Sunshine Omelette
INGREDIENTS
3 eggs
1/2 cup of black beans
1/2 cup of frozen corn
1/2 cup of frozen peas
1 leaf of kale
1/8 of an onion
1/2 a green or red bell pepper
Macadamia or olive oil
DIRECTIONS
1. Defrost and drain peas and corn
2. Heat oil in large frypan
3. Chop the onion, kale and pepper,
4. Add the onion, kale and pepper, corn and peas and stir/saut until the onion starts to change color.
5. Remove vegetables from pan and set aside
6. Whisk eggs until thoroughly mixed through
7. Pour egg mixture into frypan on medium heat
8. When bottom of eggs are firm (check by turning a corner) pour eggs and vegetables on top of mixture
then flip one half on top of other for classic omelette shape
9. Serve immediately with salt and pepper to taste
Notes
* add shredded cook meat for extra protein
* try asparagus and other vegetables as a filling
* Can be eaten at room temperature
* Add garlic, herbs for extra taste
