basedfamilyboughtacentury-oldbankbuilding in LeMars, which will be refur-bished intoan“intimate”theater intimeforeightholidayshowsinDecember.

“We’vebeentravelingandsingingfor15yearsasafamily.Wetravelfulltimeallover theU.S.,” says Shellyof herselfandherthreechildren,Michaela,AdamandAndrew.Shelly’shusband,Keith,issoundtechnician and bus driver. “We perform

during the winter in Florida.Wesingoncruiseships,andfrom Texas to PennsylvaniatoCalifornia.”

But the dream of get-ting their own theater began after thegroup performed in Branson, MO. “Weloved being in the theater and havingthesamesoundsetupandlightingeveryday,”Shellyshares.

Oncethefamilyexpressedaninterestinbuyingthebankbuildingneartheirru-ralhome,thingshappenedprettyquickly,shesays.

“It’s a wild and wonderful adventureandwe’regladtobeonit,”shelaughs.

The family has done much of therenovationthemselves—andhasdiscov-ered many historic treasures in the pro-cess. The building has a boxed ceiling,handstencilingandamarblewall,whichruns the full length of the building. “Themarblewallwascoveredinpanelingandadhesive,” Shelly laments. “We’ve beenscrapingthatoff.”Therealsoisamarblestaircase and the original bank vault inthebasement.

Thetheaterwillbeonthemainfloorand will seat about 150 people. Thegroup’sofficesandarecordingstudiowillbeonthesecondfloor,andagiftshopandmemorabiliaareawillbeinthebasement.

The Browns expect to attract tourcompanies that bring visitors to LeMarstoseetheBlueBunnyIceCreamParlor and Museum. “Le Mars getsabout 250,000 visitors a year,” Shellysays. “And we still plan to tour, we’rejust going to be a little more selec-tiveabouthowfarwetravel,whenwetravelandhowoften.”

Ham FrittataThe Italian-style omelet known as a frittata.

This is perfect for using leftover ham from Christmas dinner, or even the cheese and veggies left from your veggie and cheese platters. Make it your own by adding your favorite meats and veggies.

What You Need: • 1 dozen eggs • 1/2 cup milk • 1 pound deli ham, diced • 1/2 cup (2 ounces) shredded mozzarella cheese • 3 scallions (green onions), thinly sliced • 1 small red bell pepper, finely chopped

What To Do:Preheat oven to 400 degrees F. Coat an 8-inch square baking dish with cooking spray.

In a medium bowl, whisk eggs and milk until well combined. Add remaining ingredients; mix well.

Pour into baking dish and bake 45 to 55 minutes, or until firm in center. Allow to sit 5 minutes then cut and serve.

Turkey Frame SoupYou can add some cooked egg noodles to make this an even heartier soup

• 1 leftover turkey frame • 12 cups chicken broth • Leftover pan drippings, if available • 2 to 3 carrots, peeled and cut into 1-inch chunks • 2 to 3 celery stalks, cut into 1-inch chunks • 2 onions, peeled and cut into 1-inch chunks • 2 teaspoons salt • 1/2 teaspoon black pepper • 2 to 3 cups leftover chunked turkey

What To Do:In a soup pot, combine all ingredients except the turkey. Bring to a boil over high heat, reduce heat to low, then simmer 1-1/2 to 2 hours.

Stir in the turkey, let simmer 10 min-utes, then serve.

Tempting-Turkey TetrazziniDon’t think that you have to roast a whole turkey to get the cooked tur-key to make this. Uh uh. Simply buy a 1-pound chunk in the deli and cut it up yourself.

What You Need: • 8 ounces uncooked spaghetti • 1 3/4 cups chicken broth • 8 ounces fresh mushrooms, sliced (about 3 cups) • 2 cups low-fat milk • 3 tablespoons cornstarch • 1/4 cup dry white wine or water • 1/2 teaspoon salt • 1/2 teaspoon black pepper • 3 cups coarsely chopped cooked turkey breast (about 1 pound) • 1/4 cup Italian-style breadcrumbs

Preheat oven to 375 degrees F. Coat a 9- x 13-inch dish with cooking spray

Cook spaghetti according to package directions; drain and set aside.

In a large saucepan, bring broth to a boil over medium-high heat. Stir in mushrooms then reduce heat to me-dium-low and simmer 4 to 5 minutes, or until mushrooms are tender. Stir in milk.

In a small cup, combine cornstarch and wine, and stir until smooth; slowly pour into mushroom mixture. Increase heat to medium and bring to a boil, stirring constantly.

Remove from heat and stir in salt, pepper, and turkey. Add spaghetti and toss until well coated. Spoon spaghetti mixture into prepared baking dish and sprinkle evenly with bread crumbs.

Bake 20 to 25 minutes, or until golden and bubbly.

Easy Dinner PieSmashed Potatoes are perfect in this recipe. They add great color and flavor.

• 1 pound fresh ground chicken • 1 teaspoon dried dill • 1 teaspoon salt • 1/2 teaspoon white pepper • 2 cups seasoned mashed potatoes • 1/2 teaspoon paprika

What To Do:Preheat oven to 350 degrees F.

In large bowl, combine chicken, dillweed, salt, and white pepper; mix well.

Form a ring of chicken mixture around the edge of a 9-inch deep dish pie plate. Place cooked mashed potatoes in center of chicken ring. Sprinkle paprika over po-tatoes and bake 30 minutes.

Cut into serving-sized wedges and serve hot.

• 1 cup packed brown sugar • 1/2 cup vegetable shortening • 1 egg • 1 teaspoon almond extract • 1/2 cup semisweet chocolate chips, melted • 1/2 cup unseasoned mashed potatoes, at room temperature • 1 1/2 cups all-purpose flour • 1/2 teaspoon salt • 1/2 teaspoon baking soda • 1/4 cup milk • 1/2 cup chopped walnuts or pecans • 1 (16-ounce) container chocolate fudge frosting • 1/4 cup nonpareil candies

What To Do:Preheat oven to 400 degrees F. Coat baking sheets with cooking spray.In a large bowl, cream together brown sugar and shortening until light and fluffy. Beat in egg and almond extract, mixing well. Add melted chocolate and mashed potatoes, beating until smooth.

In a small bowl, combine flour, salt, and baking soda. Alternately add flour mixture and milk to brown sugar mixure, stirring until smooth. Mix in nuts. Drop by rounded teaspoonfuls 2 inches apart onto pre-pared baking sheets.

Bake 10 minutes, or until cookies spring back when touched lightly with a finger. Remove cookies from oven and wait 2 minutes before re-moving to a wire rack to cool slightly. Frost warm cookies and sprinkle with nonpareils.

ness, and uninvited illness. Octobermarked the beginning of a new “fluseason,”whichtypicallypeaksinJanu-ary. Doctors nationwide have pre-paredforanothertoughbattlewiththevirus.

The South Dakota Department ofHealth reports that, last year alone,therewereover1,700confirmedcasesof influenza in South Dakota, resultingin793hospitalizationsand63deaths.The Centers for Disease Control andPrevention points to influenza, alongwith the accompanying complica-tionsof the illness,as theeighth lead-ingcauseofdeathintheUS.Itisalso,quitepossibly,themostpreventable.

Dr. Jennifer Nelson with MidwestFamily Care says the most effectivemeans of prevention is through vac-cination, either through the intramus-cular shot or nasal mist. Contrary tocommon myths, Dr. Nelson says thevaccine does not cause influenza.“Themististheonlyformthatcontainslivestrains,”sheexplains,“butthatlivestrain isveryweak.”Theshotcontainsno live virus particles. And while lastyear’svaccinemayhavegarneredill-rapportwithonly19percentestimat-ed effectiveness, Dr. Nelson says thisyear’svaccineisreportedtobe“spoton” with the strains that have beenconfirmedthusfar.

In addition to the vaccination, Dr.Nelson says effective precaution-ary measures include frequent handwashing, coughing or sneezing intoyoursleeveasopposedtoyourhand,andavoidingsharedfoodsandbev-erages.“It’salsoalwaysagoodideato take care of your general healththroughadequate rest,eatingabal-anced diet, and maintaining hydra-tion,”Dr.Nelsonsays.

Whileinfluenzacannotbeself-diag-nosed, common symptoms includefever,cough,sorethroat,bodyaches,and fatigue. The common cold cancarry similar symptoms; however, in-fluenzaisoftenmarkedwithasuddenonsetof symptoms.Medication,onlyavailable through prescription, canhelp reduce symptomswhenprovid-edwithin48hoursofinfluenza’sonset.

If you or a family member doescontract influenza,Dr.Nelsonfirstad-visesstayinghometoavoidspreadingtheillness.“Workandschoolcanwait,”shesays.“Andalwaystrytobeespe-ciallyconsideratetothosewithweak-ened immunesystems,or thosewhocannot otherwise be vaccinated.”Withinyourownhome,Dr.Nelsonsug-gests disinfecting surfaces and door-knobs,alongwithkeepingtheillawayfromtherestofthefamilyasmuchaspossible,tohelpcontaintheInfluenzavirus.

Christmas2009, BettyOttenhada lot tocelebrate.Shewasa57-year-oldbreastcancersurvivor,surround-edbyfamily,rejoicingintheholidaysintheirruralhomesouthofTea,SD.

Afterhavingadoublemastectomyearlier thatyear,she was told she could experience some aches andpains.

“SowhenIbeganhavingahot,sharp,continuingpaininmyupperleftarm,Iassumeditwasrelatedtothesur-gery,” Betty recalls. “I did have some fleeting thoughtsthatitmightbeaheartattack,butwewereinthemiddleofapowerfulblizzard,whichmadeleavingourhomeanimpossibility.IwasforcedtostaywhereIwasandtriedtorelievethepain.”

However, the reprieve didn’t last. “On Sept. 19,2014, we found out the cancer came back, with avengeance. It had spread to my bones and liver…extensively. I was immediately scheduled for infusionchemotherapyagain.Six treatments is themost that Icouldhavebecauseanymorewouldbe too toxic tomysystemandcould/wouldlikelycauseheartdamage.Imadeittoroundfive,whenIhadanallergicreactiontothechemothatsentmetothehospitalforsixdays.”

Finding an alternative therapy was no longer achoice for Sharon, but a necessity. The only problemwasthattheoraltherapyhadan$11,000pricetagthatwasn’t covered as a medical treatment by her insur-ancecompany.

“Initially my insurance company didn’t want to ap-prove coverage for this treatment. We were givenseveral excuses, that it was ‘toonew,’ ‘tooexpensive.’Ironically, it cost about the same as my infusion che-motherapy I had been taking. After tireless efforts bya Sanford pharmacist and a Pfizer representative, wegotcoverageaboutamonthlater.SinceIcantakethedrugathome,Ispendlesstimeinthechemochairatthecancerinfusioncenter.It’slesstoxicthanotherche-motherapiesandhasfarlesssideeffects.MylatestPETscansaid‘nearcompleteresolutionofmetastaticliverdisease.’Thereisalsofarlesscancerinmybones.”

Raised on a farm near Ivanhoe,MN,Nikkisaysstrongfamilyvaluesandagoodworkethicwenthandinhand:“There was always something to bedoneonthefarmandweweretaughttotakeprideinourwork.”

Thetenetshaveenduredintoadult-hood for Nikki, as well as for her twoolderbrothersandyoungersister.“Weall have chosen careers based onservice-oriented partnerships with thecommunity,”shesays.

NikkireceivedherdegreeinJusticeAdministration fromSouthwestMinne-sota State University in Marshall, MN,whichtranslatedwellintoherworkasajuvenileparoleagentinSouthDakota.“IlovedmyjobworkingwithkidsandIdidn’tseemyselfdoinganythingelse.”

However, in 2008, after some en-couragement from friends and Jer-emy, Nikki became the Airman andFamilyProgramManagerattheSouthDakota Air National Guard, and herpassion for family continues to be agoodcareerfit.

“One thing that I want people toknow is I have a strong passion forfamily and for our service membersandveterans.That’swhatdrivesmetodomyjobonadailybasis,”saysNikki,whoalsoisboardchairfortheAmeri-can Red Cross serving Eastern SouthDakota.

WiththeAirGuard,Nikkihelpsservicemembersandveteransnavigate through available entitlement services and benefitsprogramsinadditiontocoordinatingmoraleactivitiesforthemandtheirfamilies.

“Alotofwhatwedorelatestofamily,”saysNikki,whoprovidessupportandresourcestothevolunteermembersoftheFamilyVolunteerGroupastheyorganizeholidayparties,tripstobase-ball games, and shopping excursions. “We try to encompassandsupportthosequality-of-lifeissues.”

ShesayssheoftensurveysservicemembersduringAirGuardweekendstofindoutwhattheyneedbecause“we’velearnedthattakingcareoffamiliesmakesthemissiongobetter.”

Shereliesonherupbringingwhenitcomestothechallengesofher jobtoo.“Everydaywedealwithpeoplewhodon’tfullyunderstandtheirbenefits.Thatisachallenge,”shesays.

Nikki’sRedCross leadershipposi-tioncarriesavisionofbuilding resil-ient communities. The Red Cross ismorethanjustblooddrives,shesays.Its mission is to prevent and allevi-ate human suffering in the face ofemergenciesandalwaysbethereintimesofneed,whichmight includesupporting military members; help-ing communities prepare, respondandrecoverfromdisasters;teachinghands-onlyCPR;orprovidingsupportin189countries.

Outsideofwork,Nikkistrivestokeepher husband and children central inher own life. “We don’t live the tradi-tional 8-to-5 life. That is hard on ourfamily,”shesays.“Butwearesuccess-fulindoingthatbecauseourchildrensee our relationship and how we stillshowourloveandaffectionforeachother.”

Nikki and Jeremy met in collegeand have three children: daughterKyra,age12,andsonsJaden,age9,andRyker,age4.

“Manyofouractivitieshaveanout-door focus,” Nikki says of her family,who lives inDellRapids. “Icoachmydaughter’syouthsoftballteamduringthesummerandIalsolovetoplay.”

Shesaysshehasalways likedath-letics, but about nine years ago shestartedtorealizethatbeingactivewaswhatsheneededinherlife.“Ipumpeditupandstartedplayingmoresports.”

“I’mabigworkoutpersontorelievethestressoftheday,”shesays.Goalsarealsoimportant,Nikkisays.“WhenIdosomething, Isetagoal formyselftowork towardandthen Iget toseeresultsattheend.”

Ultimately,thoseresultsstretchfromhometowork tocommunity.Sheex-plains: “Ihavebeenblessed tohaveextremelysupportivefamilymemberswhocontinue topushmeeachday.Myparents,myhusband,andmychil-drenaremyrocksanddrivemetobebetter, which ultimately allows me tobetterserveourmilitarymembersandthecommunity.”

accumulate over time, so she decidedto change the stress into a passion fordesigning photo books to preserve thephotosandthememoriesbehindthem.

She launched Photobooks by Ari thissummer.Thebusinessisnamedafterherdaughter,Arabella.

Wendy designs photo books and of-fers photo organization as well as cus-tomizedspecialtycardsforholidaysandspecialoccasions.

Clientshavemanyoptionstochoosefromtocreatetheirownphotobook.TheprocessbeginsbyfirstmeetingwithWen-dy,preferablyinperson.
