Buono Girono! Last year was another great adventure for us as we traveled through Italy together! We took our palettes on an Italian culinary whirlwind. This year we are looking to return to both Rome and Florence to share this unforgettable jour-ney. The first will begin in July with our final trip ending in October. This is a spectacular experience, where our primary focus is to really dive into the culinary attributes of the regions. Along the way, we will be seeing the ‘can’t miss’ sights, (such as the underground of the Colosseum), as well as getting down into the local flavor of our destinations. Additional unique experiences from truffle hunting to wine making are part of our trip - provid-ing you with exclusive insight into Italia’s culinary pleasures. You will participate in stimulating hands-on cooking classes with distinguished chefs of the regions, including demo classes in Florence and on the renowned Island of Tibernia in Rome. Throughout the adventure, you won’t have to worry about a thing. Our concierges and I will be there every step of the way. A photographer will be on hand - so as to help document the jour-ney and leave you without having to worry about a camera. All transportation is included with our good friend Luciano taking care of us. There will also be scheduled ‘free’ time for you to explore the area on your own as well. Roma and Florence Join us on this adventure throughout Roma and Tuscana - we are certain to have a fantastic journey. Over the course of these ten days we will immerse you in the Italian culture from our culinary practices, to traditional points of interest throughout the region. I look forward to sharing with you my perspectives as one that has grown up here and share things from a view point through my eyes - as well as listen to your thoughts - as we create these experi-ences together! Day 1: Transfer / RomaArrival at Leonardo Da Vinci Airport with transfer to Hotel Giuliu Cesar.
Welcome drinks followed by a walking tour of Rome.
This evening, let the Eternal City enchant you as you stroll through its picturesque cobblestone alleyways and discover some of the world’s most famous sites – all in a single afternoon! We’ll see the Trevi Fountain, Rome Pantheon and the Spanish Steps along with many of the city’s unsung heroes. With your expert, English-speaking guide on hand you’ll get to know Rome, hearing the tales that bring every street corner to life. Our ‘Best of Rome’ tours start at the Spanish Steps, one of the most atmospheric spots in Rome. From there we trace a path through the cobbled streets of the city to the colossal Trevi Fountain – part water feature, part magnificent sculpture. Listen as your guide explains the strange history behind this famous monument, including the reason why there’s one spot from which the entire structure is obscured. You’re in the very heart of Rome now, where narrow streets snake out in every direction. We’ll stop for a gelato and to recharge our batteries before making our way to the Rome Pantheon. Here you’ll see Raphael’s tomb and learn the real cause of the famous artist’s death. Not so far away from here, it’s his contemporary who steals the limelight. Perhaps the most beautiful square in all of Rome, Pi-azza Navona is home to spectacular Renaissance buildings and Gian Lorenzo Bernini’s beautiful ‘Fountain of Four Rivers’, the sculpture that saved his reputation after he almost tore St. Peter’s Basilica in half. Our tour ends
in Campo dei Fiori, a favorite hangout among locals. Like so many of the sites you’ll visit on your tour, this piazza has a history you never would have guessed. After the tour we will visit my good friend Fabio at his restaurant right next to the Trevi Fountain called ‘That’s Amore’ for our first feast together.
Day 2: Cooking Class Island of TiberniaThere is an archaic saying, most likely as ancient as Rome, ‘When in Rome, do
as the Romans do.’ Watch video here.
This morning we are headed to Campo dei Fiori and the Island of Tibernia. Luccianno will pick us up around 10am and transfer us to the market to begin.
Our ‘Walking Tour’ intertwines the discovery of the magical Italian cuisine with the sightseeing beauty that only Rome has to offer. You will see Rome through the eyes of a local and find fresh ingredients in neighborhoods of Rome.
On the exclusive Tiberina Island (located in the center of Rome) is en-thusiastic cook Fabio’s private apartment. You will learn Italian cooking tech-niques and skills to create delicious courses with a focus on fresh pasta dishes.
Continental breakfast included at each hotel. All transportation provided by Luccianno Tenca - owner of TAM Autonoleggi.
Roma and FlorenceDay 2 Continues
Under the guidance of your fun and friendly host Fabio, you will immerse yourself in Italian life and discover the gastronomic delights of Rome. The aim of this course is to give you the techniques needed to cook differ-ent pasta dishes as well as one meat dish (vegetarians will be catered to). The cooking class will run for around four hours and you will stay a while after cooking to sit down together and enjoy the meal you have learned to cook. Throughout the class, dishes will be accompanied by local wines from the region. Around 3pm the class concludes and Luccianno will return us to our hotel. The afternoon is open for you to explore the city.
Day 3: Colloseum UndergroundToday will be a Roman experience that sparks all of your senses
- from sensational tastes to unique access and a glimpse into Roman history.
This morning we will begin our day tasting the renowned flavors of Rome. Don’t eat much breakfast today - we will have plenty to taste this morning. The tour includes stops to ten places where we will savor everything from pizza by the meter, to suppli, meats, cheeses, pastas and gelato. All the while, the cuisine will be complemented by the finest wines Roma has to offer. This tour is about three hours long and upon completion, Luccianno will take us back to the hotel where we will have a few hours of rest before our upcoming evening. After a little unwinding, Luccianno will transport us to the Colosseum for our exclusive tour and evening dinner. Imagine experiencing Rome’s iconic Colosseum without the crowds. On certain days and at certain times, the iconic Colosseum allows exclusive entrance to pre-booked guests. You will be one of these VIPs as you experience the awe-inspiring ancient amphitheatre in the evening – the best time to enjoy it. Moreover, you will be provided with special access to the Underground and Arena Floor. You’ll begin your enchanted evening with a glass of Prosecco, some wine, and a delectable four-course, silver service meal at one of Rome’s best rooftop restaurants. While you’re admiring the beautiful views over the illuminated Trajan’s Forum, we will describe ancient Rome; telling tales that make the ruins you see come alive. Franco’s descriptions of Roman cuisine will make your authentic dinner even more delicious. The dinner will last from approximately 7:30 PM to 9:15 PM. When you have finished your Roman feast, we will guide you past the Roman and Julius Caesar Forum until you’re standing in front of the imposing highlight of the eve-ning: the Colosseum. Entering with our pre-booked access, you’ll begin to explore an almost empty Colosse-um including the recently opened arena floor and the underground level. When the tour is over, we will return by transport to the hotel.

Day 4: Cooking Class at FooxiaTime for an enticing cooking class in the renowned Jewish Ghetto.
This morning Luccianno will pick us up and take us to another hands-on cooking class. Nestled in the picturesque narrow alleyways of the Jewish Ghetto is the Fooxia Cooking School. We will gather our supplies from the local market to prepare our meals. The course concentrates on the techniques to make fresh pasta (flour + egg and flour + water) and the accompanying sauces as well as a second dish. The meal will consist of an appetizer, two light dishes, a main course with a side dish, and dessert. And of course, all food items are accompanied by fine wines. After the conclusion of the class in mid-afternoon, Luccianno will take us back to the hotel where we will have a free evening for shopping, dining, and exploring the city.
Day 5: Transfer to FlorenceThe epicenter of the European Renaissance
As we drive through Tuscany, we will stop at a family-owned meat and cheese factory to look at the different aging of meats and cheeses. Followed by a tasting of their products, we will eat lunch and drink wine. In the late afternoon, we will arrive in Flor-ence to accommodations at Hotel Boscolo Astoria. With great views and just blocks away from the Duomo, you can enjoy the beautiful Florentine skyline from the hotel roof. After everyone is settled in, we will head to our favorite Trattoria (Pandemonio) to dine as a group.
Day 6: Wine Maker for a Day Spend the day learning the art of blending and aging wine.
Luccianno will give us a lift to the Castello Monterinaldi this morning. After visiting the cellar, we will select grapes to blend our own wine. We will create a personalized label, the winery will then bottle and ship your wine to Cupini’s in the U.S. Following the winemaking activity, we will enjoy a Tuscan lunch on the property. Next, we will stop at the Piazzale Michelangelo for a panoramic view of Florence. The rest of the evening will be free time for you to relax and enjoy the beautiful streets of Florence.

Roma and FlorenceDay 7: Taste of Florence Food Tour
Take a delicious walking tour of Florence.
This morning we will meet our guide for the Taste of Florence tour in the hotel lobby. We will see the city and get to know the locals while tasting some of the best Tuscan specialties around. Our guide will take us to the Cen-tral Market where you will see the freshest products from the variety of farms throughout the region. In the afternoon, we will visit a family-owned bread making shop to savor their unbelievable fare. After enjoying a wine tasting, we will snack at a small prosciutto/salami/pork shop. Finally, we will top it all off with some unbe-lievable gelato. (Don’t eat any breakfast today - this is going to be a walking, wining and dining feast!)
Day 8: Florence Food Studio Begin the day exploring the city and finish the evening with your final
cooking class with Chef Franco.
This morning and afternoon, we will enjoy and explore all the beau-tiful streets and shops that Florence has to offer. As we are located in the heart of Florence, everything is in walking distance. Perhaps visit the Duomo Museum - this has been a past favorite!
In the evening, we will visit The Florence Food Studio. Here, Franco Cupini will teach us a course at a cooking school which offers skills in traditional Tuscan culinary arts with a modern twist. The project is driven by a collaboration between the world renowned Florentine D.O.C. Chef Benedetta Vitali and two young Floren-tine aficionados dedicated to preserving their Tuscan heritage: Paolo Dellafiore and Giorgio Pinto. This eve-ning will be focused on learning Italian cooking skills and secrets but at the same time on health, nutrition, and wellbeing – all innate elements of the traditional Italian diet.

Day 9: Truffle HuntingToday we are going truffle hunting in Tuscany.
Luciano will transport us to the forest in San Miniato where we will meet our truffle hunter and his dogs. He will give us an inside look into truffle hunt-ing and explain the intricacies involved. He will describe the elaborate training his dogs go through; can you believe each of his dogs is valued at over $65K? From there, we will go on a live demonstration through the hills and watch his dogs at work. After we finish, we will return for a wine tasting featuring different grapa - including one infused with truffle. We will enjoy a lunch here before transport back to Florence.
This evening, we will enjoy our final group meal together before packing our bags and heading back home.
Day 10: The Trip Home Transfer to Florence Airport for flight to Paris, and then Atlanta.
