S&S PORTRAIT COLLECTION PAGE 37 A series of biographical sketches of the 347 personalities honored by having their portraits hung in the Saddle and Sirloin gallery at the Kentucky Exposition Center, Louisville, Kentucky. Thecollectionremembersthe347leaderswhohave made major contributions to the livestock industry. Founded in 1903 and continues to this day, the portrait gallery is the largest collection of quality portraits by noted artists in the world devoted to a single industry All of the portraits hanging in the Club at the time of the 1934 Chicago Stock Yards fire were destroyed. Within a week after the fire, Fredrick H. Prince, the chairman of the Union Stock Yards and Transit Company, commissioned Robert F. Grafton to begin repainting the portraits lost. In 18 months, before his death, he completed a total of 164. Othmar Hoffler was selected to succeed him as the official artist of the Club. Other artists whose portraitworksarerepresentedinthegalleryinclude Joseph Allworthy, Arvid Nyholm, Benjamin Kanne and Ernest Klempner. More recently portraits by Raymond Kinstler, Tom Orlando, Tom Phillips, Stewart Halstead, Walter Wilson, Richard Halstead, James Fox, John Boyd Martin and Istvan Nyikos have been added.     A two term congressman from Wisconsin, who in 1906 sponsored legislation to financescientificresearchintheAgriculturalExperimentStationsofUnitedStates.BornatVerona,NY (1850-1907), moved to Wisconsin with parents in 1851. Spent one year at AlbionAcademy and three years at University of Wisconsin. Engaged in farming on propertyadjoining city of Madison and built up profitable dairy and small fruit business. He wasa member of Wisconsin Assembly 1883-85, engaged during winters of ’87, ’88, ’89 inFarmersInstitutework,presidentofthestateDairymen’sAssnforthreeterms,secretaryofStateHorticulturalSocietyandmanyyearsmemberofStateBoardofAgriculture.HewasamemberofCongress1903-1907

    He was born at Odebolt, IA in 1910 and earned his B.A. degree from the University ofWisconsin in1933. Heoperated largefamily landholdings in IowaandColoradoaswellasDirectorandVice-PresidentofGroup21Feedlots,Inc.atSutherland,IA.HewaselectedDirectorandPresidentoftheIowaHerefordAssociation(1950-56),theAmericanHerefordAssociation(1959-65),andtheInternationalLivestockExposition(1960-74),andaDirectorof the National Livestock and Meat Board (1962-66). He was a member of the NationalCattlemen’s Association and an honorary member of Block and Bridle. Portrait hung in1970.

    A native of Scotland, who in his early life immigrated to Woodford County, KY whereheboughttheestateknownasWoodburn.HerehepurchasedandbredStandardbredandThoroughbredhorsesandShorthorncattle.Lexington,thefamousThoroughbredstallion,waspurchasedfor$15,000andledthesirelistfrom1861through1877.Abdalla,theStandardbredstallion,andtheShorthorncow,DuchessofAirdrie,helpedtospreadthefameofWoodburn.Jerseys,Cotswolds,andSouthdownswereaddedatlaterdates.Hediedin1867.

    ALLEN,LEWISF.

    AnearlyShorthornbreederofBlackRock,NYwhoin1846editedandpublishedthefirstvolume of the Shorthorn Herdbook. The first volume was small and it was not until thesecondvolumewasissuedin1855thatthebreedersfromEasttoWestcametothesupportoftheHerdbookRegister.ThenewlyformedAmericanShorthornBreedersAssn.purchasedtheHerdbookfromAllenintheautumnof1882forthesumof$25,000. Since1883,thisHerdbookhasbeentheonlyoneofitskindinexistenceforthebreedandistitledtheAmericanShorthorn Breeders Association Herdbook. He authored standard books on beef cattlebreedersbeforetheCivilWar.

    ExtensiveIllinoislandowner,livestockshipperandChicagofinancier.BornDutchessCo,NY(1828-1914)hetriedfarming.CattletradingforshipmenttoNewYorkgraduallytookhimfartherwestandtoChicago(1856).Hecontinuedbuying,raisingandsellinglivestock,settlinginPlattCo,IL.Atonetimeheownedmorethan40,000acresoffarmlandintheMidwest.TherewasnomarketinChicagosohecreatedoneamongChicago’spioneerbutchersandbecametheheadofacompanygatheringcattleandhogsfromhundredsoffarms.ThiswasthebeginningofChicago’spackingindustry.HewasamemberofthefirstboardofdirectorsoftheFirstNationalBankofChicago.Withthebank’slargeststockholder,JohnB.Sherman,heconceivedtheideaofestablishingtheUnionStockYards.Hediedin1914.

    AprominentHoosierfarmer,livestockbreederandPresidentoftheInternational1951-55.BornatPinesFarm,WestPoint,IN(1889-1955).HeattendedPurdueUniversityandAmesAgricultureCollege.AwardedhonoraryDAgrdegreefromPurdue1949.HebredShropshiresheepandhadtheoldestherdofregisteredAngusinthestate.WithsonJessJr.,hefirstintroducedtheYorkshirehogbreedtotheUS.Aneighttermlegislatorand20yearIndianaPrisonBoardmember.AsarepresentativeoftheInternational,heandhiswifeElizabethhadapersonalaudience,highteaanddinnerwiththeKingandQueenofEnglandtodiscuss4-Handotheryouthorganizations.Aprominentspeakeratmanylivestockeventsnotedforhissharpwitandcausticbarbsattheidiosyncrasiesofpeopleeverywhere.AmemberofSigmaChifraternity.

    BorninMilwaukee,WIin1863,hestudiedatYaleandenteredArmourandCoin1883.Hebecamepresidentofthatcompanyatthedeathofhisfather,P.D.Armourin1901.Duringhiscontrolhebuiltadditionalplantsinvariouscities,branchhouseswereestablishedinallthe great consuming centers and South American subsidiaries were organized. By 1919Armourexceededonebilliondollarsofgrossincome.Hewasgreatlyinterestedinagriculturaleducationandsponsoredmanycollegescholarships.Hemadelargedonationstohospitalsandrelieffunds,supportedArmourInstitute.Hewasdirectorofseveralrailroadsandfinancialinstitutions. HerelinquishedcontrolofArmourin1923.HisMellodyFarmatLakeForestwasamagnificentcountryestate.Hediedin1927.

    HeadofArmourPackingoperationsinKansasCity,aHerefordbreederandimporterofhighrepute.“Kirk”ArmourpurchasedtheC.M.Culbertson,Newman,IL,herdasafoundation,addedEnglishimportsof237and219headin1901.Althoughhechosenottoshowcattle,heiscreditedwithbuildingHerefordinfluenceincommercialbeefherdsintheWestandSouthwestwithlargenumbersofhisbullsgoingtosuchherdsasPrairieCattleCoinColoradoandMatadorintheTexasPanhandle.HewaspresidentoftheAmericanHerefordAssn.in1898whenthefirstNationalHerefordShow,predecessoroftheAmericanRoyal,washeld.HisremarkableleadershipinboththecommunityandindustrypromptedhiselectionasAHApresidentasecondterm.Hediedin1901attheageof47.

    Founder of Armour and Co in Chicago. Born in 1832 at Stockbridge, NY of Scotch-Irishdescent. HetriedhishandwiththegoldrushinCaliforniabeforeasuccessfulventureinthegrainandcommissionbusiness.InpartnershipwithJohnPlankintonheembarkedinthepackingindustryinMilwaukeein1863.In1867heestablishedArmourandCoattheUnionStockYardsinChicago.Withthedevelopmentoftherefrigeratedrailroadcar,hebroughtfreshmeattoconsumersthousandsofmilesawayfromthecornbeltandplains. HealsofoundedArmourInstitutetogivetechnicaltrainingtounderprivilegedboys.Atthetimeofhisdeathin1901,heownedmoregrainelevatorsthananyotherhouseintheworld.ArmourandCoalsoemployedmorepeoplethananyotherconcernintheworld.Hediedin1901.

    ProfessorandResearcherofAnimalNutritionandDeanatPennsylvaniaStateCollege.BornNorthridge, MA (1853-1921) received BS Worchester Polytechnic Institute, BPh 1874 andDPh1879atYale.SpentayearofworkandstudyLeipzig,Germany.ChemistConnecticutAgr Exp Sta, professor Storrs Agricultural School (University of Connecticut), AssociateDirectorAgricultureExperimentStationWisconsin,DirectorAgrExpStaPennsylvaniaStateCollege.Hewasworldfamousforhisbasicresearchinthefieldofanimalnutritionmeasuringnetnutritivevaluesbyenergyyields.AtPennsylvaniaStatehebuiltarespirationcalorimeterintheearly1900’s. Ithasbeenrestored intheoriginalbrickbuildingoncampusbehindArmsbyHall,renamedinhishonor.     WhileonthefacultyattheUniversityofWisconsin,heinventedtheBabcockTestforbutterfatinmilk.Healsodiscoveredgalactoseandestablishedforhimselfaworldwidereputationforhis dairy research. Born in 1842 in Bridgewater, NY,he graduated from Tufts, studiedatCornellandreceivedPhDfromGoettingen,Germanyin1879.HebecameaninstructoratCornell,wenttotheNewYorkAgrExpStaatGeneva,thenontoWisconsin.InadditiontotheBabcocktestforbutterfat,hespearheadedmuchlivestockfeedresearchidentifyingearlyfindsonvitaminandmineraldeficiencies.Hespurnedpersonalgainandrefusedtopatenthismethodsandequipment.WhileatWisconsinhewasaffectionatelyknownas“theshybenefactorofmankind…thelaughingsaintofscience”.Hediedin1931.

    BAKER,FRANKH.

    Asafederalextensioncoordinator,hebegananorderlytransitionfrompurelysubjectiveappraisal to more objective means of commercial evaluation in the beef industry. HisleadershipwasresponsibleforthecreationoftheBeef ImprovementFederationin1968.AnOklahomanative (born1923),he receivedhisacademicdegree fromOklahomaA&MCollege.HisleadershipinintroducingandperfectinggeneticpredictionsofperformanceforbeefcattlewascarriedonwhileChairmanofAnimalScienceatNebraska,DeanofAgricultureat OSU, President ASAS, President Council of Agricultural Science and Technology andSeniorProgramOfficerforWinrockInternational.Hisabilitytocallforththecollectivebestasaleaderandtobealivestockdiplomathasearnedhimgreatrespectamongstockmenandscientistsalike.Portraithungin1986.HediedinLittleRock,ARin1993.

    BAKEWELL,ROBERT

    ThepatternforstockbreedinganditsartthatcreatedtheBritishbreedsoflivestockwassetbyBakewell(1725-1795).BornatDishley,Leicestershire,England,hestudiedtheanatomyofanimalswhenitwasarelativelyunknownsubject.AcountrygentlemanwhoearnedhisreputationasamanageroftheDishleyestate,succeedinghisfatherin1760.Hegatheredusefulstockfromextensivehorsebacktrips,weldedthemintoabreedbydeliberateandintensiveinbreedingtofixtype.HewasextremelysuccessfulwithLonghorncattle,Leicestersheep,ShirehorsesandtheSmallWhitepig.HisannualauctionscreatedgreatattentionandanaudiencewithGeorgeIII(FarmerGeorge).In1783heestablishedtheDishleySociety,forerunnerofbreedassociationstoprotectthepurityofstock.

    BARCLAY,CAPTAIN

    AlargelandholderofUry,ScotlandnearStonehaven,hewasrecognizedasoneofthemostcolorfulandsuccessfuloftheScottishShorthornbreeders,beginningin1822.Hewasthegreatestallaroundsportsmanofhisday,activeinthefoxhuntandprizering,performerwith courser and coach, and he bred a famous race of game fowls. He once won a betby walking 1000 miles in 1000 hours. His athletic achievements were his pride. He wasfinancierfortenantfarmersandwastheverycornerstoneoftheShorthornbreedfoundationinAberdeenshire.Hediedin1854.

    Bornin1876,hewasaprominentBerkshirebreederandjudgefromThornton,IN.HeservedasPresidentoftheAmericanBerkshireAssociation.Hisportraitwasaddedtothecollectionin1939.

    As Dean of the University of Kentucky College of Agriculture, he has effectively led thecollege,theexperimentstationandtheextensionservice.Hispromotionofmeattypehogsandthemeatcertificationprogramandhisextensiveresearchonbabypigdiseasesgarneredinternational recognition. Born January 25, 1923 in Windsor, IL, he received his BS atPurdue,MSandPhDfromIowaStateUniversity.Hisdistinguishedrecordasascientist,anoutstandingadministrator,judgeandbreederqualifiedhimtoleadmanynationalcommitteesandconferencesonswinetypeandnutrition.Heauthoredorco-authored21scientificjournalarticlesonswinenutrition.HeplayedamajorroleintheestablishmentoftheNorthAmericanInternationalLivestockExpositionandwasinstrumentalinthepreservationandtransferoftheSaddleandSirloinportraitgallerytoLouisville,KY.Hisportraitwaspresentedin1987.

    Bornin1776atAydonCastle,Northumberland,England,thisgeniusforShorthornbreedingdominatedthebreedingofthesecattleforthenextcentury.Heusedinbreedingextensivelyandrecordedthemilkproductionofhiscows.ManyofhisfoundationanimalscarriedthebreedingofCharlesColling,particularlythesireBelvederewhogothimthemagnificentsire,DukeofNorthumberlandandtheshowherdthatplacedhimundisputedlyasBritain’spremierbreeder. Fromthatdayforwardtheherdvalueincreasedforhisfamily. In1873hisbest,Dutchess,brought$40,600and14headaveraged$18,750.Hediedin1849atKirklevington,hisestate,wherehespentthelast19yearsofhismasterfulcareer.

    OneofthemostinfluentialpromotersofAnguscattleinthe20thcentury.HeownedhisfirstAnguscattleasa16-year-oldboy.HestartedthefamedRosemereherdin1898atMaquoketa,IA. Formed a partnership with Chester Congdon and established a herd in Yakima,Washington.ItbecameoneofAmerica’sforemostherdsandopeneduptheWestCoastAngusexpansion.HeservedasjudgeofAnguscattleinCanada,GreatBritainandtheArgentineaswellasthroughouttheUnitedStates.Hewasaprolificwriterandeffectivespeaker.BecamepresidentoftheAmericanAngusAssociationin1920andalso1934.Portraithungin1930.

    A renowned Scottish breeder, judge and exporter who judged the steer classes at theInternational13times.Bornin1878onthe“Grange”inCastleDouglas,KirkandBrightshire,Scotland,aplacealwaysknownforitsoutstandingherdofGallowaycattleanditscommercialbeefcattle.AtChapleton,anotherfarm,WalterBiggarestablishedaverysuccessfulherdofShorthornsandanotherofHerefordswereaddedbysonJames.TheherdscontinuetobeadominantfactorinthemajorshowswithRoyalshowchampionsinallthreebreeds.ConsistentwinningsotherthanpedigreelaurelswereenjoyedattheSmithfieldshows.AconsiderableexporttradewasdevelopedwiththeUS,CanadaandAustralia.WalterwasregularlycalledupontojudgeinthepremiershowsintheUnitedKingdomandinAustralia,andCanada.Hediedin1949.Portraithungin1946.

    Born at Ayden Castle, Northumberland, England in 1775, he made the most significantcontribution to the art of animal breeding that was to occur in the 19th century, bydemonstratingthevalueandmethodofpedigreematingsonthebasisofrelationshipasafundamentalprocedureinlivestockimprovement.Hisfarm,Killerby,of500acreslocatedatCatterick,andlaterhissecondfarm,Warlaby,werethesitesofgreatShorthornimprovement.Hissons,RichardandJohn,carriedforthhisworktoevenhigherlevels.Hediedin1836.

    BornatCairo,IAin1913,heearnedhisBSatIowaStatein1933,hisMSatNorthDakotain1935andhisPhDatCornellin1938.HehasservedonthefacultiesofNorthDakotaStateandOklahomaStatewherehebecameAssociateDeanandDirectorofAgriculture.From1950to1958heservedasDeanandDirectorofAgricultureattheUniversityofWyoming.HewasnamedthethirteenthPresidentofSouthDakotaState(1958-1975).HethenservedasDistinguishedProfessorofAgricultureandDirectorofInternationalProgramsatSouthDakotaState.HewaselectedPresidentofASASin1952andwasnamedaFellowofthatsocietyin1974.Dr.BriggshasjudgedatmostofthemajorUSlivestockshows.Aprolificauthor,his“ModernBreedsofLivestock”iswidelyacceptedasacollegetext.Hisportraitwashungin1978.Died2001.

In 1925 he became its manager. He was awarded the OutstandingAchievement Award by the University of Minnesota, and the Animal Agricultural AwardfortheAmericanMeatInstitute(1968).HeservedasanofficerofmanybusinessandfarmorganizationsandasamemberofadvisorycommitteesfortheUSDA.Hewasactiveinmany4-HandFFAprojects.Hisportraitwashungin1968.

    Pre-CivilWartraderwhosuppliedmeatsandprovisionstofrontierfortsduringtheIndianWars.Born(1805-1868)inTennessee,hemovedtoArkansasandeventuallysetuptradingpostsnearwhatisnowOklahomaCityandWichita.ThetrailheusedbetweenthetwopostsbecametheChisholmTrail.ThistraillaterbecamethemainrouteforTexascattledrivestothenorth.BothfolkloreandhistoryhaveappliedtheChisholmnametotheentireroutefromSouthTexastoWichita,AbileneandotherrailpointsinKansas. HeprobablydiedbeforeknowingLonghornsusedthetrail.HewashighlyrespectedbybothwhitemenandIndians,oftenworkingasapeacemakerbetweentwoIndiantribesorIndiansandwhites.

After threeyearsinthebutcheringbusiness,heboughtsomeHerefords.In1877hemovedhisherdtoBeecher,IL,wherehecontinuedhisvigorouspromotionoftheHerefordbreed.In1880heshippedtwocarloadsofHerefordstoCheyenne,Wyominginordertointroducethisbreedtotherangecountry.HeservedasaDirectoroftheInternationalLivestockExpositionandasitsSuperintendentofCattle.

    BornatHubbardstown,MAin1836,hespentpartofhisboyhoodinKentuckybeforemovingontoWisconsinand,finally,Minnesota.Hebecameheavilyinvolvedinmanybusinesses,especiallylumberingandhardware.HeoperatedoxtrainsfromSt.PaultotheBlackHillscarrying mail and merchandise. In the late 80’s his annual lumber sales ran over $150million.HisMeadowWoodFarmsatSt.Cloud,MNbecametheleadingseedstocksourceofClydesdales,GallowaysandlaterShorthorns.HewaspresidentoftheMinnesotaBoardofAgriculturenegotiatingpurchaseoflandandfoundingoftheMinnesotaStateFair.Hewasanotablepublicbenefactor.Hediedin1912.

    OneofthebusiestbusinessmenoftheMidwest,aformativespiritofWesternUnion.BornDryden,NY1831.Fatherdiedwhenhewas11butagrandfathersecuredthebestcommonschoolingandfinancedhimforacourseintelegraphyinIthaca,NY.Afterseveralsuccessfulassignments,fivetelegraphcompaniesunderhiscontrolwereabsorbedbyWesternUnionin1856andhewasmadeWesternsuperintendentinChicago.HeestablishedthetransmittalofmoneybywireandwasavaluedfriendofPresidentLincolnwhoentrustedhimtosendWarDepartmentordersduringtheCivilWar. PoorhealthforcedhisretirementtohisfarminKankakee,ILafterthewar.HerecordedhisfirstShorthornsin1870andservedasthesecondpresidentoftheAmericanShorthornAssn.whichhehelpedform.HesurvivedthefloodsofBoothandBatesandScotchfashionablenessofbloodlines.HeheldbankinginterestsinhishometownandwasontheBoardofTrusteesoftheUniversityof Illinoisfor26years.     As geneticist at the University of Wisconsin he applied pure science to practical animalbreeding. MostofthetopmeninanimalbreedingtrainedunderDr.Cole. Born1877inAllegany,NY,hegraduated fromUniversityofMichiganandreceivedPhDfromHarvard,taughtzoologyatYaleandjoinedtheUniversityofWisconsin(1910-1947).HeheadedthenewDeptofExperimentalBreeding(laterDeptofGenetics).Numerousstudentscametothedepartmentforgraduatetrainingwherehesethighstandardsashepioneeredcombiningthe scientific approaches and practical aspects. He was a member of many learned andscientificsocieties.Inrecognitionofhisachievementsinteachingandresearchingenetics,theAmericanSocietyofAnimalProductionpresentedhisportrait to thisgallery in1939.MichiganStateawardedhimtheDoctorofSciencedegree.

    He and his brother, Robert, became the first great improvers of modern Shorthorns. Hedevelopedhisherdin1789atKettonHallintheTeesvalleyofNorthernEngland.Favorite,adoublegrandsonofhisfoundationcowLadyMaynard,washisfirstgreatfoundationsire.Charlespreparedthe“DurhamOx,”asonofFavorite,forpublicexhibitiontopromotetheShorthornbreed.Hedispersedhisherdin1810.
