• 15oz can black beans, partially drained

• Salt • Vegetable oil, for frying• 12 medium shrimp, fresh

or thawed• 3 Serrano chilies, diced• 3 garlic cloves, minced• 4 corn tortillas• 2c shredded romaine

lettuce• 1 tomato, small diced• 1 avocado, small diced (or

½ c guacamole)• 1c queso fresco• Mexican crema fresca,

garnish

Directions

1. Heat beans in a small saucepan until heated through. While cooking, mash with the back of fork.

2. Season with salt to taste.

3. Set aside and keep warm.

4. Heat few tablespoons of oil in skillet.

5. Add shrimp, chilis and garlic.

6. Sautee about 5-6 minutes until shrimp is cooked through set aside.

7. Heat oil in a frying pan to 350 degrees. 8. Gently put tortilla in hot oil. 9. Fry each side for 30-45 seconds, until golden brown. 10. Place on paper towel to drain excess oil. 11. Sprinkle with pinch of salt while still hot. 12. Assemble tostadas by spreading 1-2tbsp of mashed black beans on shell. 13. Then add lettuce, 3 shrimp, tomato, avocado (or guacamole), queso fresco and drizzle of Mexican crema.
