In the UK, a hog roast will usually be done on a spit in a roaster, and often include stuffing and/or a
flavour enhancing rub. However, there are many different ways to cook hog roasts around the world.
Rather than using a spit, some BBQ catering services use a roasting method which involves splitting a whole pig in half before placing the meat-side first on a hot grill and then flipping it over when the fat stops dripping. Using this method, it should take four to eight hours for the meat to be ready.
