No basting is included.Advise the customer that if they cut the meat into blocks, it is easier, and cooks faster.Watch out for guests ordering Hot rocks. They do not understand what they are about to receive. Explain that it is raw meat, and that they will have to grill it at the table.

HOT ROCKS – STUDY NOTESRemember that this concept is unique to SPURS - no one else has it in South Africa. It is important for us to note a few points concerning the hot rock. WHAT IS THE HOT ROCK?

The Hot Rock concept allows customers to cook food at their table using a tray which has a very hot tile on it, a baked potato a portion of chips, a portion of fried onions & chopped parsley. The meat cuts will be the best quality available and trimmed of all fat. The fat may cause excess smoke when cooked. The meat on the Hot Rocks will be cut thicker, allowing the customer enough space on the tile to slice his steak. All meat products go to the table unseasoned. When serving the Hot Rock, the customer has a choice of two free sauces.

THIS IS HOW IT HAPPENS:The tiles are preheated to a very high temperature in an oven. These tiles are incidentally lead free and therefore non-toxic. The pizza/calamari or grill section will receive your order as standard, “coming off nothing, followed by going on 1 Hot Rock fillet.” You will be handed a tray on which you will place a baked potato, or a portion of onions and chips if specified.The tile will be sprinkled with salt or olive oil, not grill seasoning. We want to offer an entirely new taste. The salt prevents the meat from sticking and brings out the flavour. The meat is placed on the section between the chips and the hot tile. You then move to the table as quickly and as carefully as possible. Do not pass the Hot rock to the customer, whenever possible, place the Hot Rock yourself to avoid accidents. Always carry the Hot Rock with both hands.Tell the customer that it is dangerous to let their fork lie on the hot rock tile. The heat from the Hot Rock tile is conducted down the handle of the fork and the customer will burn his hand if he tries to pick up the fork once again.

Other important points to note are:-Tell the customer not to pour his sauces (especially Tobasco or Pepper) onto the Hot Rock as it causes excess smoke.Replace the tile if it cools down before the customer has finished his meal. (Trainer to advise on procedure).
