Fountainhead R&M meeting The Fountainhead R&M board met September 21, 2020 to review and count the proxies that had been turned in for the annual meeting. There were 40 votes and that is not a quorum, therefore the board installed June Marshall and Benjamin Johns. Each will serve a three year term as new board members. June will be secretary and Benjamin will oversee the playground. We want to thank those residents that took time to turn their proxy in and be interested in our subdivision. The meeting adjourned at 8:15 Trick or Treating is fun. While out there please remember to still honor the social distancing and wear your mask. Thank you!     Trash cans, curbsides and roofs, with all the needles on it, are an ongoing issue.

    Make sure to clean your curbsides and if you have a corner lot, clean around the corner as well. Trash cans are to be out of sight and not to be put out other the evening before the pick up day and not left

    out there after the pick up day.

    Emergency Service

    House numbers need to be bold and visible. Emergency services depend on these numbers. Remember, you might be the one who needs help.

    To get your street numbers re-painted call 832.236.4886

    ACC Concerns Clean the street curb in front of your house. Keeping trash out of storm drain will

    help prevent your street from flooding. Trash cans are to be out of sight and put out either the evening before pick up day

    or the day of it. After pick up trash cans need to be moved out of sight again.

    Please be aware on Trash Days: Our subdivision is being frequented by flocks of big black buzzards on trash days. They like to tear into garbage bags and are not good about cleaning up after themselves! Please try to put all garbage in cans covered with a lid to help with this problem.

    Safety Please park in your driveways. Children at play and people walking on the street present a safety concern.

    THE ACC COMMITTEE

    We thank those residents who are doing a good job caring for their yards by mowing, edging, trimming bushes & trees and keeping curbs clean from grass clipping and trash. There are still some who lack this basic tenant of home ownership – taking care of your property. Those who make an effort to maintain their yards (or have it done) are not amused & rightfully so, when they have to look at a yard next door or down the block that is unkempt. If your mailbox needs repairing please do so. Please honor our Deed Restrictions.

    Loud Music in our Subdivision

    Refer to your guidelines, which are online and in the green Fountainhed Architectural Control Guideline booklet.

    Speakers are not allowed outside code 3.84. If there is an issue with loud music after 12am please call the constable at

    281.376.3472.

    ANY IMPROVEMENT TO YOUR HOUSE/PROPERTY NEEDS TO BE APPROVED BY THE HOA BOARD.

    PLEASE REFER TO THE ACC GUIDELINES, which you can find either on the fountainheadrandm.com website or in your Fountainhead ACC green booklet.

    COMMUNITY CENTER PARKING

    Parking space at the Clubhouse, Tennis and Pool area is reserved for activities at the Community Center ONLY.

    Parking of vehicles for other purposes is strictly prohibited. Driveways at residences are to be used for personal

    parking.

    TENNIS COURT TRASH: After your tennis game please remember to pick up any trash on the tennis court. Your fellow residents

    appreciate your efforts. A clean neighborhood helps to keep our community values growing

    LIGHTING: Players need to turn off all lights after exiting the courts. There are timers but waiting on the timers waste electricity by

    lighting unused courts. If you drive by and see the court lights on with no one playing, please help by turning the timers

    off.

    KEYS: Keys to the tennis court are available for all homeowners living in Fountainhead. All first issue keys are $25.00 .

    Call the office at 281-893-4820 and leave your name and number. You will be contacted concerning a day and time to get a

    key.

    CLUBHOUSE/POOL RENTAL

    There will be NO rent out and group activities in the Clubhouse until further notice.

    $500 - Key/Damage/Cleanup Deposit $100 - Swimming Pool Rental $85 - Base Rental (Main Hall & Kitchen) $65* - Add Conference Room $20* - Add Pool Table Room $20* - Additional Table Rental * In addition to $85 Base Rental For a list of rental regulations or to inquire about reserving the Fountainhead clubhouse or swimming pool for your next event, call (281) 893-4820). The approval of a specific date is dependent upon availability. Checks for all rental fees and the key/damage/cleanup deposits are due with the reservation to save your date. Homeowners reserving the pool or the clubhouse must be present during the entire party/get-together. The pool and the clubhouse cannot be rented together.

    As Fire Prevention Week™ approaches, Champions ESD reminds residents: “Serve Up Fire Safety in the Kitchen!™

    Champions ESD is teaming up with the National Fire Protection Association (NFPA)—the official sponsor of Fire Prevention Week for more than 90 years—to promote this year’s Fire Prevention Week campaign, “Serve Up Fire Safety in the Kitchen!” The campaign works to educate everyone about simple but important actions they can take to keep themselves and those around them safe. According to NFPA, cooking is the leading cause of home fires and home fire injuries in the United States. Almost half (44%) of reported home fires started in the kitchen. Two-thirds (66%) of home cooking fires start with the ignition of food or other cooking materials. “We know cooking fires can be prevented,” said Lorraine Carli, NFPA’s vice-president of outreach and advocacy. “Staying in the kitchen, using a timer, and avoiding distractions such as electronics or TV are steps everyone can take to keep families safe in their homes.” Champions ESD encourages all residents to embrace the 2020 Fire Prevention Week theme. “The most important step you should take before making a meal is to “Serve Up Fire Safety in the Kitchen!”, said Fire Chief Dan Shelor. “A cooking fire can grow quickly. I have seen many homes damaged and people injured by fires that could easily have been prevented.” Champions ESD wants to share safety tips to keep you from having a cooking fire.

    • Never leave cooking food unattended. Stay in the kitchen while you are frying, grilling,or broiling. If you have to leave, even for a short time, turn off the stove. • If you are simmering, baking, roasting, or boiling food, check it regularly, remain in the home while food is cooking, and use a timer to remind you that you’re cooking. • You have to be alert when cooking. You won’t be alert if you are sleepy, have taken medicine or drugs, or consumed alcohol that makes you drowsy. • Always keep an oven mitt and pan lid nearby when you’re cooking. If a small grease fire starts, slide the lid over the pan to smother the flame. Turn off the burner, and leave the pan covered until it is completely cool. • Have a “kid-free zone” of at least 3 feet around the stove and areas where hot food or drink is prepared or carried.

    Pumpkin Lasagna

    Ingredients 1 cup pumpkin puree 1 1/2 tablespoons extra-virgin olive oil 1 medium onion, chopped 4 to 6 cloves garlic, sliced 1 pound spicy Italian sausage, casings removed 1/2 cup red wine 1 28-ounce can tomato sauce 1/4 cup chopped fresh basil 1/4 cup chopped fresh parsley 1/2 teaspoon dried oregano Kosher salt and freshly ground pepper 1 16-ounce box lasagna noodles 1 large egg 2 1/2 cups ricotta cheese 2 cups shredded mozzarella cheese 1/2 cup shredded romano cheese

    1 large zucchini, very thinly sliced

    Directions 1. Preheat the oven to 350 degrees. Place the pumpkin puree in a fine sieve over a bowl; set aside to drain

    while you make the sauce. 2. Heat 1 tablespoon olive oil in a medium pot over medium heat. Add the onion and saute until translucent, 6

    to 7 minutes. Add the garlic and cook until fragrant, 2 more minutes. Add the sausage and cook until brown, breaking it up with a wooden spoon. Pour in the wine and cook until reduced by half. Stir in the tomato sauce and herbs and bring to a simmer over medium-low heat. Season with salt and pepper, cover and reduce the heat to low. Simmer 15 minutes, stirring occasionally.

    3. Meanwhile, bring a large pot of salted water to a boil. Add the lasagna noodles and cook as the label directs. Drain and toss with the remaining 1/2 tablespoon olive oil.

    4. Mix the strained pumpkin puree with the egg in a bowl and season with salt and pepper. In a separate bowl, mix the ricotta, 1 cup mozzarella and the romano.

    5. Build your lasagna in a 9-by-13-inch baking dish: Start with a layer of sauce, then top with a layer of noodles. Evenly spread half of the pumpkin filling, then half of the zucchini, over the noodles. Top with half of the cheese mixture and cover with some of the sauce. Repeat the layers, finishing with noodles and sauce; sprinkle with the remaining 1 cup mozzarella. Bake, uncovered, 35 to 40 minutes, or until bubbly. Let cool 15 minutes before slicing.

    Red Velvet Brains Cupcakes

    Ingredients

    Cupcakes: 2 eggs 1 1/2 cups canola oil 1 cup buttermilk (or 1 cup milk plus 1 tablespoon lemon juice) 1 teaspoon white wine or cider vinegar 1 teaspoon red food coloring (recommended: Select natural food coloring) 1 teaspoon pure vanilla extract 1 1/3 cups granulated sugar 2 1/2 cups all-purpose flour 3/4 teaspoon fine sea salt 2 teaspoons natural cocoa powder (not Dutch-processed) 1 teaspoon baking soda

    Frosting: 1 stick unsalted butter, softened 4 cups confectioners' sugar 1/3 cup whole milk Red and black food coloring 1 teaspoon pure vanilla extract

    Salt

    Directions 1. Preheat the oven to 350 degrees F. Line a cupcake tin with 12 paper liners (preferably silver). 2. For the cupcakes: Crack the eggs into your mixer. Add the canola oil, buttermilk and vinegar. Drop in the

    food coloring and vanilla. Let it stir up until well mixed. 3. Put the sugar, flour, salt, cocoa powder and baking soda in a large bowl. Whisk together until well mixed.

    Then sift this right onto a big piece of waxed paper, it makes it easy to transport to the mixer. Make sure there are no clumps.

    4. Turn your mixture on low and slowly add the flour mixture to the wet ingredients as it's mixing. Turn the mixer up just a bit and combine well. Stop and scrape down the bowl.

    5. Use an ice cream scoop to evenly dish the batter out into the cupcake liners, about 3/4 full. 6. Pop the cupcakes in the oven until a cake tester comes out nice and clean, about 20 minutes. Allow to cool

    in pan for 10 minutes, then remove and set aside to cool completely before frosting. 7. For the frosting: Add the softened butter and confectioners' sugar and cream together in a mixer. Add the

    milk. Stop and scrape down the bowl, getting all the confectioners' sugar incorporated. Add a couple drops of black food coloring and then some red food coloring. Mix in the vanilla and a pinch of salt. Mix well.

    8. Fill a pastry bag or snip the corner of a zip top bag. Fill with the frosting. (To fill the bag easily, wrap the bag around a cup and wrap the edges of the bag around the top to keep the bag open while filling with frosting.)

    9. Frost the cupcakes, making a little squiggly line down the middle, and then filling in little swirls to look like the brain. Repeat on the other side and for the rest of the cupcakes.

    Deviled Chicken Lollipops

    Ingredients 12 chicken drumettes, skin on 1 teaspoon kosher salt, plus to taste Freshly ground black pepper 3 slices sandwich sourdough bread, crusts trimmed, torn into pieces 1 clove garlic, roughly chopped 1/4 cup chopped fresh flat-leaf parsley leaves 2 scallions, green and white part, chopped 2 tablespoons unsalted butter, melted 1/3 cup honey mustard

    Hot sauce, optional

    Directions 1. Preheat the oven to 450 degrees F or a convection oven to 425 degrees F. 2. Stand a drumette on its wide end and, holding the narrow bone at the top, use a paring knife to push and

    scrape the skin and meat downward to expose the bone and make a plump "lollipop" of chicken at the bottom. Repeat with the remaining drumettes. Season generously with salt and pepper and set aside.

    3. Pulse the bread in a food processor to make coarse bread crumbs, (about 12 times). Add the garlic, parsley, scallions, 1 teaspoon salt, pepper, to taste, and continue to pulse until finely chopped but not a paste. Transfer the mixture to a shallow bowl and toss with melted butter.

    4. Brush each drumette with some honey mustard. Then press and roll each one in the bread crumbs to coat. Arrange the drumettes (standing up if you can) on a rack set over a baking sheet. Roast until chicken is cooked and the bread crumbs are golden brown and crisp, 20 to 25 minutes. Serve drumettes hot or at room temperature with hot sauce, if desired.
