magazine and Happy New Year to all our readers and advertisers.

We do hope you all had a lovely Christmas and are looking forward to the year ahead.

We had a lot of changes here at Chiltern Directories last year. At times, some of these changes were quite a challenge but we now find ourselves stronger and more positive than ever. We moved offices, launched the Thame area magazine, lost and gained key staff members, changed the delivery of the magazine and doubled our distribution to include a much larger area which has proved to be a great success with both readers and advertisers. We hope to continue to build all 3 magazines this year but to keep the same format with a good mixture of local articles, business promotion and community information.

Our Christmas Charity donation is going to Dovecote Day Centre (please see details in the community pages) and we were so pleased to have been able to give to such a good cause.

The Chinnor Railway is our local friendly volunteer operated branch line in the style of the former Great Western Railway and is a not to be missed heritage attraction for tourists, families and enthusiasts alike. Historic steam and vintage diesel services run most Sundays and some Saturdays from Mothering Sunday 30th March to Halloween on 26th October 2014.

Starting out from the delightfully restored Chinnor station with its ample free parking, the line follows the foot of the Chiltern Hills and runs parallel to the historic Icknield Way until it reaches the outskirts of Princes Risborough. The round trip is a leisurely 45 minutes long allowing you to take-in some very attractive open countryside and to enjoy outstanding views across the Vale of Whiteleaf.

Tickets for Standard Timetable days are generally issued on the basis of pay-once-and-stay-all-day, and so you can make as many journeys as you wish

on the day of issue. Most trains convey a buffet car and the Cambrian Cafe at the station serves reasonably priced tea, coffee, light refreshments and delicious homemade treats. There’s also a well-stocked shop selling railway-style souvenirs and gift items and we find the volunteer staffs are always delighted to discuss their activities with you – but beware, they are so enthusiastic you could end up becoming a volunteer!

In addition to the Standard Timetables there are popular Special Events throughout the year - including on 14 June when you can see behind the scenes on the railway’s Open Day, whilst between 9–21 August an intensive service will be run to celebrate 20 years of heritage railway operation, then on 12 October all available steam and diesel locomotives will be in operation on Gala Day.

Always popular are the Murder Mystery evenings on 10 May, 5 July and 13 Sept 2014 with dinner and wine served on- board your steam hauled train. Or try one of the Quiz Nights aboard the diesel hauled Watlington Flyer on 31 May, 19 July, 30 August and 27 Sept 2014 and enjoy a fish’n’chip supper whilst you test your general knowledge. Wildlife on the Move is always

popular with an experienced guide and commentary on 5 April, 7 June, 26 July and 6 September 2014.

Various fare offers are available from time to time, including Mum travels FREE on Mothering Sunday 30 March 2014, children carrying a Teddy Bear travel FREE on 4-5 May and 25-26 Aug 2014, Dad travels FREE on Father’s Day 15 June. Being a Stagecoach student is about having fun each weekend with friends who share a passion for the performing arts. But it is also about learning skills such as voice projection, character development, flexibility, co-ordination and improvisation – all of which help to build confidence, self-esteem, poise and articulation that will stand the students in good stead throughout their lives.

Stagecoach also runs workshops in the Easter and Summer holidays. These are open to everyone and are a great opportunity to be part of a team putting on a presentation or a musical for family and friends.

Swordfighting in Thame!

You might not know it but Thame has a swordfighting history. Ever heard of James Figg – after whom the pub in Thame is named?

Born in Thame in 1695, he was to be acclaimed as England’s first boxing champion. But as well as being famous for his boxing, he was a fencing master with a fencing school in London and was defeated just once in a career of 271 fights.The modern Olympic sport of fencing developed from the study of swordplay in Europe over hundreds of years. As well as Olympic dreams, there are lots of reasons to take up fencing. It’s fast and exciting, it can help keep you fit, and it’s based on skill, not strength, and will test your mind as well as your body. Women can compete against men on an equal footing at club level. Thame Duellists Fencing Club is a friendly club open to beginners of any age (adults and children) from 7 years old, as well as more experienced fencers. We meet on

Thursday evenings during term at Thame leisure centre. A beginners’ course is £90, or £75 for under 11s, for a ten week course over one term. Red Onion Soup with Melting Gruyere Croutons

After all the indulgence and expense of Christmas and the New

Year, this hearty soup is the perfect antidote. Ideal for a warming winter lunch or supper it’s simple to make, tastes delicious and doesn’t cost a fortune.

Serves 4Ready in 1½ hours

Ingredients 2 tbsp olive oil15g butter650g small red onions, peeled and thinly sliced2 tsp brown sugar1 tbsp flour1 tbsp wholegrain mustard1.2litres beef or vegetable stock Few sprigs fresh thyme, plus extra to garnishSalt and freshly ground black pepper8 thin slices day old French bread75g Gruyere cheese, grated

Method1 Heat the oil and butter in a large, deep heavy-based saucepan until the butter is sizzling. Add all the sliced onions and cook very gently over a low heat for 15 minutes, stirring frequently.

2 Sprinkle over the sugar and cover and cook for a further 15-20 minutes, stirring occasionally, until the onions are very soft and golden.

3 Stir in the flour and half the mustard and cook for 1 minute, then gradually stir in the stock. Add the thyme sprigs, season with salt and freshly ground black pepper (see Tip) and bring to the boil.

4 Reduce the heat and simmer gently for 35-40 minutes, stirring occasionally. Adjust the seasoning to taste.

Lightly toast the slices of French bread on one side. Spread the untoasted sides with the rest of the mustard and top with the grated Gruyere cheese. Pop under a hot grill for 1-2 minutes, or until the cheese is melted and bubbling.

6 Ladle the soup into warmed bowls and top each with two hot Gruyere croutons. Serve immediately garnished with thyme sprigs.

TIPIf you use stock made up from stock cubes taste the soup before adding any seasoning as some can be quite highly seasoned.

The Chilterns Area of Outstanding Natural Beauty (AONB)

covers a huge swathe of our local countryside, stretching from the River Thames in Oxfordshire up through Buckinghamshire and Bedfordshire to Hitchin in Hertfordshire.

It is a beautiful area, full of rolling chalk hills, beech woodland, clear chalk streams and a wealth of wildlife. It was designated as an AONB in 1965, in recognition that its landscape is amongst the finest in the country. It is one of 46 AONBs in the UK which, together with National Parks, represent our most scenic countryside.

The Chiltern Hills have been well-known for centuries, though not always for the best reasons. In medieval times the heavily-wooded hills and secluded valleys were the hangout of fugitives escaping the law and the area acquired a bad reputation. However, as nearby London grew some of its prosperous citizens began seeking country estates and a number of great houses and parks were created in the Chilterns, gradually improving its respectability. Nowadays you can visit many of these properties plus a wealth of other historic treasures in the area.

There are lots of ways to enjoy the Chilterns, and most will keep you and your wallet healthy! With over 2000km of footpaths criss-crossing the area, plus the Ridgeway and Thames Path National Trails, the opportunities to go for scenic walks are endless. There are many circular walking

routes of all lengths: you can do a gentle walk in a valley, visit attractive villages, stroll through a river meadow or tackle a longer walk along the Chilterns ridge, admiring the stunning views before popping into a country pub for well-earned refreshments.

If you enjoy cycling there are lots of promoted bike rides. Some of the area’s most scenic lanes have been included in the Chilterns Cycleway – a 173 mile on-road cycling route that goes right around the Chilterns AONB. You may have seen the brown signs for it. There’s no need to do the full route in one go – there are plenty of options for enjoying part of the Cycleway on a circular day ride.

Winter is one of the best times to get out into the Chilterns countryside – why not wrap up and head out? The red kites are out in full force, soaring above the fields and woods with their russet feathers glowing in the winter sun. You can crunch through piles of leaves in the woods and look for the first signs of snowdrops peeking through.

The Chilterns Conservation Board is the official public body tasked with caring for and promoting the Chilterns AONB. We’re a small organisation but we cover a lot – from encouraging good design in new buildings to conserving wildlife, working with farmers and woodland owners, devising new walks and cycle routes and running public events. We also provide lots of information on where to go and what to see in the Chilterns AONB on our website www.chilternsaonb.org. You can download walking and cycling leaflets, information on the Chilterns Cycleway and find out about local attractions and events.

TCC2“TCC2 was founded in November 2010 with support from the highly regarded Thame Chamber Choir. It is the only community based children’s choir in the area with members coming from a wide catchment area in and around Thame. The choir rehearses weekly in John Hampden School Thame, currently has around 20 members and is still growing. Cuttle Brook Conservation Volunteers (CBCV) Cuttle Brook Conservation Volunteers (CBCV) is a diverse group, ranging from young adults to retired people and everything in-between.We do a wide variety of work, including: coppicing/pollarding; planting trees and shrubs; building infrastructure, such as bridges and boardwalks; wildlife surveys and the never-ending litter picking! There is always a lot to do and we can find something for everyone, of all ages and abilities. We have two work parties per month, on the third Sunday and the last Wednesday. We meet at 10am in the recreation ground car park. All tools are provided, plus refreshments. DovecoteThe Dovecote Day Centre for elderly people with dementia, memory loss and other mental health needs meets on Wednesday and Friday 10 till 2 at the Barns Centre. We provide a two course meal and mentally and physically stimulating activities for clients. A typical day may include playing word games, tossing the beachball, having a singsong, listening to poetry, doing a jigsaw puzzle or a visit from the museum or music therapist. Thame MuseumThe museum, which opened in 2007 is an independent museum staffed entirely by volunteers. It is housed in the old Court House, where it provides a variety of display panels, artefacts and oral histories telling the story of this historic town and its people. In addition to the permanent galleries, the museum has a programme of entertaining and informative exhibitions and talks.
