Ginger has been traced back to

Europe during the 11th century when explorers brought the spice back with them from the Middle East. All types of ginger products, including gingerbread, became popular in Europe, especially Germany, but tradition says the idea of a gingerbread house came from Hansel and Gretel, a famous children’s book written by the Brothers Grimm. R ice is undoubtedly the most indispensable ingredient in Japanese cuisine and daily life. A close second, however, is miso.

Miso is a fermented paste of soybeans and grain, usually barley or rice, and is an active component of almost every Japanese meal. It is most frequently eaten as miso soup, a staple of the Japanese breakfast. However, miso is also often present in a large variety of cooked dishes such as champuru, tofu dengaku (grilled, miso-covered tofu) and broiled nasu (eggplant).

Miso comes in many varieties and is frequently categorized by color, though it can also be classified by the type of grain used (rice, barley, soybeans) or by taste (sweet or salty). Red miso, or aka miso, comprises much of the rice miso sold in Japan. It is red to brown in color and rather salty. White miso, or shiro miso, is much lighter and sweeter. Famously made in Kyoto, it is typically more expensive than red miso. Mixed miso, or awase miso, is a combination of red and white miso. Miso preference varies not only from person to person but also from location to location. Residents of western Japan tend to favor barley and sweet rice miso, while central Japan typically favors soybean miso. The rest of Japan typically enjoys salty rice miso.

Miso packs a powerful nutritious punch of carbohydrates, essential oils, vitamins, minerals, and proteins. Roughly 14 percent of miso is pure protein, and miso can also contain anywhere from 5 to 12 percent sodium. Like yogurt, this popular foodstuff contains millions of beneficial living bacteria that contain natural digestive enzymes that aid digestion and have been proven to ward off harmful intestinal microorganisms.

Miso has also been used to help people suffering from radiation sickness. It was frequently used in World War II Japan after the bombings of Hiroshima and Nagasaki. After the Chernobyl nuclear disaster, the Japanese government shipped hundreds of thousands of tons of miso to the Ukraine to aid those who had been near or downwind from the nuclear power plant. Miso is also purported to possess cancer prevention properties and to lower cholesterol.

The process of making miso begins by steaming rice or barley. Then, the grain is cooled to about 100 degrees Fahrenheit, inoculated with the Aspergillus oryzae mold, and cultured. Meanwhile, soybeans are washed, cooked, cooled and crushed. After the grain has cultured for several days, the soybeans are added, along with salt and water. The end result, which looks like grainy mush, is put into deep cedar vats and fermented. Quality miso needs

one to three years to properly ferment. During the fermentation time, bacteria and enzymes transform the grain into a nutritionally-rich, thick, grainy paste with a consistency similar to that of peanut butter.

Currently, about 1,400 miso-manufacturing plants in Japan produce 560,000 tons of miso annually. Of that amount, only 3,000 tons are exported. The average Japanese citizen consumes nearly eleven pounds of miso every year—food for thought the next time you sit down to a hearty bowl of miso soup!
