    Times Change

    Dear Members, family and friends,

    I hope this months issue of Fresh Air finds you all fit and well.Winter is almost over and the solid base of fitness you have builtover the winter months will pay dividends as Spring rolls around.

    In business and in life, times change and peoples goals, visionsand aspirations change. A few months ago Mark Cohen, mybrother and business partner of 15 years and I, decided it wastime to part ways within the Step into Life group of companies.

    I announced this to the Step into Life Franchise group at ourannual conference on the Gold Coast on Friday July 29

    th. Mark

    and I have parted our business interests on good terms and Iwish him every success for the future and I appreciate the

    contribution he made to Step into Life during his involvement.

    I am very excited and passionate about Step into Life, thecompany I founded and I am looking forward to leading thecompany into the future.

    We have some very exciting items on the agenda to add to Stepinto Life group outdoor personal training and you will be hearingfrom me soon about these exciting additions, one of whichincludes a long awaited nutrition / weight loss program! Staytuned!

    I would like to extend a very warm welcome to our newFranchise owners (please see the Franchise directory) and also

    to the new Franchisees who have taken over existing Franchiselocations.     Local NewsIntensity!Go to any gym and you'll see members sitting on cardioequipment reading magazines and watching tv while they areexercising. Sure it may help pass the time but if you take acloser look you'll notice that that 9 times out of 10 the intensityisn't there. Once that base of fitness and there, the muscles &ligaments have strengthened it's time to lift your game.

    Most people are reluctant to get out of their comfort zone fortoo long. But pushing that bit harder, raising your heart rate,

    educing that sweat, stressing your muscles are the very thingsthat raise your fitness and strength.

    You need to stress your body progressively for your body toadapt and get stronger in preparation for what you may havein store for it next week! Your body self regulates. How cool isthat??:)So ditch the mags and the tv and the idle chit chat, focus onyour body and your breathing, learn what you body can do,understand where your fitness level and strength is, and fromthere-plan where you want to go with it. Give it your best whenyou train. Find a trainer that will help you get it together with allthe elements and you won't be wasting your time anymore.Happy training everyone :) cheers, Tess

    My Step into Life journey began 3 days before my 21st birthday. Mylovely sister-in-law gave me heads up that there was going to be asurprise birthday celebration on the weekend and I should go and getmyself a new outfit!I wanted to look my very best for the occasion (very quickly I learnt Iwas not going to achieve this in 3 days) and came along to my firstStep into Life class.Gosh!!! I could barely run around the basketball court or do more than5 reps without complaining! Robyn was there pushing me along andmore than likely laughing!! It was TOUGH!

    The week after was agony, I remember wearing heels on the night ofmy birthday and regretting Id ever called Tess! I didnt even want to

    look at a set of stairs!

    I wasnt going to let this get the better of me so I went back and havecontinued to train with Tess for over 4 years.

    During this time I have achieved what I thought would never bepossiblewaking up at 5.30am most mornings to maintain my fitness,participating in the boot camp weekend, registering for several runninggroups, a few fun runs before finally building up to a half marathon in2010! There was no way I was going to achieve this without thesupport from Tess or other SIL members! (thank you all)I have experienced and seen the growth in fitness and the effects ithas on an individual. I too, wanted to be responsible for helping otherpeople achieve fitness goals which they never thought would be

    possible. So the seed was planted in my head...

    Health and FitnessHealthy Fast Foods

    Most of us have good intentions when it comes to our health. Wed like to eat well and exercise regularly but often the realitiesof modern day living make this difficult. Fast food whilst convenient can often blow the calorie budget, adding unwantedsaturated fat, salt and sugar to your diet. However, the good news is that many fast food outlets have now responded to thedemand for healthy foods giving us the ability to look after our bodies plus get some food fast.

    Here are a few tips to keep in mind when selecting a meal at a fast food outlet:

    -

    Meals made to order such as sandwiches and salads give you the ability to request certain items are included or left off.Request to have your dressing on the side, say no to butter or mayonnaise instead ask for a spread of avocado and for

    multigrain bread

    - Always select grilled, steamed or baked as opposed to deep-fried. An unhealthy, high fat fish and chips meal can be

    quickly turned around by requesting your fish is grilled and then include rice and salad instead of chips

    - Stay away from cream and coconut milk based sauces. These are especially high in saturated fats. Tomato-based

    sauces or broths are good alternatives.

    - Be aware that drinks such as soft drinks, fruit juice and alcohol can add significant calories to your meal very quickly.

    Smoothies and milkshakes often contain the same amount of calories as a meal! Water is always a good choice.

    - Portion sizes at take away outlets and restaurants are often far greater than you would consume at home. Consider

    sharing or request for a small or entre size.

    Exploring the world through food can be a lot of fun; here are a few tips to help keep you healthy at my top three cuisine picks:

    - Japanese Sushi is a great choice. Go for rolls containing a good source of fresh protein e.g. salmon or tuna andveggies. Brown rice sushi is a great option. Avoid rolls with loads of mayonnaise.

    -- Chinese Broths, steamed dumplings with lean meat and veggies, stir-fries with steamed rice and fresh salads are

    great choices.-- Italian Go for tomato or olive oil based-sauces rather than cream-based. Request half the amount of cheese and

    extra veggies if ordering a pizza. Bulk your meal up with a garden salad (dressing on the side).

    4 pieces skinless salmon fillet, about 125g (4 oz) each2 tablespoons soy sauce1 tablespoon dry sherry2 tablespoons soft brown sugar2 garlic cloves, crushed1 teaspoon grated fresh root ginger1 tablespoon sesame oil2 tablespoons water2 tablespoons sesame seeds2 spring onions, chopped250g (8 oz) dried rice noodles, cooked according to packet

    instructions3 tablespoons chopped coriander leaves

    Place the salmon on a foil-lined grill pan. Mix together thesoy sauce, sherry, sugar, ginger, half of the oil and thewater. Brush half the marinade over the salmon and setaside for 10 minutes.Cook the salmon under a preheated hot grill for 5-6minutes, turning it halfway through the cooking time andbrushing with a little more of the marinade.Meanwhile, heat the remaining oil in a saucepan, add thesesame seeds and spring onions and fry for 1 minute.Add the noodles and any remaining marinade to the

    saucepan and heat through. Stir in the coriander. Serve thesalmon on a bed of noodles.

    In July, two days before I left to go overseas on holidays I
