THE HOLY GOSPEL A Reading from the Holy Gospel

according to John Glory to Christ our Saviour.

There was a man sent from God, whose name was John. He came for testimony, to bear witness to the light, that all might believe through him. He was not the light, but came to bear witness to the light. And this is the testimony of John, when the Jews sent priests and Levites from Jerusalem to ask him, "Who are you?" He confessed, he did not deny, but confessed, "I am not the Christ." And they asked him, "What then? Are you Elijah?" He said, "I am not." "Are you the prophet?" And he answered, "No." They said to him then, "Who are you? Let us have an answer for those who sent us. What do you say about yourself?" He said, "I am the voice of one crying in the wilderness, `Make straight the way of the Lord,' as the prophet Isaiah said." Now they had been sent from the Pharisees. They asked him, "Then why are you baptizing, if you are neither the Christ, nor Elijah, nor the prophet?" John answered them, "I baptize with water; but among you stands one whom you do not know, even he who comes after me, the thong of whose sandal I

am not worthy to untie." This took place in Bethany beyond the Jordan, where John was baptizing.

From the Rector’s Notebook Greetings:

“Without exception we all long for happiness…all agree that they want to be happy.…They may all search for it in different ways, but all try their hardest to reach the same goal, that is, joy.” (St. Augustine: Confessions, X, 21.)

As we continue our journey through the Advent season we would note that the tone and theme of the season changes today to joy.

The Third Sunday of Advent is known as Gaudete Sunday so called from the first word of the Introit Sentence in the old Latin Mass (Gaudete, i.e. Rejoice).

So far we have been reflecting on the theme of waiting, with the notion that we wait theologically and spiritually for the second coming of Christ on one hand and for the celebration of the coming of Christ as we anticipate the Feast of the Nativity of our Lord.

Along with the comfort and hope we also wait with joy. Joy of course is one of the fruits of the Spirit about which we read in the letter to the Galatians

But the fruit of the Spirit is love, joy, peace, patience, kindness, goodness, faithfulness, gentleness, self-control; against such there is no law. Galatians 5: 22-23

Joy is one of the profound words of both the Old and New Testaments. Not only are human beings to be joyful; but the entire created order is to be joyful.

Let the field exult, and everything in it! Then shall all the trees of the wood sing for joy Psalm 96:12

As J. C . Redmont states, just as Christian hope is not the same as optimism, so too joy is no self satisfied contentment; it is rather akin to the peace that passes all understanding.

Joy is then not merely a feeling; but rather a sign of holiness, it speaks of an indwelling union with God almighty that in both good and difficult times remains with us always.

In the midst of her longing the Blessed Virgin Mary was filled with eager joy as she waited for the birth of the Christ-child. she proclaimed that it was her innermost being that rejoiced (Luke 1: 47)

Joy must be one of our favorite spiritual terms as we grapple with the challenges of daily living. Our Saviour promises that even in the midst of sorrow, no one can take away our joy from us. (John 16:22)

May God almighty bless us as we continue this Advent journey with joy and thanksgiving in our hearts knowing that the Lord God reigns among us as King and center of our lives.

HEALTH CORNER

This is the time of year where we stand in long lines waiting to purchase our favourite Christmas meat, ham! Most of

us enjoy a good piece of ham and a salt-bread but have you ever thought of how ham is made? Well today let's take a brief look.

Ham is the cut of meat from a pig's hind leg. It can be unprocessed, cooked and served, in which case, it is referred to as fresh ham. However the majority of hams are either dry-cured or wet-cured. Curing is a very delicate process whereby the meat can spoil if the conditions are not right.

Dry-Curing

The surface of the meat is rubbed with a dry-cure mixture of salt and other ingredients. This process produces a salty product. The more mature persons in the congregation, would remember what granny referred to as 'de ole salt ham' that you used to get.

Wet-Curing

This can be done by :

(1) spray pumping the meat with needles and curing solution

(2) (2) immersing the meat in the curing solution

The solution is usually made of water, salt and nitrites. Nitrites play an important role in killing bacteria but also aids in colour development and flavour of the ham.
