([email protected]) – our baroness needs swag! (And cc [email protected], and I'll put it in the Skol! feature, below.)

Skol!Word fame for those in Storvik's hall

Skol! For Tala al-Zahra, raised to the ranks of Atlantia's nobility by His Majesty's hand at royal court at Pennsic.

For the work crew who braved the torrential rains to do inventory: Mistress Graciela, Lord John West, Lady Sonya Flicker, Douglass Morton and Dan – thanks to you all!

Many Storviki shared their knowledge at Pennsic University. Lady Alicia of Cambion, Lady Tala al-Zahra, Lady Isabella D'Angelo and your humble servant all offered classes.

Storvik was well-represented in performance as well. Mistress Fevronia and I were among the volunteers providing music at the Children's Fete; Mar Yaakov HaMizrachi performed his “The Book of Delight” on the Main Stage. Lilies Among Thorns, a Clan Cambion ensemble, also took the Main Stage for the Known World Bardic Presentation. Storvik was also represented in the Depressing Song Competition and took fourth place.

Aside from His Majesty acknowledging Lady Tala's day-long presence on the archery field – in the oppressive sun and heat! - I have heard no tales of Storvik daring in war. That cannot be right! Pray send corrections to [email protected] and we shall hear tales of war next month.

Much noteworthy service was recognized at Battle on the Bay, but the wind made hearing uncertain. I will wait for the court reports before raising a Skol! for those good gentles, but know that you were seen.

But a Skol! can be safely raised for Lady Sonya Flicker, our autocrat, who wisely persevered despite the threat of a major storm. It never arrived, and the weekend was glorious for over400 GENTLES who attended! Skol! also for Lady Naila al-Zarqa, the head cook, and her kitchen staff; for Lady Kunigunde von Darmstadt, drafted at the last moment to run the gate, and her assistants; for Lord Carlyle Jamesson, the Marshal in Charge, as well as the marshals and Ministers of the Lists who worked all day to provide the amazing fighting and archery scenarios that BOTB has become known for. We notably had a banner day for youth fighters, with 17 authorizations and 25 combatants! Baroness Emma West ran the Newcomer's Point and held a class for chatelaines; Caer Bear (Mistress Fevronia and Master Igor) sponsored the Performing Arts pavilion, and Lady Tala sponsored a Middle Eastern Madrassa. And though they be not of Storvik, Skol! also for our neighbors from Lochmere and beyond who led other activities at BOTB – there was a mead tasting, a fiber solar, children's activites, a storytelling contest, and an Iron Commedia.

Lady Alicia’s Cookery Booke: Pickles

By Lady Alicia of Cambion

Greetings! Recovered from Pennsic yet? Backhome at the Manor, we have finally gotten thelast of the trunks put away, the last of thebedding aired out and the last of…well, mostof the laundry done. It seems like every timeI turn around twice, there’s another pile. Ididn’t think I had packed that much garb! Ithink it is spawning when I am not looking.

In the meantime, the late summer harvestsare upon us and there is much foodpreservation to be done! The manor gardenshave been puttering along in my absence and, while the accursed squirrels seem to havegotten the better of my cucumber plants, there may yet still be enough to put up acouple batches of pickles before the season isthrough.

Pickling is a period means of foodpreservation through a highly-acidic storageenvironment. This keeps bacteria fromgrowing and spoiling the food. You can picklealmost anything but for this recipe we will bepickling cucumbers, or, as you will often seethem referred in period, cowcumbers.

In pickling you create a vinegar-based brinethat can be flavored by adding herbs or otheraromatics to it. Elinor Fettiplace has a recipefor preserving artichokes which uses hyssopand fennel (she notes you can preservecowcumbers this way, too). The recipe Ipersonally use is a family recipe, but it is stillvery similar to the one from Hugh Plat’sDelightes for Ladies:

You may take a gallon of faire water, and apottle of veriuyce, and a pinte of bay salt, anda handfull of greene Fennell or Dill: boile it alittle, and when it is cold put it into a barrell, and then put your Cowcumbers into thatpickle, and you shall keepe them all theyeere. (Delightes For Ladies, Sir Hugh Plat,1609)

A pottle is equivalent to a half gallon and“veriuyce” or verjus is the juice of tart orunripe fruits, such as crabapples orimmature grapes.1 If you cannot findverjus, vinegar will work as well. Whileboth the Plat and Fettiplace recipes arejust slightly out of period, they dodocument an existing in-period process.

To start, add 1 tablespoon of non-iodizedsalt directly to the containers being usedto make the pickles. This could be amason jar, a plastic deli container or anyfood-safe container. NOTE: If you areunsure whether a glass container is safefor boiling liquids, do not use it! Boilingliquid can shatter glass and cause seriousinjury. Better to wait than to hurtyourself.

Next cut up your cucumbers and placeinto the jar. You can cut them intorounds or spears, however you prefer. You will want to pack the cucumbers intightly, but not so tightly that the brineand aromatics cannot circulate. Be sureto cut off the blossom end (non-stemend) of the cucumber – the blossom endcontains enzymes which will soften thepickle while it is in the brine and nobodylikes a floppy pickle.

I like garlic with my pickles, so at thispoint I will split a couple peeled garliccloves in half and tuck them in with thecucumbers. While garlic was used as anaromatic in period, this particular recipedoesn’t use it, so feel free to leave it out,if you prefer.

1 Verjus is an ingredient that shows up in medieval recipes but it is experience its own renaissance as contemporary chefs are rediscovering it as an ingredient and you will see it on menu descriptions in restaurants.

Page 8: The Drekkar - Barony of Storvik Drekkar Newsletter ... samurai, attend a tea house and moon viewing, participate in children's ... Arabic Lesson 5 Between the Beltways 6

While Plat’s 2:1 ratio of water to vinegarmakes for a good brine, the large quantitythat he lists makes a significantly largeamount of brine, moreso that you will needfor a small batch of pickles. 2:1 cups of eachyields enough brine for 2 1-quart containersof pickles.

Combine your 2:1 water:vinegar ratio in asaucepan. You can use white vinegar for thebrine but I find apple cider vinegar to be acloser approximation of the verjus used in theoriginal period recipe. Bring the mix to a boil, then add some roughly-chopped dill to thebrine. You may also use the fennel that bothPlat and Fettiplace mention, or explore withother aromatics (such as coriander or bay ormustard seed) as you see fit. Unlike the Platrecipe, do not allow the brine to cool -- pourthe boiling brine directly into the cucumberjars, covering the cucumbers. Cover the jarand allow to cool to room temperature beforestoring in the refrigerator.

These cucumbers should marinate for abouttwo weeks before fully infused, though thattime may differ, depending on the cut andthickness of your cucumbers. You’re justgoing to have to sample to taste readiness. Ihave no idea how long these will last in therefrigerator, as I have never had a batch of“preserved cowcumbers” hang around longenough after maturing – they are just thatdelicious!

Preserved Cowcumbers (CucumberPickles)Adapted from Delightes For Ladies, Sir HughPlat (1609) and Elinor Fettiplace’s ReceiptBook (1604).

2 Cups Water1 Cup Apple Cider (or other) Vinegar2 T Kosher Salt (or so)½ Cup fresh Dill, rough chopped (or otherPickling Spices)Cucumbers

Slice cucumbers in rounds or spears, being sure to remove the blossom end ofthe cucumber. Put 1T salt into eachcontainer and fill with preparedcucumbers. Pack cucumbers in tightly, but not so tight as to prevent the brinefrom circulating.

Combine water, vinegar and spices in asaucepan and bring to boil. Carefullypour into containers until full. Allow tosit until cooled to room temperature, then keep in refrigerator. Pickles shouldmature about 2 weeks.

I had to get these cucumbers from themarket (accursed squirrels!).

Enjoy! Go forth and cook good food!

Do you have a cookery question youdesperately need to have answered?Email Lady Alicia at [email protected] you think I could pickle one of thosegarden-rampaging squirrels? Thequestion really is, how does one coaxthem into the jar…?

Awards of AtlantiaTo assist the populace in determining who should be recommended for which awards, the Drekkar will be profiling the various awards of Kingdom and Barony, along those who are listed as holding them (and residing in Storvik) in the Kingdom Order of Precedence (OP). If you see that a worthy gentle does not have an award, first go to the OP and search by their name – they may not be listed as a Storviki. If they are not there at all, recommend them to Their Majesties, and also let Their Excellencies know.

ArmsThe Award of Arms inducts a gentle into Atlantia's nobility. It also accompanies the Orders of Merit.

The Grant of Arms is an elevation. It can be awarded on its own, and it accompanies the Orders of High Merit and Landed Baronages (after completion of their first term).

The Patent of Arms is the highest distinction, and is received by those joining one of the Royal Peerages (Pelican, Laurel, Chivalry) and the Order of the Rose.

Polling OrdersThe Orders of High Merit and the Royal Peerages are polling orders. The current members are consulted by Their Royal Majesties and asked to recommend potential new members. The final decision on whether or not to bestow the award resides with TRM. But recommendations from the populace are forwarded to the principals of the Orders, and a steady flow of recommendations for a candidate speaks well of them.

September: Service AwardsThe Order of the Pelican is the Peerage for service. Pelicans have distinguished themselves with consistent, helpful service that impacts the Kingdom or even the Society. Tsunetomi Todomu, Malcolm MacMalcolm, Herveus d'Ormonde, William le Younger, Vuong Manh, Johanna von Sudeborn, Brenna of Storvik, and Elizabeth Harlyn are all Pelicans who live or have lived in Storvik.

The Award of the Undine honors and recognizes those subjects who have distinguished themselves with exceptional service to the Queen of Atlantia. This award is a gift solely of the Queen to whomever

she deems deserving. As this is at the Queen's discretion for those who have helped her, I would hesitate to make recommendations for it. Novice: Carlyle to autocrat.

Old Business

Exchequer to release unspent funds from chair fund into general funds. (no objections)

New Business
