Spanish Omelette

1.- Peel the potatoes and cut it in fine slices or into small dices. Put salt2.- Peel and chop the onion into slices and mix with potatoes.

3.- In a large, non-stick frying pan, heat the olive oil on medium high heat. Place the potato and onion into the frying pan. The oil should almost cover the potatoes. You may need to turn down the heat slightly, so the potatoes do not burn.4.- Crack the eggs into a large mixing bowl and beat by hand.

5.- Stir carefully and when the potatoes are tender, remove them with a slotted spoon, to drain the oil.6.- Pour the potato and onion into the bowl with eggs and mix them.7.- Remove all the oil from the pan and pour the mixture of potatoes, onions and eggs.

SANGRÍA

It is a very famous sweet alcoholic Spanish drink. • Ingredients:• - Red wine (1 liter)• - Orange juice (1 liter)• - Fruit bits (orange, peach, apple, pineapple, banana,…)• - Sugar (1/4 kilo)• - A stick of cinnamon• - Ice

Preparation:

1.- Mix wine and juice in equal parts, or changing proportions according to the taste that you want to give.

2.- Add sugar and stir. Keep in mind that too much sugar can cause a more pronounced effect of alcohol, so use sparingly.

3.- Pour the fruit pieces and marinate for half an hour, so that they release some juice. The fruit is not skinned, only bananas and pineapple. Incorporate a stick of cinnamon.

4.- Add ice, wait for it to cool, garnish with an orange peel, and serve.

Tips and tricks:

• - For an especially sweet sangria, use a can of fruit in syrup

• - For a especially strong sangria, add a dash of some liquor (Cointreau, cava,…)

• - The orange juice can be substituted by lemon juice, or carbonated drinks with these flavors.
