Ingredients A drizzle of olive oil 1/2 an onion, diced 1 very large sweet potato or 2 small (peeled and diced) 1/2 can of tomato sauce or 1/2 can of diced tomatoes 1 cup of low-sodium chicken stock or chicken broth 1 cup of water Optional: 1/4 cup of milk Salt and pepper Chopped cilantro for garnish Instructions 1. Heat oil in a large pot over medium heat. Add sweet potatoes and onions. Cook until soft and golden, about 10 minutes. 2. Add tomatoes, stock /broth, and water. 3. Cover and bring to a slow boil then reduce heat, and simmer for 20 minutes. 4. Transfer the soup to a blender, and puree until smooth. Add milk to reach desired consistency (optional). Pour the soup back into the pot and reheat. 5. Ladle the soup into bowls, top with cilantro ( optional) and serve.
