    Sediment – Dirt and other suspended particulate matter.

    Taste & Odor – Caused by chlorine and other chemicals.

    Scale – the #1 water-related equipment problem, caused by dissolved hardness minerals. It is important that the system you choose includes the right technology to protect your equipment against water ‘hardness’. Equipment most susceptible to scale problems include:

    Combi Ovens – Steamers – Ice Makers – Espresso Machines Coffee & Tea Brewers – Hot Water Dispensers

    Taste and Odor – caused primarily by chlorine and a range of organic substances can ruin beverage quality and consistency. It is important that the system you choose deals with taste and odor reduction. Equipment most susceptible to these problems include:

    Fountain Beverages – Ice Makers – Drinking Water Coffee & Tea Brewers – Espresso Machines

    As described above, most water-related problems are caused by two basic characteristics:

    1. A tendency to form scale – impact on equipment operating efficiency and condition.

    2. An offensive taste or odor – impact on beverage quality.

    A common cause of taste and odor is ‘chlorine’ and its by-products. Scale comes from naturally occurring minerals in the water commonly referred to as ‘water hardness’. It is essential to understand the chemical characteristics of your water to select the best treatment technology for an application and avoid expensive water-related equipment problems. You may be already familiar with the characteristics of your water, but if not, here are a couple of simple ways to learn about it:

    Contact your water company and ask for the most recent water quality report. OptiPure can provide a complete water analysis through an independent laboratory.

    Water treatment is not a mystery – Virtually all water treatment systems for food service applications utilize one or more of five basic water treatment technologies. The challenge is to choose the right technologies to deal with particular contaminants in order to create a desired result.

    OptiPure offers a choice of system styles to meet any need. Description of systems on page 5

    FX = “Drop-In” QT = “Quick-Twist”

    Go to your ‘application’ in the catalog and select the system that meets your requirements.

    System recommendations are based on typical water usage for a six-month period between filter changes. Formulas for calculating your actual water usage are provided for most applications. NOTE: Different OptiPure technologies may be recommended for the same general application (e.g. “Steam”), because of differences in steam equipment

    design. The amount of hardness minerals in the water can also influence system selection. Detailed information about specific equipment applications such as Ice

    Makers, Combi Ovens, Espresso Machines and Combination Systems are available at the OptiPure website.

    Additional important information listed for each system to help you with your selection includes: — Rated Capacity (Gallons or Liters) — System Flow Rate — Replacement Cartridges

    Confirm your choice of systems by answering two final questions:

    1. Are the right technologies applied for each application?2. Will the system capacity meet or exceed the actual water usage for the period between filter changes?

    Water chemistry is complex, and there are many chemical interactions that can influence quality.

    Mechanical FiltrationOften referred to as “pre” or “sediment” filters, mechanical filters are designed to trap and hold particulate matter (not dissolved) in water down to a specific size or micron. Various FX and QT filtration systems include a pre-filter to protect primary filters against premature plugging on water sources with excessive dirt and sediment. Pre-filtration systems are also available for applications where dirt and sediment levels become problematic with existing systems.

    Mechanical Filtration and Activated CarbonThe media structure of OptiPure CTO and XTO cartridges is composed of millions of fibers coated with powdered activated carbon (PAC). The high mass of PAC and the depth structure of these cartridges provides exceptional nominal particulate filtration and chlorine, taste and odor reduction

    Scale Inhibitor TechnologiesIsoNet® (Patented) adds inhibitor media into the water which interferes with ability of hardness minerals to crystallize and create scale. IsoNet® also utilizes a corrosion inhibitor to protect metal surfaces.

    ScaleX2 uses “template-assisted-crystallization” to inhibit calcium carbonate from forming scale. ScaleX2 adds nothing to the water.

    Ion Exchange (Softening)OptiPure uses strong acid cation (SAC) softening resin to remove 100% of hardness minerals from water by exchanging calcium and magnesium ions for sodium ions. Only hardness minerals and some forms of iron are removed. Systems are available in the FX and QT style with a range of capacities. OptiSoft are self-regenerating softeners for high capacity/high flow applications.

    Reverse OsmosisUnlike filtration, membrane separation is a process where contaminants rejected by the membrane are continually flushed away. Pure water molecules pass through with ease, while >95% of impurities are rejected by the membrane.

    PolyTrix Pre-Filters – are U.S. made thermally bonded, graded-density, depth filters. PolyTrix offers greater dirt-holding capacity and high efficiency micron ratings. PolyTrix is used in OptiPure NSF Certified Systems.

    CTO, CTOS, XTO and XTOS – cartridges contribute to the exceptional performance and capacity of OptiPure Systems.

    OptiSoft, QTSFT and FXWS – take out hardness minerals and iron. QTSFT-3+ and OS systems allow the user to blend in a desirable amount of hardness minerals.

    OptiPure OP and BWS – utilize reverse osmosis and include ‘blending’ and ‘mineral-addition’ features to manage TDS and achieve a favorable mineral balance.

    ScaleX2 – instantly transforms dissolved calcium carbonate ions into microscopic particles that become suspended in solution greatly reducing the potential for scale formation.

    IsoNet – ensures consistent dosing by trapping and holding scale and corrosion inhibitor media within the water flow path of the OptiPure cartridge.

    • No need to empty water from a sump or clean and sanitize before replacing the filter.

    • OptiPure ‘Combination’ systems use all QT cartridges from beginning to end! (Details on page 12)

    NOTE: ‘QTC’ models are Certified under NSF Standard 53 for reduction of harmful cysts such as Cryptosporidium.

    FX Systems use “Drop-In” filter cartridges – The sump is re-used. Only the filter media is replaced.

    QT Systems use a “Qwik-Twist” cartridge – Simply discard the old cartridge and “Twist” in the replacement.

    OptiPure FX Advantages • Replacement cartridge ‘cost per gallon’ is much less than with quick-change filters.

    • Generates less waste than metal or plastic quick-change filters. Only the drop-in media is discarded - Better for the environment.

    • Based on performance, system cost is typically less than quick-change style systems.

    83% of a fountain beverage is water and 17% is syrup or concentrate - a ratio of about five to one. Each 5-gallon bag-in-box (BIB) requires about 25 gallons of water to make beverages.

    Calculating usage for beverage system selection.

    Add up the number of “bag-in-box” (BIB) used for all carbonated and non-carbonated beverages in a month and multiply times 25 to calculate monthly water usage. Estimate filtered ‘drinking water’ dispensed from a post-mix valve or water fill station and add to calculate total monthly usage. Multiply total monthly water usage times 6 to calculate water usage over a six-month period.

    Example:75 BIB/mo. x 25 gals. each = 1,875 gallons of water per month.1,875 + 500 gals. drinking water = 2,375 gallons per month.2,375 x 6 months = 14.250 gallons every 6 months.

    Note: Actual water usage should not exceed system capacity.

  • ICE MAKER ICE MAKER FX QT

    Ice is 100% water. ‘Flaker’ and ‘nugget’ ma-chines use all of the water for ice production, so every 100 lbs. of ice takes about 12 gallons of water. ‘Cubers’ routinely “dump” water from the sump and sometimes use water to assist with ‘harvesting” the ice. Water usage with cube ice makers varies averaging about 20 gallons per 100 lbs. of ice.

    Calculating usage for ice system selection.Cube ice maker recommendations are based on water usage of 20 gallons per 100 lbs. of ice and a run time of 12 hours per day. To calculate half-day run time divide daily ice production by two. Divide this by 100 to determine number of (100 lb.) batches of ice made per day. Multiply batches of ice per day times 20 gallons to determine daily water requirement. Multiply daily water required by 180 days to calculate water usage over a six month period.

    Example:71500 lbs./day ice production capacity /2 = 750 lbs./day750 lbs./100 = 7.5 (100 lb) batches of ice per day.7.5 x 20 gallons per batch = 150 gallons water per day.150 x 180 days = 27,000 gallons every six months.

    Note: Actual water usage should not exceed system capacity.

    Multi-Point systems provide the flexibility to connect to different types of equipment that have different water treatment requirements.

    Primary System – The water plumbed to all of the connected equipment is first treated by primary filtration. Typically primary filtration takes out sediment (mechanical filtration) and reduces chlorine taste and odor (activated carbon).

    Secondary System – Equipment that needs additional protection benefits from secondary filtration following the primary system. Secondary filtration is often used to provide protection against scale and corrosion.

    These guidelines will help you make the best choice for your application.

    – Water usage for all connected equipment should not exceed the Primary System capacity for the period between filter changes.

    – Secondary filtration capacity should be proportional to the water required for ice, coffee and other secondary applications.

    It is essential to consider the impact that water will have on your equipment, your products, your customers and your success.Water chemistry varies from one location to another. Poor beverage quality and equipment problems can be avoided with the right water treatment system.

    Consider the following:

    Sediment – can collect in equipment clogging parts and serves as a catalyst for scale build up.

    Chlorine – causes offensive tastes and contributes to corrosion in equipment.

    Hardness – scale build-up in equipment reduces efficiency and damages equipment.

    Total Dissolved Solids – all minerals that are dissolved in water including hardness minerals. High TDS increases corrosion potential and can be responsible for off taste in beverages.

    Espresso and Tea applications require careful attention to water treatmentBoth equipment and beverages are more susceptible to water- related issues. It is essential to understand water quality to choose the right filtration.

    Espresso – Excessive TDS and water hardness cause scale build-up and corrosion in espresso equipment. High heat and pressure are catalysts for these problems resulting in costly repairs and downtime. Managing TDS and hardness through inhibition, softening or reverse osmosis protect equipment and assures consistent, great tasting coffee.

    Tea – Brewers are also susceptible to scale and corrosion. In addition, high mineral content can make tea cloudy while chlorine and other contaminants interfere with taste.

    Scale inhibiting media that use polyphosphates are not recommended for tea or espresso applications.
