Group Overview
• Salov was founded in 1919 in the province of Lucca, Tuscany, where it’s based the
Group’s headquarters and production site
• The Group executes in-house all the strategic phases of the edible oil value chain, from
procurement to refining, from R&D to marketing. Salov owns one of the most modern
production facilities in Europe, inaugurated in 2006, including a technologically advanced
refinery and a fully automated filtering and blending plant, for a total production capacity of
more than 230,000 tons per year

SALOV Production Chain
SOURCING
The Salov network operates across the Mediterranean. Stringent
olive oil sourcing criteria ensure the consistent high quality of the
end product.
SELECTING
Only 6% of 6,000 samples SALOV receives each year are selected
to become our olive oil. In order to make this rigorous selection, we
call upon the extensive knowledge of individual producers and olive
groves, the evaluation of climatic conditions, and our expert Tasting
Panel, as well as detailed chemical tests.
BLENDING
Blending to achieve Filippo Berio's and Sagra’s unique taste and
character is an art form that relies almost entirely on age-old
traditional skills and experience, for which Salov blenders are
famous worldwide. This is the key to the success of Salov blends
and sets us apart from all our competitors.
• Salov is renowned for its consistent quality and the stringent controls applied at every stage of the
growing and production process; from sourcing olives, through harvesting, pressing, blending and
bottling the final product.
• Seven highly experienced professionals in our Quality Control Team carry out both chemical and
organoleptic (sensory) analysis throughout the production process, from sampling of raw material
to bottling. All tests are carried out in conformity with the EU regulations.
Our Guarantee of Quality
We do organoleptic (sensory) testing and chemical analysis on samples.
Once the tanker lorries arrive at SALOV, the oil undergoes a strict compliance
check by our tasting panel, to ensure it is identical to the original sample chosen
in the country of origin. It is then subjected to a laboratory analysis to ensure its
authenticity, quality and the absence of pesticides.

Quality Control
• The SALOV Group must meet the requirements specified in “Hazard Analysis and Critical Control Points”
(“HACCP”)
• Consistently with its uncompromised approach to quality, SALOV’s management has set quality standards that
go beyond HACCP rules, and executes regular and accurate quality controls to check that these standards are
strictly respected

production process
