The Wildfire Sommelier team invites you to enjoy a selection of some of our finest Red wines which are seldom available by the glass, thanks to our new state-of-the-art Enomatic wine preservation system. Enomatic’s preservation technology protects the wine from oxidation, allowing wines to be served by the glass that taste like the bottle has just been opened. In addition to this, the wines are stored at a consistent 16°C which is perfect for red wine.

GRENACHE BLANC

The white form of the dark skinned grape Grenache. It originated in Spain and still plays a small role in the wines of Rioja and Navarra. From Spain it spread to France and thrived in the vineyards of the Rhone Valley. In Chateauneuf-du-Pape it is blended to balance out Roussanne and Marsanne. Grenache Blanc produces wines that are high in alcohol, with moderate acidity. Aromatics range from rich pineapple, orange blossom, honey and almond with clean apple flavours and stone like minerality. 2009 Mas de Bressards (grenache blanc/rousanne) Costieres, FRANCE 68

WHITE BURGUNDY, FRANCE

CHABLIS Chablis, located at the northern tip of Burgundy is the chardonnay growing appellation known for its wonderfully pure and classic white wines. Characterised by stone, minerals, steel and smoke, representative of the marly limestone of which the soil lies. These wines finish with snappy lemon acidity. Classic Chablis is unoaked. 2009 Denis Pommier Petit Chablis AC 77

RED BORDEAUX, FRANCE

Bordeaux has a number of distinctive grape varieties, but mostly these varieties are combined in blends. The varieties used in the wines listed here are Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. Bordeaux is divided into two banks ‘Left’ and ‘Right’. On the Left bank the wines are generally made predominantly from Cabernet Sauvignon and on the Right bank predominantly Merlot. The great red wines of this region have the capability to age for decades.

Produced from Syrah but may be influenced with the white grape Viognier by up to 20% but in most cases never more than 5%. PIEDMONT

DOLCETTO Widely grown in Piedmont, the name means ‘little sweet one’, although nearly always is a dry wine. Dolcetto is quite juicy, robust and fruity with notes of blueberry. Has a bitter savoury edge. Dolcetto is fast maturing making them ready for immeditate drinking.

2007 Punset Dolcetto d’Alba 98

BARBERA Barbera has a similar flavour profile to Cabernet Sauvignon, but retains higher acid levels – making them excellent matches to full flavoured foods. Tannins are soft and is often blended.

2009 Punset Barbera d’Alba 98

BAROLO Many claim it to be the ‘king of wines’ and the ‘wine of kings’. The wines produded are from the Nebbiolo grape variety. Characterised as robust, full bodied and very dry. It's high in acidity, alcohol and tannic. The aroma is similar to ripe strawberries, tar, roses, violets and truffles. With age these wines mellow and are bewildering!

BARBARESCO Barbaresco is produced just outside Alba. The wines produced, like Barolo, are made from the Nebbiolo grape and are rich and powerful, but NOT as powerful as the wines of Barolo. The wines of Barbaresco are more elegant and graceful than those of Barolo, making Barbaresco somewhat more approchable in their youth. The best examples will age well over twenty years. Which ever you choose, Barolo or Barbaresco – both styles are extraordinary!

VENETO The red wines from this area are ‘generally’ blended from the three red grapes - Corvina, Rondinella and Molinara. In classic Valpolicella the wines are driven by red cherry fruit with pepper and spice. Amarone della Valpolicella is where grapes are dried for up to three months before pressing and produces wines that are stronger, more age worthy and show a sweet cherry port like character with a bitter chocolate edge.

MARCHE Montepulciano, a type of wine grape as well as a type of wine, fruity and dry with soft elegant tannins. Not to be confused with Vino Nobile di Montepulciano, a Tuscan wine made from Sangiovese.

2001 Il Pollenza Cabernet Sauvignon/Cabernet Franc/Merlot 175

TUSCANY CHIANTI Without a doubt Italy’s most famous red wine, used to be easily recognised by its straw encased bottle basket. These days modern Chianti is bottled in the traditionally shaped wine bottles. A remarkable improvement in quality and the removal of white grapes in its blends, together with the replanting of vineyards and lower yields has turned Chianti into a concentrated, fruit driven wine with long term aging potential. Made predominantly from Sangiovese.

BRUNELLO DI MONTALCINO Brunello di Montalcino, red wine produced in the surrounding vineyards of Montalicino. Brunello, the local name for Sangiovese, one of the best known and most expensive wines of Italy. These wines are a pleasure to drink – tannic, ripe cherry fruit and ultra smooth. Excellent with lamb, grilled meats and hard cheeses

Italy’s first Super Tuscan was ‘Tignanello’. These wines are generally blends of Cabernet, Merlot and/or Sangiovese. These wines have gained world wide recognition for their rarity and outstanding quality. Please ask your Sommelier for assistance in choosing one of these very special wines.

WILDFIRE AGED, RARE + ‘CULT’ SHIRAZ

We are extremely proud to present the pinnacle that Australia has to offer, lovers of truly great

Shiraz. Listed are a selection of back vintage wines ‘in exceptional condition’, wines that hold

outstanding records in the wine show system, and wines that hold cult status within the wine

market, that is mostly driven by influential wine writers and American and Asian wine buyers.

The wines listed here are made in miniscule amounts, hence their rarity and in some cases cult

status. Australia boasts the oldest Shiraz vines in the world, dating back to the 1860’s, and it is

with these vineyards that allow Australian winemakers to produce wines of incredible flavour,

texture and length.
