In March, we saw all 4 seasons; winter, spring, summer and some fall!! Excited to see the upcoming forecast is a little more conducive to this time of year. Summer is right around the corner and we will be having a lot of fun events. The Matt Mason Concert is Saturday May 11th so be sure to get your tickets early. This will be our Kick-Off to Summer Party.
We are excited to announce Saturday Steak Night, starting this month. Two for $35 Steaks include your choice of Filet or Ribeye, two side choices and house or ceasar salad. We will be featuring Steak Night EVERY Saturday.
Sunday, April 21st, we will be having our Easter Brunch. We have seating times available at 11:00am and 1:00pm. Be sure to make your reservation early to get your desired time. The menu is inserted in this month’s newsletter as well. Our culinary team is excited about preparing the delicious menu items. We will also be having an Easter Egg Hunt for the kid’s starting at 2:30pm Easter Sunday. The Easter Egg Hunt is FREE and will be in the Pool area. Please RSVP for the Hunt as well.

Congratulations to Matt Rangel Employee of the Month for April
We are happy to announce Matt Rangel as the employee of the month for April. Matt has worked for Hillcrest for almost 5 years! Successful execution and service requires a lot of behind the scenes work. Matt is our guy that prepares lunch and dinner buffet set-ups, banquet set-up and break down, receives food trucks, just to name a few of his responsibilities. It is a pleasure to have a dedicated and loyal employee like Matt on our team!

Message From Chef Martin…..
With the crazy weather we have experienced this season; Bobby, Charles and I will be visiting local Farmer’s Produce Markets to find some of the
freshest fruits and vegetables around. We want to support the local community as well as providing the highest quality food to you.
With this being said, jalapeno peppers are in season and what better
way to showcase one of our signature dishes. For starters, Chef Charles will be creating a new appetizer. Bacon Wrapped Brisket Stuffed
Jalapenos. This appetizer is full of smoked brisket and cream cheese stuffed into a whole jalapeno and wrapped in bacon.
Jalapeno Cheddar Shrimp & Grits will be my signature dish this month. Roasted jalapenos, sharp cheddar cheese, grits, garlic sautéed shrimp and topped with a Cajun Veloute. Each month I will be featuring new
signature dishes.

The annual Silver Tees Low Ball Partnership is
set for the first weekend in May. May 3 – 5. Put
it on your calendar! Rhonda just sent out an
email with an invitation and registration form.
Ladies, this is such a special tournament. Find a
partner and sign up ASAP. The food and the
fun are really worth it!
Our regular golf Play Days have started! So far
this spring, the weather has not really
cooperated with us, but the weather is warming
up, and we would like to see everyone out there
on our beautiful course!
Golf Play Days are every Tuesday morning
March through May at 10:00am and June
through October at 8:30am.
Business Meeting dates for 2019 are as follows:

HOLE #9
How to Play Hole #9
#9 is one of my favorite holes at Hillcrest. The
green on #9 is very receptive to a good shot.
However, playing from the fairway makes it
much easier to control your spin and distance.
Make sure your tee ball can get to the corner
but not too far as hitting off of the side slopes
makes the second shot difficult. If you prefer
to favor one side of the fairway, favor the left
as everything tends to kick right. While the
green is very receptive it is best to stay below
the hole as anything above the hole can get
pretty fast most days.

Dear Members,
Winter has finally passed and we are now back in the business of growing grass! The first aerification is complete and I’m happy with the results. We pulled 6” X 3/8” cores and used roughly 50 tons of good greens grade sand to fill those holes. We will continue solid tine (1/8 inch “pencil” tine) every other week. On the weeks we don’t pencil tine, we will verticut and lightly topdress. Continuing these processes weekly, will allow us to be more precise and delicate with thatch removal, while still expecting the best results for increased greens health and playability. The fairways are starting to green up! This first week of April we will give them their first cut. The mower will be lowered to clean up the dormant look and allow more sunlight to the new shoots. The traffic control rope is removed and 1 and 3 will be next. 10 will remain roped off for the first 200 yards for several more weeks. The pond fountain is in and landscape lighting will be connected soon. Be sure to drop by the dining room and check out the after sunset view! Landscape goals this month too. The last week in April, just to make sure we don’t have any late freezes. Another big project starting soon is stump grinding. Happy Golfing! Daren Hazel Hillcrest Course Superintendent

Greetings Tennis Players,
Many thanks to Daren Hazel and his crew for helping the tennis staff get the courts and grounds nearby ready for the UTR Tournament we held during Spring Break.
They did a fabulous job and it is much appreciated.
This month’s newsletter gives some good information on getting hydrated with pickle juice. You may have tried it. I have and have had good results to stop
cramping. According to a recent article in Sports Illustrated, Frances Tiafoe was playing Grigor Dimitroz in the Australian Open in January when his body started failing. He started downing pickle juice during changeovers and it saved him.
There are many athletes who swear by it. NHL player Blake Coleman drinks 16 ounces before each game. In fact, he now has his own line of pickle juice for sale, P20. It is not completely clear why pickle juice relives cramps but like traditional sports drinks, it contains high concentrations of sodium and potassium. Studies have shown that pickle juice actually provokes a neurological reflex that prevents
muscles from cramping.
We have had some beautiful weather for tennis lately and have had a lot of impressive doubles play going on each Saturday and Sunday.
