We’re so excited about the New Year and all the promise it holds. 2014 was definitely a good year

for us at FabMags (we weathered the few challenges that came our way as well). Where do you like to work out?I am a yoga fanatic and I don’t think you can get any better than Tracy du Plessis from True Passion Yoga and Pilates studio in Salt Rock.

Favourite place to relax when the weather is good?Across from Salt Café there is a small stretch of beach with a stunning rock pool, perfect spot to find some peace.

What is your favourite restaurant to eat brunch at, in Ballito? Eat Local, my other half and I are kind of obsessed with Hugo’s incredible food... and the wine-list. The menu is so diverse and EVERYTHING is good, such a fan.

Best place to grab a relaxing cup of coffee?The vibe and decor at Cinnamon & Silk reminds me of the vintage coffee spots in Paris. The cuppa is just a bonus!

Favourite weekend activity?That promenade! In all my travels, I have yet to find a beach promenade like ours; we are lucky buggers! If I find the time, sunrise and sunset walks on the weekends.

What do you see as Ballito’s hidden gem?The Litchi Orchard is unmatched in opening doors for small business owners. They have really brought a fresh wave of creativity into Ballito and those wine festivals are AMAZING

Favourite place for a day out with the girls? Favourite place to shop?Most of my mates are guys... so it’s karaoke and burgers at The Granstand Sports Bar & Grill. I do love supporting the SPCA shop - you find incredible vintage buys and it's all for a good cause!

Happy New Year! Welcome to yet another year, another opportunity to become all that God has created you to be, and walk into more of what He has for you in this life.I’m trusting you had a fun filled break, and have been dreaming up a storm for the year that lies ahead.

I always love the refreshed energy and passion at the start of a new year. I mean literally at the ‘tick-of-a-clock’ our whole attitude can shift from one of exhaustion and memories of a year gone by, into one of excitement and hopeful expectation for the days that lie ahead.

Maybe it’s just me, but I love that in these early days of a new year we get to dream again. I love that we get to open our imagination to more, to grander opportunities that await us.

And so I was thinking through what 2015 may hold, and considering the possibilities that God has set before us. I always think of ‘cheesy’ one-liners that will in some way capture the theme of the year, and for the sake of fun and some random inspiration here are just a few:• 2015 Permission to dream• 2015 Me and my queen

• 2015 The year of lean & mean (that’s going to work for someone)

• 2015 The year of opportunit’ee• 2015 Going to places we’ve never been

(Amen!)The list goes on.

I’m sure you’ve heard a few ‘classic tags’ being thrown around in convos and written all over Facebook, and I’m sure there’ll be more to come.

I’d like to take a moment though to maybe suggest one that isn’t at the forefront of your dream year, but I believe it sits in the depths of every human heart.

2015… It’s going to be bigger than me.Sounds good doesn’t it?

I mean we all want a bigger story than ourselves don’t we? If you’re anything like me you get claustrophobic when in your own company for too long. This is not to say that we neglect our personal lives, but rather that we leverage our lives to see others flourish and ‘fly’. There’s this story in the scriptures found in Mark 10:43,44 where Jesus shines a light on what it means to be great. He says it like

It’s not a car for nightclub owners, this. But don’t think this is a car bereft of features, because it’s packed with useful tech that makes it one of the safest cars to drive. Safe is not boring either, because rarely have I experienced high-speed dirt road driving so confidence inspiring, as it is with this torquey diesel engined V40. Refinement is really impressive, too.

This rugged design sits 40mm higher than its siblings, broadening its appeal significantly. If you are in the market for a premium-feel, high quality, well-equipped and efficient family car, this is the perfect foil for the default German cars on offer.

If you are attracted by bling and shiny trinkets, you’ll find the volvo as minimalist as a swedish sauna, says Richard Webb.

Volvo V40 Cross Country

Of course, Volvo is no stranger to blurring the lines between a traditional car and an SUV. In 1997, they launched the XC70 by raising the ride height of its family estate. They fitted four-wheel drive as standard and they manned up the styling somewhat. This formula was so successful; it attracted pretenders from several other brands.

This new Cross Country has all the hallmarks of a properly rugged Volvo, with its silver roof rails, metal side sills, ‘Tonka Toy’ black plastic front bumper with built in LED lights, and a re-modeled rear bumper with the Cross Country logo above the skid plate to help differentiate tougher image.

Its efficient diesels, all of which come with standard stop-start, are brilliant. Superb fuel economy and low CO2 emissions is a wholesome feature on offer. I tried the 110 kW, 2.0-litre five-cylinder turbodiesel D3 with the six-speed Geartronic automatic transmission. You can certainly hear the diesel working, but the quirky burble makes it an aural pleasure, not a nuisance. Most of the models in this range put their power through the front wheels, but there are two permanent all-wheel drive variants at the top of the range.

The T5, with its familiar 2.5-litre five-cylinder turbopetrol, churns out 187kW and 400Nm, including a 40Nm overboost function. 100km/h arrives in a mere 6.5 seconds in this version. Inside, the car is every bit as good as offerings from its competitors, like the BMW X1, Audi Q3 or Mercedes-Benz GLA.

Having been to many Swedish saunas, and not so many nightclubs, I would definitely opt for this Swedish hottie. There’s not a bad V40 in the portfolio of increasingly good to great Volvo cars on offer.

Being in love is an expensive business, peeps. In today’s world, nearly everything costs something so the

words of the Jennifer Lopez hit don’t ring so true… “my love don’t cost a thing…” But, it is important to not let money – or a slight shortage of it (we all have those) – become the focal point of your relationship. How you celebrate the big V-day is entirely up to you, but we’ve covered both bases (just in case you can’t make your mind up). We look at how you can celebrate Valentine’s day with a splurge, and how can do it on a budget.

The basket. Make sure you pack everything you need into ONE basket, especially food. You do not want to make 15 trips to the car, or worse…trip and drop all the food.

Lemonade….yes! This is an absolute. Store-bought is fine, but try out a homemade pitcher, if you have the time. Otherwise, fill a flask with some ice water and drop in a few slices of fruit: think lemons, orange slices, nectarines or peaches. (P.S If your lemonade has fizz, don’t leave it in a flask too long – you’ll have a flat drink and bloated flask in no time).

starters. Stay with bite-sized so you don’t get too full. Chicken nuggets with a simple tartar sauce, or mini pizzas (just a base, with cheese and tomato on top) are two options that could work.

mains. Nothing goes with a picnic like wraps or pitas. It’s foolproof – bring along a few different fillings and floured tortillas or pita pockets and go wild. Some great filling ideas are prawn cocktail: deveined prawns with mayonnaise and a dash of lemon, grilled chicken: slice it up and pop in some mushrooms and onion or a Greek filling: meatballs, rocket and tzatziki.

and…dessert, HELLO! Load up some cupcakes, a few slices of cake or a fruit salad if you’re a health nut, to round off your meal. The best picnic dessert, however, is chocolate dipped strawberries…swoon! Grab a punnet of fresh strawberries and dip them in milk chocolate. Pop them in the fridge for the chocolate to harden and make sure you keep them cool with an ice-pack until you’re ready for them.

The Sweetheart’s Picnic Unless you or your sweetheart has a grass allergy, a picnic is almost always the best option. As clichéd as it sounds the whole day was so magical and

filled with so many people we love…it is hard to point out

one single moment. Although I was very calm and relaxed

while getting ready on the day, the moment I stood at the

end of the aisle with my dad, the magnitude of marrying

my best friend hit me and I was very overwhelmed.

Seeing Calv’s face as I then walked down the aisle was

one of the most special moments of my life.

It was important to us that the decor matched the rustic feel of Tala but still looked pretty and chic. We used mostly whites with a touch of duck egg blue.


We both love the bush so getting married at a game reserve was a must. Tala Game Reserve is a renowned wedding venue that was also not too far for our guests to travel to. It definitely ticked all the boxes, plus the honeymoon suite is amazing!

Our wedding party was made up of our closest friends, my sister and

my brother. Since he was the reason we met,

it was special that he was a part of it too. My bridesmaids wore long dresses, both flattering

and practical since it was so so cold, made by the very talented Bianca

Warren. The groomsmen wore navy suits to

complement Calv’s suit. He also managed to get them each personalised

bow ties and cuff links.

Get a wedding co-ordinator. Kate Bain from The Wedding Company SA was an angel. She made wedding planning an absolute breeze for us. We were able to relax and enjoy every second while she worried about all the details.

It took MAJOR convincing by family and friends to even wear a dress – I’m SUCH a tomboy. Fortunately, my mom had the patience to take me around to a few beautiful shops where I eventually found a “non-poofy”, stunning dress which I fell in love with. The last thing I wanted was to feel like a meringue, and Forever New in Gateway was where I found my perfect dress.

The creativity behind the flowers was phenomenal! Kathryn Hulett from Function Décor had creative carte blanche. She went to town using a variety of flowers, including the most beautiful orchids, which are my favorite!

We were very blessed that we were able to use the family holiday home in Zinkwazi and it exceeded my expectations. What more can you ask for, being right on the beach? It really felt like a destination wedding.

The Groomsmen and bridesmaid outfitsWe had one groomsman, one bridesmaid and a flower girl. Keeping to the purple theme, both the brides-maid and the flower girl were dressed in purple and the groomsman wore a purple tie.

Brides are choosing a lot of pastel, soft colours to bring a

relaxed and calm atmosphere to their big day. The combination of mint green and gold is very popular at the moment and absolutely beautiful; you have the soft mint colour contrasting with the gold bringing an element of sparkle and excitement to the reception. Some brides are moving away from having a colour scheme altogether and would rather focus on a theme such as Rustic-Vintage, Chic Lovebirds or Gatsby.

Gone are the days where guests write in a book that gathers dust in the back of a cupboard at home. A bridal couple

who love to travel can use a world globe for guests to jot down their wishes, perhaps over a country they have been to. A couple moving into their own home after the wedding could get a tree stump or a wooden bench, old records or a wooden heart made of many puzzle pieces that guests could write on. This way, you are always able to see what your guests wrote.

Couples nowadays have many friends with children, who are important to the bride and groom,

meaning they are more inclined to allow children to come to the wedding. Make sure you can entertain the children, so they don’t make too much noise when vows are being said and keep them busy during the long speeches as it can become really boring for them. A ‘kids only’ section is very popular, where brides create little packs for the children, filled with some sweets, crayons and note pads. Perhaps hire a nanny to play games with them and keep them entertained so their parents can have fun and relax as well.

it’s that one piece of magic every girl dreams of. Vera Wang, Ellie Saab and Monique Lhullier all have one thing in common – they create wedding dresses that make jaws drop. Here in Ballito, our very own daughter and mum duo Julia Ferrandi and Lyle Cronje, make bridal dreams come true. We sat down with Julia and Lyle to find out more about their relationship and pick up a few tips for choosing the most important dress you’ll ever wear.

Julia Ferrandi and Lyle Cronje are the most delightful combination. Julia, fresh from finishing her degree in fashion design, exudes a whimsical energy that is gently tempered by Lyle.

“The first dress we made together was my wedding dress. We have a mutual respect that allows us to bounce ideas off each other. during consults I like to bring the bride’s ideas to life and my mum will hear the mother of the bride, then we try to come up with a garment that makes the bride happy. Older brides also gravitate towards my mum, which is wonderful,” Julia said.

Their motto is ‘made with our hands, from our hearts’ and they pour love into every dress they make. They opened their homely

studio at The Quarter eight months ago, after finding they could fill a niche in the market perfectly.

“Ballito is wedding central – everyone is getting married here. We specialise in bespoke designer women’s wear and we love it – we’re proudly Ballito girls!”

Julia and Lyle pride themselves on creating garments that are individual and intimate, tailor made for a woman’s most magical dreams. “My mum and I look to each other for inspiration, and we work so well together. We know we have different skills, so we use them in tandem.”

Julia says finding the perfect dress is ‘the wedding before the wedding. “The first thing a bride must answer is how she wants to feel on her wedding day. do you want to be classic and timeless, or sexy and grab attention? Very often, we see a bride coming in with a picture of a dress but it isn’t really what she wants. Every bride has a vision a designer brings to life. It’s an overwhelming process so we take it slowly, which is why it’s so important to get to know the bride and what she likes,” said Lyle.

Typically, Julia says a dress takes around three months to construct from design to completion. Her first tip is to meet with a designer as early as possible, so as not to rush the process.

“You also want to know your body shape and work with it. Another important tip is to pick one of your features and highlight it, so you don’t have too much going on with the dress. keep in mind that you aren’t going to prom…it’s your wedding and you’re a bride. You have to be feminine and pretty,” Lyle added.

And, the big question: how involved should Mama be in the wedding dress process? Tricky, chuckles Lyle.

“It’s an experience that can test any relationship. We hear the mum but ultimately, we want to make the bride happy.” Another facet of their unique approach is to keep the dress totally hidden – except from the bride – until the wedding day. Each bride gets a file with her ideas, swatches and design. “Nobody but the bride sees it, so she has that wow factor on the big day. Everyone knows that it’s bad luck for the groom to see the bride before the wedding, but we do talk about her groom and their relationship, to include that part of the bride.”

Since Ballito’s climate is typically warm, Julia and Lyle recommend staying away from overly hooped wedding gowns. It is key to ensure your dress compliments the environment you’ll be getting married in. “Try to avoid a dress that’s heavily corseted for a Ballito wedding. You’re going to feel hot and uncomfortable in the heat. Be practical – if you’re having a beach wedding, you can’t do the Cinderella gown.”

Wedding dresses are typically white or ivory, but according to Julia, tints are varying to incorporate shades of blush, oyster and champagne. Pastels are in for bridesmaids’ dresses and Julia predicts that deep, rich jewel tones are set for a comeback.

Something to avoid is a blinding, optical white dress – Julia warns it could give brides an unflattering ‘glow’. She recommends going for a milky or winter white and…staying away from too much bling. “Rather affix a brooch to your dress, or wear accessories with sparkle, if you want some bling. Too much is never a good idea.”

And, good news – the days of identical bridesmaid dresses are well and truly gone. The latest trend is to pick one shade and have the bridesmaids wear different styles that suit their body shapes.

Julia advocates Pinterest as a tool to planning your dream dress but cautions that brides should only use the site for inspiration, while staying realistic.

“Here’s the crux: you must have a bride moment. What’s that? It’s when you put a dress on and suddenly, the seams and darts and stitches don’t matter. You finally see yourself as a bride. You start to twirl and dance and suddenly, nothing else but this dress on you matters. That’s when you know you’ve found the one.”

DIY #1 – Food sweetie Table – buy packets of popular

sweets in bulk, from a wholesaler. Look for inexpensive jars and bottles (you’ll probably find these at mum’s house) and display your sweets. Give each guest a paper bag to fill while you take your photographs.

Waffle Bar – it might get messy but if you’ve got mostly adults at the wedding, it’s a real treat! Leave out jars of berries, syrup and ice cream next to a waffle maker. Guests will love it!

DIY #2 – Décor go non-traditional with your wedding

favours. Rally your closest girlfriends and bake cupcakes to match your wedding cake. Each guest can take one home – this works best at small weddings.

Centrepieces need not be elaborateflower arrangements. Visit a laser

cutter and have quirky sayings cut out for each table. display them with handfuls of pebbles, shells, or a piece of chiffon.

Rope in your man to make up some personalised wooden signs to hammer into the ground. They can be directions for your guests, or markers for the ceremony.

make your own ceremony/reception backdrop: use a sheet of hessian, canvas or fabric and stencil on your names, a scripture or an inspirational saying and mount it. You can keep it after the wedding!

Instead of spending money on a guest book, which might end up on a coffee table. or stuck in a cupboard, try a thumbprint or signature canvas. Get an image of you and your beloved printed on canvas and ask guests to leave their thumbprint, or sign a short message to you.

DIY #3 – Stationery incorporate your wedding colours on

your invitations. Use industrial craft paper (you’ll find it at any craft store) and design your invitations and save-the-dates. Have them printed, or save money by emailing them to guests.

There is an abundance of tutorials on exquisite hairdos, online. Start trying a few out well in advance and find one that works for you. Have your bridesmaids pitch in to help you out; the simpler the hairdo, the better.

and more lists. If you and your man hold down full-time jobs, you’ll need to co-ordinate who is doing what, and when.

Be realistic. You are a bride first. You have to enjoy your wedding and planning it. If there is something you cannot do, ask for help – you don’t want to become so frustrated with doing everything alone that you don’t experience the magic of your day

the bride is the focus of everyone’s attention when she drifts down the aisle in a cloud of taffeta and lace. She’s about to give her life to the man waiting for her at the end of the aisle, after all. But for one night – oh,

just that one precious night – she gets to enjoy her last few moments as a ‘Miss’ and let her hair down with the girlfriends. Now, the type of bride you are (and the type of friends you have, da da dum) determines what kind of soiree you have. What’s it going to be, ladies? The wild hen’s night or a more subdued kitchen tea?

So, let’s get it straight: if you’re a bridesmaid, it’s your job to make sure the bride has a night she will never forget. Whatever type of party you’re throwing her, you have to make it count. Let’s cover our bases, shall we?

Nothing stops you from having two parties – or three or four…or five, really (just means more presents) – so there’s always the idea of inviting a different crowd of girls to each party. You can host a classy kitchen tea for the more reserved ladies in the bride’s life (think mum, gran and a few aunts) and invite the younger crowd to the crazier festivities. Whatever you plan, it’s always fun if there’s a few surprises planned for the bride.

The Kitchen Tea A relaxed, calm atmosphere is key. Ensure all the guests arrive well before the bride, and you have everything set up. Pick a theme that represents the bride and decorate your space accordingly; incorporate your snacks and favours into the theme. Plop the bride on a special chair and try out a few of these games:

• Before the party, get the groom to answer a set of questions about himself and his relationship with the bride. On the day, ask the bride the

same questions and see how many she gets right.

• draw up a list of arb handbag items and divide the girls into groups. Whoever ticks the most items on the list, wins.

• Get rolls of toilet paper and select one girl from each group. Instruct each group to craft a wedding dress from the toilet paper and have a fashion show.

• Email all the girls attending a template and ask them to decorate it with photographs of themselves and the bride. Put it together and give it to the bride at the party.

• A game of good-old 30 Seconds is a great way to break the ice. keep the items on the cards wedding or kitchen-related.

The Hen’s night The point here is to be wild. If you have any inhibitions or you aren’t comfortable going loco, rather choose a safer option, like the kitchen tea. If you’re picking this option make sure the bride knows what she’s in store for (you don’t want her freaking out and killing the vibe completely). You could try out: • Bachelorette bar crawling – draw up a

list of clubs and visit each one before the end of the night. Or morning, however late (or early) you’re planning to go. do NOT do this the night before the wedding – you want your bride to look like she stepped off the pages of Vogue, not crawled out of a bar.

• Before you get crazy, take mug shots of each girl. Take a selfie (if you have the capacity to remember) when the night is over. Trust me, you’ll love looking at them after.

• Cajole the bride into a game of truth or dare. You decide how risqué you want to get (if her mama is around, keep it clean).

• Get her to answer a list of questions about her man and make her have a shot (of whatever you please) every time she gets one wrong. Loads of fun will be had.

• Lastly (this one is a winner) get the bride dolled up – I’m talking fluffy tiara, sash, fishnet stockings and whatever else you please – and blindfold her. Take her to an intersection of your choice and drop her off with the maid of honour. Give her a sign that says ‘Begging For My Honeymoon’ and see how much moola she comes back with!

Phi Phifollowing on from our Phuket, Thailand

experience was a week on the idyllic, perfectly unspoilt Outrigger Resort

and Spa on Phi Phi Island. Our travel agent, Marilyn from iTravelSmart, had no doubt that that was the place for us to stay after we mentioned that we wanted to stay on Phi Phi, not just have a day trip. Well, she was spot on with her advice…we had the most sublime six days on Phi Phi Island.

This trip starts with a two-hour ferry ride, which in our case was horrendous as very bad weather made the sea extremely rough. Nevertheless, we put that behind us swiftly (we’ll keep it on the ‘trip to remember’ list). Next, we boarded a long tail boat to Outrigger and about 20 minutes later we beached and were welcomed with piña coladas, friendly faces, smiles and the now all-too-familiar “sawadee ka” greeting. After a jam-packed Phuket trip we had planned nothing for six days except pure, total relaxation! We were shown to our gorgeous and comfortable chalet type rooms, and decided to take a stroll to the pool immediately. Wasting no time we ordered our first bucket of piña colada and floated in the pool for the next couple of hours. We noticed the waves receding as low tide approached and were completely intrigued how far they went back. This was when all the holiday makers took long walks right up to where boats were now anchored on the sand. It is an amazing feeling and became part of our daily routine.

The next morning at breakfast (where, to our amazement, the waves had again disappeared) we spotted hammocks hanging between two swaying palm trees and knew it was going to be a good day. Outrigger has a private 800 metre stretch of pristine beach…think sparkling turquoise waters of the Andaman Sea lapping crystal-like white sand – absolutely idyllic!

The next few days were spent devouring breakfasts with the most stunning view then lounging around the pool; the pool is an adventure…360 degrees, bar IN the pool, a rock feature, Jacuzzi-type sitting area…it covers all the needs from young to old. It is perfect for those wanting to drink the whole day or those on honeymoon wanting a quiet spot to stare into each other’s eyes. We hired canoes and ventured around the cove, played soccer on the beach during low tide and sipped on cocktails at the pool, while our nights were spent taking slow evening walks to the village and back. We were armed with mosquito spray but I must admit the mozzies were not as bad as we’d heard during September and October.

While spending some time in the pool chatting to other guests, we found out that there is a whole village behind Outrigger, which was just a five minute walk away. We felt very adventurous! Our walk revealed at least seven bars and restaurants, three Thai massage parlours, clothing shops, hair salon and even a little a café – we were astounded! From then on we spent our evenings with the locals, eating Thai food at great prices. Of course, every restaurant

of meat led to feasts of fresh seafood and steak…we danced under the moonlight to amazing live music. It was one of those magical nights we’ll remember forever. Something else that fascinated us were cooking classes with the Outrigger chef. We felt rather accomplished, making our own Tom kha Thalay (seafood coconut soup with galangai and lime leaves), Geang khiew Wan Gai (green curry with chicken and vegetables) and kluay Buad Chee (stewed banana in sweet coconut milk).

Most people doing day trips from Phuket go to Maya Bay, which means by 10am it is overcrowded and scorching, with little to no shaded areas. So, we decided to do a half-day trip to the quieter Mosquito Island, where you snorkel and swim with what seemed like a million colourful, beautiful fish. The fish are so used to people that they happily feed out of your hand. That was one of the highlights of my trip. We then took the long tail boat to Bamboo Island where we enjoyed a light lunch, in a little bit of shade under the trees. We had another swim there and were surprised to find little to no fish. Those that were there had no interest in being fed at all.

Phi Phi Island – especially the fantastic Outrigger Resort and Spa – was one of the reasons we left Thailand after 14 fantastic days with very heavy hearts…knowing for sure, that we would be back.

You can’t be in love and not eat. It’s a scientific fact, trust me – since I fell in love, all I DO is eat…or is that just me? Valentine’s Day is around the corner…and that generally means a romantic dinner or lunch, whether it’s the first date (eek!)

Cake10 eggs2 cups caster sugar1 ½ cups self-raising flour1 cup cornflour½ cup butterscotch sauce (recipe below)

Buttercream Icing¾ cup butter (room temperature)2 ¼ cup icing sugar2 x 3 tablespoons milk

Butterscotch Sauce½ cup golden syrup1/3 cup brown sugar2 tablespoon butter100 ml cream1 teaspoon vanilla extract

Method1. Heat the oven to 180°C. Grease two 30cm springform cake tins and line the bases with grease proof baking paper.2. Beat the eggs with an electric beater whilst gradually adding the sugar. Beat until the mixture is pale and thick (this should take approximately 15 minutes).3. Continue to beat whilst adding the butterscotch sauce.4. Sift in the self raising flour and the corn flour. Fold in with a big metal spoon.5. Pour into the two greased cake tins and bake for 25 – 30 min until they are risen and cooked through.6. Once out of the oven run a knife around the edge of the tin and release the clips on

the sides of the tin. Allow the cakes to cool completely.7. For the butterscotch sauce add the syrup, sugar and butter to a pot and bring to a boil.Once boiling allow to boil for five minutes and then add the cream and vanilla and allow to cool.8. For the butter cream icing beat the butter until soft and creamy, gradually add the icing sugar. Add the milk one tablespoon at a time (you may not need all the milk).9. Sandwich the cakes together with half of the buttercream icing and use the other half on top of the cake.10. Pour the cooled butter scotch sauce over the top of the cake and serve.

Method1. Line a loose-bottomed tart dish with greaseproof paper.2. For the pastry put the flour, sugar and butter in a food processor and pulse until the flour, sugar and butter just start coming together and look like breadcrumbs. If you do not have a food processor just rub the butter into the flour and sugar using your fingertips.3. Add the beaten egg and two tablespoons of water and mix until a dough ball begins

Line the dish with the pastry and chill in the fridge again for another half an hour.6. Heat the oven to 180° C whilst the pastry is chilling in the fridge.7. After half an hour remove tart from fridge

and line with greaseproof paper on top of the pastry and fill with dry beans. Cook for 20 minutes, then remove the greaseproof paper and beans and cook uncovered for 10 – 15 min until golden.8. Remove from oven and cool in the tin.9. For the filling melt the chocolate in a double boiler. Once melted mix with the mascarpone cheese and vanilla, fill the cooled tart shell and chill in the fridge for half an hour.10. Top the tart with the fresh berries and pistachio nuts.

January 2015, for many, marks the start of new projects, adventures and opportunities as we head off into a

new year. However, for quite a few eager new home owners, January means picking up the pieces of what never got around to being completed in the december rush, and re-igniting the former passion of their build as they count down to their fast approaching move in date.

The build and design process of a home can be frustrating at the best of times. For those new home owners who either missed the december deadline or have a looming completion date within the next month or two, will be testament to how these tensions grow.

As designers, working on these jobs where, over the holidays, a month has gone by and the painter’s ladder is in the same spot it was when the builder closed the doors, we know how important it is to stay the course and not let these frustrations get the better of a promising project.

for these soon to be home owners, this period of a project is probably the most crucial in terms of ensuring that completion of the home is done to perfection. It is easy to veto long deliberated decision-making of the previous year to “just get things finished” but, ”just a finished house” never did anyone any favours. Completing a home, and finishing well, despite the fact that december came

with delay after delay, comes down to simple relativity. Over a year-long project, with architects, council, builders and decorators, maintaining focus for the last stretch makes it all worthwhile.

Having already had the “welcome back” site meeting on a few of these types of jobs, one of the most practical ways in which to avoid the inevitable slump in momentum is to refocus the roles, objectives and time-lines for all decision making. In the year end panic, keeping up with admin or maintaining a record of what happens when, is often the first to fall through the cracks, and getting this discipline back up and running is key.

The completion of a home is not only about getting the plumber off site or making sure all lights work, but getting to a point where you are ready to start calling a space home. Focus on where you are able to still make an impact. Use this time to assess possible lapses in judgment on certain decisions, and get to a point where you can leave decisions made in the past, in the past, and focus your energies onto the decisions that need your attention now. Rather finish what you can before you move in, and use the expertise that you have on site to get done all that you can, rather than trying to get them back after the fact. Snags are a reality of a build. Be proactive and forthcoming, and know that the effort you’re putting in now, regardless of a delay, is what ultimately counts.

Building a home unfortunately cannot be boiled down to a foolproof formula of do’s and don’ts, but what each successfully job does have, is a team and a client that together, have the ultimate goal in mind, and that is to use the clean slate of the new year to build for success.

i must admit, I was nervous about this review because I’m not the world’s biggest cheese lover. I was worried that there’d be nothing on the menu that

I’d like…but WOW! Was I in for a delicious surprise?!

When Lucille and I arrived at Say Cheese Artisan Cheese and deli Café, we were warmly received by owners Allister and Caroline Clark. They seated us outside on the terrace and started chatting immediately, which we loved.

The deli is so quaint and quirky, which Caroline told us was deliberate.

“I wanted the place to be like a special secret, once someone has found it. As though we’re a hidden treasure!”

So, the menu – surprisingly, everything is NOT all cheese! The menu is filled with delightful breakfasts, light lunches and a range of delectable pastries for pudding.

Lucille and I were spoilt for choice so we decided to start with a round of drinks – chocolate milkshake for me and a chocca-chino for Lucille.

After much deliberation and some advice from Caroline we ordered a truckload of food – a bacon and cheese butter croissant, mini bacon and feta quiche and we HAd to try a Say Cheese platter. We chose the British one, which served up quite a smorgasbord of yumminess.

The croissant was amazing: warm and flaky, with the most divine bacon we’ve had in a while. Caroline says they grill the bacon en masse to get it flat and sticky, and the

Tilset – another smokey cheese – boiled egg, pickle, peppadews, roast beef and crackers. Caroline described it as being modelled on a typical ‘farmer’s platter’.

And now, dessert. Before we even started eating Caroline and Alistair warned that we HAd to taste a pain au chocolat – a croissant filled with dark chocolate and dusted with powdered sugar. YES! I could have eaten four of those, easily, and taken about three more home.

All in all, the meal was a refreshing change from the usual lunch fare and I am super excited that we have something so unique in our area.

We arrived just as the quiches were coming out of the oven (score) and devoured the little creation. It looks deceivingly small, but is surprisingly filling with a fresh salad. This one was served with a cranberry chutney.

What makes the quiches even better is the lack of pastry and flour, which makes them banting friendly.

roxann and I were recently invited to visit and enjoy some treatments at the newly opened Laura Channing Spa and Skin at The Ballito House. Their tag line is ‘Walk in, float out’

and I can see they mean it! The Spa is appealing from the moment you step inside: clean, relaxing, friendly and very welcoming.

Laura showed me to where I would be pampered with an Elemis Biotec Triple Tec Anti-wrinkle facial, which is a mouthful to remember but a real treat to experience. According to Laura this is the ultimate wrinkle smoothing facial and it rejuvenates aging skin. The facial included micro current, LEd light therapy and oxygen therapy. The facial itself is very relaxing and filled with so many different smells, touch, techniques and equipment that I thoroughly enjoyed the feeling. Laura is very passionate about what she does and can’t wait to share her product with the South African market as she truly believes Elemis to be a leading international brand, which is still unknown to the kZN market. My skin felt really soft and hydrated after the facial.

Roxy went for a pedicure with Tash and had the Shellac overlay applied to her toes. Tash is friendly and the conversation was easy; the pedicure area is relaxing and comfortable. The best part of a visit to the beauty salon is almost always the pedicure - Roxy enjoyed the accompanying leg massage!

We then hustled Roxy off to the shower area where she had her luxury spray tan. The Vita Liberata spray tan is non-toxic, organic and odourless. After the december holidays everyone is already nicely bronzed, so we loved that the spray tan only goes a shade or two darker than your natural colour. There are no tan marks after application as you do it pretty much buck naked; it was a quick, cold and painless experience.

Laura is a true professional with very high standards. She is passionate about her spa and the beauty industry. We love how friendly, professional and perfectly matched Tash and Laura are. Your experience starts the moment you walk through the door right down to when you leave…after enjoying a cup of tea and a biscuit.

The spa has two treatment rooms where facials and massages are done. There is also a manicure and pedicure station; they also do waxing! Packages for men and mothers-to-be are also available. What a perfectly serene and enjoyable morning!

It’s been said that we have two hands: one to help ourselves,

and one to help others. The concept of ‘paying it forward’ is truly heart-warming; it encourages keeping a chain of kindness and warmth going. In this edition, we are starting a chain in Ballito and through the next few editions, we will keep it going – profiling locals who are out to make a difference.

Meet our first ‘do-Gooders’: Lindy Elmes and Lisa Opperman of Positive Beginnings

How did you start up the organisation/initiative? I (Lindy) started off by knitting a few jerseys myself and donating them to Stanger Hospital. I was shocked to see how great the need is. Some ladies have very little or no clothing or blankets to take their babies home in. This inspired me to do more. From there,

I approached a few moms with young babies and asked for them to donate clothing from 0 to 6 months, which they don’t need. This didn't seem complete, so accessories were added and gradually we started acquiring corporate sponsorship for bag, mattresses, cash, etc. We are also supported and backed by CRC Church in Ballito.

When did you start it up? I started off in 2010. The first two years I worked alone, involving my two daughters to encourage them to learn compassion for others. I have since been joined by Lisa Opperman, who has been amazing to work with.

What does your organisation/initiative involve? Positive Beginnings is a charity organisation in which we encourage the community to donate new or used baby

clothes, which can then be distributed to the underprivileged. Packs are made up, put into bags and then personally handed out by Lisa and myself, to the new moms in the post natal ward at Stanger Hospital. Enough clothing is packed into each bag for at least a week before laundry is necessary. On each visit we hand out between 60 and 80 packs.

What do you take away from helping others? The visits are always humbling and fulfilling. Personally handing out the packs gives us an opportunity to interact with the patients, which also gives them a chance to share their stories about themselves. Their gratitude is enormous and most of them start unpacking their bags and dressing their babies straight away. They often ask us: ‘why are you doing this?’ We just want to share some

happiness with them, their gratitude is our reward.

How important do you think it is to make a difference in your community? I feel reaching out gives a sense of care for others, which in turn builds trust within the community. If we learn to share on a wider scale, there would be less poverty and famine. I also feel that if we involve our children in outreach from a young age, it will be instilled in them for their future.

What is your fondest memory of your outreach? Each visit has a highlight and we more than often are moved emotionally by the experiences. I love seeing all the newborns, particularly the premature babies in the "kangaroo" ward. These moms spend a longer time at the hospital and are extremely happy when we visit. We also get an opportunity to council and pray with the ladies who have had still births or loss through labour. This is where we can offer hope and encouragement. These ladies are also presented with an appropriate pack.

Who would you like to nominate to pay it forward? I would like to nominate the "Feral Feline Fund" to pay it forward, as this too lies close to my heart. These ladies do amazing work and if it wasn't for them the cat population in Ballito would be out of control.

What is it that makes for a New Year’s Resolution? Well, firstly, it’s New and that’s what needs to be

realized. The fact that you get an opportunity to assess or reassess your plans and goals for the year are refreshing and allow you to plan accordingly, with a keen mind and heart open to change. In my case my new plan is to do what I am passionate about, our youth. I am undertaking to coach one of the local school rugby teams. I have the knowledge on how to train people, plan for delivery, create a vision, I just need to put it all together to create a successful unit. It’s a new year, new school and young keen minds and bodies. I cannot wait.

The second part of the term is the word year. This is the crux of the statement. A year! You have 12 whole months to prepare, plan and execute the plan for this goal you call a New Year’s resolution. This means for my rugby team, they get a full year of my time and commitment. They get a group of people, teachers and parents, they get expertise and passion from the people that are crazy about the wellbeing of their children or charges. The fact that it’s a year means we can bond and create lessons in life, we can laugh and cry to a season filled with achievement and accolades and we can make a year like a riveting chapter in a book of all books, the book of life. Enjoy the ride.

The third word in the statement NEW YEAR’S RESOLUTION, is the resolving part. You resolve, no, you fight tooth and nail, to get the goals you want. What a sinking sickening disappointing feeling when you set a goal and you fail to achieve it before the first week is out of the New Year. The school team and I will work toward creating a lasting legacy, building traditions and lessons in life, being fit and healthy, working toward being accountable and responsible to themselves, each other and to their loved ones. This resolution should be to better the world and that always stems from within. Help the world become a better place with each plan and step you take toward that resolution.

The performance of our local property market over the past year can be described, in a word, as extraordinary.

For realtors and businesses that service the property market it has been the best of times since the boom period of 2006/7. The migration of families and businesses into the area from the regional suburbs to the south of Ballito and from the national hubs of Pretoria and Gauteng has accelerated. The local schools are busting at the seams and are a good barometer of the level of migration into the area. Even the traffic congestion that seemed to plague us during the beginning of december has disappeared. The word is out that life on the North Coast is something special and people are rushing in to stake their claim on this strip of paradise.

The two largest gated estates within our greater Ballito area – Zimbali Coastal Resort and Simbithi Eco-Estate, provide an interesting comparison in terms of their respective property transaction performance. If we restrict our data to that provided by the deeds office and focus on actual registrations recorded we start to see how these two powerhouses of property trade within our area actually match up.

In terms of geographic size Zimbali and Simbithi are very comparable – Zimbali at 430ha is marginally bigger than Simbithi’s 410ha. Simbithi is slightly denser with a current market stock of 920 freehold properties (includes vacant land) and 628 sectional title units, a total of 1,548 residential properties. This would exclude

pushed pricing up significantly over the past 12 months. Within both estates we can expect general pricing to take a giant leap forward over the next 12 months.

When we consider the period of ownership between Zimbali and Simbithi we note that of the recent sellers in Simbithi, 62% have owned the property for less than 5 years while in Zimbali 49,5% of recent sellers have owned the property for less than 5 years. (“Recent” is described as all sellers over a rolling 12-month period). As an estate matures the term of ownership increases and becomes more stable, with less speculative buying and selling apparent.

The age profile of homeowners, within the two estates, is something that is often misunderstood. If we analyse the ages of stable owners, recent buyers and recent sellers within both Zimbali and Simbithi we see that Zimbali does have an older age profile – but it is marginal and not as distinct as many people think. Simbithi has 12,26% of stable owners aged from 18-35 whereas Zimbali only has 5,46%. This can be expected given the lower priced entry level home in Simbithi. Simbithi has 48,91% of stable owners aged between 36-49. Zimbali has 44,89% of owners within this age group. Simbithi has 31,67% of stable owners aged between 50-64 and Zimbali has 32,54%. Simbithi has 7,16% of stable owners over the age of 65 while Zimbali has17,60%. The slightly larger older group within Zimbali can be expected as the estate is now in its 18th year with many of the owners who initially bought now having matured along with the estate. When comparing recent buyer and seller age profiles across Simbithi and Zimbali, we see that recent buyers aged below 49 in Simbithi makeup 73,39% while in Zimbali 59,58% of buyers are aged below 49. In Simbithi 23,65% of recent buyers were aged between 50-64 and in Zimbali the figure for this age category was 34.04%. This does indicate that Simbithi does continue to attract younger buyers. The difference can be mostly explained by the differences in the entry-level cost of homes within the respective estates. Zimbali entry level is closer to R4m whereas it is still possible to buy an Ethafeni apartment in Simbithi at around R1m. To complete the picture on age profile, recent sellers within Simbithi aged below 49 make up 61,95%, and in Zimbali this recent seller category makes up 45,72%.

This means that recent sellers over 50 make up 38,05% in Simbithi and 54,28% of sellers in Zimbali. This indicates that both estates are still trending towards a younger general profile from their historical profile.

Zimbali’s comparable market stock is 1,236 properties split between 778 freehold homes/vacant land and 458 sectional title units. Zimbali is closer to capacity given that it is several years older than Simbithi. At capacity we expect Zimbali to be just over 1,300 homes excluding the three existing hotels and Simbithi to be closer to 2,000 residential homes.

In terms of sales performance, and using only the actual published deeds office data to date, which admittedly does sometimes have a lag in terms of reported transactions, the 2014 comparative registrations are as follows: For Zimbali there have been 89 registered sales with a gross value of R378,455,000, split between 33 sectional title transactions at R131,439,000 and 56 freehold transactions at R247,016,000.

Simbithi has delivered 273 registered sales with a gross value of R464,010,000, with these transactions being split between 71 sectional title sales at R171,110,000 and 202 freehold transactions at R292,900,000. Together these two dominant estates make up close to a billion Rand in annual property transactions within the region. Zimbali is a more mature market in that the average price of a freehold property is higher indicating fewer vacant land transactions included in the figures, whereas Simbithi still has a very large component of vacant land sales included in the freehold property figures. Nevertheless the demand for vacant land in Simbithi has
