EDITOR’S LETTERWelcome to our new Editor, freelance travel and lifestyle writer Lisa Small.

According to astrologers, the sun rules my world, but I have to confess that food comes a close second. So I was more than excited when I was asked to guest edit the new, foodie-inspired summer edition of The Villager magazine, combining my two great loves. As the great writer Virginia Woolf once said, “One cannot think well, love well, sleep well, if one has not dined well.” Clearly a woman after my own heart.

Getting to know this lovely corner of Marylebone has certainly been an eye-opener. I had no idea how many

unexpected gems were hidden behind the ubiquitous big brand stores and eateries of Oxford Street’s western end. What a find.

There’s an old-fashioned charm to the fashion-forward streets of Portman Village. A place where bakers, baristas, fishmongers and florists sit side-by-side with cool restaurants, gastro-wine bars and friendly pubs. Where else you can buy a bespoke suit, pick up a pair of pre-loved Jimmy Choos, coo over the latest couture and come away with coveted Cara-style eyebrows, all in a day’s leisure? This is my kind of London.

And the best is yet to come, with The Portman Summer Street Party on 9th July. I do hope to see you there – I’ll be the one with the fabulous eyebrows, dog in one hand, glass of red in the other.

Nothing crowns a garden party like a refreshing glass of Pimm’s, so why not make this British summertime classic the centrepiece of your soirée? “This bold floral design is inspired by the much-loved Pimm’s cocktail,” explains Naill Costello, Marketing Manager at James Bernard. “We’ve used strawberries, oranges and mint to add some fun vibrancy, and everyone’s favourite summer flower, the peony for even more colour and scent.”

Smoked Aubergine & Pomegranate Croutes

Smoked Aubergine Method:

1. Prick the aubergine with a fork, place on a gas burner, BBQ or oven grill and cook until soft. Split lengthwise and chill.

2. Remove skin and finely chop the flesh.3. Crush the garlic clove and make

it into a paste by adding a little salt and continue cutting.

4. Add all the ingredients together. Check the seasoning and adjust if necessary.

Croutes Method:

1. Thinly slice rounds off the French stick.2. Place on a tray with baking paper and

drizzle olive oil and sprinkle a little salt on top.

3. Bake at 150°C until lightly golden brown, about 10mins.

4. Remove from the oven and allow to cool.

PUTTING IT ALL TOGETHERPlace a fair amount of the smoked aubergine on the croute, make a small indent on the top of the aubergine and drizzle a little pomegranate molasses. Sprinkle with pomegranate seeds and a little Maldon sea salt.

The Portman

Q: When did you first become interested in cooking?

A: As the youngest of five I was very close to my mother and spent a lot of time in the kitchen watching her cook. Growing up in Paris I was surrounded by great food and restaurants, cooking is all I ever wanted to do.

Q: How would you describe your style of cooking?

A: Classic French, but sometimes with an African twist. I like to use okra, plantain and beans, flavours from my childhood.

Q: Who has had the biggest influence on your career?

A: Apart from my mum? Michelin star chef Jeremy Hollingsworth. I worked under him at The House in Islington and learned so much. He was so hands-on and always available – that’s rare in a busy kitchen.

Q: What is the one ingredient you couldn’t live without?

A: Wild Garlic – it makes everything taste amazing and it’s good for your heart.

DonostiaQ: Where did you grow up and has this

influenced your cooking?A: I was brought up in south Poland, close to the

mountains surrounded by nature, everything we had while growing up was naturally organic and sourced locally. Using locally and carefully sourced produce is something that has always stayed with me as a Chef; bringing out the best of an ingredient or product is just as much about sourcing as it is about cooking.

Q: When did you first think about becoming a chef?

A: While I was studying for my degree in environmental protection, I took a job as a commis chef in an Italian restaurant. Studying whilst working in the kitchen was difficult, but it started my love for cooking. As soon as I got my degree, I arranged to come and work as a chef in London.

Q: Tell us about your career path to Donostia?A: One of my first jobs was at Salt Yard working

with Ben Tish. It acted as a bridge for me between Italian and Spanish cooking. Then when I moved to Barrafina and then Fino I had

Q: How would you describe the food at The Lockhart?

A: It’s American food but probably not as you know it. Certainly not as you would have tasted in London before. A mix of Cajun, Creole and Carolina soul food – all the great flavours of the Deep South.

Q: Where do your influences come from? A: I was born and raised in Mississippi and the

menu at The Lockhart reflects the food I grew up eating.

Q: Where did you train as a chef? A: My background is classic fine dining.

I’ve had the privilege of working at some great restaurants, under some great chefs, including Noma in Copenhagen, Alain Ducasse in London and Per Se in New York.

Q: Tell us something that might surprise us: A: We make all our own bread, butter and pickles

from fresh ingredients on the premises. It keeps our flavours as true to their origin as possible.

the chance to work with executive chef Nieves Barragán Mohacho and get an introduction to Basque cooking. I moved to Donostia three years ago and am now focusing on opening Lurra, also on Seymour Place, and maintaining the levels of quality Donostia has become known for.

Q: Where do you find your inspiration for new dishes?

A: I’ve travelled a lot to Spain, especially to San Sebastián. Food is a huge part of the Basque culture – they’re so passionate about it. Every time I go there, I learn something. Recent influences will be on the menu at Lurra; roasted red peppers, whole grilled Turbot, Sea Bream, baby red mullet, baby octopus, Tiger prawns, Lobster and many more.

Damien’s favourite dish at Donostia: The Baby Monkfish with garlic and moscatel vinegar and the St. George mushrooms too, sautéed with egg or bacon, the Basque way.

Q: Where did your love of food come from?A: I come from a really foodie background.

My father worked in the wine trade when I was young and so we spent all of our holidays in France, Italy and Spain enjoying the food and wine. I have cooked for family and friends for as long as I can remember.

Q: When did you decide to become a chef? A: About nine years ago. After travelling for

a while and working at various restaurants, pop ups and private events, both front and back of house, I decided that cooking was something I really wanted to pursue. I was fortunate enough to have worked with some incredibly talented chefs along the way and took something from all of them.

Q: What would you say is your greatest strength?

A: Apart from my cooking skills, my belief in team work. Working front of house for many years gave me a great appreciation for the needs of the diners and waiting staff. Chefs often only ever know the kitchen environment and can lose sight of why we are doing it. It’s a great lesson in humility, there is no them and us at Vinoteca.

Q: You’ve recently joined Vinoteca on Seymour Place. What do you bring to the menu there?

A: Fresh, seasonal, modern European cuisine with a nod to the Middle East.

Q: Have you always concentrated on Corsican food in one form or another?

A: Not at all, my kitchen experience has been fairly international. I started my cooking career in Poland, moved to London to work at Jewish restaurant Harry Morgan’s in St. John’s Wood before spending four years at Jamie Oliver’s Italian. Finally I came to SANDY’s, and mastered the art of Corsican pizzas.

Q: What makes Corsican pizza unique? A: It has a very thin, crispy base made from

dough that is rolled rather than flipped. And we use Gruyère cheese instead of mozzarella, which gives the pizza a interesting flavour and texture.

Q: What is SANDY’s speciality? A: We make three different kinds of ‘white’ pizza

- so called because they have a crème fraîche base rather than a tomato one. We also make a deliciously indulgent goats cheese and honey pizza with double cream.

Q: What tip would you give diners coming to SANDY’s for the first time?

A: Make sure to leave some room for dessert! They are all homemade – and delicious.

hot garlic oil over them. Basque delicacy, Kokotxas (Hake tongue to you and me) is served three ways, lightly fried, grilled and poached. Iberian, acorn-fed pork provides ‘Presa’, an extremely tender cut taken from just below the shoulder and served medium rare. And last, but not least, the magnificent Carabinero, a massive red prawn almost the size of a lobster, simply delicious freshly-grilled.

One of the secrets of Donostia’s huge success is an exciting and reasonably priced wine list, something diners can look forward to enjoying at Lurra; ‘We have our own wine import business called Mountain Valley Wines so we can source the best wine at the best prices for our customers. Some of the wines we select for the new restaurant will be exclusive to Lurra, so you can expect a few surprises,’ enthuses Nemanja, joint owner of Donostia and Lurra.

“There will be a great wine cellar on the premises so we hope to make wine tastings

a regular fixture.”

The pull of Portman Village just got a whole lot stronger. It sounds like the lure of ‘Lurra’ will be too difficult to resist.

‘ LURRA’ HAS LANDED Now one of the area’s favourite dining

destinations, every new restaurant opening on Seymour Place is eagerly awaited. And the latest venture from the team behind Donostia is most definitely no different. Like its well-established older sibling opposite, Lurra’s cuisine takes its inspiration from the Basque regions of south-west France and northern Spain. But there’s plenty to set Lurra apart from it’s admired relative. Good food is in its DNA, but Lurra isn’t a tapas bar. Larger in size than Donostia, this hotly anticipated eatery will offer a full a la carte menu to enjoy in stylish, relaxed lounge-style surroundings, crafted from natural wood, marble and stone. A welcoming bar, open grill kitchen and fabulous al fresco courtyard will ensure the ambience is as friendly and warm as diners have come to expect from these creative minds.

All of the cooking is done on wood and charcoal grills, like the traditional ‘Erretegias’ that can still be found in restaurants all over Basque Country. The magic in Lurra’s kitchen happens in the sourcing of amazing quality natural produce from a land that time forgot when it comes to farming methods and simple, honest cooking techniques

In Basque, Lurra means ‘land’. A fitting name for a restaurant that’s whole ethos is based on wild, traditionally grown and reared food that tastes just as nature intended.

Before creating the menu for Lurra, Head Chef Damian Surowiec spent time learning how the locals do it at El Kano, a small but renowned fish restaurant based in the tiny village of Getaria. Working alongside the chefs at the grill, he learned their unique methods of preparing and grilling fresh fish and, luckily for us, brought the secrets back with him.

“We source the majority of the produce ourselves from a part of the world that we know and love. Not using

outside suppliers means we not only have total control over the authenticity of the food we serve, but we are

able to offer our clients really good value too.”

Priding themselves on bringing something completely new to the tables of Seymour Place, the team at Lurra promise some pretty exciting specials on the menu. The succulent, intensely flavoured beef comes from 15 year-old Galician Blond cows fed on a surprising diet of potatoes and onions. Whole fresh Turbot are grilled in fish baskets until pink, before being finished off by pouring

As colourful as the vibrant collections she designs, Chicago-born Anna is a fiery mix of Greek and Mexican heritage, inspiring a passion for travel, and a love of bright colours and exotic designs. Teamed with a talent for swimwear design, and Anna is a force to be reckoned with when it comes to a beach-side wardrobe.

‘I had always made my own clothes from a young age’ muses Anna, ‘but I didn’t realise that a career in fashion was even a possibility. I was studying psychology at university in Cambridge when it dawned on me that designing beautiful swimwear and beachwear was something I wanted to pursue.’

With tenacity and determination, Anna completed her degree, spending most of her weekends whilst studying visiting the galleries and museums in London. It was here that she not only found her inspiration, but her calling; ‘I would spend every spare moment of my time in London. I loved the energy and diversity of the city. Anything seemed possible here. As soon as my psychology degree finished, I signed up for a year’s foundation course in fashion design at the London College of Fashion.’

It was in this vibrant Capital that her future as a fashion designer began to take shape, interspersed with a stint in stylish Milan to complete her fashion degree. Her hard-work paid off when, upon graduating, she was rewarded with a placement at Alexander McQueen’s McQ label, followed by further experience at renowned Hussein Chalaya.

Learning from these fashion-greats, Anna finally felt ready to launch her own brand; Paolita. But why swimwear? ‘I wanted to focus on doing one thing really, really well and swimwear felt like the natural choice. I loved that I could do it on my own and be 100% involved in every aspect of branding and marketing of the business. That was so important to me’ she informs.

Portman Village provided the perfect location for a young and innovative business with traditional values. The boutique on New Quebec Street has given Anna a great place to create and develop her collection, and an ideal space to show it all off. ‘Shopping in Portman Village is a very unique experience,’ Anna explains, ‘it’s more than just going into a shop and choosing clothes off a rail. Customers actually get to meet the designers and see the design process in action. It’s a very collaborative way of doing things.’ Along with a lovingly crafted collection, it is this attention to customer service that sets Paolita apart from other brands; ‘I don’t like the word ‘exclusive’ – my collections are for everyone. I make swimwear for women of all cultural backgrounds, shapes and sizes. Coming into my shop for a fitting makes the experience a very inclusive one.’

Feeling restricted by the lack of imaginative fabrics on the market, Anna now designs all of her own textiles, too.

have been inspired by the Egyptian Collection at the British Museum and the

incredible anthropological archives at the Pitt Rivers

Museum at Oxford University”

I am now selling in 20 countries around the world and the new designs are going really well. I love it that past clients now come into my shop and list all the different ranges that they have bought from Paolita over the last 5 years. I guess it means I’m doing something right,’ she laughs.

Brilliantly eccentric boutique hotel group, Zetter, is bringing its second townhouse to Marylebone. And we can’t wait. The Villager talks to General Manager Melanie Older, to find out more about our hotly anticipated new neighbour. Q: Melanie, tell us about the philosophy

behind The Zetter Townhouse experience?A: The Zetter Group is independent, fun

and full of personality. The Townhouse has been designed to feel more like the private residence of a wealthy relation – in Clerkenwell’s case, our Great Aunt Wilhemina, and in Marylebone’s case, her decadent nephew, Uncle Seymour.

Ultimately, the experience is all about indulgence: truly special cocktails, delicious food and a great night’s sleep. It’s about looking after people really well. We care passionately about the quality of our guests’ experience, the wellbeing of our employees and the role we play in our community and environment.

Q: How will The Zetter Townhouse, Marylebone differ from the popular Clerkenwell Townhouse?

A: Apart from its very different location, it is almost double the size of the original Townhouse. And, under Uncle Seymour’s influence, it will have a much more masculine feel. His passion for the finer things in life will be apparent throughout the property.

Q: The Cocktail Lounge in the Clerkenwell Townhouse is a destination in itself. Can we expect the same from the new hotel in Marylebone?

A: Seymour’s Parlour is the name of our deliciously decadent cocktail lounge on the ground floor of the Zetter Townhouse Marylebone. It’s the perfect fit for the Portman Village vibe, serving exquisite cocktails created by multi award-winning mixologist, Tony Conigliaro. As with Clerkenwell, there will be some great bar snack options as well as small plates and sharing platters from Bruno Loubet’s outstanding team.

Q: How many bedrooms will the new townhouse have?

A: The Zetter Marylebone will have 24 bedrooms in all. This encompasses 21 bedrooms, as well as 2 suites and an apartment with its own terrace.

Q: Can you describe a ’typical’ Zetter guest?A: It would be impossible to define a typical

Zetter guest. The eclectic interiors and fantastic level of hospitality attract a huge variety of people, from local businesses to couples on a romantic weekend and international visitors. What they all have in common is a love of unique design, an appreciation for luxuriously comfortable rooms and a passion for wonderful food and drinks. In other words, great taste.
