OUR STORY

Op een willekeurige dag loop ik door de Haagse Toren.

Een groep mensen voert overleg in de Seats2meet lounge op de 1e

verdieping. Een leverancier met verse groenten meldt zich bij de

receptiebalie op de begane grond. Tegelijk met een Amerikaans

koppel dat komt inchecken voor een vakantie in een van de apparte-

menten. Kunstenaars zijn bezig met het ophangen van nieuwe schilde-

rijen op de 3e etage. En terwijl de Burgemeester van Den Haag gasten

ontvangt in een Business Suites op de 40e speuren twee Russische toe-

risten de skyline van de stad af vanaf een van de stadsbalkons op 130

meter hoogte. In The Penthouse op de bovenste verdieping is het nog

rustig. Dadelijk begint de lunch, dan is er high-tea, het diner en dan zal

de avond uiteindelijk overgaan in de nacht met een DJ en live artiest.

Een typische dag in de Haagse Toren. Het gebouw waar wonen,

werken en uitgaan naadloos in elkaar over lijken te gaan. Het oogt

rustig en georganiseerd. Zo was het niet. Toen ik in 2007 bij toeval

dit verhaal binnenstapte, had ik geen idee, dat ik aan de inleiding

van een spannend boek begon.

Vaak wordt mij gevraagd hoe dit alles is ontstaan. Lag daar een

gedegen plan aan ten grondslag? Het antwoord is eigenlijk: nee!.

Het begon allemaal met een verjaardagsfeestje.

Dat verhaal en meer leest u in The View. Met trots presenteer ik u

onze vierde druk. Wij zien het als ons eigen in ight magazine.

Ik wens u alvast veel leesplezier bij uw ontdekkingstocht door de

toren en begroet u binnenkort graag eens persoonlijk in ons gebouw.

SPANNEND BOEKA NOVEL ADVENTURE

Im wandering around The Hague Tower as I do on any given day.

A group of people are meeting at the Seats2meet lounge on the 1st

oor. A supplier of fresh vegetables reports to the reception desk on

the ground oor. At the same time an American couple are checking in

to one of the apartments for their holiday.

There are artists putting up new paintings on the 3rd oor. And while

the Mayor of The Hague hosts a meeting in a Business Suites on the

40th oor, two Russian tourists are tracing the city skyline from one of

the balconies at 130 metres altitude.

On the top oor of The Penthouse its still quiet. Lunch will commence

shortly, followed by high tea, dinner and the evening will eventually

merge into night with help from a DJ and live music performance.

A typical day at The Hague Tower. The building in which living,

working and leisure have seamlessly united. It all seems quite serene

and well-organised. But this wasnt always the case. When I inadvert-

ently stepped into this story in 2007, I had no idea that I was embarking

on a new adventure.

I am often asked how it all started. Was it all part of a master plan?

The answer is simple "no". It all started with a birthday party.

Najaar 2007. In Den Haag wordt een bijzonder gebouw geopend. Op

een klein stukje vergeten grasveld aan het Rijswijkseplein wordt een

wolkenkrabber neergezet, die in volksmond de bijnaam Het Strijkijzer

zou krijgen. De naam refereert aan de vorm van het gebouw: genspi-

reerd op het beroemde Flatiron building uit 1902 in New York. Het kavel

is slechts 30 bij 35 meter groot. Er kan hier eigenlijk niet gebouwd wor-

den; het drukke verkeer moet immers door.

De oplossing wordt gevonden in een bijzondere constructie: het

hoogste prefab gebouw van Nederland. Na 10 jaar voorbereiding

worden uiteindelijk twee verdiepingen per week op elkaar gestapeld.

Een bijzondere prestatie, beloond met de Nieuwe Stadprijs en de inter-

nationale Emporis Skyscraper Award.

Met 351 woningen is het eigenlijk een complete woonwijk.

Woningcorporatie Vestia bouwt er zowel studios voor studenten

als luxe appartementen. Een groot evenement moet deze prestatie

feestelijk onderstrepen.

Vanuit het nabijgelegen Huijgenspark vindt de opening plaats:

met een klap op de kop van Jut worden de verdiepingen n voor n

gekleurd uitgelicht. Er is vuurwerk vanaf het dak en een borrel op de

42e verdieping in de lege ruimte waar ooit een restaurant moet komen.

Daar ben ik toevallig ook. Via de gemeente Den Haag werd ik

benaderd om hapjes, drankjes en decor te verzorgen. Alle gasten

vergapen zich aan het unieke uitzicht. Den Haag ligt letterlijk aan je

voeten. Juist omdat er zoveel laagbouw is en dit gebouw net buiten

het centrum staat maakt het uitzicht op mij meer indruk dan dat

van menige wereldstad, die ik bezocht. En daar beneden ligt natuur-

lijk mjn stad: Den Haag.

Autumn 2007. In The Hague, a unique building has just opened its

doors. On a small overlooked stretch of land on the Rijswijkseplein

an impressive skyscraper has been constructed, nicknamed 'The

Iron by locals because of its triangular shape. Inspired by the fa-

mous 1902 Flatiron building in New York city. This small plot of land

measures only 30 by 35 meters. Situated on this hectic, traf c lled

location where there seemed to be no room for construction works.

As a solution, an innovative plan was conceived: to build the tallest

prefab building in the Netherlands. After more than 10 years of prepara-

tion, construction work started and proceeded at a rate of two oors a

week. An exceptional achievement, which was rewarded with the New

City Award and the international Emporis Skyscraper Award.

Holding 351 homes The Hague Tower is a mini housing estate.

Social housing company Vestia built studios for students as well as lux-

ury apartments. So a special event was planned to pay tribute to this

creative achievement.

The spectacular opening event was viewed from the nearby

Huijgenspark as one by one coloured spotlights lit up the oors. There

are reworks on the roof and drinks served in the empty space on the

42nd oor where a restaurant is planned.

Purely by coincidence I happen to attend this event. I had been ap-

proached by the local city marketing department, to provide snacks,

drinks and decorations. All the guests are truly impressed by the

unique view. The Hague lies literally at your feet. Due to the amount

of low buildings and the fact that it is located on the edge of the city

centre the view is simply stunning. Looking down I see my city, The

Hague, as never before!

Studenten staan klaar om in te trekken. Maar welk restaurant komt er

boven in de toren? Het antwoord is ontluisterend: voorlopig blijven

de topverdiepingen dicht! Zoals vaker bij grote projecten waren de

ideen voor exploitatie in andere tijden bedacht. Drie kiosken, een

broodje kroket, een ansichtkaart dat alles had men 12 jaar eerder

bedacht. Nu het gebouw eenmaal open is, zijn de tijden ingrijpend

veranderd. Daarom staan alle ruimtes leeg en is er geen huurder.

Een week later word ik 40. Na jaren te hebben gewerkt in de mar-

keting van discotheken en nachthoreca, ben ik dan actief als consul-

tant voor onder andere de afdeling citymarketing van de gemeente

Den Haag. Ik vraag pandeigenaar Vestia of ik mijn verjaardag mag

vieren op de 40e verdieping, waar dan drie luxe appartementen geves-

tigd zijn maar leeg staan.

Het mag! Bijna 70 vrienden komen naar het feestje en iedereen

vindt de locatie absoluut uniek: overal ter wereld trekken mensen van

nature naar de kust of het hoogste punt. Deze toren is het hoogste

toegankelijke gebouw van Nederland n je ziet de kust: van Hoek van

Holland tot Noordwijk.

De stationsbuurt staat nog niet goed aangeschreven, maar wat nu

als er hier een top restaurant zou zitten? Net zoals die in New York

bijvoorbeeld stoer in het meatpacking district ontstaan.

Twee weken later ligt er een ambitieus plan. De appartementen op

de 40e verdieping bij het bedrijf betrekken. De drie kiosken afbreken

en weer opbouwen als keuken, toiletgroep en ontvangsthal. En dan

een groter restaurant op de topverdieping. Een bedrijf met internati-

onale allure en topdesign: The Penthouse.

15 jaar ervaring (en hoogmoed!) voorspellen dat we 6 tot 8 maan-

den later opengaan. Het duurt uiteindelijk bijna 5 jaar. Een jaar voor

de plannen. Een jaar voor de vergunningen. Een jaar voor de veilig-

heid. Een jaar voor de bouw. Een jaar voor de nanciering.

Als ik het in 2007 had geweten was ik er nooit aan begonnen. Maar

iedere paar maanden kwamen we een stapje verder. De commitment

en investering in tijd en geld werd steeds groter. Stoppen was geen

optie, dan zou alles voor niets geweest zijn.

Students are ready to move into their studios. But what kind of restau-

rant is going to open at the top of the tower? The answer is chilling: the

top oors will remain temporarily closed! When the project was con-

ceived, exploitation ideas were totally different. The plan for three ki-

osks, made 12 years earlier, to purchase postcards or a little snack was

no longer relevant. With the skyscraper just opening its doors times

had changed dramatically and therefore no tenants could be found.

A week later, I turn 40. I had worked in discotheque and nightclub

marketing for many years and was now working as a consultant for

the city marketing department of the municipality of The Hague. At the

opening event I ask the property owner, Vestia, if I could celebrate my

40th birthday on the 40th oor, where three luxury apartments are lo-

cated but empty.

The answer is yes! Almost 70 friends come to my party and everyone

thinks the location is stunning and unique. People all over the world

are naturally drawn to the coast or the highest accessible point. This

tower is the tallest accessible building in the Netherlands and the

coastline is visible from the Hook of Holland to Noordwijk and further.

The HS station area is not perceived as one of the best areas in the

city, but what if there was a top quality restaurant at this spot? It would

be similar to venues in New Yorks meatpacking district.

Two weeks later an ambitious plan is presented. The 40th oor apart-

ments will be included in the business as luxury conference rooms. De-

molish the three kiosks and rebuild as a kitchen, toilets and lobby. Cre-

ate a larger restaurant on the top oor. A venture with a unique design

and international appeal: The Penthouse.

Based on my 15 years of experience and some misplaced arrogance

I predict that we can open in 6 to 8 months. It actually takes almost

5 years. One year to nalise plans. Another to obtain licences. A year

for safety measures. A year for construction and nally a year to sort

out funding.

If I had known all this in 2007, I would never have taken it on. But

every few months another step is realised. My commitment and invest-

ment in time and money increasing accordingly so quitting was no

longer an option, as I would lose everything.

Over the years, countless setbacks are encountered. I even learn

new words, such as, Sandbag Impact Test' -can the windows with-

stand the pressure of people during an emergency evacuation? Its

tested by throwing 80kg sandbags at the windows at high speed.

Since the 9/11 attacks in New York, extra attention is given to

the safety of visitors of skyscrapers. And rightly so. Safety at The

Hague Tower is extremely well regulated, according to the latest

requirements.

Building at such a high altitude is a serious challenge: any materi-

als that do not t in a lift have to be custom-made. We even consid-

ered using a helicopter to drop materials on the roof.

Normally, building plans tend to become less ambitious during

construction. But the tower project only became more ambitious

as we progressed. For example, by constructing an outside city bal-

cony at 135 meters and contracting an innovative social network

meeting centre called Seats2meet.com for the lower oors.

At the end of 2011, The Hague Tower nally opens its doors to the

Hoe ben je in The Penthouse terecht gekomen?

Ik ben begonnen als vrijwilliger via Seats2meet.com

en ben daarna gevraagd te werken in de bediening in

The Penthouse. Sinds zon twee jaar zit ik achter de recep-

tie, ik heb dus al heel veel van de Haagse Toren gezien!

Je ontvangt gasten achter de receptie. Wat voor vragen

krijg je zoal op een dag?

Er komen gasten van over de hele wereld. Vaak willen ze

niet alleen alles over de toren weten, maar ook handige

tips over Den Haag.

Het team bij The Penthouse is internationaal, net als de

bezoekers. Wat is je eigen achtergrond? Denk je dat je

vanuit je eigen cultuur gasten anders behandelt?

Onze gasten zijn inderdaad van internationale kom-

af. Zo blijven de Duitsers Duits tegen me kletsen en

Engelsen Engels. Ik red mij met alle basis woordjes die

ik ken. Ik ben zelf van Marokkaanse komaf. Uiteraard

zijn er ook bezoekers uit Marokko en dan is het mak-

kelijk voor hen omdat ik de taal spreek!

Wat is het leukste aan The Penthouse en de Toren?

Ik werk al sinds het begin bij de Haagse toren en vind

de sfeer, veranderingen en groei van het bedrijf het

leukst mee te maken. Er staat hier, door de inzet van het

hele team, cht iets - op een plek waar eerst niets was.

Dat is mooi!

Why did you join the team at The Penthouse?

I started as a volunteer at Seats2meet.com and was

then asked to work at The Penthouse restaurant. For

the last two years I have been working at reception.

So I have experienced various elements of The Hague

Tower!

What kind of questions are you asked when working

at the reception desk?

People visit us from all over the world. Their questions

are usually not just about the tower; they often want

info and tips about The Hague.

The Penthouse team is truly international. Whats your

cultural background? Do you treat guests according -

ly? About half our guests come from abroad. Germans

speak German and the English speak English. I use all

the basic knowledge I have of these languages. My

heritage is Moroccan. Of course when we have Moroc -

can guests it is easier for me as I speak the language

Whats the best thing about The Penthouse and the

Tower?

I have worked here from the onset and it has been

exciting to experience all the changes and growth. Due

to the whole team and the great effort put in, some-

thing has been created from nothing. Thats wonderful!

Ik ben hier terechtkomen via mijn docent Nederlands

vanuit school. Begonnen als leerling en inmiddels ben

ik niet alleen verantwoordelijk voor de receptie, maar

verzorg ik ook groepsboekingen voor The Penthouse.

Je ontvangt gasten achter de receptie. Wat voor vragen

krijg je zoal op een dag?

Achter de receptie wordt je werkelijk lles gevraagd.

Van de plek van het toilet tot en met een offerte voor

een complete bruiloft. Juist al die verschillende vragen

maken het leuk.

Het team bij The Penthouse is internationaal, net als

de bezoekers. Wat is je eigen achtergrond? Denk je dat

je vanuit je eigen cultuur gasten anders behandelt?

Ik ben in Nederland geboren maar mijn achtergrond is

Turks. Ik hoop dat ik vanuit mijn eigen achtergrond gas-

ten extra gastvrij ontvang. Dat zit absoluut in onze cul-

tuur. Het is geweldig als er Turkse toeristen op bezoek

komen, dan ben ik extra trots op de toren!

Wat is het leukste aan The Penthouse en de Toren ?

Het leukste aan de Haagse Toren is juist dat internatio-

nale team. Dat maakt het ng specialer hier.

Why did you join the team at The Penthouse?

My Dutch teacher applied for me through our schools

learning programme. I started here as a student and have

now become responsible for all tasks at receception, as

well as managing group bookings for The Penthouse.

What kind of questions do you receive working at the re-

ception desk?

At reception we are asked a wide range of questions.

Ranging from Where are the toilets? to Can you give

me a quote for a wedding?. It is this variety that makes

it such fun!

The Penthouse team is truly international. Whats your

cultural background? Do you treat guests accordingly?

I was born in Holland, but have a Turkish background.

I like to think that because of my background I am

more hospitable and open thats denitely part of my

culture! I am extra proud of the tower when welcoming

Turkish tourists.

Whats the best thing about The Penthouse?

The international team that is what makes working here

so special.

Het uitzicht is natuurlijk bijna altijd fantastisch, maaronze uitdaging bestaat eruit om te zorgen dat wejuist veel meer dan dat bieden: persoonlijke, informeleservice en natuurlijk culinaire hoogstandjes van onzeChef.

Hoe maak je die hoge verwachtingen steeds waar?Maxime: Dat lukt natuurlijk niet altijd. Maar vaak ishet samenspel met de gasten juist dt wat altijd verschillend is en het werk zo leuk maakt.

Ik kom zelf niet uit Den Haag, wat is het dan leuk alsgasten uit de stad mij trots aanwijzen wat er allemaalte zien is!

Where are you from, what's your background?Rafaela: I am originally from Brazil, however I grew up between several countries. I decided to pursue an Interna-tional Law degree. So The Hague was naturally my rst option due to its global reputation as the International City of Peace and Justice.

How did you end up at The Penthouse?Rafaela: I wanted to experience the international environ-ment that The Hague is so well known for. A friend of mine told me about the Penthouse and its unique international staff. It instantly felt like a perfect t so I decided to apply for a waiting position.

What makes the restaurant a special place for you?Rafaela: Its denitely a combination of several ingredients. The Penthouse brings a truly unique dining experience. No other restaurant in The Hague offers a breathtaking view combined with a classic atmosphere and an international staff such as The Penthouse. In my opinion, The Penthouse is a true reection of The Hague: worldly sophisticated.

Did you come across some strange Dutch customs?Rafaela: Working at Penthouse has allowed me to exploreother facets of the Dutch culture that I would probably not be exposed to otherwise. I must say that despite livingin several countries I am always impressed at how prac-tical and sincere Dutch people are. I feel that this allows one to interact more easily with others and its denitely something other cultures could learn from.

Wat heeft The Penthouse bedrijven te bieden? Vergaderen kan toch

overal?

Vergaderen hoog boven de stad, met uitzicht op zee, stad en natuur

geeft een frisse open blik. Dat zorgt voor een rust en energie die ten

goede komt aan de bijeenkomsten en vergaderingen. Daarna heer-

lijk borrelen en dineren in ons mooie restaurant met heerlijk eten, je

waant je zo in Londen of New York.

Welk evenement is je tot nu toe het meest bijgebleven?

Een te gek feest in januari waarbij alles perfect op elkaar was afge-

stemd: de locatie, de gasten, het eten, de drankjes, het entertainment;

het klopte allemaal perfect. En een heel leuke samenwerking met de

opdrachtgever. Zo wordt het "ons" event en het is juist die samenwer-

king die zorgt voor de beste resultaten!

Gekste vraag die je ooit door een gast gesteld is?

Ach, ik ben er op ingespeeld om te proberen iedere vraag te beantwoor-

den. Dat hoort bij onze gastvrijheid. Soms beseffen gasten niet wat de

beperkingen zijn van een complexe locatie als de toren. Voor 80 gasten

elk een ander hoofdgerecht uit onze kleine keuken toveren, bijvoor-

beeld is iets wat cht niet kan.

Waar staat de The Penthouse over vijf jaar?

Te midden van een bruisend gebied rond station Holland Spoor, als het

"Must-Visit" restaurant van Den Haag en omstreken.

Having a meeting high above the city, overlooking the se a and

nature gives you a fresh and open mind. T hat calmness and positive

energy is what you need during meetings and events. Y ou'll feel like

being in London or New York when having a delicious lunch, dinner or

drinks in our beautiful Penthouse restaurant.

Has any event made a lasting impact on you?

An awesome party last January, everything was perfect; the location,

the wonderful guests, food, drinks, entertainment, it all came together

perfectly! Because of the very pleasant contact with the client it really

became 'our' event. One with a very good result on the night itself.

Any memorable special requests by customers?

Special requests are fun because they give me the opportunity to

show our exibility. Its part of our hospitality programme. Sometimes

guests dont realize how complex the logistics at the tower can be.

Serving 80 different choices of main course from our kitchen would

be impossible.

What will The Penthouse be like in ve years from now?

In the middle of a bustling area around Holland Spoor train station

as the "Must - Visit" restaurant in The Hague area .

Een onbelemmerd uitzicht over de stad, daar zorgen de ramen van

The Penthouse voor. In de avond veranderen deze ramen met een druk

op de knop in enorme projectieschermen.

Verantwoordelijk voor de content van deze experience is het

Mijdrechtse multimediabedrijf Zcene, dat eerder in Den Haag

verantwoordelijk was voor onder meer de The Hague Experience in

het stadhuis. Ze leverden een echte ervaring op de 42e verdieping;

een productie genaamd '42 ways of discovery'. Het was een echt

feest voor de animators en componisten om dit te mogen creren.

En van de getoonde dingen is een onderwater wereld. Het begint

met regendruppels op het raam, maar dan begint het scherm zich te

vullen met een laagje water, dat blijft stijgen. In de onderwaterwereld

gebeuren er weer andere dingen. De mix van de echte wereld en de

surrealiteit, maakt een prachtige voorstelling.

Het is ook mogelijk om tijdens een speciaal event of priv event in

The Penthouse uw eigen logos, beelden of tekst op de ramen te verto-

nen. Wij lichten graag de verdere mogelijkheden toe.

The oor to ceiling windows at The Penthouse give you an unobstructed

view of the city. In the evening these windows will change in huge

projection screens, only at the press of a button.

Responsible for the content of this experience is multimedia

company Zcene, also responsible for the The Hague Experience in

City Hall. They delivered a true experience on the 42nd oor, a pro-

duction called 42 ways of discovery. The animators and composers

had fun creating this. One of the things shown is an underwater world.

It starts with raindrops on the window, but then the screen starts to ll

with a layer of water , which keeps rising. In the underwater world oth-

er things happen. The mix of the real world and the surreality, makes a

marvelous show.

It is also possible during a special or private event at The Penthouse

to display your own logos, images or text on the windows. We are

happy to inform you about all possibilities.

Uitdagingen in de hoogste keuken van Nederland

Een restaurant boven in een wolkenkrabber staat na-

tuurlijk garant voor een fantastisch uitzicht. Maar hoe

zit het met de keuken? Bij veel uitzichtpunten is dat geen

reden om naar boven te gaan.

Bij het bedenken van The Penthouse stond voorop,

dat dt anders moest. Initiatiefnemers van het restau-

rant Patrick Dekker en Elwin Giel waren van mening

dat het uitzicht prachtig mocht zijn vooral de diner en

wijnkaart moest echter voor een onvergetelijke ervaring

gaan zorgen, zodat gasten vaker terug zouden keren.

Het team van The Penthouse, onder leiding van Chef

Bart Middendorp, werd uiteindelijk gevonden bij restau-

rant Kandinsky van het Kurhaus in Scheveningen. Een

zeer ervaren ploeg, die de uitdaging om te gaan koken

in de hoogste (maar kleine!) keuken graag aanging. Met

een uitermate gecompliceerde logistiek: de koelingen

bevinden zich op de 1e verdieping en de keuken op de

41e, om maar een voorbeeld te noemen.

Maar dit was nog niet genoeg. Er moest een interna-

tionaal restaurant komen. Zoals je dat in Shanghai of

Barcelona kunt vinden. Met restaurants zoals Hotel

Costes (Parijs) en B-Zin (Marrakech) als inspiratiebron.

Dit is gelukt. Een internationaal team zorgt voor een

on-Nederlandse ervaring. Ook de kaart kent wereldse

invloeden, op culinair hoogstaand niveau. En s-nachts

transformeert het restaurant moeiteloos naar een tren-

dy nachtclub.

Het ontwerp van The Penthouse -en overigens ook de

overige bedrijfsverdiepingen van de Haagse Toren- werd

bedacht en getekend door de befaamde architecten van

Studio Linse uit Amsterdam. De meubels werden speci-

aal ontworpen en gemaakt door Oud & Teak.

A restaurant at the top of a skyscraper obviously guar-

antees a great view. But hows the food? The food is not

often the reason to visit an elevated tourist attraction.

When the idea was conceived to construct The

Penthouse, we all agreed from the start that this place

would be different. Founders Patrick Dekker and Elwin

Giel felt that although the view is stunning it should be

the ne dining and great wine that make the experience

unforgettable and ensure that guests return.

The team at The Penthouse, led by Chef Bart Midden-

dorp, were found at the Kandinsky restaurant at the

famous Kurhaus hotel in Scheveningen. A very expe-

rienced team that accepted the challenge to prepar e

delicious dishes in Hollands highest kitchen. Not an

easy job, as the logistics are a nightmare: the small

kitchen and the lack of storage are a challenge. Fresh

foods are kept on the 1st oor, whilst the kitchen itself

is located on the 41st oor to name just one example.

The ambition for The Penthouse to be a truly interna-

tional restaurant, comparable to restaurants in cities

like Shanghai or Barcelona has been realised. Inspired

by great places like Hotel Costes in Paris or B-Zin in

Marrakech. Our international team tries to provide an

experience, unlike any other in Holland. Our menu has

also drawn its inspiration from all over the world. And

at night this restaurant transforms effortlessly into a

stylish nightclub.

The design of The Penthouse and other oors of

The Hague Tower were conceived by the famous archi-

tects of Studio Linse from Amsterdam. The furniture

was specially designed and created by Oud & Teak.

Bart: Door toeval hoorde ik via een wijnhandel van deze

nieuwe bijzondere plek. Een unieke kans om voor het

eerst zelfstandig Chef te worden in n van de meest

bijzondere restaurants van Nederland!

Mathijs Ik ben al ruim 20 jaar actief in de horeca en heb

gewerkt bij onder andere de Knip, restaurant Marc

Smeets, het Amstel Hotel, Upstairs en de Viersprong.

De veelzijdigheid van het aanbod en alle mogelijkheden

on top the city zorgen voor chte uitdagingen!

Hoe zou je de stijl willen omschrijven van jullie ge-

rechten?

Mathijs: Eerlijke hoofdgerechten met een mooi kloppend

en ver jnd garnituur en vaak een bijzondere saus die

aan tafel wordt uitgeserveerd.

Kun je iets vertellen over het koken in de hoogste

keuken van Nederland?

Bart: Waar ik achter gekomen ben is dat de voorbe-

reiding essentieel is: wij werken op 130 meter hoogte,

mijn bestellingen komen beneden binnen. Alleen de

dag voorraad gaat mee naar boven. Als ik ook maar n

appel te weinig heb kost het me zeker 10 minuten om

die te halen!

Wat is je favoriete gerecht van de kaart? Wat zou ie-

dereen cht moeten proberen.

Bart: Mijn citroen dessert Sweet&Sour, een uitgekiende

balans van smaken en structuren. Mathijs: Fruit Candy:

Ik heb de klassieker aardbei Romanoff in een nieuw jasje

gestoken, zowel qua bereiding als presentatie!

How did you get involved with this project?

Bart: "By chance I heard a rumour about this new spe-

cial place through a wine shop. A truly unique oppor-

tunity presented itself to become an independent

most exceptional restaurants of the country!"

Mathijs "I have over 20 years of experience at several

restaurants like de Knip, Marc Smeets, the Amstel Hotel,

Upstairs and de Viersprong. Creating such a diversity

of quality dishes on top of the city is a special challenge!

How would you describe the style of the dishes you

prepare?

Mathijs: We serve honest food, garnished in a sophisti-

cated and re ned way. Many dishes are accompanied

by special sauces, served freshly at the guests table.

Can you tell us something about working in Hollands

highest kitchen?

Bart:What I've found is that preparation is essential:

we operate at 130 meters altitude, my orders arrive

downstairs. Only the exact quantities for a days work

are taken upstairs. If I would forget to take up just one

apple, it might take 10 minutes to fetch it! "

Whats your favourite dish from the menu? Is there

something everyone should de nitely try?

Bart: "My lemon dessert Sweet & Sour, a sophisticated

mixture of avors and textures." Mathijs: "I love the Fruit

Candy dessert: a revolutionary way of preparing and

presenting a classic Strawberry Romanoff.

Weve assisted with several marriage proposals. The

Penthouse is such a romantic spot! It always makes

You are currently working on a special Highest Wine

and Highest Champagne tasting programme. Wine

seems to be very popular at the moment. Do you ex-

pect interest to rise?

Our guests love wine! Interest in wine is constantly

increasing and our guests want to know more. As a host,

I do not underestimate their knowledge. In the past,

it was mainly older people that were knowledgeable

but nowadays its really popular with a younger public.

What is your favourite wine from The Penthouse

list? Which wine would you denitely recommend to

guests?

Thats a difcult question to answer as different

choices complement different occasions. But the

Seghesio, Zinfandel from Sonoma Valley California is

really sensational every single year

Which wine is not on the list, but could be considered a

personal favourite?

The selection of Vega Sicilia from Ribera del Duero in

Spain is the best I have ever tasted.

How do you determine which wine is the best accom-

paniment to a dish on the menu?

Many things inuence this choice: the recipe, the

garnish, the sauce and temperature all inuence the

choice. I decide on a number of wines that could com-

plement a dish and then we test them to decide which

combination is the best.

There are many exceptional restaurants around the

world and you love to travel. Could you name 3 of your

favourites?

It was hard but Ive managed to cut the list down to 5

en high champagnes. Wijn is populair. Hoe komt dat?

Verwacht je dat de belangstelling nog groter wordt?

De belangstelling voor wijn wordt absoluut groter, aan-

gezien gasten steeds meer weten en willen weten over

wijn. Als gastheer moet je de kennis van gasten nooit

onderschatten! Vroeger was wijn alleen iets waar seni-

oren verstand van hadden; nu is het juist ook heel popu-

lair onder jongeren.

Wat is je favoriete wijn van de kaart? Welke wijn zou-

den gasten cht moeten proeven?

Heel moeilijke vraag aangezien er verschillende wijnen

zijn voor verschillende gelegenheden, maar Seghesio,

Zinfandel, Sonoma Valley, uit Californi is elk jaar weer

een spektakel om te proeven.

Wat staat niet op de kaart maar is jouw persoonlijke

favoriet?

De wijnen van Vega Sicilia uit Ribera Del duero in Spanje

zijn de mooiste wijnen die ik gedronken heb.

Hoe bepaal je welke wijn het beste past bij een gerecht

op de kaart?

Veel factoren spelen hierin een rol, de bereidingswijze,

de garnituren, de saus, de temperatuur. Elk element kan

ervoor zorgen dat een wijn niet samengaat met een

gerecht. Ik kies een aantal wijnen uit waarvan ik denk

dat ze bij een gerecht zouden kunnen combineren, en

dan testen we welke de beste combinatie is.

Wereldwijd zijn er veel bijzondere restaurants. Je reist

graag, wat zijn je top 3 restaurant tips?

Ik heb er met zeer veel moeite een top 5 van kunnen
