The Algarve province in the south of

Portugal used to be one of the European almond powerhouse –

Vasco da Gama was born in the

neighboring region of Sines. It was

therefore logical to use one of Portugal’s product in the cocktail that

would represent the beginning of the

journey. The gorgeous Amarguinha

liqueur provides the primary almond

flavor and the brandy gives its strength and power. The drink is meant to be

soft and comfortable. A bit like home

really!

THE CAPE OF GOOD HOPE 68

The Rhodesia Punch

Grilled Pineapple, Johnnie Walker

Black, Madeira, Lime Juice

Vasco da Gama was the first explorer to pass the Cape of Good hope and to land in Natal, South Africa. In

December 1497; Vasco and his crew

were the first European explorers to set

foot in South Africa.

The Rhodesia Punch is meant to highlight one of South Africa’s most

beloved culinary culture; The Braai!

Braai, from the Dutch word “Braden”

means “to Roast, is a very social

occasion and is practiced by many, even today… Often the meat is cured in

pineapple juice before being heavily

grilled.

This cocktail sought to capture this

charred character of Braai, as well as

using an“unknown” ingredient; the

heavily grilled pineapple puree. This is

something that is not very often used, and carries this heavy aroma. The peat

in the Talisker and the Johnnie Walker

Black helps to strengthen the “smoked”

feeling!

The pineapple is a symbol of hospitality

and prosperity!

Maputo Julep Banana Liqueur, Cashew Milk,

Bourbon, Brandy, Mint Leaves

Mozambique was once the largest

producer of cashew nuts in the world;

while nowadays, it has been ousted

from this spot; the cashew nut remains

an important part of life!

Vasco spent almost a month in

Mozambique in march 1498. The Maputo Julep tries to combine two

staples of Mozambique: banana and

cashew and turns it into an ice cold

dairy free treat that is reminiscent of

Bailey’s.

GETTING TO GOA 68

The Calicut Mule Bols Genever, Dry Madeira, Carrot

Juice, Cardamom, Fresh Lime Juice,

Coriander Seeds, Ginger Beer

Vasco’s arrival in Calicut on may 1648

is responsible for the opening of the

spice trade between India and Europe and predates the arrival of other

European naval powers by almost a

century. So deep was his relation with

India, that he was even given the title of the Governor of India. The Calicut

mule integrates some typical Indian

spices such as Cardamom, ginger and

root vegetable, which a touch of its

archrival, Dutch Genever. The drink is complex and refreshing. Reminiscent of

India’s arts & craft!

It is Jorge Alvares who arrived in China

first; but Portugal was only allowed to settle officially in Macao, with the

blessing of the Ming court in 1557.

Exactly thirty-three years after the death

of Vasco da Gama.

The cocktail works with two fundamental taste of each country. Rice

wine and Madeira! It is our most

majestic cocktail; a powerful, strong

combination of two very strong countries!

Asia and especially China was a region of considerable interest to the

Portuguese explorers and after the

establishment of Macao, Portugal was

effectively able to build a warehouse for the trade of goods between China,

Japan, India and Europe.

The litchi is so strongly linked to the

eastern empires; it is essential to include

it in the drink that symbolise the

relationship between Portugal and the East; the drink is mixed with a

shimmering gold dust to represent all

the richness that this region will come to

represent for Europe.

Beirao Sling

Beirao, Calvados, Port Wine, Fresh

Lime & Lemon Juice

Every explorer eventually misses home; but

home will never be same.The Beirao

sling symbolizes exactly this. We took a classic Portuguese spice liqueur, Beirao,

and mixed it in completely differently

manner than that it is done in Portugal.

It is home, but it feels a little different.

White Cane Rum, Honey & Fresh

“Home is home.” Today, the Poncha is

the classic drink from Madeira; from

the fisherman to the business executive;

all are drinking it! The beautiful irony is

that, the word “Poncha” is of Sanskrit

origin (प"च - panc) meaning "five", as the

drink was originally made with five

ingredients: alcohol, sugar, lemon, water, and tea or spices.

How did this tradition come into the

small island of Madeira, we will

probably never know; all that is sure is that the world was never really the same

again; it is why we added another

quintessential ingredient to the classic

Poncha, the passion fruit !
