History

Founded in 1994 by Count Guy TYREL de POIX, French wine producer (owner of 50 ha of vineyards in Corsica and heir of a French noble family), S.E.R.V.E. has started its activity as a distributor of Romanian wines, bottled under its own brand: Vinul Cavalerului.

The first crop was processed in 1995 in our wine cellar in Ceptura from the Dealu Mare vineyard. Since then, winemaking technological improvements have been made every year, together with conditioning, stocking and bottling modernization. In year 2000 the wine cellar was moved to new premises, also in Ceptura. All further improving steps came from the constant care to preserve the quality and consistency, so specific to the S.E.R.V.E. wines.

Vineyards Knowing that only good grapes are making good wine, we have always focused on choosing

the lands for our future vineyards. Every sq m was replanted with quality rootstock well adapted to Romanian “terroir”. We pay special attention to decide the right moment of harvest and to preserve the grapes during the transport (they are picked up in small cases and very often transported at a temperature of less than 10°C in cooling trucks).

Our vineyards represent today 80 ha in full property, planted during the last 10 years.

Wine cellar For the first seven years our cellar functioned in the same premises with an

existing one, in Ceptura – Dealu Mare. The construction of our new wine cellar, placed in the same village, Ceptura, has started in 2000; the first bottling was performed in 2001, and the first harvest was processed in 2002. The particularity of S.E.R.V.E.’s new cellar is its robustness combined with flexibility, given by the combination between modern and traditional techniques and equipments. The investment rises to a total of around 2.500.000 Euros, most of it coming from the company’s shareholders.

Products

S.E.R.V.E.’s wines are presented under two brands:

“Vinul Cavalerului”, the first private wine brand in Romania, created in 1994 and sold in both off trade and on trade on the domestic market.

the “Terra Romana” brand, created in 2002, exclusively for HoReCa and foreign markets.

Terra Romana Roze

Variety of grapes: Feteasca Neagra and Cabernet Sauvignon

Nose: delicate, floral, morello cherry touch Taste: round, soft and balanced, a perfect

combination between the Cabernet's force and the Feteasca’s complexity

To be served with: sausages, white meat, fresh, light cheese

Serving temperature: 12º C

The Roze Terra Romana, produced from two famous varieties, Feteasca Neagra and Cabernet Sauvignon, is not only a fine wine, elegant and fruity, very suitable for hot summer days. Due to its complex structure, Roze Terra Romana is perfectly adapted for Asian, Mediterranean dishes, veal and white meat.

A perfume with light spices flavors; floral touches and a good persistence are making this wine to be an ideal partner for white meat, sausages and fish in sauce.

Terra Romana Sauvignon Blanc

Variety of grapes: Sauvignon Blanc Nose: floral scent, grapefruit, lemon Taste: exotic fruits accents evolving into honey,

specific to the Sauvignon Blanc; fresh, complex, balanced and persistent

To be served with: fish, sea fruit, aperitifs, pressed cheese

Serving temperature: 13° C

Since we wished for a special white wine, we have chosen one of the most complex variety of grapes, which is the Sauvignon Blanc. The grapes are harvested at dawn; they are collected in 13 kg cases and transported to our wine cellar in Ceptura in cooling trucks, in order to keep the optimal temperature for preserving the flavours.Fermentation is made at temperatures ranging from 15° to 17° C, for over 21 days.

Its complex taste and persistency should make it one of your favorite wines.

Terra Romana Chardonnay

Variety of grapes : Chardonnay Nose : pears and quince with notes of hawthorn Taste: soft and well balanced, with honey and toast aromas,

has a charming and very complex final To be served with fish in sauce, cold pork fillet or simply as

aperitif Serving temperature: 12°C

This Terra Romana Chardonnay comes from our first vineyards of Chardonnay in Ceptura and proves once again the special potential of Romanian viticulture.

In order to preserve its exquisite aromas, the Chardonnay is cropped early in the morning, when the air is still fresh and then fermented under controlled temperature partly in stainless steel, partly in new oak barrels.

Fresh and elegant, but yet bodied, this Chardonnay is ideal for fish in sauce, pork fillet or Orloff calf and, of course, as an aperitif. For better evaluation please drink it during the next three years and serve it at 12°C.

Terra Romana Milenium Alb

Variety of grapes: Sauvignon Blanc, Riesling with a touch of Chardonnay

Nose: white peach, lime tree blossom Taste: fresh, exotic fruits, long persistent final To be served with: fish, sea food or as appetizer Serving temperature: 12°C

The “Milenium” was created to celebrate the passage to the new millennium. Blended from two noble varieties, Sauvignon Blanc and Riesling, this wine will surprise both the amateur and the professional by its power and complexity. The golden robe, the fine smell of ripe white melon and white peach, the intense aromas dominated by citrus and exotic fruits, the long and balanced final, make this wine the perfect companion for fish and sea food. Served at 120 C, it can also be enjoyed as an aperitif.

Cuvee Amaury

Variety of grapes: Sauvignon Blanc Nose: flowers, citrus fruits, roasted bread Taste: honeycomb, vanilla  To be served with: fish, asparagus, foie gras Serving temperature: 13ºC 

This wine comes from the most valuable Sauvignon Blanc plots that we are farming. A rare and impressive wine, fermented and matured over six months in new oak barrels, will prove to amateurs but also to professionals Romania's immense viticulture potential.

Its robe with golden shades, the intensity and grace of its perfume, dominated by honey and lemon flavors are as many invitations to a tasting that you will not easily forget.

Terra Romana Cabernet Sauvignon

with coffee flavor To be served with: venison, cheese products  Serving temperature: 19º C

Cabernet Sauvignon is the king of Bordeaux varieties, the one that is “responsible” of the most prestigious red wines in the world.

Cabernet Sauvignon has been transported in ideal temperature conditions to our wine cellar in Ceptura and processed as such as to become another proof of the quality potential of the Romanian vineyard.

Its deep color, the special general balance, the black currant and blackberries taste, linked with a coffee touch, as well as its special persistence, are making this wine the best companion for venison and cheese.

Terra Romana Milenium Rosu

Variety of grapes: Cabernet Sauvignon, Merlot, Feteasca Neagra

with soft tannins To be served with: red meat, game, strong cheese Serving temperature: 19ºC

The prestigious varieties which compose this wine (Cabernet Sauvignon and Merlot) together with the unique and vivid Feteasca Neagra (symbol of Romanian vineyards) are creating a powerful and in the same time elegant wine meant to please even the most demanding taste.

Served at 19ºC, this wine is ideal for red meat, game and strong cheese.

Terra Romana Feteasca Neagra

Variety of grapes: Feteasca Neagra Nose: forest fruits, spices with a touch of violet Taste: blackcurrant, pit of apricot, pepper To be served with: red meat Serving temperature:  19º C

This Fetească Neagra surprises through the complexity of perfumes (forest fruits and spices), the elegance of its deeply rubious robe and its very persistent taste. The qualities of this wine may already be appreciated, but they can grow further, reaching its peak by the years 2010-2011. In order to appreciate this wine at its true value, we suggest serving it after aeration at a temperature of 19º C, accompanied with sausages, red meat and even Asian menus.

Cuvee Charlotte

French cheese - Beaufort, Cedar Serving temperature: room temperature (19° C)

When we considered that our skills and expertise came to maturity, we decided to "raise" the first "domaine wine" aged in new “barrique” (225 l oak barrels). The quantities are limited (we have started with 3000 bottles in 1999 and nowadays we produce around 30.000 bottles yearly) due to the fact that the wine selection for ageing in oak barrels is very compelling.This wine has a special value to us; being the work of art of the company's owner, it has been named after Count de Poix's elder daughter, Charlotte.Even though it has the name of a young lady, CUVEE CHARLOTTE is a wine meant to age, its qualities allowing the enhancement of its expressiveness and complexity year by year.
