Vancouver Islanders pride ourselves on being attuned to the food on our plates, but what we consider ‘trends’ are things that Native people have been doing for at least the past 15,000 years. “Free range and organic? Well, we invented that,” says Art Napoleon, Cree bush cook and co-star of the new APTN series Moosemeat & Marmalade. “100-mile diet?” he chuckles. “We’ve got that down, too.” The series pairs Art with classically trained English chef Dan Hayes (owner of Victoria’s The London Chef) for cross-cultural culinary adventures that explore everything from sourcing to spirituality.

Growing up on the Saulteau First Nations reserve in northern BC, Art didn’t have running

water or electricity. His family used a wood stove and wood-stove oven, a cast-iron skillet and hand-cranked meat grinders. Water was sourced from local rivers – something Art sadly notes is no longer possible, due to pollutants. The tiny local store offered only sugar, flour, rice and maybe some evaporated milk. The bulk of his family’s diet was food they “grew, gathered or killed.”

Art returns to Moberly Lake every summer, to visit and to gather supplies for the winter. “I try to bring home enough wild game to last the year. So while I’m in the city, I continue to live off the fruits of the land back home.” His hunting is strictly for food (he is adamantly opposed to

FOR PESTOBlanch approx 3 nettle plants and remove leaves from stalk. Strain, pat dry, the finely chop. Next, chop basil and mix together in a bowl with the chopped nettle then mix in 2 crushed garlic cloves and crushed hazelnuts. Pour in 1/4 cup of olive oil and a pinch of salt. Mix well!

FOR MAYOWhisk 3 egg yolks, dry mustard, and salt with an electronic whisk until frothy (approx 1 min). Add vinegar or lemon juice until creamy then gradually add the remaining olive oil. When desired consistency is reached add a few drops cold water and continue whisking for another minute.

To make aioli, simply mix together the pesto and the fresh homemade mayo!

Although Vancouver Island is a different climate than Moberly Lake, Art has found ways to forage. He mentions Swan Lake, a wetland area in Victoria where “I found a lot of the plants that grow back home…willow, nettle – I even found wild mint, the same kind that grows back home.”

He extols the virtues of nettle, which many urban-dwellers consider a weed: “It’s like a superfood, full of potassium, iron and all kinds of vitamins and minerals. It’s a very healing and versatile food.” He began cooking with it and making things like Cree-style nettle pesto and aioli – which he half-jokingly calls “Native fusion.”

Mostly, he says, the evolution of Native cuisine has been one of convenience, not ingredients. Rather than hammering jerky for two hours with the back of a hatchet to powder it, he now uses a blender.

The availability of more ingredients in grocery stores, however, has allowed for healthier versions of traditional recipes. One episode of Moosemeat & Marmalade features members of his community updating bannock – traditional yeast-free Cree bread – by adding spelt, flax seed, and olive oil.

Moosemeat and Marmalade is produced by Victoria’s May Street Productions and will air weekly for 13 weeks on APTN beginning January 7. Episodes can also be seen on APTN.com after its initial airing.

Once upon a time there was gas station coffee – glorified motor oil served in undersized Styrofoam cups, sipped unappreciatively by hockey dads and long haul truckers. Next there was the franchise stuff, brimming with Canadiana and hope and the chance to win a plasma TV (or at the very least a refill) under every unrolled rim. Then came the Seattle Barista Boom. Everyone remembers where they were that day, as the shock wave rippled across the Pacific Northwest, as the first green mermaid flopped onto our sandy shores. Followed by another then another then another. Then came the Resistance; an inevitable blowback from the Caffeinated Left, who in no small numbers began supporting the java-joe-little-guy and demanding cup sizes in English. Enter the age of the Indie coffee shop – establishments characterized by their cupboard-like dimensions, hemp snacks

and pathological obsession with sustainability. They’re becoming so popular in fact, Hipsters have started drinking gas station coffee again, just to prove a point…

There is a real point to be made, however: coffee has gone full circle. Like an awkward adolescent elbowing through puberty, it’s been invisible then embarrassing then angry then accepted then cultural then cool then edgy then counter-cultural then responsible and now it’s got nothing left to prove. Coffee’s grown up.

You can get it all now. Double-doubles of this and grandes of that and free-and-fair organic of pretty much everything. What’s important is that the bar has been raised. Because in a city where cafes outnumber cars, we’ve finally got our priorities straight: pouring quality coffee.

Within Greater Victoria, the fastest-growing area is Langford, just 15 minutes north of downtown Victoria in the Western Communities. With this growth has come an emerging sophistication when it comes to dining options. According to Stephen Vincent, concierge at Langford’s Westin Bear Mountain Resort and member of the elite concierge network Les Clefs d’Or Canada, while Langford has historically had great chain restaurants that appeal to families, new residents and visitors seems to be craving more, such as a specific cuisine – or even an iconic downtown meal – minus the driving. Not surprising, then, that such favourites as Sabhai Thai, Pig BBQ, Browns Socialhouse, and Bin 4 Burger Lounge have opened secondary locations in Langford, as has Turmeric Indian Cuisine.

For visitors, Vincent explains, Langford offers a different experience than downtown. While the Garden City boasts numerous cultural experiences – fine art galleries, museums, high tea – it’s unmistakably urban and fairly traditional. You can’t exactly zipline down Douglas Street! Langford has a more outdoorsy vibe, with its vast swaths of nature, the Whistleresque feel of Bear Mountain, and adrenalin pumping activities such as bungee jumping, ziplines, and surf. These features definitely add a little wild to the Western communities of Greater Victoria.

If you’re inclined to venture west for for just a visit or a lifetime, you’ll find an increasing variety of exceptional dining opportunities to suit any palate.

Most locals prefer the collective term downtown but in truth, the area directly underneath the pin in your map App consists of several distinct neighbourhoods: Douglas Street splits the City Centre down the middle with great food and entertainment in the blocks unfolding east and excellent shopping hand-in-hand with elegant bistros to the west. The iconic Inner Harbour is a must-see but once you’ve depleted your camera’s battery and picked your jaw back up from the sidewalk, visit Old Town. It’s just a short stroll north along Government Street, down the narrow brick alleys and passed the trattorias to it’s rustic, wood-beamed heart,

Market Square. Wander one block further and you’ll find yourself amid the delivery trucks and swirling dim sum steam bustle of Canada’s oldest Chinatown. For the road slightly less traveled, meander up Antique Row, the often-overlooked length of Fort Street running east from Douglas Street. grove. Known for its amazing food, Cook Street offers everything from pub fare to artisan pizza to Ethiopian cuisine. Just east of the city centre sits Fernwood Village clustered around the iconic Belfry Theatre. One of the city’s oldest neigbourhoods, it plays home to a unique mix of hippies, hipsters and happy families in character homes. Oak Bay Village is a quarter-hour bus-ride east of the city. Situated behind Victoria’s self-styled tweed curtain, it’s a community that’s preserved the imperial culture of Old Britannia unlike anywhere else outside the UK. Pubs, sweet shops, fish’n’chips… it’s all here, and only minutes from the famous tearoom on the Willows Beach esplanade.

Thanks to the gentle geography of the region, these Greater Victoria satellite environs are a scenic drive away from wherever you happen to be staying. Saanich (which comprises much of the city’s suburban sprawl) is a tranquil collection of townships peppered by parks,
