IMPORTANT SAFEGUARDS

Read all instructions carefully before beginning to use your Thermomix. This willhelp you achieve a high level of safety and security.

1. Close supervision is necessary when the appliance is used by or near children.

2. Do not use the Thermomix for anything other than its intended use.

3. Do not place the Thermomix on or near a hot gas or electric burner, or in a heatedoven.

4. Do not use outdoors.

5. Do not let cord hang over edge of table or counter or touch hot surfaces.

6. Unplug from outlet when not in use, before putting on or taking off parts, and beforecleaning.

7. Do not operate any appliance with a damaged cord or plug or after the appliancemalfunctions, or is damaged in any manner. Return appliance to the nearestauthorized service facility for examination, repair or adjustment.

8. To protect against risk of electrical shock do not immerse the main appliance in water.

9. Use only Thermomix accessory attachments in the mixing bowl while blending.The use of accessories or attachments not recommended by Thermomix may causeinjuries.

10. The mixing bowl must be properly in place before operating the Thermomix.

11. Blades are sharp. Handle carefully.

12. Avoid contacting moving parts.

13. Do not operate the Thermomix on any heat setting when the mixing bowl is empty.

14. Do not touch hot surfaces.

15. If you use hot liquids, do not press the Turbo button.

16. When blending hot liquids, always put the Thermomix measuring cup in placeon the lid.

17. Extreme caution must be used when moving the appliance containing hot liquids.

18. Do not clean the coating of the heating element with cleanser or metal scouring pad.

19. To avoid spillage, do not fill the mixing bowl above the recommended maximumcapacity.

20. Follow the important safeguards on page 24 regarding using the Varoma.

Cleaning before your first use

The Thermomix must be thoroughly cleanedbefore it is assembled and used for the firsttime. To clean the mixing bowl (13) turn thelocking lever (14) to the right and remove thelid (22). Next, remove the stirring attachment(20), the Thermomix measuring cup (24) andthe basket (19). Now remove the mixing bowl(13) from the appliance. Remove thecutting/mixing blade unit (16) next. To do this,turn the foot of the mixing bowl (18) 180° tothe left and remove it by pulling downwards.This will enable you to carefully pull out thecutting/mixing blade unit (16) with thesealing ring (17) from the inside of the mixingbowl (13).

Thoroughly clean the mixing bowl (13) with astainless steel cleaning agent and rinse. Then,clean the outside of the mixing bowl (13) withthe same cleaner and rinse.

Carefully clean the cutting/mixing blade unit(16) under running water by using a sponge orbrush.

CautionBlades are sharp. Handle carefully.

Important1. Do not leave the cutting/mixing blade unit in

water for any length of time or clean in adishwasher because the detergents mayhave an adverse affect on the sealing ringor the cutting/mixing blade unit itself.

2. To avoid scratches, use only a soft, moistcloth to clean the non-stick coated heatingring.

Assembling your Thermomix

1. Fitting the cutting/mixing bladeunit (16)

Before assembling the mixing bowl, check tomake sure that the sealing ring is correctlyfitted to the cutting/mixing blade unit. Nowcarefully insert the cutting/mixing blade unitinto the mixing bowl.

CautionBlades are sharp. Handle carefully.

Now attach the mixing bowl foot to thecutting/mixing blade unit from below. Thisfoot is secured by turning it 180° to the rightuntil it will go no further. Now the mixing bowlis ready to place in the base unit.

2. Inserting the mixing bowl (13)

Check to see that the locking lever is pushedfully to the right. Insert the mixing bowl intothe base unit with the handle to the front.Make sure that the mixing bowl is securelyseated in the base unit.

Fit the lid into the spout of the mixing bowland push it down gently until it slips into place.Push the locking lever fully to the left until itcan go no further.

The Thermomix will not turn on unless themixing bowl is in place and the lid is fitted andlocked properly.

Description of functions

Thermomix measuring cup (24)

The measuring cup has three functions:

1. To close the lid opening to avoid heat losswhen heating.

2. To prevent food from splashing out whenbeing processed.

3. To measure ingredients. The content of themeasuring cup when full to the rim withliquids is 1 dl (100 ml).

Always insert the measuring cup with the openend up.

Liquids can be added in small amounts withouthaving to remove the measuring cup by pour-ing them directly on the lid. Other ingredientscan be added during mixing simply by liftingthe measuring cup.

Lid (22)

When working with the Thermomix, the lidtogether with the sealing ring must be properlypositioned on the mixing bowl.

CautionThe lid and the sealing ring must be properlyfitted to prevent contents from splashing outbetween the mixing bowl lid and the mixingbowl itself. When properly fitted, you will seethe grooved side of the sealing lip (see pictureon left). If fitted incorrectly, there is a risk ofscalding.

Mixing bowl (13)

The maximum capacity of the mixing bowl is 2liters.Do not under any circumstancesexceed this amount.

There are 4 marks on the inside of the mixingbowl. Each mark stands for approx. ½ litre.

ImportantMake sure to remove the cutting/mixingblade unit before cleaning the mixing bowlin a dishwasher.

Basket (19)

The basket has multiple functions.For example:

1. It will filter fruit and vegetable juices. To dothis, after the juice is made, place the basketin the mixing bowl. Insert the spatula into thegroove in the basket. Pour the juice out byholding the basket in place with the spatula.

2. It will hold ingredients for heating or cooking.To do this, place any ingredients that you donot want to be brought into contact with thecutting/mixing blade unit into the basket.Then place the basket into the mixing bowl.

To remove the basket, insert the spatula intothe groove and pull it out gently. Practicecarrying the basket with the spatula beforedoing this with hot food inside.

Mixing bowl foot (18)

The mixing bowl foot serves to secure thecutting/mixing blade unit in the mixing bowl.

The mixing bowl foot is made of aheat-insulating plastic material so that the hotmixing bowl can be safely placed on anykitchen surface.

Spatula (21)

You can insert the spatula through the lidopening during mixing to stir ingredients.The safety disk prevents any contact with theblades.

The special shape of the spatula makes itsuitable for scraping the mixing bowl.

You can also use the spatula to lift out thebasket as well as to hold the basket downwhen pouring out juices.

The scraper (bottom portion of the spatula) canbe pulled off from the shaft for cleaning.

CautionFor safety reasons never insert any otherobjects (spoons, forks, etc.) into the mixingbowl. Only insert the spatula from the openingin the lid.

CautionThe mixing bowl foot must be tightened until it will go no further. If this is not done, thetemperature sensor will not be in contact with the mixing bowl and the appliance will notfunction properly. Improper seating of the mixing bowl could lead to damage to the Thermomix.

Stirring attachment (butterfly/whisk) (20)

The stirring attachment is normally used tomake such items as whipped cream andwhipped egg whites. It may also be used toprevent burning or scalding of liquids whenheating them at low motor speeds (speedsettings 1-3). When using the stirringattachment, always increase speed gradually.

To use the stirring attachment simply push itonto the upper part of the cutting/mixing bladeunit and push it down gently until seated.

Caution1. Never use the spatula when the stirring

attachment is attached.

2. When using the stirring attachment, do notexceed the speed setting of 3. Increasespeed gradually.

3. Only turn on the speed setting after fittingthe stirring attachment.

Cooking with Varoma (see also pages 19 - 24)

The Varoma is a unique cooking method designed to steam fruit, vegetables, poultry, fish andother meats. The heating of the liquid in the mixing bowl combined with the turning action ofthe blades produces condensed steam which cooks the food in the Varoma while retainingthe vitamins and minerals in the food.

When working with the Varoma, the lid (22) together with the sealing ring must be properlypositioned on the mixing bowl. To use the Varoma, first remove the TM measuring cup fromthe lid and place the Varoma on top of the lid of the mixing bowl. Generally, the Varomainner tray is used for steaming fruits and vegetables and the Varoma (bottom tray) is used forpoultry, fish and other meats.

To cook with the Varoma, select the Varoma setting on the temperature selector. On theVaroma setting, temperatures of up to 100°C may be achieved.

Working with your Thermomix

The Thermomix should be placed on apermanent, level surface in your kitchen so itcan be used frequently and easily.

Important1. Always make sure that the air vents on the

back of the appliance are not covered orblocked to prevent overheating of theappliance.

2. Never carry the Thermomix by the handle ofthe mixing bowl.

Explanation of symbols:

Putting your Thermomix into operation

The electrical cord can be pulled out of theappliance and pushed back in again dependingupon your needs. Plug in the appliance to a 230Volt / 50 Hz outlet.

Turn on the main switch (I = ON, O = OFF).The time display and the decimal point on thedigital display should now be illuminated. TheThermomix is now ready for operation.

Useful hints

1. Always turn on the operating elements (switches, buttons) by starting at the top andworking down. For example, set the time selector first, then the temperature selector andthen the speed selector.

2. An audible signal is emitted if the mixing bowl is not properly fitted and a safety interlockprevents the Thermomix from starting. Set the speed selector to 0 again and properly lockin the mixing bowl.

3. The scale works correctly when the appliance is within 5° - 40°C. However, do not worry ifthe appliance cools down to below 0°C. For example, this could happen when youtransport your Thermomix in the winter. Simply wait until it has warmed up to roomtemperature before using the scale.

4. Unplug the Thermomix when it is not in use for extended periods.

Time selector (2) and time display (6)

The timer can either 1) count up and be turnedoff manually, or 2) be preset and turn offautomatically. A time period must be selectedin order to heat. The time selector can also beused for cold mixing functions.

Time selection

The operating period can be set for up to amaximum of 60 minutes by using the timeselector. The timer can be set as follows:

0 to 59 seconds in 1 second increments,1 to 10 minutes in 30 second increments,10 to 60 minutes in 60 second increments.

To set the time, turn the time selector to theright to the desired time.

If you preset the timer, a countdown of theoperating time is shown in 1-secondincrements to zero. In hot mixing operationsor heating, at the end of the preset time period,the mixer continues to rotate at a speed of 100r.p.m. to prevent the food from burning. In coldmixing operations (temperature must be set at0) the mixer switches off and an audible signalindicates that the food has beenprocessed.

Changing or interrupting the pre-selected time

The time indicated can be changed duringeither cold or hot mixing operations simply byturning the time selector to the right or to theleft.

If during operation the appliance is switched offat the speed selector before the selected timehas expired, the remaining time blinks in thedisplay until the appliance is switched on again.

To stop mixing, first turn the speed selector to0 and then turn the time selector to the left until0 appears.

Timer function (only for cold mixing operations)

If you do not pre-select a time period,theThermomix will automatically shut itself off after60 minutes.

Temperature selector (3) and temperaturesetting (12)

Temperatures of between 40°C and 100°C canbe set for hot mixing operations by means ofthe temperature selector.Make sure that the temperature selector is at0 before beginning cold mixing operations.

Remember the Thermomix will not heat unlessyou select a time setting and a motor speedsetting.

The temperature settings are displayed in color.The color and shade of the display changeswith the ever-increasing temperature fromyellow to red.

By selecting the Varoma mode on thetemperature selector, temperatures of up to100°C may be achieved.

ImportantMake sure there is at least ½ litre of liquid inthe mixing bowl when the Varomatemperature setting is selected, otherwise thereis the risk of total evaporation. This could leadto a premature switching off of the appliancedue to overheating (see pages 19 - 24).

At the end of the pre-selected time, the heatingis automatically switched off and an audiblesignal is emitted. The cutting/mixing blade unitcontinues to turn at minimum r.p.m. regardlessof the pre-selected speed.This prevents any contents from burning.To complete the function return the speedselector to the 0 setting.

Soft start (above 60°C)

When the Turbo mode is selected/activated andthe temperature in the mixing bowl is above60°C, the electronic sensor prevents food fromsplashing out by increasing the motor speedgradually.

CautionIf you use hot liquids or foods heatedelsewhere, do not press the Turbobutton. If you wish to further processfood or liquids heated elsewhere, youshould only increase the motor speedslowly and in small steps. Under nocircumstances should the Turbo modebe activated. Use of the Turbo modewith food or liquids heated elsewherecould result in a risk of scalding.

Speed selector (5) and motor speed setting (11)

The Thermomix is switched on as soon as thespeed selector is activated. The speed selectorhas 4 general speed ranges.

Stirring

This low speed setting (100 - 1,000 r.p.m.) isparticularly well suited for cooking and mixingfoods gently.

Mixing

This speed setting serves to chop, grind andblend the ingredients.

Turbo speed setting and Turbo button (4)

This maximum speed can be activated byeither 1) pushing the Turbo button or 2) turningthe speed selector to the highest setting.Thismode enables ingredients that have to bepulverized to be mixed in immediately andthoroughly. The Turbo button only functions atthe 0 setting or at and above setting 4.

Bread setting =

The setting Ÿ just to the right of the 0 setting issuitable for making dough. To activate thismode, the speed selector has to be pulled outa little and turned to the right until it will go nofurther. The pulsed mode of operation ensuresthat the dough is evenly processed.

CautionAlways turn the speed selector slowly to thedesired speed. This will prevent any contentsfrom splashing out.

Useful information

Ingredients may be accurately removed orsubtracted before the electronic scale button isreset. If ingredients are subtracted after theelectronic scale button has been pushed, thedisplay will indicate a blinking error message:

Filling of the mixing bowl with more than themaximum 2.5 kg weight results in an overloadand the display will indicate a blinking errormessage:

With the Thermomix you can weigh anyrequired ingredients directly in the mixingbowl. When weighing, please follow thesesteps:

1. Fit the mixing bowl into the appliance.The display shows

2. Push the electronic scale button. Thedisplay now switches from time modeto scale mode and shows

3. Put in the first ingredient (up to a max.of 2,5 kg) and read the weight on thescale display. As additional ingredientsare added, weight will automaticallyincrease.

4. To reset the scale to zero, press theelectronic scale button. When theappliance is activated with the speedselector, the scale display automaticallyswitches back to time mode.

Add and Weigh Function

It is sometimes useful to add consecutiveingredients to the mixing bowl, yet weigh eachingredient individually. This can be done usingthe Add and Weigh function as follows:

1. Weigh the first ingredient following steps 1-3on the left of this page.

2. Press the electronic scale button. Thedisplay will reset to zero.

3. Add the desired amount of the nextingredient and note the weight.

4. Press the electronic scale button to resetthe scale to zero.

5. Add the next ingredient. And so on.

During a cooking/stirring process with apre-selected time, you can use the scalefunction without deleting the remainingcooking/stirring time. Follow these steps: 1)Stop the machine by turning the speed selectorto 0 and push the electronic scale button. 2)After weighing your ingredients, continue thecooking/stirring process by turning the speedselector back to the desired speed.

Temperature sensor (9)

The temperature sensor is located in arecess in the base unit.

The temperature of the food being cooked isconstantly monitored by an electronic sensor.Should the temperature become too high, theheating element is switched off. When itbecomes too low, it automatically switches onagain. An additional temperature safety controlprotects the unit against overheating.

Important1. Make sure there are no food particles on

the sensor or on the bottom of the mixingbowl that might impair the function of thetemperature sensor.

2. To avoid scratches, only use a moist, softcloth to clean the non-stick coated heatingring. Do not clean the center of the heatingelement with cleanser or metal scouring pad.

Automatic motor protection switch

None of the recipes in the Thermomix recipebook should lead to a triggering of theprotective devices if the instructions areobserved. However, even if the requirementson quantities (e.g. more than 600 g of flour) areexceeded, an automatic motor shut-downshould prevent any damage occurring to theappliance.

Should a motor shut-down occur, follow thesesteps:

l return the speed selector setting to 0,l take the mixing bowl out of the appliance,l reduce the quantity in the mixing bowl and/or

add a little liquid,l wait about 5 minutes (cooling period),l put the mixing bowl back in again,l switch on the appliance again by using the

speed selector.

NoteIf the motor is under great strain it is possiblethat the appliance not only will shut downbecause of the motor protection switch, but thatyou may notice an odor due to overheating ofthe motor. However, this is no reason forconcern. The appliance should be in fullworking order again after the above-mentioned5 minute cooling period has elapsed.

1. The order of the recipe ingredients

When preparing meals from your ownrecipes, you should consider the order inwhich the ingredients have to be processedand whether any heating is necessary.

2. Weighing ingredients

The scale has to be set to 0 before the firstingredients for the recipe are weighed. Makesure that the mixing bowl is properly alignedin the appliance.

3. Correct order for setting the controlswitches

Remember to activate the switches andbuttons by starting at the top and workingdownwards. Example: if a temperature of100°C and a speed setting of 1 for a 5minute hot mixing operation are suggested,set:

a) Time selector to 5 minutesb) Temperature selector to 100°Cc) Speed selector to 1

4. Heating times

The heating times depend on

a) the initial temperature of the ingredients tobe heated,

b) the quantity, weight and volume of theingredients,

c) the conductivity of the food itself,d) the heat setting,e) the speed,f) the use of an accessory (with or without

basket).

5. Thermomix heat settings

The heating process functions in thetemperature range of 40 - 100°C. Thischanges when the setting Varoma isselected. The heating time is shortened inthis mode because the energy supply isincreased.

6. Use of the Thermomix basket (19)

The cooking time is longer when the basketis used in conjunction with quantities of1,25 litres or more in the mixing bowl.The basket has a different conductivity thanthat of the juices from the food. Also, thevolume of the total amount to be heatedincreases. Finally, heat exchange betweenhot liquids at the bottom of the mixing bowland somewhat cooler foods at the topsurface of the liquid is impeded since risingand falling liquids must pass through thebasket slits.

NoteWhen the Turbo mode is selected/activatedand the temperature in the mixing bowl isabove 60°C, the electronic sensor preventsfood from splashing out by increasing themotor speed gradually.

CautionIf you use hot liquids or foods heatedelsewhere, do not press the Turbo button.If you wish to further process food or liquidsheated elsewhere, you should only increasethe motor speed slowly and in small steps.Under no circumstances should the Turbomode be activated. The speed setting selected affects the time ittakes to heat the contents of the mixingbowl. The higher the speed selected, thelonger it takes to heat up the food.

Turn off and unplug the Thermomixbefore cleaning it. To protect against riskof electrical shock do not immerse themain appliance in water.

Wipe down the basic appliance with a moistcloth using a mild cleaning agent.The surfaces of the aluminum base of themixing bowl, the heating ring and thetemperature sensor should be clean toensure trouble-free functioning of thetemperature control. Remove any soilingfrom the base of the mixing bowl (outsideonly) by using a metal scouring pad. Toavoid scratches, only use a moist, soft clothto clean the non-stick coated heating ring.

ImportantAll individual parts - with the exception ofthe cutting/mixing blade unit - can becleaned in the dishwasher. The aluminumbase of the mixing bowl and some plasticparts may discolor slightly in this process.

The cutting/mixing blade unit should becleaned with a sponge or brush underrunning water. Under no circumstancesleave the cutting/mixing blade unit for along period in water or clean it in thedishwasher.

Take great care when re-assembling theThermomix (see initial cleaning andassembly). It is important that the lockingmechanism be clean.

Helpful Hints

Whenever the mixing bowl or other partsare only slightly dirty, you can simply add afew drops of detergent with water and mixon high speed for a few seconds. Then rinsein clean water. Use a stainless steelcleaning agent for more persistent cleaningproblems.

Do not store the mixing bowl with themeasuring cup inserted on the lid. This willensure better ventilation for the applianceand help avoid any food residue odors.

We recommend that you switch off theThermomix at the main switch when it is notin use.

Cleaning your VAROMA

...is easy and uncomplicated. Before using yourVAROMA for the first time, you should wash allthe parts carefully in warm, soapy water.

You can preserve the beautiful shine on thestainless steel unit by using a liquid stainlesssteel cleaner from time to time. Avoid usingsharp objects or metal scouring pads, as theseare likely to cause unsightly scratches. You willnot need to use anything more than your usualdetergents and cleaning materials for the lidand inner tray.

How to combine your VAROMA parts

You can use your VAROMA in either of thefollowing combinations:

Combination 1:Stainless steel unit plus lid.This is the best combination for cooking largeamounts of the same food, e.g. vegetables,potatoes or large pieces of meat and fish orsausages.

Combination 2:Stainless steel unit, plus inner tray,plus lid.This is the best combination for cookingdifferent foods, e.g. vegetables with meat orfish.

Important: whichever combination you use,always use the lid. If the lid is not on flat, thesteam will escape and the food inside the unitwill not cook properly.

Your VAROMA is an accessory designed for theThermomix TM 21. It can only be used with aThermomix TM 21. You will therefore need toset up your Thermomix correctly before you canuse the VAROMA (see Instructions for use:Thermomix TM 21):

Step 1: The Thermomix TM 21Fill the Thermomix TM 21 mixing bowl with atleast ½ litre of water or at least ½ litre of otherliquid ingredients as your recipe indicates (eg.,soup, sauce, etc.). Position the bowl as usual,put on the lid and lock it in place with the safetylever. Do everything up to this point in exactlythe same way as you would normally.

Step 2: The VAROMAEach step involved in using your VAROMAfollows logically from the last one.

The best way to use your VAROMA:a) Put the lid upside down on your work surface

and position the stainless steel unit on top - itwill fit accurately into the groove.

b) Now fill the stainless steel unit with food. Thelid underneath the unit will stop the liquidfrom e.g. washed vegetables, ripe fruit, rawmeat or fish from wetting your work surface.

As you fill your VAROMA, put food requiringlonger cooking at the bottom, and foodrequiring shorter cooking at the top.

c) If necessary, you can use the inner tray andput food on top of that, as well.

d) Having filled your VAROMA, position itupright on your locked Thermomix TM 21 andput on the lid. All you have to do now isprogram the cooking time and select theVAROMA heat setting on your Thermomix.

Step 3: Cooking with your VAROMAThe cooking process begins when you start thetimer and select the heat setting. The water orother liquid in the mixing bowl heats up to over100°C and hot steam develops and rises upthrough the opening in the lid of the ThermomixTM 21 into the VAROMA unit. The food iscooked slowly and gently in the hot steam.

It is very important that the stainless steel unitand the lid of the VAROMA fit ”snugly” i.e. thatthey fit on absolutely flat.

Important: If these two elements are notpositioned properly, not enough steam will riseup into the VAROMA. This will slow down thecooking process and there may be aconsiderable risk of scalding from steamescaping in an uncontrolled way.

Never leave the measuring cup in the mixingbowl lid when using the VAROMA.

Now that you know how to use the Varomacorrectly, you will find that your ThermomixTM 21 and VAROMA are a valuable help toyou in the kitchen every day. We know howimportant it is that the food you prepare withyour Thermomix and VAROMA looks goodand tastes delicious. In the TM Cookbook,you will find detailed, tried and tested recipesthat will make a real ”feast” of your ”all inone” Varoma meals!

Please remember a few basic rules if youuse your own recipes:

l Put enough water or other liquidingredients in the mixing bowl. ½ litre ofwater is likely to evaporate completelyduring long cooking times (over 30 min.),and the mixing bowl can heat up so muchthat it could damage the appliance.

Important: use at least ½ litre water forcooking times up to 30 minutes and½ - 1 litre for cooking times over 30minutes.

l Use speed settings 1-2 or 4-5 only whencooking with your VAROMA. Setting 3, thesoft-speed setting, will only prolong thecooking process unnecessarily. Settings 6-9 or Turbo may cause the liquid to froth up.

Important: With the mixer function:setting 5 is the maximum.

l The bottom of the stainless steel unit andthe inner tray both have an even pattern ofsmall slots in them to guarantee an evendistribution of steam in the VAROMA. Thefood should always be positioned so thatas many slots as possible remain ”free”.Laying the food in ”loosely” is usuallyenough to ensure this.

l You can cook foods of differentconsistency and hardness at the sametime. Put the food requiring longer cookingat the bottom, and the food requiring lesscooking at the top.

l Do not thicken your sauces and soupsuntil after they are cooked. Thickeners maystop steam from forming evenly in themixing bowl and slow down the overallcooking process.

In addition to the important safeguardsfor your TM21, please note theseadditional safeguards when using yourVaroma.

l Your VAROMA is easy and safe to use, butplease never forget that you are workingwith hot steam which can cause scalding ifyou use your VAROMA incorrectly. Takecare to place your Thermomix TM 21safely and securely on a flat work surface,especially when using your VAROMA withit. When you use the appliance, ensurethat there is sufficient clearance at the top(suspended cupboards, shelving) andaround the sides. Please be careful thatyou do not place the appliance too closeto the edge of your work surface.

l For safety reasons, you should keepchildren away from the appliance whenworking with your VAROMA, and warnthem about the dangers of the steam andthe hot condensation that can escape fromthe VAROMA.

Caution: Always use oven gloves to pick upthe VAROMA when hot, and never use itwithout the lid. When you take off the lid, holdit so that the rising steam or hot dripping liquidcannot come into contact with you. Pleaseremember that when you remove the entireVAROMA unit, hot steam will continue to riseup out of the opening in the lid of the mixingbowl.

l Always ensure that the steam openings inthe lid remain free, otherwise there may bean uncontrolled escape of steam.

Recipes

Varoma recipes : from easy to demandingThe cooking times in these VAROMA recipesare guide values. They may change dependingon the quantity and size of the pieces ofvegetables and fruits, and on personalpreference.

Please take a little time to get used toworking with your VAROMA. These recipeswill help you. If you use your own recipes,start with simple ones first. Have a go atpreparing boiled potatoes in your VAROMA,for example, then try potatoes withvegetables to familiarize yourself withdifferent cooking times.

As you put food in your VAROMA, put the foodrequiring more cooking at the bottom, and thefood requiring less cooking at the top.

The cooking times quoted in these recipes arefor fresh products. If you use frozen productsstraight from the freezer you will have to add afew minutes to the cooking times depending onthe type and size of the food you intend tocook.

Fill your VAROMA loosely so that enoughsteam can rise up through the base. If,exceptionally, you have to pack your VAROMAvery full, turn the food over from time to time toensure even cooking.

Do not use your VAROMA to prepare food thatis usually cooked in a lot of water, e.g. rice ornoodles. Use your VAROMA to prepare theaccompaniments instead, and cook the rice ornoodles in the basket or the mixing bowl ofyour TM 21. You will find very clear instructionsin the VAROMA recipes.

The cooking times are based on ½ litre ofliquid. If you add more water to the mixingbowl, e.g. for soup or similar, you will need tocook the food for slightly longer.

A special tip for steam-cooking with yourVAROMA: Add some tasty herbs and spices tothe cooking water. The flavour will be absorbed inthe vapour and give your food that ”specialsomething”.

Use the tips and tricks of the ”ancient Chinese” toprepare meat in your VAROMA: They likedwrapping fish and meat in salad or cabbageleaves, or put meat in noodle and rice dough forsteam cooking.

Fine sauces are delicious with meat – quick andeasy to whip up in your Thermomix after the restof the food is cooked.

And here's another advantage of your VAROMA:From time to time you may find you have leftovernoodles, rice or potatoes. And even thougheveryone knows that reheating is bad for anyremaining vitamins and nutrients, they still do it,because no-one wants to just throw the foodaway…

But with your VAROMA, you can reheat potatoes,rice, noodles and vegetables gently, without yourfood tasting or looking ”heated up”.

l Peel potatoes and cut into large pieces.l Coarsely chop hazelnuts for 4 sec. / setting 6

and transfer.l Finely chop parsley for 4 sec. / setting 6 and

transfer.l Rinse out the mixing bowl.l Wash mushrooms, peel the onion, carrot and

parsley root and cut into large pieces. Thendrop ingredients into the blender with the motorrunning for 4-6 sec. / setting 6.

l Add 2 tbs. butter to the mixing bowl and cookfor 6 min. / 80°C / setting 2 and then settemperature selector to 0.

l Add crème fraîche, salt, pepper, egg yolk andparsley to the mixing bowl and blend for 10 - 15sec. / setting 2, transfer and rinse out themixing bowl. (The mixture should have a firm,creamy consistency. Thicken with a fewbreadcrumbs if necessary).

l Wash cabbage leaves, blanch in boiling water,rinse briefly in cold water, cut the centre stemflat and pat dry.

l Cut chicken breast in half, cut into 4 fillets andseason.

l Put 1 heaped tbs. of the mushroom mixture intothe middle of each leaf. Place chicken fillet ontop, spoon on some more mushroom stuffingand roll leaf up tightly.

l Place packet seam downward into theVAROMA.

l Fill the mixing bowl with 6 measuring cup (MC)of water, add 1 tsp. salt and lock. Position theVAROMA on top and cook for 30-35 min. /Varoma / setting 1.

l About 15 min. before the end of the cookingtime remove the VAROMA and add the piecesof potato to the mixing bowl through theopening in the lid.

l At the end of the cooking time, put theVAROMA aside, pour the water out of themixing bowl, add the cream to the cookedpotatoes and blend at setting 2 to a creamypotato puree. Season with salt and nutmeg.

l Put 2 tbs. butter into a small pan and lightlyroast the chopped hazelnuts. Season with saltand pepper.

l Arrange the savoy cabbage rolls on a plate withthe creamy potato puree and sprinkle with theroasted hazelnuts.

Recipe

l Peel the shallot and garlic clove and drop intothe mixer with the motor running on setting 6.

l Soak the ½ a bread roll in warm milk, press itthoroughly and add it to the mixing bowl withthe meat and the other ingredients. Blend for20 sec. / setting 4 with the aid of the spatula.

l Shape the mass into 8 meatballs and put themin the VAROMA.

l Wash the peppers, remove the seeds, cut intostrips 1 cm wide and spread over the meatballsin the VAROMA.

l Rinse out the mixing bowl and fill with 900 mlwater, put the rice in the basket and insert thebasket. Lock the bowl. Position the VAROMAon top and cook for 30 min. / Varoma /setting 1.

l Keep back ½ l of liquid in the mixing bowl forthe sauce. Pour the rest away.

l Insert the whisk for the sauce.l Put all the ingredients except the cream in the

mixing bowl and cook for 6 min. / 100°C /setting 2.

l After 5 minutes, pour the cream through theopening in the lid.

l Season, transfer and serve together with themeatballs and the vegetables.

Chicken casserole with freshvegetables and rice(4 persons)

Ingredients4 chicken legs (approx. 800 g)3 leeks (300 g)1 celery (300 g)2 carrots2 spring onions

Sauce:200 ml of cooking liquid1 MC dry white wine30 g butter3 tsp. (condensed) instant chicken stock3 tbs. cornflour2 egg yolks200 g whipping cream1 bunch of fresh mixed herbsfreshly ground white pepper and nutmeg

Recipe

l Chop herbs for 4 sec. / setting 6 and transfer.l Cut chicken legs in half, remove skin, season

and put in the VAROMA.l Fill the mixing bowl with 700 ml water and

insert the basket (empty), position theVAROMA on top and cook for 15 min. / Varoma/ setting 1.

l Wash, rinse and drain vegetables: cube thecarrots, cut the spring onions into slices. Cutthe leeks into thick slices, peel the celery andcut into finger-thick 2 – 3 cm pieces.

l At the end of the 15-min. cooking time, removethe VAROMA (be careful of escaping steam),place on a large plate and pour the rice into thebasket through the opening in the lid.

l Arrange the washed vegetables inside theVAROMA, on top of the chicken legs. Cookeverything for another 25 min. / Varoma /setting 2.

l Keep rice and VAROMA warm.l Keep back 200 ml of the liquid in the mixing

bowl for the sauce. Insert the whisk.l Add the cornflour (dissolved in the wine), butter

Shrimps with baby corn cobs(As a main course for 2 persons or a starter for 4persons)

Recipe

l Rinse the vegetables, cut the baby corn cobs inhalf lengthways, cut the spring onions into thinstrips and the iceberg lettuce and celery intobite size pieces.

l Stir the garlic, soya sauce and sherry togetherin a bowl. Add the corn cobs and stir well tocover them in marinade. Cover and leave for atleast two hours.

l Put the spring onions and the celery in theVAROMA. Remove the corn cobs from themarinade and set the marinade aside. Addcorn cobs to the VAROMA. Layer the iceberglettuce on top. Mix the shrimps with the gratedlemon rind and place on the slot-in base. Fillthe mixing bowl with 500 ml water, lock,position the VAROMA on top and cookeverything for 18 min. / Varoma / setting 1.

l At the end of the cooking time place thevegetables and shrimps in a serving bowl, pourover the marinade and stir in. Serve with rice.

Steamed salmon with creamymushroom sauce(4 persons)

Ingredients600 g skinned salmon fillet1 untreated lemonsalt, freshly ground pepperButter for the aluminium foil

Serve with:Green noodles (to be prepared separately)

Sauce:300 g mushrooms2 shallots1 tbs. butter1 MC dry white wine200 g whipped cream200 g soft cheesepinch of freshly ground nutmeg

Recipe

l Check the salmon fillet carefully for any bonesand remove with tweezers. Cut fillet into 8strips.

l Wash the lemon and dry it. Grate half thelemon peel and set aside for the mushrooms.Then press the lemon and drip the juice overthe pieces of salmon. Season with salt andpepper.

l Line the VAROMA unit with buttered aluminiumfoil and leave the ends of the foil standing up.Put the pieces of salmon on the foil and thenscrunch the foil shut.

l Rinse and cut the mushrooms into slices andadd to the VAROMA. Put the aluminium foilpacket containing the salmon on the slot-inbase.

l Fill the mixing bowl with 500 ml water, lock thebowl, position the VAROMA on top and cookfor 20 min. / Varoma / setting 1. (Turn thepacket over after 12 min.).

l Take out the salmon and keep warm (in theoven at 50 – 75°C) and empty the mixing bowl.

l Peel the shallots, cut into quarters and dropinto the mixer with the motor running at setting6.

l Insert the whisk, add the butter and cook bothfor 1 min. / 90°C / setting 1. Remove the whisk.

l Add the white wine, cream, soft cheese andhalf the mushrooms and heat for 3 min. / 100°C/ setting 4.

l Add the grated lemon rind, ground nutmeg andthe rest of the mushrooms and mix in for 30sec. / 100°C / setting 1.

Recipe

l Wash and drain the salmon.l Put all the ingredients for marinating the

salmon in a bowl. Add the salmon and leave tomarinate for one hour.

l Put onion cut in four and garlic in the mixingbowl. Mix at speed 3,5 for 15 seconds.

l Attach the whisk to the blades. Add olive oiland corn oil and heat for 3 minutes/90°/speed2. Remove the whisk

l Cut zuchini and carrots in cubes and slice thecabbage. Put most of the quantity of thevegetables in the basket and keep the restaside.

l Put 2 salmon fillets in the lower Varoma traycovering them with chopped parsley and celery.Place the vegetables that you have kept asidearound the salmon. Put the remaining 3 salmonfillets on the upper Varoma tray.

l Put water, wine stock, salt and peper in themixing bowl and heat for 5 minutes/Varomatemperature/speed 1.

l Place the basket in the bowl.l Put the Varoma in place and set for

40 minutes / Varoma temperature / speed 1.l Wait for 5 minutes before you open the

l Remove the Varoma and add the corn flourdiluted in ½ measuring cup cold water to thesauce. Heat for 3 minutes / 90C° / speed 2.

Strips of turkey with broccoli andcashew nuts(4 persons)

Ingredients100 g turkey escalope300 g broccoli florets80 g unsalted cashew nuts300 g tinned bamboo shoots6 spring onions1 tbs. sesame oil1 tbs. sesame seeds

For the sauce:2 tsp. (condensed) instant chicken stock3 tbs. cornflour7 tbs. dry sherry10 tbs. soya sauce200 ml of the cooking liquid

Recipe

l Rinse the broccoli and spring onions. Drainbamboo shoots and cut into thin slices or strips.Divide broccoli into florets, cut the spring onionsinto thin strips and layer in the VAROMAtogether with the bamboo shoots.

l Cut the turkey into thin strips, mix with thesesame oil, sesame seeds and the cashewnuts and place on the slot-in base.

l Fill the mixing bowl with 5 MC water, lock,position the VAROMA on top and cookeverything for 25-30 min. / Varoma / setting 1.

Trout with basil sauceIngredients4 trout½ measuring cup olive oil2 onions1 clove garlic2 tomatoes1 measuring cup dry white wine2 measuring cups water4 measuring cups tomato juice1 bay leaf5-6 sprigs parsley4 sprigs basil3 green peppers cut in slices

Recipe

l Put oil in mixing bowl and heat for 3 minutes /Varoma temperature / speed 2.

l Switch on at speed 4 and drop the onions andgarlic on the blades mixing for 15 seconds.

l Attach the whisk on the blades and set for 2minutes / Varoma temperature / speed 1.Remove the whisk and put the tomatoes cut in4 in the bowl. Mix at speed 4 for 12 seconds.

l Take out a little of the mixture to spread on thefish.

l Put wine, water, tomato juice, bay leaf, parsleyand basil in the bowl and heat for 5 minutes /Varoma temperature / speed 1.

l Put butter, onion cut in four and mushrooms inthe mixing bowl and mix at speed 4 for 5seconds.

l Adjust the whisk onto the blades and heat for 3minutes/90°/speed 2. Remove the whisk andadd water, wine, stock, salt and pepper. Heatfor 5 minutes / Varoma temperature / speed 1.

l Defrost and wash the fish. Season with lemon,salt and pepper. Cut each fillet in two servingsand place them in the two Varoma trays.Sprinkle with olive oil.

l Peel and cut the potatoes in big pieces. Putthem in the basket and place the basket in thebowl.

l Put the Varoma on the bowl and set for 25minutes / Varoma temperature / speed 1.

l Remove the Varoma and the basket from thebowl. Wait for 5 minutes before opening theVaroma.

Desserts Pear-Hélène(4 persons)

Peaches with blackberry puree(4 persons)

Ingredients4 peaches500 g blackberries4 tsp. sugar

Recipe

l Peel and halve the peaches and put them in theVAROMA.

l Fill the mixing bowl with 500 ml water, put theblackberries in the basket, insert the basket,lock the bowl and position the VAROMA on top.

l Cook everything for 25 min. / Varoma /setting 1.

l Remove the peaches and pour the water away.l Put the blackberries and the sugar into the

mixing bowl and puree for 10 sec. / setting 4.Add sugar to taste.

l Leave the peaches to cool down and thenarrange them on top of the fruit puree in a dishand serve with a dollop of whipped cream.

Our tipThe peaches should not be too ripe. Instead ofpeeling them, you can pour boiling water overthem and then pull the skin off.Instead of blackberries you can also useredcurrants or any other type of berries.

l Allow the apples to cool down and arrange ona plate.

l Add all the ingredients for the cider-zabaglioneto the mixing bowl and blend for 4½ min. / 70°C/ setting 5.
