One of the most common uses of Hollandaise sauce is to smother Eggs Benedict, a breakfast dish consisting of two halves of an English muffin, topped with ham or bacon, poached eggs, and the sauce. Hollandaise’s ingredients are butter, egg yolks, and lemon juice or vinegar. It’s believed that the dish originated at New York City’s Waldorf Hotel in 1894. There’s a name for that fancy seat or carriage that people ride in on the back of an elephant or camel. It’s a howdah! The word is derived from the Arabic language meaning “bed carried by a camel.” In the past, it was used most often to transport wealthy folks during hunting or warfare. Depending on the rider’s riches, it could be lavishly decorated with expensive jewels and gems. • The word we frequently use for appetizers, hors d’oeuvre, is a French word meaning “outside of the work,” or “apart from the [main] work.” We use it to describe food served before the main course. Lots of folks love ham hocks, but what exactly is a hock? It’s the cut of meat from either the front or hind leg just above the foot. The season wouldn’t be complete without gingerbread cookies. 1 cup packed brown sugar 1/3 cup shortening 1½ cups dark molasses 2/3 cups cold water 7 cups all-purpose flour 2 teaspoon baking soda 2 teaspoon ground ginger 1 teaspoon ground allspice 1 teaspoon ground cinnamon 1 teaspoon ground cloves 1/2 teaspoon salt

1. Mix brown sugar, shortening, molasses and water in a large bowl. Stir in remaining ingredients. Cover and refrigerate at least 2 hours.

2. Heat oven to 350 F. Grease cookie sheet lightly with shortening.

3. Roll dough 1/4 inch thick on floured surface. Cut with floured gingerbread cutter or other favorite shaped cutter. Place about 2 inches apart on cookie sheet.

4. Bake 10 to 12 minutes or until no indentation remains when touched. Remove from cookie sheet. Cool on wire rack. Decorate with colored frosting and candies if desired. Makes about 2 ½ dozen cookies.

• When the holidays come around, we use fresh herbs to make several family recipes, but end up with lots left over. Here is a great tip I found online to stretch the usefulness of fresh herbs: “Store fresh herbs as you would fresh flowers: in a jar of water on your countertop. Pluck off what you need, change the water daily, and they’ll last two to three times longer than they would in the fridge (from nourished-kitchen.com).”

• Empty spice containers can be used to hold different hardware in the shop or in your toolbox.

• “My great-nephew and his family came to visit, and his toddler son is quite into opening doors. I had baby-proofed my breakables and such, but I did not think about his being able to turn a doorknob. His very smart moth-er pulled out a sock and slipped it over the doorknob, then secured it with a wide rubber band. Herbal Vinegars Make Great Gifts

Herbal vinegars are a wonderful gift from the kitchen. They’re delicious when sprinkled on salads, vegetables or broiled meats. You can use either fresh or dried herbs, or fresh or frozen fruit when preparing the vinegars. Pouring heated vinegar over herbs that have been slightly crushed helps extract the flavor of the herbs. Almost any type of vinegar with at least 5 percent acidity may be used, except malt vinegar. The flavor of malt vin-egar is too strong to blend well with herbs or fruits.

After preparation, herbal vinegars should be stored for one to three weeks in a cool, dark place to allow the flavors to mingle. Herbal vinegars will keep indefinitely, and they make great homemade gifts. (Do not make herbal oils for gifts. Unlike com-mercial oils, homemade herbal oils lack enough acidity to preserve them. Homemade herbal oils also tend to turn rancid and may cause botulism.)

Decorative bottles like those used for wine or bottled water are perfect containers for your herbal vinegars. Sterilize the bottles or jars with boil-ing water before using them. Line

bottle caps or jar lids with a piece of foil, or place a piece of foil over the mouth of the jar or bottle to prevent the cap from rusting. Bottles with a cork or cruets also are perfect con-tainers.

Place a decorative label on the bottle or jar describing the herbal ingredi-ents used. Containers may be dec-orated by tying a raffia bow, a few herb sprigs or dried flowers around the neck of the bottle or jar. Wrapping strands of brightly colored yarn or strips of festive wrapping paper that have been dipped in glue also add a decorative touch.

HERBAL VINEGAR 2 cups vinegar (distilled white, cider or wine) 4 to 6 tablespoons of fresh or dried herbs (tarragon, chive, basil, marjoram, dill, sage, rose-

mary, savory, mustard or bay leaves, in combination or alone)

1. If using fresh herbs, rinse them and pat dry with a paper towel. Bruise herbs with a mortar and pestle or by rolling over them once or twice with a rolling pin. Place herbs in a steril-ized jar.

2. In a small, non-corrosive sauce-pan, heat vinegar until it is warm to the touch, but not hot. If using a microwave, place vinegar in a glass bowl and heat on low power for about 30 seconds. Pour the vinegar over the herbs. Let the mixture cool.

3. Place a piece of foil over the mouth of the jar and seal it tightly. Label the jar and place the herbal vin-egar in a cool, dark place for at least 7 days and up to 3 weeks so that the flavors have a chance to mingle.

4. After the flavors have infused, place several layers of cheesecloth inside a funnel and strain the vinegar into a sterilized bottle or jar. Leave at least an inch free at the top of the bot-tle if inserting a cork or glass stopper. Makes 2 cups.

PICKS OF THE WEEKMission: Impossible — Rogue

Nation (PG-13) — This is the fifth installment with Tom Cruise as super-spy Ethan Hunt, and he’s still riveting audiences with his purposeful run-ning. There’s a new shadowy organi-zation of errant spies on the scene, and they’re bent on launching a series of terrorist attacks to destabilize world governments. Hunt has to team up with Ilsa Faust (Rebecca Ferguson), a double-agent who may or may not be part of the evil syndicate herself.

Now in his early 50s, Cruise is still killing it as a man of action. He’s insisted on doing the coolest stunts himself in this franchise, and that con-tinues with this iterations hyper-thrill-er action sequences — including face-peeling motorcycle stunts and a bonkers assassination plot during an opera. Alec Baldwin and Simon Pegg bring a necessary dose of comedy.

He Named Me Malala (PG-13) — When she was 15 years old, Mala-la Yousafzi was shot in the head by Taliban gunmen who found her on a bus. The teenager had been a vocal advocate for girls’ education in Swat Valley, Pakistan, and that made her a target. As you’ve probably heard, she recovered, continued to advocate and became the youngest winner of the Nobel Peace Price.

The film finds her when she’s 17 and living with her parents in Birming-ham, U.K. While she cuts an intrigu-ing profile, the movie also explores the varied international reactions to Mala-la’s story. The title of the film (and her book) points to the inspiration she’s gained from her father, who named her after a cultural hero.

Maze Runner: The Scorch Trials (PG-13) — Now that “The Hunger Games” have had their final award ceremony, “The Maze Runner” deserves a shot to be the post-apoca-lyptic young-adult adventure series of the times. This is the second mov-

ie in the series, and the first one was pretty good. The style here is that our young, memory-wiped heroes have made it out of a high-tech maze, only to continue piecing together the plot as they flee from monsters and mys-terious manipulators. It appears that some organization with the foresight to name itself WCKD (pronounced “wicked”) has some dastardly plans for these youths.

DOG OF THE WEEKFantastic Four (PG-13) — They’re

not supposed to be the Realistic Four. It’s a superhero movie, minus any-thing fun or heroic. It’s mostly gray, dour and scowly-faced serious. Kid super-genius Reed Richards (Miles Teller) invents some quantum-travel stuff that gets picked up by the govern-ment. In a bit of reckless impulsivity, Reed and pals (Kate Mara, Michael B. Jordan, Jamie Bell and Toby Kebbell) wind up in another dimension where some green explosion gives them superpowers. They are pretty bummed about this for the rest of the movie, until the bad guy feels like showing up, tacking on a forced confrontation to the end of this brutally boring gripe-fest. TV RELEASES

Q: I have four swan planters that are marked “Hull.” I bought them at a thrift shop for $150 for the set. They seem to be in excellent shape. I am enclosing pictures. What are your thoughts? -- Maryanne, Tyler, Texas

A: The Hull Pottery Company produced many novelty items depicting fowl, but swans probably became the most widely produced design. The swans came in various sizes. I found your swans in “Warman’s Hull Pottery: Identification & Price Guide” by David Doyle and published by Krause Books. According to Doyle, your planters are worth $10 to $25 each.

• • •Q: I inherited my uncle’s record collection,

which includes discs from the early years of the past century. Most are opera or classical selec-tions, and some are recorded only on one side of the disc. Is there a market for them? -- Jane, via e-mail

A: Probably not. Most acoustical recordings from this period have very little value. For ex-ample, there is the mistaken belief that all Caruso recordings on Victor are priceless. They aren’t. In fact, many are only worth a dollar or two each. On the Zonophone label, however, Caruso is

worth his weight in gold. I suggest you donate the recordings to a charity.

• • •Q: I bought a Jadite spice set at a flea market

for $10. It was so cheap, I’m having doubts about it being authentic. -- Sarah, Phoenix, Arizona

A: Although only an expert can determine if your Jadite is fake or the real McCoy, this type of pale green, opaque glass has been mass-produced in both China and the United States since 1999. You might want to consult the “Guide to Fakes & Reproductions,” 4th edition, by Mark Chervenka, published by KP Books. It has a lengthy chapter, complete with illustrations, docu-menting Jadite and the reproductions that are flooding marketplaces throughout the country.

John Wooden on Success

Recently we shared Vince Lom-bardi’s famous “What it takes to be No. 1” speech in this space. Know-ing bulletin boards and locker-room walls like I do, I’m betting you have enough space up there for another guy’s take on the subject of winning: John Wooden.

What does it take to have to back-to-back seasons without a loss and win 10 championships in 12 years? Well, for one thing, it took a guy like John Wooden. As a child his father gave him seven rules to live by that he would later distill down into three main rules that his players must fol-low in order to play for him:

1. Don’t be late.2. Don’t curse.3. Don’t criticize your teammates.At the heart of Wooden’s philoso-

phy is one word: respect. His three rules were about respecting the pro-gram, the coach (him) and each other. Whereas Lombardi makes the case that winning is always better and it is something that each individual must strive for at all times — fairly, but brutally if need be — Wooden’s famous “10 rules for success” state that if you do the right things all the time, you will end up winning most of the time.

But the “Wizard of Westwood” would go on to write an even more

expansive set of “suggestions” that incorporated both his father’s and his own set of rules. Following these rules, he promised, might lead to success if put to use. He was wrong: They led to unprecedented success.John Wooden’s Sets Of Suggestions:

1. Be a gentleman at all times. 2. Be a team player always. 3. Be on time whenever time is

involved. 4. Be a good student in all subjects

— not just basketball.5. Be enthusiastic, industrious,
