G’day,

Welcome to the Simple Cooking Club’s first e-book. My name is

Jason and I love cooking simple amazing food and now have

over 35 years of cooking experience that I can share with you.

This e-book is all about our viewers favourite ‘recipes to im-

press’. You don’t need a lot of time, or many ingredients in my

world to make delicious food that comes alive before your very

eyes.

I first became interested in food as a young child watching my

parents turn ingredients into a lovely meal or a super yummy

dessert. That seed that was planted at a young age has now

grown into a passion. Let me share with you my passion for

food and show you it can be very easy to make some amazing

dishes.

Cooking can be a fun and interesting journey, and with this

e-book I will take you on that journey of discovery as you ama-

ze your friends and yourself with

some simple food ideas.

Bubble Gum

INGREDIENTS

» 1⁄3 Cup of Gum mix

» 3 Tablespoons of Corn syrup

» 1 Teaspoon of Glycerol

» 1⁄2 Teaspoon of Citric acid

» 2 Teaspoons of Flavorings

» 4 Drops (or as needed) Food colour

» 3⁄4 Cup of Powdered sugar

DIRECTIONS

1. In a microwave safe bowl, put gum mix, corn syrup, glycerol, citric acid, and flavoring.

2. Pop it in microwave for 60 seconds. Remove it from the microwave and give it a stir. Repeat until completely melted.

3. Add food colouring and give it a good mix.

4. On counter top, drop sugar and make a well in the middle.

5. Pour hot gum mixture in the middle. Let it rest for 3-5 minutes. Knead for 10-15 minutes.

6. Flatten and cut into pieces.

Rainbow Pinata Cake

INGREDIENTS

» 1/3 Cup plain flour

» Half a cup corn flour

» Half a cup self raising flour

» 4 Eggs

» 1 Cup of sugar

» Do this 3 times

DIRECTIONS

GETTING READY

1. Preheat oven to 180 degree C or 350 degree F.

2. In a bowl, sift plain flour, corn flour, and self rising flour. Set aside.

3. Grease three cake tins and keep aside.

MAKING

4. In a large mixing bowl, add egg, and sugar. With hand mixer on medium setting whisk for 5-6 minutes or until thick and creamy.

5. Sift flour mixture again and add 1/3 of it into the bowl. Mix to combine.

6. Add remaining flour and fold it in.

7. Pour batter equally in the prepared cake tins.

8. Pop it in oven, and bake for 25 minutes. Repeat for the other cakes.

9. Remove from oven and allow cake to cool for about 30-40 minutes.

TOPPING

» 1 Cup of cream

» 600 Grams of dark chocolate

10. Place a saucepan on medium heat, add cream and chocolate in it. Stir, and cook until chocolate melts.

11. Place all three cakes on top of one another

12. Spread ganache over the cake

13. Place M&M’s all over the cake one colour at a time

SERVING

14. Cut into slices and serve cake immediately.

Gum Drops

INGREDIENTS

» 1⁄2 Cup (8 tbs) Cold water

» 30 Grams of Unflavored gelatin

» 3⁄4 Cup of Water

» 2 Cups of Sugar

» 5 Drops of Food colouring

» 1⁄2 Teaspoon (as needed) Extract

FOR ROLLING

» 1 Cup of Sugar

FOR GREASING

» 1⁄4 Teaspoon of Cooking spray

DIRECTIONS

1. In a large bowl, mix cold water and gelatin. Set aside for 10-15 minutes.

2. In a saucepan, combine water and sugar. Bring to a boil on high flame. Turn the heat to low and simmer for 5 minutes.

3. Pour the sugar mixture into the bowl with gelatin mixture. Whisk to combine.

4. Into small bowls, divide the mixture equally, add food colour (different colour into each if desired) and extract. Mix well.

5. Into ice-cube tray or mold, spray oil and pour the mixture. Pop in fridge for at least 8 hours or overnight.

FINALISING

6. Roll each gum drop in sugar and set aside for 24 hours.

7. Serve and enjoy!

Chocolate Ice Cream Bread

INGREDIENTS

» 2 Cups softened Chocolate ice cream

» 1 1⁄2 Cups Self raising flour

DIRECTIONS

1. Preheat oven to 350 degree F or 180 degree C.

2. In a large mixing bowl, combine vanilla ice cream and flour. Mix well.

3. Into a greased baking dish, transfer the batter and bake for 35-50 minutes or until done.

4. Remove from oven and let it cool in dish for 10 minutes. Transfer to wire rack and let cool for another 5-10 minutes.

SERVING

5. Cut into slices and serve.

TIPS

If using plain or all purpose flour add 2 teaspoon of baking powder and ½ teaspoon of salt.

You can add blueberries or anything you like in the batter before baking.

Cookies & Cream Fudge

INGREDIENTS

» 550 Grams of White chocolate

» 395ml (1 can) sweetened condensed milk

» 150 Grams (1 packet) Oreo cookies

DIRECTIONS

1. Grease a baking tray/tin or line with a baking sheet or parchment paper.

2. In a large mixing bowl, combine white chocolate squares and a can of sweetened condensed milk. Pop in microwave on HIGH for 30-40 seconds. Remove from oven, stir the contents and repeat the heating process until the chocolate melts.

3. Put the oreo cookies in a sealed plastic bag and crush it into tiny bits. Add the crushed cookies to the blended contents of the bowl and mix thoroughly.

4. On the greased or lined baking tin/baking tray, transfer the mixture and spread evenly. Place it in the refrigerator for either 2 hours or overnight.

5. Once it is set, remove the tray from oven and cut into small squares.

TIPS

Store in an airtight container and can be used for almost 2 weeks.

Marshmallow Cones

INGREDIENTS

» 1 Cup of White sugar

» 1 Tablespoon of Unflavored gelatin

» 2⁄3 Cup of Water

» 1⁄2 Teaspoon of Vanilla essence

» 2 Drops of Food colouring

» 1⁄2 Teaspoon (as required) Sprinkles

DIRECTIONS

1. In a medium sized saucepan , put sugar, gelatin, and water. Mix to combine.

2. Place saucepan on flame and bring mixture to a boil.

3. Turn down the heat to low, and let it boil for 10 minutes. Do not stir.

4. Remove pan from heat, and let it cool for 10 minutes.

5. In a large mixing bowl, pour sugar mixture. Add vanilla and food color in it.

6. With mixer, blend for 10 minutes or until smooth and creamy.

7. Take ice cream cone with flat bottom. Spoon mixture in it.

8. Sprinkle some sprinkles on top, and serve immediately.

2 Ingredient Ice Cream

INGREDIENTS

» 600ml of pouring cream

» 1 Can (395ml) of sweetened condensed milk

DIRECTIONS

1. Add 600ml of whipping cream into a large mixing bowl

2. Whip it until peaks form

3. Add 1 can (395 grams) of sweetened condensed milk

4. Fold into the whipped cream

5. Add to an air tight container & place in the freezer overnight or 4-6 hours & serve

Coca-Cola Chicken

INGREDIENTS

» 4 thinly sliced Chicken breast fillets

» 350ml Coke

» 1⁄2 Cup (8 tbs) Tomato sauce

» 1⁄4 Cup (4 tbs) Bbq sauce

» 2 Tablespoons of Honey

DIRECTIONS

1. In a medium sized saucepan, place chicken fillets.

2. Add coke, tomato sauce, BBQ sauce, and honey. Stir and bring it to a boil. Cover, reduce the heat to medium and cook for 20 minutes, stirring occasionally.

3. Remove the lid, turn the heat to low and cook another for 5-10 minutes.

SERVING

4. Serve with rice and enjoy!

Banana Pancakes

INGREDIENTS

» 2 Large eggs

» 1/4 Cup of almond meal

» 1 Small to medium banana

DIRECTIONS

1. Add 2 large eggs into a mixing bowl

2. Add 1 cup of almond meal

3. Add 1 mushed up banana

4. Mix until well combined

MAKING

5. Grease a frying pan

6. Add 2-3 tablespoons of the mixture to the pan

7. Cook on high until bubbles appear

8. Flip & cook for a further 30 seconds

9. Serve & enjoy

Vanilla Bean Panna Cotta

INGREDIENTS

» 1.5 Cups of milk

» 1.5 Cups of thickened cream

» 1 Vanilla bean

» 1/2 Cup of sugar

» 1 Tablespoon of unflavoured gelatin

DIRECTIONS

1. Add 1.5 Cups of 4% milk to a saucepan

2. Then add 1.5 cups of whipping cream

3. Scrape the seeds out of one vanilla bean & then add the bean as well

4. Give it a stir

5. Turn the heat to medium & bring to a boil

6. Once it’s boiling turn off the heat & remove from the heat

7. Leave to cool for 10 minutes

8. Remove the vanilla bean

9. Add ½ Cup of sugar & turn the heat onto low

10. Mix the sugar in until it’s dissolved for about 5 minutes

11. Add a tablespoon of unflavoured gelatin & mix it through until it’s dissolved

12. Add to ramekins or small bowls & add the mixture

13. Put into the fridge for 4-6 hours or until set

14. Once set add some topping if you desire

15. Remove & enjoy

Banana Bread In A Mug

INGREDIENTS

» 3 Tablespoons of Self-raising flour

» 1 Tablespoon of White sugar

» 2 Tablespoons of Brown sugar

» 1 Egg beaten

» 1⁄4 Teaspoon of Vanilla essence

» 1 Tablespoon of Oil

» 1 Tablespoon of Milk

» 1 Small mashed Banana

DIRECTIONS

1. In a mug, combine flour, white sugar, brown sugar and mix well.

2. Add beaten egg, mix and then pour vanilla, oil, and milk. Add mashed banana and mix well.

3. Pop in microwave and cook for 2-3 minutes or until done. Check once after 90 seconds.

TIPS

If using plain or all purpose flour add ¼ teaspoon of baking powder.

Pizza Dough

INGREDIENTS

» 1 Cup of Greek yogurt

» 1-2 Cups of self-raising flour

DIRECTIONS

1. Add 1 cup of Greek yogurt & 1 cup of self raising flour & mix together & keep adding more flour until you can pick it up.

2. Place it on a flat surface & kneed for about 10 minutes while adding flour until you get a dough consistency.

3. It’s ready to use straight away or you can roll into a ball & wrap in cling wrap & leave in the fridge until you use it.

Custard Tart

INGREDIENTS

» 2.5 cups of warm milk

» 1/2 cup of sugar

» 3 Eggs

» 1 tablespoon of vanilla extract

» one tart base

» ground nutmeg

DIRECTIONS

1. Take 2.5 cups of milk, ½ cup of sugar, 3 eggs and 1 tablespoon of vanilla extract.

2. Mix well in a large bowl with a whisk.

3. Pour the mixture into two large tart bases & add to the oven once heated to 140 degrees celsius or 280 degrees fahrenheit for 45 minutes.

4. Carefully take out of the oven & place on the counter to cool for 30 minutes.

5. Add ground nutmeg to the top & then place into the fridge to set for 4-6 hours or overnight.

Sweet & Spicy Prawns

INGREDIENTS

» Coconut oil

» Teaspoon of ginger

» 2 Cloves of crushed garlic

» Green, yellow & red chili’s

» Pink himalayan salt

» Teaspoon of Tabasco

» Add 500 grams of prawns

» Add 3/4 cup of honey

» Season with pepper

DIRECTIONS

1. Add some coconut oil to a large frying pan

2. Heat for 60 seconds & then add 1 teaspoon of ginger

3. Then add 2 cloves of crushed garlic

4. Cut up the chili’s into small pieces and add them with or without the seeds. If you want it very spicy add the seeds

5. Give it a stir & then add some pink Himalayan salt

6. Add the tobasco & stir

7. Add 500 grams of peeled prawns & stir & toss for 2-3 minutes

8. Now add ¾ of a cup of honey & cook on low for a further 1-2 minutes

Chocolate Swirl Cheesecake

INGREDIENTS

BASE

» 250 Grams of cookies

» 100 Grams of melted butter

CHEESECAKE

» 750 Grams of softened cream cheese

» 400ml of thickened cream

» 1 Cup of sugar

» 100-150 Grams of melted milk chocolate

DIRECTIONS

FOR CRUST:

1. In a bowl, combine crushed Oreo and melted butter. Mix well.

2. Into a pushup base cake tin (7-9-inch), transfer the mixture, spread and press well to cover the bottom. Pop in fridge.

FOR FILLING:

3. In a large mixing bowl, combine cream cheese, cream and sugar. Mix until well combined and creamy.

4. Pour mixture on top of crust.

5. Melt chocolate and pour into the mixture. Swirl it around with a skewer or knife and pop in freezer for 4-6 hours or until totally set.

SERVING

6. Cut into wedges and serve.

Milk Chocolate

INGREDIENTS

» 75 Grams of organic cocoa butter

» 75 Grams of icing sugar

» 25 Grams of milk powder

» 30 Grams of cocoa powder

DIRECTIONS

1. Heat water in a saucepan over medium heat & place bowl or mixing bowl over the saucepan & add the cocoa butter. Once melted add the sugar & stir until dissolved.

2. Add the milk powder & cocoa powder & mix.

3. Pour into moulds & pop in the fridge to set.

Lamington Donuts

INGREDIENTS

» 190 Grams of Unsalted softened butter

» 1 Cup of Sugar

» 1 Teaspoon of Vanilla extract

» 3 Eggs

» 1 Cup of Milk

» 2 1⁄3 Cups of sifted Self-raising flour

FOR TOPPING

» 220 Grams of Dark chocolate

» 200ml of (Thickened cream) Heavy cream

» 2 Tablespoons of Desiccated coconut

DIRECTIONS

1. In a mixing bowl, combine butter and sugar. Beat until light and fluffy.

2. Beat in vanilla and then add eggs, one at a time and beat after each addition just until combined.

3. Gradually add flour (1/3 at a time, alternating with milk while beating constantly on low.

FOR TOPPING

4. In a bowl, combine chocolate and cream. Pop in microwave on HIGH for 45 seconds. Remove from oven and stir well. Pop it back into the microwave for 30 seconds and repeat the process until chocolate melts. Set aside for 10-15 minutes.

5. Into preheated greased doughnut maker, pour the batter and bake as per manual instruction.

6. Spread chocolate mixture on top of doughnuts and sprinkle coconut.

7. Serve and enjoy!

Sticky Date Pudding

INGREDIENTS

» 300ml of water

» 250 Grams of dates

» 1 Teaspoon of baking soda

» 75 Grams of butter

» 2 Eggs lightly beaten

» 1 Cup of self raising flour

» 1 Cup of brown sugar

SAUCE

» 60 Grams of butter

» 1/2 Cup of brown sugar

» 200ml of thickened or whipping cream

DIRECTIONS

1. Add water to a large saucepan & add the cut up dates.

2. Turn on the heat to medium to high & bring to a boil.

3. Turn the heat off & add 1 teaspoon of baking soda & stir in.

4. Add the butter & stir until it’s melted

5. Add the lightly beaten eggs & mix through quickly

6. Add the flour and brown sugar & mix through until it’s well combined

7. Pour into a baking tin and bake for 30-40 minutes at 180C

8. Once it’s cooked leave it to cool while you make the sauce

9. Add the butter & sugar with the cream into a saucepan. Heat on medium stirring constantly until you have a sauce.

Scrambled Eggs Cheesecake

INGREDIENTS

» 125 Grams of softened cream cheese

» 3 Eggs

» 1/2 Cup of sugar

» 1/2 Teaspoon of vanilla extract

DIRECTIONS

1. Add all the ingredients to a mixing bowl & beat on high until it’s combined

2. Add the mixture to a frying pan on high heat. Cook for a few minutes the same way you would cook scrambled eggs

2 Ingredient Chocolate Fudge

INGREDIENTS

» 450 Grams of dark chocolate

» 1 Can or 395 grams of sweetened condensed milk

DIRECTIONS

1. Add the chocolate to a microwave safe bowl. Heat on high for 45 seconds & stir. Add back for another 30 seconds on high & stir & repeat until it’s melted.

2. Add the sweetened condensed milk & mix together

3. Pour the mixture into baking tin with a push up base

4. Pop in the fridge for 1 hour & serve

Jason from the Simple Cooking Channel currently resides on the central coast of NSW, Australia. He starting making cooking videos on youtube 2010 and instantly saw the poten-tial this medium could offer. Ever since that first upload it’s been full steam ahead. With his quirky nature well ingrained in his videos he also offers something a little different and unique which people are drawn to.

In 2015 he appeared on the TV program “The Project”. In late 2011 he appeared in a major article in the Sydney Morning Herald and 2014 and was interviewed by 2UE. He has also appeared in local newspapers and been invited by youtube to be a guest speaker at a large youtube event in 2010.

Jason is a genuine home grown youtube star. Uploading 4 videos per week shows the dedication, determination & drive to remain one of Australia’s top youtube personalities.
