I N G R E D I E N T S1 pkg Sysco® Classic Potato Pearls® EXCEL® Mashed Potatoes1/2 lb Cream cheese, cut in small cubes 1 tsp Garlic powder1 c Milk1 1/2 c Sour cream3 qt Water + 3 c water, hot (170-190̊ F) 3 c Caramelized onions2 c Gruyere cheese, grated
P R E P A R AT I O N
1. Stir together one package of Sysco® Classic Potato Pearls® EXCEL® Mashed Potatoes, cream cheese and garlic powder in a 4-inch deep, half-size steamtable pan.
2. Whisk together milk, sour cream and hot water in a large pitcher. Pour over Potato Pearls® mixture, stir 15-20 sec. until cheese is melted.
3. Set for 5 min., fluff with fork. Heat conventional oven to 350̊ F.
4. Place 40, 8-oz, oven-proof ramekins on parchment-lined sheet pans. Scoop half-cup prepared mashed potatoes into each ramekin and top with 1/2 oz caramelized onions and 1/2 oz Gruyere cheese.
5. Bake until cheese has melted and turned deep golden brown, about 25 min. Serve immediately.

P R E P A R AT I O N
1. Heat oven to 400̊ F.
2. Place Potato Pearls® EXCEL® Sweet Potatoes, butter, dried cranberries and ginger into a 2 1/2-inch, half-steamtable pan.
3. Combine hot water and orange juice concentrate. Pour over sweet potatoes stirring from corner to corner in a figure 8 motion. Let rest for 5 min. in steamtable.
4. Stir cranberries, sugar and water in a small bowl until sugar has dissolved and cranberries are evenly coated. Spread cranberry-sugar mixture evenly on top of sweet potatoes.
5. Bake, covered, until cranberries have popped, about 30 min. Place on steamtable until ready to serve.
