As Chef de Cuisine at Per Se, Jonathan Benno oversees all aspects of the kitchen, working directly with Thomas Keller to create a distinctive brand of American cuisine and service.
Benno attended the Culinary Institute of America in Hyde Park, NY. While studying at the CIA, he worked at the Mayflower Inn under Chef John Farnsworth, who encouraged him to regard education as a lifelong process. After graduation, Benno moved to the Bay Area and worked under Michael Mina at Aqua, the acclaimed seafood restaurant. He later relocated to the Napa Valley to join Keller at The French Laundry.
Keller became an important influence in Benno’s life, helping to shape his philosophy about food and dining and instilling in him the drive to settle for nothing less than excellence. While California played a pivotal role in his evolution as a chef, Benno wanted to return to the East Coast to test himself in the kitchens of Manhattan. For two years he focused on French cuisine, working in the kitchens of Restaurant Daniel and Les Celebrités. Benno then headed to France, to work under Gilles Goujon at his Michelin one-star restaurant, Auberge de Vieux Puits in Corbieres.
Upon returning to the United States, Benno joined Tom Colicchio at Gramercy Tavern where he spent two years in the kitchen, and one year with Claudia Fleming in the pastry department. He then opened Craft as a sous chef with Marco Canora. Chef Colicchio’s thoughtful approach to food and passion for sourcing out the best ingredients reinforced Benno’s belief that superior raw materials and thoughtful preparation are essential to the execution of great cuisine. It was the pursuit of these culinary ideals that brought Benno back to The French Laundry for eighteen months to prepare for the opening of Per Se.
Per Se debuted in February 2004 in New York City’s Time Warner Center. Since its opening, the restaurant has consistently received the highest of accolades from both national, and international press. At launch, Per Se received a 4-Star rating from both the New York Times and Crain’s New York Business. In 2005, London’s Restaurant Magazine recognized Per Se as the highest-ranking new entry, and seventh in their global listing. Per Se also received the award for “Best New Restaurant” from the James Beard Association. In 2006, Food & Wine recognized Benno as one of ten “Best New Chefs” in the United States. Most recently, the Michelin GuideNew York City 2009 gave Per Se its most prestigious honor, a three star rating, for the fourth consecutive year, Restaurant Magazine Ranked Per Se as the #6 restaurant in the world and theBest Restaurant in the Americas, and the Zagat Guide awarded Per Se the highest score in New York City on cuisine and service, ranking the restaurant #1 in New York.

Lysielle, a college graduate in the legal arena and a mother of three boys, decided to get into the restaurant business with her husband, Jacques, after retiring to Naples from Provence. Together they opened Bleu Provence in 1999.
Although she had no formal culinary training, she has spent her entire life cooking for family and friends and has also taken classes at The Ritz Escoffier School in Paris, France. She studied under Bleu Provence’s previous French chefs before passionately taking over as executive chef in 2004.
While growing up, Lysielle was exposed to the fantastic, crowded, open air markets of Provence, where cooks accept no less than the freshest, highest-quality produce, seafood, and poultry. Drawing from those experiences and using home recipes, Lysielle has transported the magic of Provençal cooking to Southwest Florida, where she has created a splendid marriage of the traditions of her native cuisine with the finest ingredients of Florida and the New World.
The New York Times described Lysielle’s fish soup, made with local catch, as “A perfect Provencal-style fish soup, dense with flavor, brightened by saffron, accompanied by a true, garlicky rouille, with croutons.” The same New York Times reviewer calls her Confit de Canard “A ridiculously flavorful duck confit with pommes sarladaise layered potatoes cooked in goose fat;” her braised lamb shanks with coucous, figs, and almond sauce are singled out as “a terrific feed.”

Jacques Cariot, Chef Lysielle’s husband for 33 years, is an entrepreneur with a Harvard Executive MBA, France. A true oenophile, Jacques travels to wineries around the world each year procuring wines for his collection that is made up of more than 2,000 different wines. His vast knowledge of wine supports Lysielle in successfully pairing fine French cuisine with world-class wines.

Chef Derin Moore, CMC, is the executive chef for The Ritz-Carlton Resorts of Naples. In his role as executive chef, Chef Moore is responsible for the direction and development of a 173-member culinary team. He oversees the culinary vision of all eleven restaurants to ensure that each offers a unique and diverse menu.
Chef Moore brings extensive diverse experience in culinary arts to the resorts. He began his culinary career at the prestigious Culinary Institute of America in Hyde Park, New York, where he graduated in 1986. Upon graduation, he returned to his home state of Michigan, where he assumed chef roles in award winning restaurants including the landmark restaurant The Golden Mushroom.
From 1992 to 2000, Chef Moore participated on regional and national culinary teams representing The United States in several international competitions including The World Culinary “Olympics,” held every four years.
Throughout Chef Moore’s career, he has served as adjunct professor at a number of recognized culinary colleges to share his craft and mentor young culinarians.
In 2003, Chef Moore was recognized by The World Association of Cooks Society (WACS) with the highest level of certification, “Certified Master Chef.” He is among a highly select group of fewer than 65 members to hold this designation.
After earning numerous awards and accolades for his inspired cooking at fine dining white tablecloth restaurants, Chef Moore moved on to further develop his culinary repertoire at some of the most respected private clubs in the country including The Medinah Country Club, host of the 88th PGA Championship.
