WelcomeA very warm welcome to our fifth annual newsletter. The years have just flown by, we celebrated our fifth birthday on the 17th of September with an evening of Champagne, Wine, Canapes and Entertainment.

We thank you all for your support over the last year, it’s nice to see so many familiar faces on such a regular basis in times like these. The excellent value the prix fixe menu offers have brought many new faces to the restaurant mid week for which we are very grateful.

Box Tree Events is continuing to provide fine dining to various events around the country. Weddings at Denton Hall are going strong and with its newly acquired civil ceremony license it really is the ideal location for a wedding.

ShowcaseThe past 12 months have been busy ones for Box Tree Events providing their excellent service at numerous high profile events.

Last year Box Tree Events was again honoured to host at the annual YIBC gala dinner at Harewood House where George Foreman was the special guest. This year’s annual dinner was yet again a fantastic event with special guests John Cleese and Dave Stewart. John Cleese was witty as ever and kept his speech short and sweet whereas Dave Stewart treated guests to an impromptu performance. Other guests included Matt Pritchett, Tim Sanders and Tim Smit.

Last July the charity Hearing Dogs for Deaf People held a fundraiser. The evening was attended by the charity’s patron HRH Princess Anne and commenced with a champagne reception and a display by the specially trained dogs which help people with hearing difficulties in their every day life. Simon and his team prepared an exquisite 3 course dinner which was a great success as well as raising money for a worthy cause.

Other events this year hosted by Box Tree Events have included a fundraiser for Opera North which raised £7500 to redevelop the grand theatre, a seminar where William Hague was the guest speaker, dinners to showcase watches by Zenith and Patek Phillipe, wine tasting evenings and many more.

Corporate

HAREWOOD HOUSE

Built in the 18th Century, Harewood House exhibits magnificence and grandeur of a phenomenal scale. Guests will be welcomed into the House and offered drinks to enjoy in the majestic Entrance Hall or on the Terrace which overlooks stunning landscaped gardens designed in the mid-1800’s by Sir Charles Barry.

The Gallery, once described as “truly elegant and presenting such a show of magnificence and art as eye hath seldom seen and words cannot describe”, is one of the rooms which can be used for your Wedding Breakfast. The elegance of The Gallery leads through to the equally magnificent State Dining Room catering for smaller parties. Extending into the vast grounds at Harewood House, the party can continue into the night in a marquee setting located close to the house.

DENTON HALL

Denton Hall has been granted its civil ceremony license – which now makes it the perfect exclusive wedding venue.Denton Hall, set in 2500 acres of Yorkshire’s finest countryside, is a stunning venue which offers you exclusive use of the Hall and its Gardens for your Wedding Day.

Guests will be welcomed with drinks and a delicious selection of pre-dinner canapés served either in the luxurious Reception Room or on the beautiful outside terrace with views not to be rivalled with. BROUGHTON HALL

Situated in some of the most stunning countryside in Yorkshire, Broughton Hall and the award winning Estate and Business Park are set within 3,000 acres of secure and extensive landscaped grounds, with a small village and a public house.

The Hall is the private home of the Tempest family whose origins can be traced back to Roger Tempest in 1098. The family has been established in the area for 900 years and the lineage now runs through thirty one generations to the present day. The location is often used for film and TV dramas. Previous productions include Wuthering Heights, Tennant of Wildfell Hall, Dalziel and Pascoe and a number of television advertisements.

Utopia is an award winning building within the estate designed by Sir Michael Hopkins. Utopia’s ultra modern design is perfect for weddings and parties. The beautiful walled gardens are also the ideal spot for a marquee with its undulating land form, a series of yew hedges and dramatic planting.

Box Tree NewsMICHELIN STARThe Box Tree is delighted to have retained its Michelin Star for the fifth year.

45TH BIRTHDAY OF THE BOX TREEAs the Box Tree entered its 45th year the restaurant took a trip down memory lane. After discussions with one of the original owners Malcolm Ried, longstanding loyal customers and old members of staff, Simon wrote a special menu featuring the best loved dishes from the Box Tree’s early days. The menu was run for a week and included old favourites such as crepe alfredo and roast haunch of venison.

YOUNG WAITER OF THE YEARThis year the prestigious competition to find young waiter of the year is celebrating its 25th Anniversary and the Box Tree was very proud to have 2 winners of the accolade under its roof for a period of time. The general manager of the Box Tree, Andrew, won the award in 1994 and with his help and advice William Bonnfield won 2008’s competition and has now moved to London to develop his career in other areas.

RACE THE TRAINGeneral Manager Andrew and Sous Chef, Simon Davis, took part in the annual event where by entrants set off from Keighley train station at the same time as the first diesel train and cycle up the valley and attempt to beat the train to Oxenhope train station. Both Andrew and Simon beat the train completing the 4.8 mile journey in less than the 23 minutes and 9 seconds it took the train. In the overall race Andrew came 9th and Simon came 12th. The race raised money for Sue Ryder Care’s Manorlands Hospice, in Oxenhope.

THE BRONTE BIG K FOR SUE RYDER CARE, MANORLANDSAndrew and Simon are already in training for their next competition, the Bronte Big K Mountain bike challenge and they will be joined by Simon Gueller. The race is raising money for the Sue Ryder Care and until the end of September £1 will be added to the bill of each table that visits the Box Tree to be donated to the worthy cause. COOKING DEMONSTRATIONS

If you enjoy cooking food as much as you do eating it then why not join the Box Tree Team for a cooking demonstration. You will be welcomed to the Box Tree with coffee and biscuits on arrival. You will then observe a chef preparing one of the Box Tree’s signature dishes. Guests are encouraged to get involved and try out some of the methodology themselves. Following the demonstration you will then sit down to a 2 or 3 course meals with wines to accompany. The next demonstration has a festive theme and will take place on Wednesday 11th November. Book early to avoid disappointment as spaces are limited. Also available for private parties by special arrangement.

Martinez Wines

Martinez Wines is a ‘famously independent’ wine merchant who has been trading for 26 years on The Grove in Ilkley with an ethos for sourcing unique and individual wines of honesty, character and integrity at all different price levels.

Over the years the business has grown to embrace all aspects of the wine trade; the retail shop is open 7 days a week; a fully informative website incorporating an online Newsletter – ‘Noble Rot’ is available; mail order sales and a bespoke gift service sends wines to customers and corporations nationwide. Corporate events and tutored wine tastings are hosted. Personal consultations to provide advice on cellaring potential of wines for cellar collections go hand in hand with a new online Wedding Wine Gift Registry to be found at www.wines4life.co.uk.

Over the last few years the wholesale side has gone from strength to strength, providing the individual and unique Martinez level of service to a wide range of customers from cafes and pubs to Michelin-starred restaurants including The Box Tree, Ilkley.

Shepherds Purse Cheeses

It’s hard to believe that Shepherds Purse Cheeses is the culmination of an avid interest by the founder Judy Bell in health food and dairy intolerances. Yet that is exactly the origins of this family-run, North Yorkshire business. Judy Bell set up Shepherds Purse Cheeses in the late 1980s on the family’s 180-acre arable farm at Newsham, near Thirsk when the writing was on the wall for farming and the family knew it had to diversify to survive.

A self-taught cheesemaker, Judy produces a premium range of traditionally hand made cheeses and developed her own methods from scratch with help from her son Justin, beginning with sheep’s milk products, which were then recognised as a viable alternative to those suffering with food allergies and dairy intolerances. Judy bought her own flock of sheep which provided the milk she needed to produce early experimental cheeses in the farmhouse kitchen.

Local ProduceThe first cheeses were unleashed to the public in 1988 at various farmers markets and sold in local shops. The big product launch came in July 1989 at the Great Yorkshire Show, under the then Yorkshire Pantry banner. Later that month one of the cheeses took first prize at the Nantwich International Cheese Show, which was a real boost to morale. In 1991 a cheesemaker was employed to help expand the business and the workforce slowly grew.

In July 1993 the turning point came when the company won the Anchor Foods marketing trophy at the Nantwich International Cheese Show for a display of its products – TESCO immediately approached Judy to supply the cheeses on a limited basis. The first diversion from sheep’s milk blue-veined cheeses came in the shape of Yorkshire Blue, the company’s first cow’s milk product and now its best-seller.

The Bell family take great pride in the quality of its cheeses and believe in doing things properly, without cutting corners. All its cheeses are hand made, with no mechanical stirrers or cutters and made with locally sourced cow’s, ewe’s or water buffalo milk. The milk in its Yorkshire Blue, for example, mostly comes from a single farm near Leyburn, in Wensleydale. The penicillin is added at the start and after the cheese begins to form it is turned by hand for two days to allow the whey to drain and finally it’s salted. Then it heads for the ripening store, where high humidity and moderate temperature provide optimum conditions for the blue to develop. It is best eaten at about 10-12 weeks old.

The company’s strong portfolio of award-winning cheeses, including Yorkshire Blue, Mrs Bells Blue, Yorkshire Feta, which is soon to be renamed following an EU directive, Byland Blue, Katy’s White Lavender, Buffalo Blue, Olde York and Basilano, are sold in major supermarkets (either pre-pack or on the delicatessen) or in specialist cheese shops nationwide and via the company’s large wholesaler base. Shepherds Purse is also now enjoying fledgling export success and it continues to innovate year on year with

new products, the latest being Ryedale, its first white cow’s milk cheese launched under this new local brand.

Judy Bell commented “Chatter around the dinner table has moved from holidays and the weather to what is on our plates, where it has come from and what has been done to it before it was bought. Local and regional food producers are seeing great support from consumers looking for food with real provenance and we are proud, as artisan cheesemakers, to celebrate good food, delivering quality every time.”

Innovation, quality and attention to detail are the basis of Shepherds Purse’s philosophy and by consistently winning accolades for its products, it is proof that some of the best food is made in God’s own land – Yorkshire.

The family’s love for wine grew and in 1959, after completing his oenology diploma in Bordeaux, the eldest son, Serge, entered the business.

Join us for an evening celebrating some of Serge’s greatest achievements and see how Musar has developed from the “discovery of the fair” in Bristol 1979, being the first ever Decanter Man of the year, through to today and the legendary wine that is Chateau Musar, once tasted never forgotten.

A treat for Burgundy lovers everywhere.The Domaine has been family run for two generations, founded in the1890’s, and it was a natural progression for Gilles to take over the reigns from his father Henri, it wasn’t long before Gilles was a member of the Young Vinters of Burgundy and a grower of the first quality in his own right.

Domaine Gilles Remoriquet is led by Gilles himself. A forward thinking winemaker who is constantly seeking to represent the true expression of the pinot noir grape and the terrior of his world renowned Nuit St Georges Premier Crus of Les Damodes and of course Les St Georges itself. The evening will culminate with the Vosnee Romanee ler cu les Malconsorts, next door to the legendary La Tache itself, which exhibits all the class and elegance you would expect from such a superbly sited vineyard.

CHATEAU DU BEAUCASTEL

In 1321, under the reign of Pope John XXII, four barrels were brought from the papal cellar in Avignon to be filled with wine in Châteauneuf. Subsequently, the Popes increased their vineyard holdings in the region and the papal wine gained in fame.

The Beaucastel family were living in Courthezon by the middle of the sixteenth century.In 1549 “Noble Pierre de Beaucastel” bought “a barn with its plot of land extending to 52 saumées at Coudoulet”.Today the torch is carried by Jean Pierre and François Perrin, sons of Jacques. But Marc, Pierre, Thomas and Matthieu, who represent the fifth generation, are ready to pursue this fabulous family history.

The result of all the efforts and innovations of three generations of the Perrin family is evident when one has the pleasure of tasting a good vintage of Château de Beaucastel at its peak. If one word could describe the red wines of Beaucastel it would be “pure”: because these wines are the natural expression of the place and the grapes from which they come. Beaucastel is of course famous for being one of only two holdings in Chateauneuf to still cultivate all 13 permitted grape varieties.

WEINERT, ARGENTINA

Founded in 1975, Bodega y Cavas de Weinert is located in Lujan de Cuyo, Argentina´s cradle for top quality wines. The original building of 1890 of spanish colonial architecture, reminiscent of an old winery owned by the family Otero until 1920, catches the eye by its beauty, inviting those who pass by to know what it guards in its inside.

Don Bernardo C. Weinert, founder and owner, could be defined as an entrepreneur. Born in a small German colony in Southern Brazil, he built his name around international transport in South America. Fascinated by the world of wine, he decided to found his own winery in Argentina with one unconditional philosophy: producing high quality wines.

Before engaging in such a treat, he made an extensive study about Mendoza: its climate, soil, grapes; and came to the conclusion that Lujan de Cuyo was the perfect place for his project. After a thorough restoration work of the building acquired in 1975, he brought in the latest technology in vinification of that time and was joined by acclaimed oenologists. By then everyone believed him to be insane for facing such a treat. But time proved him to be right. After the first commercial vintage of 1976, by 1977 he produced Weinert Malbec Star 1977, a wine known and acclaimed by the world´s most prestigious tasters.

RUINART CHAMPAGNE

Ruinart is the oldest Champagne house, exclusively producing champagne since 1729. Founded by Nicolas Ruinart in the Champagne region in the city of Reims, the house is today owned by the parent company LVMH Moët Hennessy Louis Vuitton SA.

The uncle of Nicolas Ruinart, Dom Thierry Ruinart, for whom the house’s flagship wine is named, was a close friend of Dom Pérignon.

The family lineage ownership lasted until financial assistance from Baron Philippe de Rothschild was taken in 1950, and in 1963 the entire business was sold to Moët & Chandon before it became part of the LVMH group.

LIVIO FELLUGA, FRIUILI, ITALY

In Friuli, and far beyond this special land of very special people and wines, the name Livio Felluga is synonymous with all that is best in the oenological heritage.

The long family tradition extends over five generations, back to the days when the Fellugas were making Refosco and Malvasia in their native Isola d’Istria. Seventy years ago, the family’s skills were transferred to Friuli by the eldest son of the fourth generation, Livio, whose great privilege it is to be regarded as the patriarch of viticulture and winemaking in the region.

Today, the Livio Felluga estate extends over more than 160 hectares of hill country in the Collio and Colli Orientali del Friuli, with 135 hectares planted to vine.

The vineyards yield exclusively great wines with instantly recognisable fragrances and aromas.

A recipe for youI

I’ve picked this dish because it is lovely at any time of the year, is very versatile and simple to make. If you serve it cold as it is traditionally served you could simply add some chopped chives. You can also serve it hot and add different accompaniments such as a soft poached egg, smoked haddock or even seared foie gras and sautéed leeks.

VICHYSSOISE

Serves 6

750g leeks, very finely sliced350g onions, peeled and finely sliced350g potatoes, peeled and very finely sliced

900ml fish stock (boiling)900ml chicken stock (boiling)200ml cream100g butter

1. Sweat the onions & leeks in the butter until they are soft but without colour.

2. Add the sliced potato, the boiling stockand cook over a fast heat for 10 minutes.

3. Add the cream and cook for a further 2 minutes. Liquidise then pass through a fine sieve. Season to taste.
