It’s hard to believe we are on our third back road restaurant journey. If you had told me four years ago I would be the author of three restaurant cookbooks today, I would never have believed it. Yet, here we are traveling to Tennessee after our big adventures to Alabama and Kentucky. And what an adventure it was getting to know The Volunteer State, her people, and most enjoyably, the many outstanding family-owned restaurants.
Home to the Grand Ole Opry, Graceland, the Peabody Hotel, Mud Island and some of the most beautiful winding rivers God ever created, Tennessee is a

On the road again . . . this time to Tennessee, the third state in our State Back Road Restaurants Cookbook Series.

beautiful state to travel while listening to the country music that rings throughout the area. And, of course, while you discover this state’s natural wonders, you just may run into the biggest country stars around eating in locally owned restaurants. You know they love good food, too. There is nothing better than sitting down to a table full of the best cooking from the best recipes from Grandmother’s recipe collection. That is what you find in Tennessee—people who are proud of their heritage and still pride themselves on cooking to please the people they serve.
In the Western Region of Tennessee we’ll experience a “Blast from the Past” at Kokomo’s 50’s Diner where you can grab a burger and malt, sit in the back of a 59 Cadillac, and enjoy rich goodness like you haven’t tasted since the 50’s. Listen to Golden Oldies while enjoying the best burger south of the Mason Dixon Line. Then head for Memphis where you will be expecting great barbecue. Tom’s Barbecue and Deli and Central BBQ will both satisfy your taste for outstanding Memphis-style barbecue. And if you are looking for something a little different, stop in at DeJAVU’s and let Gary Williams cook you up some of the best Cajun

food you have ever tasted. Grab a bowl of Shrimp Creole and let your taste buds send you down river to New Orleans. Our last stop will be in Tiptonville to enjoy Fran’s Meatloaf along with some delicious Hash Brown Casserole at Boyette’s Dining Room. They have been serving classic, down-home goodness since 1921 and are one of the oldest eating establishments on Reelfoot Lake. Come as you are and enjoy a meal made by the best cooks in Tennessee.
Traveling on to Central Tennessee, visit Cookeville and stop in at Ralph’s Donut Shop. Tell Mark I said “Hi,” and “Thanks for being the first place in Tennessee to commit to our book.” In business since 1962, Ralph’s daughter Cynthia and her husband, Mark, run about 200 dozen donuts each day so they are always fresh. Another favorite place is Mike’s All American Diner in Shelbyville. Stop in on Wednesday morning or every second Saturday evening and shake a veteran’s hand because they fought for our freedom. While you are there, check out the Wall of Honor, and if you have a vet in your family, send Ms. Leisa Burris a picture and she will put it on the wall. Vets are near and dear to her since her father, Lawrence Edward Cantrell, was in the Air Force. He died just 6 weeks after Leisa opened the restaurant where she serves southern home style foods made from recipes handed down for generations. Next, get in your car and travel on to Hendersonville for a taste of the islands at Barefoot Charlie’s where they like to say, it’s all about “island attitude at local latitude.” I hope you will kick back, relax and enjoy their tropically-inspired menu while finishing your meal with a delicious piece of their key lime pie which is always made fresh in-house.
Now let’s hit Eastern Tennessee and drop in to see Jake Jacobs in Rogersville to eat at Amis Mill Eatery and enjoy the experience of fine food cooked like it was back in
the day. Sitting on the banks of Big Creek overlooking a dam and waterfall, it’s hard to say which is best, the food or the views. Leaving there, we’ll travel to Carl’s Drive In in Loudon and grab a couple of his Dip Dogs still made today with the original recipe Carl perfected way back when they first opened April 1969. Another favorite is The Plaid Apron in the Sequoyah Hills community near the University of

Tennessee. A small café serving breakfast lunch and dinner, make sure you get a bowl of their Winter Stew along with a good thick slice of their homemade bread. Man, talk about good. Before leaving the area, don’t miss a visit with Steve and his daughter Lizzie to pick the finest and freshest tomatoes ever eaten at Tennessee Homegrown Tomatoes. With 25 acres of fields overlooking Cherokee Lake, they also have bedding, vegetable plants and hanging baskets for sale.
Have I made you hungry? You should be; I certainly am. There are so many outstanding restaurants in Tennessee and this book would not have been possible without the people who run those restaurants with a passion for a great food. I want to thank every restaurant for taking the time to speak to me personally about their business allowing me to share with you what makes their restaurant special. In addition to the people of Tennessee, there were others, behind the scenes, helping to make this book a reality.
I want to thank first and foremost our Creator. To Him goes all the praise and glory I can give him. Cyndi and Sheila, all my thanks, as always, for making each and every page of the book beautiful. The Elvis Sandwich2 slices Texas toast 1 tablespoon butter
2 tablespoons peanut butter½ banana, sliced crosswise into 3 slices
Honey
Butter each piece of Texas toast and brown lightly on one side. Spread peanut butter onto toasted side of one piece of toast. Lay banana on top of peanut butter. Drizzle with honey. Top with remaining piece of bread, toasted side toward honey. Toast sandwich until both outsides are golden brown. Enjoy.

Warmly nestled on the north side of Arlington’s Historic Depot Square, The Grapevine represents Southern charm and hospitality at its finest. Early in the morning, the bakery is filled with the aroma of fresh coffee and pastries. Custom orders are welcomed: cupcakes, cakes, pies, and petit fours, just to name a few. Heavenly chicken salad on a croissant and cheese tea biscuits are the signature items for lunch, however, they offer a variety of sandwiches, soups, and salads. The homemade desserts are absolutely to die for! Southern style meat and vegetables are served up for dinner on Friday nights. Their “Homemade Goodness to Go” offers frozen casseroles, sides, desserts, and bread. Just pop in the oven and you have homemade dinner in no time. Chocolate Gravy
¼ cup cocoa powder3 tablespoons all-purpose flour
¾ cup sugar2 cups milk
1 tablespoon butter or margarine2 teaspoons vanilla
In a saucepan, whisk cocoa, flour and sugar together until there are no lumps. Whisk in milk; mix well. Cook over medium heat, stirring frequently, until the consistency of gravy, 7 to 10 minutes. Remove from heat; stir in butter and vanilla until butter is melted, then serve. Delicious over homemade biscuits.
Family Favorite
Fried Fruit PiesFilling:
6 to 7 ounces dried fruit (peaches, apples, apricots, etc.)
2 cups water1 cup sugar
4 tablespoons butter or margarine1 tablespoon lemon juice
½ teaspoon cinnamon
In a saucepan, bring fruit, water and sugar to a boil over medium-high heat, then simmer until fruit is tender, about 20 minutes. Add remaining ingredients and mash, if desired. Set aside.
Dough:2 cups all-purpose flour
1 teaspoon salt½ cup shortening
½ cup milk, plus more if needed
Combine flour and salt; cut in shortening with a fork. Stir in milk until dough sticks together. Divide into 10 portions; roll out to 5- to 6-inch circles on floured surface.Place 2 tablespoons Filling in each Dough circle. Wet edge of dough and fold over. Press fork into edge of dough to seal. In large skillet, add oil to a depth of ¼-inch and heat over medium heat. Add each pie to hot oil; fry on each side 3 to 4 minutes or until golden brown. Place on paper towels to drain. Top with powdered sugar, if desired.

Vinegar Jim’s is a family restaurant located in the heart of the Arlington Historic District. Built in the 1980’s, the combination of salvage materials and poplar wood milled especially for the project gives Vinegar Jim’s a cozy, old-time feel. The restaurant’s southern roots are clearly visible in Vinegar Jim’s menu offerings, including Mississippi Pond-Raised Catfish and Chocolate Fried Pies. Tea is served in Mason Jars and diners frequently retire after dinner to the rocking chairs on the front porch.

Southern BLTMade with fried green tomatoes and candied bacon.
6 strips thick-sliced bacon2 tablespoons brown sugar
1 tablespoon chopped pecans¼ cup milk
1 egg1 green tomato, sliced¼ cup yellow cornmeal
Hoagie bun or French bread loaf, toasted
Baby spinach leaves
Prepare candied bacon by sprinkling bacon slices with brown sugar and dusting with pecan pieces. Bake on a raised wire rack in a 375° oven until crisp, about 10 minutes. Set aside. Meanwhile, make an egg wash by whisking together milk and egg. Dredge tomato slices in egg wash, coat both sides in cornmeal, and fry in a lightly greased cast iron skillet. Place bacon and fried green tomatoes on toasted hoagie and top with baby spinach. Top with your favorite dressing.

Chocolate Gravy for Biscuits1 cup sugar
3½ tablespoons cocoa powder (Hershey’s Special Dark tastes
fantastic)3 tablespoons flour
1½ cups milk (¼ cup more for thinner gravy)
1 tablespoon butter 1 teaspoon vanilla
Whisk dry ingredients together to break up any lumps. Melt butter in a heavy saucepan over medium heat; add milk. Whisk in dry ingredients slowly, and continue to whisk until mixture thickens, 5 to 7 minutes.

Come experience this little country restaurant with a big menu of country cookin’—a place where you can still get homemade biscuits and gravy every day. Wake up late? Not a problem, they serve breakfast all day long. Folks love to sit and talk while sipping a good cup of tea or homemade ice-cold lemonade. Serving hot plate lunches every day and the best fried fish you’ll ever eat, their tables have seen a lot of wheelin’, dealin’, and tradin’. If you are ever in their neck of the woods, drop on in and listen to live music from local talents singing classic country and gospel and pickin’ bluegrass. You’ll have a hand-clapping, toe-tapping good time. The walls are adorned with pictures of the town’s history and family keepsakes. At Renate & Gary’s they love making new friends and will always make you feel at home.

Cat Head Biscuits10 cups self-rising flour
¼ cup lard½ gallon buttermilk
Place flour and lard in bowl and mix thoroughly by hand. Slowly add buttermilk while mixing by hand ensuring it is mixed really good. Pour onto lightly floured counter top. DO NOT FOLD, KNEAD OR MIX ANYMORE (that will make for a tough biscuit). With floured hands, gently flatten out dough mixture. Butter 2 cookie sheets. Dip biscuit cutter or tin can in flour and cut biscuits out placing on cookie sheets. Spray butter over tops and bake 20 minutes at 450°. Makes 48 fluffy “cat head” biscuits.

Pecan Pie4 eggs
1 cup sugar1 cup white Karo Syrup
½ cup melted butter1½ cups pecan pieces1 unbaked pie shell
Combine eggs, sugar and syrup. Stir in melted butter. Add pecans and mix thoroughly. Pour into an uncooked pie shell. Bake at 350° for 30 to 40 minutes.

Chicken & DumplingsGood on a cold day with cornbread. Now this is what I call comfort food.
Chicken:10 pounds chicken quarters
1 cup chicken base (for extra flavor)Salt and pepper to taste
Wash chicken and place in a big stockpot. Cover with water. Bring to a boil; add base, salt and pepper. When chicken is tender, remove from broth and set aside to cool. Strain broth; bring back to a low simmer. Debone chicken when cool.
Dumpling Dough:8 cups self-rising flour
1 tablespoon each: salt, black pepper and cayenne pepper
¼ cup milk4 eggs, beaten
Combine dough ingredients and place on lightly floured counter top. Working in batches, flatten dough using a rolling pin. As dough flattens, turn it over and roll other side. I do procedure several times until the dough is thin and sturdy. Cut in strips with knife and drop into boiling broth. After a few minutes, push dumplings under broth with a spoon. Roll and cut out more dough and drop them into pot. Repeat while dumplings are cooking. When dumplings are done, add chicken and mix. Serve hot.

A family-owned restaurant, Wells Kitchen originally opened in the 1970s by Louise Vandergrift. Today, it is owned and operated by Louise’s daughter, Vannice, and her two daughters, Emily and Sarah. A dieter’s nightmare, Wells Kitchen proudly fries everything and is famous for deep fried chicken and fried cornbread. Once you’ve eaten at Wells, you are family and the Wells family is growing bigger all of the time.

2 cups grated sharp Cheddar cheese
2 (20-ounce) cans pineapple chunks, drained
1 sleeve Ritz crackers, crushed 1 stick butter, melted

Did you know the first hamburgers were fried in skillets? In 1885, Charlie Nagreen, known as “Hamburger Charlie” invented the burger with “flattened” meatballs cooked in skillets at the Seymour Fair. The Dyer family legacy of uniquely seasoned meals began about the same time. Elmer Dyer, who was known as “Doc” for his family’s “secret and ageless grease,” heard of “Charlie’s” Hamburger. In 1912, Doc opened Dyer’s Café using his “secret recipe” to cook this invention called a Hamburger. Hand-Battered Fried Pickles
Hand-Battered Fried Pickles are a newer item on the menu, but they are full of down-home goodness. We use a unique oval cut pickle (different from the ones on the burgers) that’s a cross between a dill and a bread and butter. The pickles are dipped in a milk/buttermilk mixture and hand-battered in seasoned flour. They are then deep fried until richly golden brown and served with St. Clair Ranch for dipping.
The Split DogThe Split Dog is one of “Doc’s” original creations. This hugely gratifying hot dog consists of two premium all-beef hot dogs, split down the middle, and crisscrossed on a hamburger bun, topped with mustard, pickle and onion. MemphisSitting quietly on the urban fringe, hidden in the interior of Memorial Park Cemetery, is Crystal Shrine Grotto built by artist Dionicio Rodriguez in the 1930s. On the National Register of Historic Places, this handmade cave constructed of rock quartz crystal and semiprecious stones illustrates “Christ’s Journey on the Earth from Birth to Resurrection.”
To access Crystal Shrine Grotto, you walk through a door in a large concrete tree stump —Abraham’s Oak—named for “the founder of the Hebrew Nation.” When first walking into the grotto it is very much like walking into an actual cave—it’s dark and there are stalactites and stalagmites. You will soon notice, however, unlike a real cave, there’s soft music playing and every available surface is absolutely covered in crystals. The crystals form frames for dioramas that depict Christ’s journey on Earth. All of the highlights are there (the Nativity, the Last Supper, the Resurrection) as well as some more obscure moments, all carved in rock quartz crystal, semi-precious stones and wood.

1 large egg white¼ cup packed light brown sugar
½ teaspoon instant coffee granulesPinch of salt

Preheat oven to 325°. Line a sheet pan with nonstick foil. In small bowl, whisk egg white, sugar, coffee and salt. Stir in walnuts to coat. Spread in pan; bake until dry to the touch, 20 to 25 minutes. Cool completely; break into large pieces.

1⁄3 cup Irish whiskey¼ cup heavy cream
¼ teaspoon salt
Boil sugar and water over medium-high heat, stirring, until sugar is dissolved. Continue to boil, stirring occasionally, until syrup is a deep golden caramel. Reduce heat to low; add whiskey, cream and salt. Simmer, stirring, until smooth. Cool slightly.To serve, top vanilla or coffee ice cream with warm Caramel Whiskey Sauce and insert a piece of Coffee Nut Topping.

Spread about one sixth (a small layer) in each pie crust. Add a layer of pecan mixture (again using about one sixth in each pie) then drizzle with caramel topping. Repeat layers. Freeze until firm. If mixture is a bit dry, add more honey; add more oats if the mixture is a bit too sticky. This recipe is very flexible; consider it simply a starting point. Using your hands, 2 spoons or a tablespoon cookie scoop, portion dough out to the size of ping pong balls onto a parchment-lined sheet pan; set aside for about 20 minutes to rest and firm up. Store in an airtight container in fridge up to 2 weeks. Makes approximately 4 dozen bites.

2⁄3 cup frozen orange juice concentrate2⁄3 cup frozen lemonade concentrate
1 gallon fresh brewed tea3 cups sugar

Cafe Eclectic opened its doors in 2008 as a small neighborhood coffee shop and cafe. A constantly evolving dream, Eclectic has expanded and
grown with her community. In 2009, Eclectic added their own
bread bakery expanding on their desire for “from scratch everything.” In 2010, Little Cafe Eclectic, an artisan coffee shop, was opened in the family-friendly walking community of Harbor Town on Mud Island. The family run Eclectic added a new location to the University of Memphis area with their soda fountain, coffees and study treats in 2013.

Shrimp and Grits Cakes1 quart Delta Grind stone ground grits
2 tablespoons vegetable oil 3 eggs
¼ cup milk2 cups Panko breadcrumbs
1 tablespoon each: chili powder, granulated garlic, onion powder,
Cajun seasoning and salt 1 teaspoon cayenne pepper
1 teaspoon plus 4 tablespoons butter, divided
1 garlic clove, chopped4 leaves fresh basil, chopped
4 Tiger Shrimp, peeled, butterflied1 avocado, sliced
Pico de gallo for garnish
Sauté grits in oil. Add 1½ gallons water. Boil then reduce heat to medium low. Cook, stirring frequently, until done. Salt to taste. Pour grits into flat sheet pan, wrap and refrigerate 30 minutes. Whisk eggs and milk for egg wash. Mix Panko and seasonings in separate bowl. Cut grits with cookie cutter to desired size. Dip in egg wash then Panko mixture. Melt 1 teaspoon butter. Cook grits cakes 3 minutes on each side. Melt remaining 4 tablespoons butter with garlic clove and basil for butter sauce. Grill shrimp 2 minutes applying butter sauce frequently. To serve, top grits cakes with avocado, pico and 2 shrimp per cake. Twist tail for presentation.
Restaurant Recipe
Strawberry Fields Salad6 ounces (about 6 cups) baby spinach
2 cups stemmed and sliced strawberries½ cup pecan halves, toasted
Salt and pepper4 ounces goat cheese, crumbled
In a large bowl, combine baby spinach, strawberries and pecans. Add Strawberry Dressing a little at a time and toss until greens are well-coated. Taste and adjust seasoning with salt and pepper. Sprinkle goat cheese over top and serve.
Strawberry Dressing:16 ounces strawberries
6 tablespoons lemon juice ¼ cup sugar
2 tablespoons cider vinegar 2 tablespoons olive oil
1⁄8 teaspoon poppy seeds
Place strawberries in a blender; cover and process until puréed. Add lemon juice and sugar; cover and process until blended. While processing, gradually add vinegar and oil in a steady stream; process until thickened. Stir in poppy seeds. Transfer to a large bowl or jar; cover and store in refrigerator up to 2 weeks. Makes 2½ cups.

Mild Sauce:3 gallons packed brown sugar
3 gallons cider vinegar1½ gallons molasses
1½ gallons honey1½ gallons Worcestershire sauce
½ quart yellow mustard5 cups liquid smoke5 cups chili powder4 cups black pepper
6 cups granulated garlic3 cups allspice
24 gallons ketchup
Combine ingredients, except ketchup, in 50 gallon kettle. Cook over medium heat 1 hour or longer, stirring frequently. (The longer it cooks, the better it tastes.) Reduce heat to low and add ketchup. Continue cooking 30 to 45 minutes, stirring frequently. Store unused portion in airtight container.
Hot Rub:8 cups paprika
2 cups kosher salt2 cups crushed red pepper
2 cups brown sugar8 tablespoons granulated garlic
8 tablespoons onion powder8 tablespoons cayenne pepper
Mix ingredients; store unused portion in airtight container.
Restaurant Recipe
BBQ Spaghetti3 tablespoons pomace oil
Salt5 pounds spaghetti
1 (102-ounce) can diced tomatoes1 cup Mild Sauce (see below)2 cups Hot Rub (see below)
1 pound pulled pork
Fill stockpot with 2 gallons water, pomace oil, and a pinch of salt; bring to a boil. Stir in spaghetti—do not break. Boil, stirring occasionally, until pasta is al dente (cooked firm to the bite; not too soft). Drain and rinse with cool water; set aside.Mix tomatoes, Mild Sauce, 1 cup water and Hot Rub in a stockpot and bring to a simmer over medium heat. Cook 10 minutes after reaching a simmer. Mix ½ pound pork into sauce and continue to simmer 5 minutes. Add sauce to pasta and toss. Place in a cater pan and top with remaining ½ pound pulled pork. Servings 20.
