Last year, the Institute of Hotel Management, Catering Technology and Applied Nutrition (IHM) in Mumbai,

popularly known as Dadar Catering College, opened its doors to the pub-lic for two evenings to savour fares from France, Brazil, Germany, Italy and Spain in a FIFA World Cup-theme dinner prepared by its stu-dents. It also collaborated with Alliance Française de Bombay to

host food and beverage workshops for students as well as invite experts from hospitality, revenue, human resources and tourism fields to share their experience and exper-tise. “The students need to know what industry expectations are,” says Arun Kumar Singh, the insti-tute’s principal.
