Heat the oil in a large frying pan with a flameproof handle then add the chopped onions and crushedgarlic and fry gently until they have softened.

Put the spinach in a colander and pour over boiling water. The spinach will wilt and turn dark green.Drain it very well, then add to the pan. Stir in the potato pieces.

Beat the eggs in a bowl with a splash of milk, the grated cheese, a pinch of salt and a twist of pepper.Pour the egg mixture into the frying pan with the spinach and give one stir to mix everything together.

Cook over a low heat until the eggs are starting to set.Meanwhile turn on the grill to a medium heat. Once the grill is hot and the eggs are almost set pop thepan under the grill to cook the top. Slide the frittata out of the pan onto a serving plate, taking care as

the handle may be hot, and slice into wedges. Delicious served hot or with a leafy salad.

Serves 4.1 tablespoon of olive oil

3 spring onions, finely chopped150g Cornish baby spinach leaves

1 clove of garlic, crushed500g cooked Cornish new potatoes, roughly chopped

4 large free range eggsa splash of milk

50g Davidstow cheddar cheese, grated

A really simple spinach frittata -perfect for taking on a picnic to a beautiful Cornish beach.

This celebrates Cornish summer ingredients and is at its very best when made at this time of year. Thetricks to a good frittata are to keep the heat low - if the hob is too hot the bottom will burn before themiddle is set and not to stir it so that it sets and holds its shape. This is a versatile recipe too - add

some chopped red chilli, fresh herbs - chives are great or crumble over some goats cheese.

The home of St Buryan Beef is Toldavas farm. The farm is run by Richard and Morwenna whohave two young sons: Cadan and Harvey, Richards dad Roger is semi retired and now takesa back seat.Attending St Buryan Farmers’ Market (2nd and 4th Saturdays each month) they also selldirect from the farm - it’s a good idea to call first. Morwenna has a range of home-made beefproducts for sale including: sausages, burgers, pies and prize winning pasties -as featured inITVs Food Glorious Food in 2013 using home grown produce.

Being vegetarians, we asked Stuart’s parents to sample some beef for us: “ I can’t rememberever tasting better” was his fathers reply and his mother said “it was superb, very lean andtender. Also delicious served cold with salad, made fabulous roast beef sandwiches. Verymore-ish.” His brother agreed adding: it was “nicely aged, a good colour, with a lovely flavour.”

Unlike supermarket beef, the beef is 'hung' for 14 days increasing tenderness, flavour and giving it that 'melt in the mouth'appeal. The cattle are all from beef breeds and have greater marbling of meat, giving better quality and flavour. Grazed onthe Peninsula for as long as the Cornish climate allows. Housed for just a few months during winter when they are fed onhome grown forage, cereals and non GM pulses. Paramount to animal welfare and affecting flavour the cattle only travel a5 mile journey to St Just to their small scale butcher.The farm is accredited with The Red Tractor Farm assurance guaranteeing provenance of the beef and a high welfare ofthe animals. Morwenna is a member of the “ladies in beef”, who champion Red Tractor beef. She feels very strongly aboutbuying British and local produce whenever possible.Morwenna’s own favourite cut of meat is chuck steak as it is “so versatile and is very economical: it can be used in stews,pies and pasties, curries, even on the barbecue if it's been marinated and has a very rich flavour”. Her favourite steak is amedium cooked Rib eye.

Since June, and the birth of Harvey, Morwenna has slowed the work load down a bit but she is now planning to take onanother farmers’ market: returning to St Ives Farmers’ Market for the summer.Just before going to press we received feed back from Suzanne Dellamuro, who won a box of beef in the “Best of West”winter edition competition. Suzanne wrote: “The beef was fantastic, totally melt in the mouth and very tasty. I have to say ahuge thank you to Morwenna Bone. AprilHard prune shrubs that produce their best flowers on vigorous new growth likebuddleja. Prune spring flowering shrubs over three years old once they havefinished flowering. Start regular, frequent mowing of the lawn, encouraging densegrowth. Place supports in position for border perennials so plants will grow throughand cover them. Many seeds are due for sowing this month, some directly intoopen ground. Plant out hanging baskets but keep frost free. Weeding starts inearnest.

MaySow fast maturing and late flowering seeds and thin out your seedlings from April’ssowing. Water and feed your plants if necessary. Cut lawns with naturalised bulbsgrowing in them. Prune spring flowering clematis. Harden off summer beddingplants. Finish planting of permanent containers so the plants can establishthemselves during summer. Dead head spring flowering bulbs.

Established in 1969, Slimming World is the largest weight-loss organisation in the UK, with over 10,000groups held on a weekly basis. It’s ethos of eating as much wholesome, healthy food as you want, haslead to this success: with no weighing, measuring or calculating. I met Susie and her group at Marazion Community Centre. They were warm and friendly and felt veryat ease with one another. There were men and women of all ages and at varying stages of weight-loss.Susie’s ethos is “100% Slimming, 100% Group.” Tips and ideas are shared, individuals set their ownweight-loss targets for the following week, and various awards and prizes are given. This Easter, why not make your own chocolate eggs, goodies, or gourmet bars. Letyour imagination run wild; not only will they be less expensive but you can put innatural organic tasty ingredients. Using favourite ingredients to personalise and makeextra special for a loved one.

Whether using basic moulds, Easter moulds or letting cool on a marble slab. Youcan flavour the chocolate, use different types of chocolate and pour over (or placeon before setting as above) a layer of dried fruits, nuts, sweets …It a fun thing to doduring the school holidays. Last year our son made some white and milk chocolatemix eggs and rabbits with raisins and chopped nuts. If using dark chocolate don’t

use over 70% cocoa solids.

Tempering your chocolate gives a shiny attrac-tive coating. Here is a simple way to “temperchocolate”: Use at least 400g of chocolate prefer-ably use a chocolate thermometer. They're notvery expensive and they will make it easier totemper chocolate accurately. If you don't have acooking thermometer, dip the crook of your littlefinger in the chocolate – if it's barely warm,you're doing fine.

Chop your chocolate into even sized portions puttwo-thirds of it in a heatproof bowl. Heat 5cm(2in) water in a pan and pop the bowl on top ofthe pan, making sure that the bottom of the bowlis not touching the water. Allow the chocolate toslowly melt.

When it has turned to liquid, turn off the heat,remove the bowl from the pan and wrap a clean

tea towel round the base to keep it warm. Add the remaining chopped chocolate,pop the thermometer in and stir the chocolate until it reaches 31–32C (88–90F) fordark chocolate, 30–31C (86–88F) for milk chocolate and 27–28C (80–82F) for whitechocolate. Don’t let it get above 91° F (32ºC) or you’ll have to begin the process allover again. If it drops below the temperatures, warm it gently to bring it back up.Once all the chocolate has melted it is ready to be poured into your moulds.Then the best bit… ENJOY.

John Brolly interviewsSimon Allison

1) Tell me a bit about yourself? My name is Simon Allison and I live in St Ives. Iam founder of the organisation ‘Get Out There’ (GOT) and coordinator of ‘GetOut There Cornwall’. It will be our 5th anniversary in May. We are supported bythe National charity for Deafblindness, Sense.

2) What kind of work does GOT do? We provide activities for young peoplewho have significant sight impairments and additional complex needs. Thisenables parents to enjoy some time to themselves and with other familymembers.

3 )How many members do you have in the Cornwall group and what sort ofactivities do the young people take part in? Presently we have twenty sixunder 18’s and fourteen over 18’s in our new GOT plus group. Despite thecomplexity of the needs there is a ‘can do’ approach in the group. Activitiesinclude horse riding, canoeing, sailing, surfing, archery and power kiting.

4) How are the young people supported during activities? By our excellent team of trained volunteers.Each young person has one to one support which ensures that everyone is included during activities. Ourvolunteers are all ages and come from many backgrounds. GOT is like a big family and new volunteers arealways very welcome

5) Any amusing stories to tell about GOT? I had an enquiry from a potential funder and invited him tocome along and meet the group. I emailed a copy of our newsletter which gives information on activities.One activity included a visit to the Maritime museum in Falmouth. The funder confirmed he would like to joinus at the museum. He travelled by train from London and we picked him up from Truro station in theminibus. On arrival he said he was looking forward to the activity and thought it was fantastic that Cornwallhad a museum entirely dedicated to ‘marmite’ !

6) Are you involved in any other projects? Yes, I am the lead for the Deafblind International YouthNetwork. The project links Deafblind young people from around the world. We have a team of CountryCoordinators from places such as New Zealand, Canada, Iceland, Malawi, Argentina, Brazil and Norway.The Network plans an International conference next year and at the moment we are putting together acollection of ‘testimonies’ produced by young Deafblind people.

7) Do you get to travel much in this role? I do, however the internet is a wonderful way of communicatingwithout the air miles! One of my favourite countries is Romania. They have some excellent projects foryoung Deafblind people. Romania will host the next Deafblind International world conference in 2015

8) Finally what do you enjoy most about living in Cornwall? The coast is very varied and I really enjoysurfing as a form of relaxation. My wife Emma is Cornish and she knows lots of places that are off thebeaten track. As a ‘Northerner’ people assume I am on holiday and are quite surprised when I say I livehere.
