dryness or wetness of the dough). This model has a sticky-proof design mechanism. Extra dry/wet dough may stick on the bottom of the auger (entry point). In either case, turn the power OFF before removing the dough.
WARNING !! NEVER REACH FOR THE DOUGH INSIDE THE FUNNEL UNLESS THE
POWER IS TURNED OFF
WARNING !! DISCONNECT POWER CORD BEFORE CLEANING
DAILY CLEANING All parts that have been in contact with dough should be cleaned immediately after use. DO NOT power wash this unit. Do not use chemicals, scouring pads or sharp objects to clean this unit.
1. Start the cleaning process by turning the unit OFF and removing the
power cord from the power outlet. 2. Remove Auger cover, by removing both thumbscrews and lifting
plastic cover straight up. 3. Remove Auger by lifting it straight up holding the handles. 4. Remove the Drum Spatula. 5. Remove Drum by twisting counter clock-wise and lift straight up. 6. Remove White Disk from the bottom of the machine. 7. Open the rear door and clean the interior chamber with a brush and a
clean soft cloth (Do Not use water). 8. Wash/Sanitize all parts with warm water and mild soap, and then dry with a clean cloth. 9. Reinstall all parts in the reverse order of their removal.
a. Verify the drum is engaged on the two pins and in position, by checking through the rear door.
b. Verify orientation of the auger (per Fig. 2). c. Verify orientation of the Auger Cover (per Fig.3)
10. Make sure that all parts are installed in their original position, direction and are engaged and secure.
11. Clean exterior surfaces with a soft clean cloth. 12. Clean the Stainless Steel surfaces with a S.S. cleaner.
After cleaning, plug the power cord into the power outlet. The machine is ready for use.
