When the green leaves on the trees in Michigan begin to turn into beautiful fall colors my mind immediately thinks…When do we leave for Florida? In the past newsletters I have highlighted the many volunteers who make life in VHL come alive. I have talked about the folks who serve on the Board and who chair or serve on the many committees. In this article I would like to mention and thank the many people who teach classes, chair different events, both weekly and special, and the people who keep all these activities straight on the calendar!
The event calendar is the responsibility of the Recreation Committee Chairperson who is Beverly Wallace. She has been chairing this committee since 2009 and she does an outstanding job. If anyone, perhaps you, has an idea for an event or class they should contact Beverly first to make sure there are no conflicts with similar events, the date, or the time or the location. Even group trips which are not part of the Recreation Committee responsibility should be placed on the Recreation calendar. This calendar is also managed by Darlene Philips, our Office Manager.

first Tuesday of each month and a regular meeting on the second Tuesday of each month beginning October 7 and 14. Both of these meetings are open to anyone who would like to listen or comment to the Board. They both begin at 8:30am in the Board Room at the Recreation Center. The main focus of the Board is the selection of a new Village Manager.
Are the leaves turning in your part of the world? Are you ready to head south to VHL? Whether you are already in VHL or on your way I invite you to find someplace, somewhere you might like to participate in the activities at VHL…and THANKS to everyone who makes this part or our program happen.

Since this will be my last Manager's Corner I want to use this space to thank the Village for the many years I have worked here. Big thanks go to a terrific staff, Darlene, Stacy, Mike as well as James and our newest member Berchell. They are hard working and pride in
their work is a given. The goal of all of the staff, including myself, was and is to create and maintain a first class community. I believe we
have accomplished this goal.Over the years a great deal has been accomplished and
this happened with cooperation and foresight. Working with many different Board members over the years has been an overall positive experience. Most of the time we all agreed and sometimes we didn't agree but we all got the job done.
I would name all of the fabulous folks I consider friends but I would not want to leave out even one name so I will just thank you from the bottom of my heart for a wonderful 12 years.

As the Snow Birds begin to come down, so do bird migrations begin. We have seen the first Ruby-throated hummingbird in our yard on Candace and in checking my records, that's about on time. They migrate through, feeding for a few days, then continue on to Mexico and Central America, making the 600 mile trip across the Gulf of Mexico.

To attract them to your yard, plant Firebush, Jatropha, or Tecomaria, all with red or orange tube flowers which they use. All are sold in garden centers during the year.
Firebush grows to be quite a large bush, so put it away from your house. Jatropha can be a small tree or shrub. The tecomaria will bloom in winter and early spring, providing food for hummers on their way back north. It is a viney shrub that can be controlled as a shrub. Butterflies are also attracted to the same plants. Just Google all three plants to learn more.
As you begin to clean up your yards, remember, please leave all green fronds on your palms. Remove only brown ones. And please don't use cypress mulch. More on this later.
FLOrida’s FabULOUs trees Submitted by Dee Cook
As you know the Tree Committee has been involved with the planting of many trees in our Village of Holiday Lake. Florida has so many beautiful as well as useful trees from which to choose. We really appreciate your response and contributions towards this effort. Over the summer we have seen some adaptation to our environment and also some hesitation by the newly planted trees. We are watching as some lose their leaves and others bloom. With the loving care of staff and interested participants we hope to provide living space for many more trees and to see them flourish.
For anyone interested in purchasing a wonderful colorful book I recommend “Florida’s Fabulous Trees Their Stories” by W. Williams. It was one of the first books I purchased aside from the one on Seashells when I came to Florida. Every year I add one from this series to my collection. When you look at the marvelous photography perhaps you will understand the excitement I wish to share with you. Some of you who have had
the privilege of living many years here will recognize the blossoms of flowering trees and the majesty of the palms.
Yes, I know there are those of you who can’t stand palms for any number of reasons….too much care and trimming, dropping of fronds and blossoms, and whatever your pet peeve is. So I encourage you to consider the future and look at the beauty in the blossoms of the Tree of Gold – Tabebuia , Royal Poinciana – Delonix regia, Frangipani – Plumeria, Golden Rain Tree – Koelreuteria elegans, Orange Geiger Tree – Cordia sebesteria, Jacaranda – Jacaranda mimosifolia, Shefflera – Brassaia actinophylla,Bottlebrush – Callistemon spp. Hog Kong Orchid – Bauhinia blakeana, Golden Shower Tree – Cassia fistula and Magnolia. These trees along with many others including various palms, maple, oak, and eucalyptus are already part of our environment. Look around and take notice of what we enjoy.

The vet rolled his eyes, turned around and left the room. He returned a few minutes later with a black Labrador Retriever. As the duck's owner looked on in amazement, the dog stood on his hind legs, put his front paws on the examination table and sniffed the duck from top to bottom. He then looked up at the vet with sad eyes and shook his head.
The vet patted the dog on the head and took it out of the room. A few minutes later he returned with a cat. The cat jumped on the table and also delicately sniffed the bird from head to foot. The cat sat back on its haunches, shook its head, meowed softly and strolled out of the room.
The vet looked at the woman and said, "I'm sorry, but as I said, this is most definitely, 100% certifiably, a dead duck." The vet turned to his computer terminal, hit a few keys and produced a bill, which he handed to the woman.. The duck's owner, still in shock, took the bill. "$150!" she cried, "$150 just to tell me my duck is dead!" The vet shrugged, "I'm sorry. If you had just taken my word for it, the bill would have been $20, but with the Lab Report and the Cat Scan, it's now $150."

CHiCken enCHiLadas WitH sOUr CreaM WHite saUCeingredients:• 10 small soft flour tortillas (you can use corn but I like flour with chicken)• 3 tablespoons flour• 2 cups chicken broth• 1 cup sour cream• 2 1/2 cups shredded and cooked chicken (we like to use rotisserie chicken)• 3 cups Monterey Jack cheese – shredded• 3 tablespoons butter• 4oz can diced green chilies (I like medium – they are not spicy at all)
directions:1. Preheat oven to 350 degrees.2. Combine shredded chicken and 1 cup of cheese.3. Fill tortillas with the mixture above and roll each one then place in a greased 9×13 pan.4. Melt butter in a pan over medium heat, stir flour into butter and whisk for 1 minute over heat.5. Add broth and whisk together. Cook over heat until it’s thick and bubbles up.6. Take off heat and add in sour cream and chilies. (be careful it’s not too hot or the sour cream will curdle).7. Pour mixture over enchiladas and add remaining cheese to top.8. Bake in oven for 20-23 minutes then you will want to broil for 3 minutes to brown the cheese.9. Enjoy!
rOasted asParagUs and MUsHrOOM CarbOnaraingredients:• 1 pound asparagus, trimmed and cut into bite sized pieces• 4 ounces bacon cut into 1 inch pieces or 4 ounces pancetta, diced• 1/2 cup (2 ounces) parmigiano reggiano (parmesan), grated• plenty of fresh cracked black pepper• salt to taste• tablespoon parsley, chopped
directions:1. Toss the asparagus and mushrooms in the oil, salt and pepper, place on a baking sheet in a
single layer and roast in a preheated 400F oven until they start to caramelize, about 20-30 minutes, mixing half way through.
2. Start cooking the pasta as directed on the package.3. Cook the bacon in a pan, pour off all but a tablespoon of the grease from the pan, add the
garlic, cook for 30 second and turn off the heat.4. Mix the egg, cheese, pepper and salt and parsley in a bowl.5. Drain the cooked pasta reserving some of the water.6. Mix the pasta, egg mixture, asparagus and mushrooms into the pan with the bacon, adding
reserved pasta water as needed.note: To speed things up, about 20 minutes into roasting the asparagus and mushrooms, get your pot of water
for the pasta on the stove and start bringing it to a boil.
Option: Replace the parmigiano reggiano with pecorino romano.
