what’s wrong?You may know what the main issue is with the appliance (i.e. it’s not getting as cold as it used to), but it’s always worth it to trouble-shoot in order to target the actual problem. Consulting the owner’s manual is a great place to start; however, we understand that sometimes there just isn’t time! That’s where Tundra comes in! Because we’ve heard it all you can count on us to help you solve the problem quickly and without burning a hole in your wallet.

how much does it cost to fix?It is never our goal to sell you a brand new fryer if all you really need is a new thermostat. For this reason, once we determine what’s wrong, we can determine the most economical approach for fixing the problem.

It’s very simple: If the cost to repair is more than 50% of the purchase price, we suggest getting a new appliance. Think about it like a truck, if the transmission is blown in your 1998 Ford Ranger, you would most likely look at a new truck, not another transmission. Same truth goes for your restaurant equipment!

can i do it myself?Sure you can! Well, in most cases - and we are here for support!

a DOOR CLOSERdoor closers are an EASY DO-IT-YOURSELF fix; however, many people are confused about how to select the proper replacement. it’s simple. all you have to do is identify the hardware number on the back.

b THERMOMETERstart by identifying what type of thermometer you have. if you are dealing with a surface or flush mount thermometer, you are facing a DO-IT-YOURSELF repair. if you have a digital and/or solar thermometer, depending on your level of expertise, you might opt for a $ervice technician.

c LATCH & HINGEwhile all hardware is different, there should always be a hardware number on the back. regardless of the manufacturer, the hardware number will ensure the hole centers line up for a proper fit and EASY DO-IT-YOURSELF installation.

d GASKETthis EASY DO-IT-YOURSELF fix merely requires the dimensions, brand, and style of the existing gasket to order a new one. replacing old gaskets is as easy as popping them off and snapping the new ones on.

e FAN MOTORbecause most fan motors require some type of hard-wiring, we suggest leaving this repair to a $ervice technician. one proactive step you can take on your own would be to order a replacement fan prior to any malfunctioning. you never know when a spare can save the night!

Spare parts can save your weekend we call it the frantic friday call – you know that call and many of you have probably made a few of them. it’s the phone call to your parts supplier at about 4:30 pm on a friday evening right as they are about to close. you’re in a panic, your oven/range is down and it’s the start of the weekend, your busiest time! long story short, without it you can’t produce the majority of your menu. so, you pay $80 in shipping to have a burner valve shipped next day.

IT NEvER hURTS TO STOCk UP ON EXTRA PARTS ThAT SUPPORT PEAk PERFORMANCE IN YOUR kITChEN.

a BURNER vALvES these should be a no brainer, as they are inexpensive. you’ll find them in range tops, broilers and some griddles. you might as well have some extra knobs for these too, so you don’t end up having to to use pliers all weekend to turn on your range.

b RANGE GRATES while some grates can be more expensive than others, the cost of a spare will far outweigh the chaos in the kitchen caused by a broken one.

c ThERMOSTATS from ovens to fryers, keep spare thermostats on hand for all of your cooking equipment. an infinite control for your countertop warmers would be handy as well, along with some replacement dials.

d kNOBS whether they are for burners, thermostats, valves or general temperature control, knobs are everywhere in the kitchen - it’s always convenient to have spare knobs. go for extra stock in universal knobs as they are typically less expensive.

e SwITChES there’s at least one switch on almost every piece of equipment in your kitchen. from convection ovens and steamers to coffee makers…sometimes a switch is all you need to keep your operation running smoothly.

THE PILOT WON’T STAY LIT!a IF ThE PILOT LIGhT wILL NOT STAY LIT, one

of three things have failed. first, check to see if the hi-limit is the culprit by taking one wire off and connecting it with the other wire. do as you always do, and light the pilot. if the pilot remains lit, then the hi-limit is bad and needs to be replaced.

b IF ThE PILOT STILL wILL NOT STAY LIT, then the thermopile is the next stop. one end is attached to the pilot and the other is attached to the gas valve. remove the thermopile from both places and replace. light the pilot; if it remains lit you are good to go. also, remember to reconnect the hi-limit wire.

c IF ThE PILOT STILL wILL NOT STAY LIT, then the only thing left is the combination safety gas valve. to replace it you will need to have a couple of pipe wrenches. this is the most difficult part to change, only because space is limited. remember to install the new gas valve in the same direction and replace all connections.

d IF ThE PILOT IS LIT, BUT ThE FRYER STILL DOES NOT wORk, the thermostat may be faulty. only three things can happen: either the burner will not light when turned on even though the pilot is lit, the oil will not get hot enough or when the oil reaches temperature it will not shut off. in either case the thermostat will need to be replaced. to do this, follow instructions for replacing hi-limit.

replacing a hi-liMit start by emptying the oil from the tank. this needs to be done because the sensing bulb for the hi-limit enters through the side of the tank. there is a large nut in the side of the tank and a smaller nut inside the large nut, loosen and pull these off. now you can remove the defective hi-limit. reverse the procedure to install the new hi-limit. always screw the larger nut into the tank first and then the smaller nut. light the pilot and your unit should be working.

No question about it, people eat with their eyes. Once a plate is positioned in front of a guest they have already passed judgment on how that food is going to taste. They look at the plating, they look at how the food is arranged, and they inspect the flatware and glassware. They haven’t even tasted the food, but they “know” what it will taste like. At this point, we think you could agree that having some sort of presentation with the tableware is as important as making sure the food is seasoned and prepared correctly. Remember, you don’t have to go overboard to make a great presentation. Here are our top 6 tips for bringing a little pizzazz to the table this summer:

1. Use larger plates and bowls. When there’s a lot of empty space, it helps the food speak for itself. It puts emphasis on the food, much like a solo artist under the spotlight – all eyes are on them.

2. Stack food. If the food goes well together, try stacking it instead of having everything spread out. You don’t have to opt for mile-high towers, but a little height looks nice and encourages a new experience for your customer’s taste buds!

3. Wipe up dribbles. Unless it’s artfully done, dribbles are distracting and take away from the main attraction. When in doubt, keep the plate clean and focused.

4. A dash of color. Consider serving meals with a bland color pallet on brighter dishes made of different materials such as glass.

Need a more casual option? Fish & Chips can be served in small, stainless steel fry baskets! Go ahead, get creative!

5. Make the right cut. Think of other ways you can cut the food. Doing big chunks of vegetables on a plate looks much different than thinly sliced, peeled, and shredded food.

6. Learn to swoosh. Spoon swooshes are a great way to add a little oomph to a plate. But take our advice on this one: never, ever touch a swoosh twice (things will get ugly if you do).

One thing is certain; attention to detail is the foundation upon which all great customer service is built. From a bent fork tine to an unorganized plate of food, everything that reaches the table reminds your customers just how much you care about them.

How Cloud-Based Temperature Monitoring Systems Can Help Save Your Business

How many times as a kid did you hear your mom yell, “Get what you need and shut the fridge door already!” Well, turns out that mom was right, studies have showed that refrigerator door openings account for 7% of refrigerator energy use. Now, think of that number with a walk-in refrigerator that’s average cubic feet is easily more than twice the size of a home refrigerator (yikes, that’s a lot of energy wasted), and what if that same walk-in refrigerator was accidently left open all night. Now we’re looking at an entirely different type of loss: lost energy and lost food.But accidents like this can be prevented. How? Cloud-based monitoring systems are quickly changing how restaurant and food service owners are able to accurately monitor temperatures.

WHAT is iT?Cloud-based monitoring essentially means that information is sent wirelessly from multiple sensors to an online system, and that information can be accessed from anywhere in the world, as long as you have a computer, tablet, or Smartphone. WHAT ARe THe 7 sTeps OF HAccp?Glad you asked, HACCP (Hazard Analysis Critical Control Point) is a list of seven recommended food safety rules originally written for NASA, but has since been adopted in the food service industry by the FDA and USDA. The 7 steps are:

1. Conduct a Hazard Analysis. The hazards are grouped into 3 categories: biological, chemical, and physical.

2. Identify the critical control points, including cross-contamination, cooking, cooling, and hygiene.

3. Set up actions to ensure safety is maintained at all of the critical control points defined.

4. Establish monitoring procedures for the critical control points, and make sure to use the right signs, tools and training materials to make sure they are monitored accurately.

5. Establish corrective actions for the critical control points.

6. Set-up recordkeeping procedures to log information, like with flowcharts and temperature checks.

7. Verify that the system put in place is working: validation, ongoing verification, and reassessment.

These fryers are heated with either a gas burner or an electric heating element that wraps around the base on the outside of the oil tank. The oil is heated as these elements heat the metal base. open pot fryers also have a sediment zone below the point where the gas or electric element is heating the oil to allow food particles to escape the super hot oil.

These fryers do not have a sediment zone that allows food particles to settle out of hot oil. This type of fryer is therefore best for lighter foods that can be bulk fried.

These fryers have a series of tubes that run through the bottom of the heating tank. gas burners run through these tubes and heat the oil. Tube style fryers also have a cooler sediment area below the tubes. This allows crumbs and food particles to settle out of the super heated oil above the tube burners into the cooler oil below the burners, preventing the carbonization of those particles, which can leave a burned taste on fried foods.
