CREAMY BARLEY SOUP

1 cup barley, soaked 6–8 hours in 6–8 cups of water (depending on how thin or thick you would like your soup)

2 shiitake mushrooms, soaked and sliced and diced

Place shiitake, barley, and barley soaking water in a pot. Bring water toa boil, cover, and reduce flame to low. Simmer for 2–2 1/2 hours, untilbarley becomes very soft and creamy. If you do not have time to sim-mer this soup for several hours, you can pressure-cook barley for 45–50minutes together with shiitakes and soaking water.
