A crowd pleasing low carb lasagna recipe that canbe made ahead. You’ll never miss the pasta noodles inthis healthier version.

Prep Time 10 minutesCook Time 35 minutesTotal Time 45 minutesServings – 10 - approx. 3x3 square piece

(for smaller yield, reduce ingredients)

Ingredients· 1/2 head cabbage· 1.5 lbs ricotta cheese· ¾ cups parmesan cheese grated· 1/4 cup dried parsley (optional)· 2 medium eggs· 1 pound ground meat (browned)· 20 ounces marinara sauce (with no sugar added)· 16 ounces fresh mozzarella cheese sliced or shred-

ded· 2 to 4 oz parmesan grated (optional)

Instructions1. Carefully remove leaves from cabbage head.2. Parboil (partly cook (food) by boiling) leaves in

salted boiling water for 5-10 minutes. Drain and removeexcess water with towel.

3. Mix ricotta and parmesan cheese with eggs andparsley (if using). Set aside.

4. Stir marinara sauce into browned meat.5. Spread about 3/4 cup sauce onto bottom of 9x11

or similar size baking dish.6. Place a layer of cooked cabbage leaves over sauce.7. Spread half ricotta cheese mixture over cabbage

leaves.8. Top cheese mixture with half the remaining sauce.9. Cover sauce with half the mozzarella cheese.10. Repeat layers.11. Top off with additional parmesan cheese, if

desired.12. Bake 350F for about 25 minute

Question: Does feeding birds in thewinter help or hurt their chances of sur-vival? Will birds suffer if feeders goempty?

Answer: Natural food sources are typically exhausted during winter, asbirds consume all the seeds and fruits at one location before moving to the next.Bird feeders do help birds by offering food when natural sources are scarce.Feeders help reduce the amount of time it takes birds to find food. Bird feedersare especially important in late winter when there is heavy snow and extremecold. If backyard feeders go empty while you’re on vacation, birds will lookelsewhere for food. Bird feeders only supplement natural foods, so most birdswill not suffer if feeders go empty for days or even weeks at a time. If you dofeed birds in the winter, make sure you offer black oil sunflower seeds. Thisseed provides high energy and is eaten by a variety of birds.

IngredientsCooking spray, for muffin tin1 large head cauliflower2 large eggs2 cloves garlic, minced1 c. shredded cheddar½ c. freshly grated Parmesan1 tbsp. freshly chopped parsley2 tsp. baking powder¼ c. buttermilk¼ c. cornstarch1/4 tsp. crushed red pepper flakesKosher saltFreshly ground black pepperCreamy Tomato Basil Soup

Instructions:1. Preheat oven to 400° and spray a muffin tin with

cooking spray. Grate cauliflower on small side of a box graterto form fine crumbs. Place in a clean dishtowel and squeezeout extra moisture.

2. In a large bowl, mix together grated cauliflower and eggs.Add garlic, cheddar, Parmesan, parsley, baking powder,buttermilk, and cornstarch. Season with red pepper flakes,salt, and pepper.

3. Drop a spoonful of cauliflower mixture into each muffintin and bake until golden, about 25 to 30 minutes.

4. Serve warm with Creamy Tomato Basil Soup.

SMP VolunteersSeveral of our SMP volunteers have had to pull way

back on their volunteering recently, so I’m on the hunt forsomeone to help us spread the SMP message. We talk toolder Iowans about Medicare fraud, identity theft, anddiscussing how we can avoid those pesky scam artistswho try to trick us into sending them money. YOU canvolunteer in many ways! It’s not required for you to do

a formal presentation. We need people to read the monthly newsletter togroups at meal sites and/or other locations where older Iowans gather. Pleaselet me know if you are interested in learning about the different ways you couldhelp.

Starting April 2018: New Medicare Numbers!To help protect your identity and decrease exposure to identity theft,

Medicare will begin printing new cards in April of 2018 that will have anidentifying code that isunique to you – in-stead of your SocialSecurity Number!Cards will continue tobe mailed throughout2018 into the early partof 2019. Note: If youare married, you andyour spouse will re-ceive your cards at sepa-rate times.

Medicare will remove gender identity and the signature line from the newcards. The new Medicare number/card doesn’t change your Medicarebenefits. Start using your new card as soon as you get it. Your medicalproviders will want to make a copy of your new card. Destroy your oldMedicare card.

Watch out for scams: Scam artists may try to get your current Medicarenumber and other personal information by contacting you about your newMedicare card. They may claim to be from Medicare and will likely use varioustactics including:

· Asking you to confirm your Medicare or Social Security Number so theycan send you a new card.

· Telling you there’s a charge for your new card, and they need to verify yourpersonal information.

· Threatening to cancel benefits if you don’t confirm your Medicare Numberor other personal information.

If you have questions about your new card, please contact Medicare orSocial Security. Or you may call the Iowa Senior Medicare Patrol at 800-423-2449.

What is Case Management?Case Management is a

service that assists olderadults in arranging neces-sary services to safely livein their home.

How Does it Work?In order to understand

your needs, your AgingResources Case Managerwill schedule a home visitto discuss your health andthe challenges you face inremaining independent.Your Case Manager willdiscuss the services thatare available based on yourconversation. You wouldchoose the services you want and which service providers you would like to use. Your Case Managerwill arrange these services for you and continue to coordinate the services you request.

Your Case Manager will meet with you every three months and make monthly phone calls to assurethat the arranged services are received and are meeting your needs.

Who Can Participate?Any adult, who is at least 60 years of age and needing services to remain in their home, can participate inCase Management. The older adult must live in Aging Resources of Central Iowa’s service area whichincludes Boone, Dallas, Jasper, Madison, Marion, Polk, Story and Warren counties.

What Does it Cost?There is no cost to participate in the Case Management service. There may be fees for the services that youchoose.

2018 is here! It’s the New Year. There’s no better time to tell you aboutthe new features we have in my Social Security. They not only save you time,but also put you in control of your retirement future.

There are a growing number of states (and the District of Columbia) where,if you’re a resident, you can request a replacement Social Security card online.Iowa has been doing this for a year now! Our new online version of theApplication for a Replacement Social Security Card can make getting areplacement easy and stress free. It allows people to apply for a replacementcard through my Social Security without traveling to a field office or card center,as long as you’re not requesting a name change or any other change to yourcard. We are working to add this capability to every state.

Your personal my Social Security account is secure and gives you readyaccess to your earnings records, Social Security benefit estimates, andprintable Statements. Those who already receive benefits can view theirpayment history, current status, and manage their benefits.

Social Security has also made replacing your annual Benefit Statement eveneasier. The Benefit Statement (known as the SSA-1099 or the SSA-1042S)shows the amount of benefits you received the previous year and is neededfor filing taxes. Now you have the ability to download it using our onlineservices. There’s no need to visit a field office. A replacement SSA-1099 orSSA-1042S is available after February 1 for the previous tax year.

Seniors at the Northwest Community Center were the grateful recipients of a Christmas tree donated by Mr. Sid Ramsey of Unity Point. Mr. Ramsey decorated a tree in honor of twochildren with cystic fibrosis. While the tree is overshadowed by the seniors in the photo, it is stunningly decorated with purple, silver and gold ornaments topped with a grapevine angel.All of us were so excited to hear of the donation and are touched by the fact that Mr. Ramsey could have chosen anyone and he chose us! We love it and will cherish it for years tocome, not only for its beauty, but also for its special meaning. Thank you, Mr. Ramsey!

Senior Companion Volunteer’s RecognizedBusiness Development and Communications DirectorHCI Care Services & Visiting Nurse Services of Iowa

Volunteers with the Senior Companion Program at Visiting Nurse Services of Iowa were honored onThursday, December 7th, in Des Moines. Each of the 43 volunteers received a catered meal, live music,a recognition certificate and at least one gift card.

Senior Companions is a program of Visiting Nurse Services of Iowa. The program serves homeboundseniors who want to stay independent and remain in their own homes. Senior Companions earn a monthly$200-$400 tax-free stipend* to provide companionship and transportation.

Visiting Nurse Services of Iowa is seeking seniors ages 55+ years old for the program who would liketo earn extra money while serving older adults in their neighborhoods. Those interested are encouragedto call 515-558-9957 or email [email protected]. *This income does not decrease benefits such as foodstamps, housing assistance or disability.
