The Science of Dessert

• When heat is added to the products, CO₂ is released creating air bubbles in the cake.

• This causes the cake to rise and be light and fluffy!!

• The reaction in a baking soda volcano is similar to that of baking soda in cake. In both the mixture produces CO₂ bubbles which rise up.
